Steak Dijon Recipe

1 Tbsp. butter
4 cube steaks or round steaks
1 jar brown gravy
3 Tbsp. half and half
1 Tbsp. Dijon mustard
2 Tbsp. chopped parsley

Brown steak in skillet in butter until done, turning once. Remove. Keep warm. Reduce heat. Add gravy, half and half and mustard. Heat, stirring until bubbly. Add meat to sauce. Sprinkle with parsley. Cover. Simmer on low for 10 minutes.
Serves 4.

Cube Steak with Broccoli and Cheese Gravy

1-1/2 lb. cube steak
1 can cheese broccoli soup
2 cans milk (sweet milk)
1/2 c. flour

Cut cube steak in small pieces. Flour each piece and brown in small amount of oil. In a large baking dish, put can of soup, 2 cans of milk and flour. (Put garlic salt on steak before putting in soup mixture.) Put steak in soup mixture and bake in oven for 1 hour at 350°.

Cube Steak Parmigiana

4 cube steaks
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. oil
1 (15 oz.) can tomato herb sauce
1 (4 oz.) can sliced mushrooms
2 Tbsp. Parmesan cheese
4 slices Mozzarella cheese

Season cube steaks with salt and pepper; brown both sides in oil. In skillet, drain fat. Add sauce and mushrooms. Top each steak with slice of Mozzarella; sprinkle with Parmesan. Simmer, covered, for 5 minutes. Serve over hot spaghetti noodles.

Barbecued Cube Steaks Recipe

4 cube steaks
salt and pepper
1 onion, chopped
3 Tbsp. shortening
1 Tbsp. brown sugar
1/2 c. catsup
1/4 c. water
3 Tbsp. Worcestershire sauce

Dip steaks in flour and seasonings. Brown with onion in hot fat. Add remaining ingredients. Cover and simmer 20 minutes.

Country Fried Cube Steaks Recipe

1 lb. cube steak, pounded thin as for scallopine
1/2 c. flour
2 eggs, lightly beaten with 3 Tbsp. milk
1 c. bread crumbs
4 or 5 Tbsp. Crisco
salt and pepper

Dust steaks well with flour. Dip in egg and then in bread crumbs to coat evenly.

Heat Crisco in large skillet and brown steak for 2 or 3 minutes on each side, adding more Crisco as needed. When all pieces are brown, sprinkle with salt and pepper. Turn heat to low. Cover and cook about 45 minutes.

Italian Cube Steaks Recipe

1 lb. cube steak
1 onion
sliced green pepper (if desired)
2 Tbsp. oil
1 small jar bottled spaghetti sauce
salt and pepper

Slice steak into strips. Saute with onion and green pepper (if desired) in oil. Stir in spaghetti sauce, salt and pepper. Cover; simmer 10 minutes or longer, if desired. Serve over pasta of your choice or rice.

Cube Steak Pepper Steaks Recipe

1-1/4 lb. cubed steak
5 green peppers
2 Tbsp. oil
1 1/4 c. water
1 envelope brown gravy mix
2 Tbsp. soy sauce
1 sliced onion (optional)

Cut steak and green peppers into 1/2 inch strips; cook and stir in oil in large skillet until meat loses red color. Stir in water, gravy mix and soy sauce. Cover; simmer 10 to 15 minutes until tender, stirring occasionally. Onion may also be used.

Cube Steak Swiss Steak Recipe

8 cube steaks
1 large onion, diced
1 green pepper
2 cans stewed tomatoes
flour
salt and pepper
garlic salt
3 Tbsp. sugar

Roll steak in flour and brown in skillet until done. In Dutch oven cooking pot, combine tomatoes, onion and green pepper over medium heat. Add sugar, salt, pepper and garlic salt to taste. Simmer 10 minutes over low heat. Lay steak in baking dish; cover with tomato sauce. Bake 10 minutes at 250°. Serve with rice.

Cube Steak Parmesan Recipe

1 egg
1 Tbsp. water
dash of pepper
1 c. pizza sauce
1/4 c. oil
1/4 c. Parmesan cheese
5 beef cube steaks
1/4 c. crushed soda crackers

Beat together egg, water and pepper. Combine crumbs and 1/2 cup of cheese. Dip steak in egg mixture, then crumbs. Brown steaks in hot oil. Drain on paper towels. Arrange steak in pan. Cover with pizza sauce and sprinkle with remaining cheese. Bake 20 minutes at 325°. Yields 5 servings.

Green Chiles Cube Steak Recipe

6 cubed steaks
2 Tbsp. cooking oil
3 Tbsp. flour
3 c. milk
1 small can mild green chiles, chopped
1/4 tsp. garlic powder
salt to taste

Brown cubed steaks on both sides and set aside. Combine oil and flour in a saucepan; brown well. Add milk and chopped green chile, stirring constantly until thickened. Add garlic powder and salt to taste; stir. Place cubed steaks in a casserole and pour gravy over. Warm in oven.
Makes 6 Servings

Cube Steak and Potatoes Recipe

5 large potatoes
1 large onion
6 cube steaks
1 pkg. onion gravy

Fry cube steaks with oil in an electric fry pan set at about 300°. Lightly fry steaks. Add onion and turn steaks. Fry for about 10 minutes slowly. Add sliced potatoes and salt and pepper to taste. Slow fry until potatoes are done, about 20 minutes. Add gravy (mix gravy as directed on package). Simmer for 10 minutes.

Crock Pot Salisbury Cube Steaks Recipe

6 pieces cube steak
1 can Campbell's golden mushroom soup
1 envelope onion soup
1 to 2 cans water
seasoned flour
self-rising flour

In a crock-pot put Lipton soup, mushroom soup and 1 can of water. Stir and turn on high. Take a mixture of seasoned flour and self-rising flour. Coat steak. Brown steak in a small amount of margarine. Don't cook until done. After steak is browned, put in crock-pot with gravy. Cook on low approximately 3 hours or until steak is done.

Oven Baked Cube Steaks with Vegetables

4 pieces cubed steak
1 pkg. Lipton onion soup mix
4 large potatoes
6 carrots

Flour cubed steak and brown in frying pan. Cut potatoes and carrots; place in casserole dish. Salt and pepper carrots and potatoes to taste.

Place each steak over carrots and potatoes. Sprinkle package of soup mix over carrots, potatoes and steaks.

Pour 3/4 glass of water in casserole dish. Cover dish with glass top or aluminum foil. Bake at 325° or 400° for 45 minutes or until carrots and potatoes are tender.

Hubby really loved this dish, and I hope you will too. I couldn't find the mini lasagna noodles, so I just used another kind of pasta for it. The bow tie shaped pasta would be good. I think Cheddar cheese would work great for this dish too?

Pizza Skillet Supper Combo

1 lb. lean ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
1 can (15 oz.) pizza sauce
1 can Cheddar cheese soup
1 cup water
1/2 cup diced Pepperoni
2 cups (4 oz.) mini lasagna noodles (mafalda)
1/2 cup shredded Mozzarella cheese (I use Monterey Jack)

Brown beef with onion and green pepper in skillet; drain. Stir in pizza sauce, soup, water and Pepperoni and bring to a boil. Stir in uncooked pasta; cover and simmer for about 30 minutes until pasta is tender. Sprinkle with cheese; cover and let stand about 5 minutes to melt.

This is an excellent way to prepare chicken. If you don't care
for the thighs, you can use other parts of the chicken, as it
would be just as good. I have also used Italian seasoned
bread crumbs for this recipe and is very good.

Crispy Baked Chicken Thighs Recipe

4 tbsp. butter
3/4 cup dry bread crumbs
1/4 tsp. salt
1/8 tsp. pepper
3 tbsp. prepared mustard
2 tbsp. honey
1 tsp. lemon juice
1/2 tsp. powdered ginger
1 clove garlic, crushed
8 to 10 chicken thighs (can remove skin)

In a 15 x 10 inch jelly roll pan, melt butter at 375. Remove from oven. Meanwhile, on waxed paper, combine bread crumbs, salt and pepper; set aside. In bowl, mix mustard, honey, lemon juice, garlic and ginger.

Coat chicken pieces in mixture well and roll in bread crumb mixture. Arrange evenly in pan with melted butter. Bake at 375 for 1 hour, turning chicken over half way through baking time.

Sandy in Ohio asked how many cups of crumbled cracker crumbs I use in the Soda Cracker Salad that I sent into the newsletter recently. The ingredients in the recipe gives the measurement in weight. I buy the 1 lb. box of soda crackers, that have 4 sleeves of crackers inside. I use 1 sleeve (1/4 lb.)
crackers for the salad. I hope this helps.

Here is another easy and delicious pork chop recipe for Julia. These are delicious and great to fix on a hot summer day, as keeps the kitchen cool, as the Crock Pot does the cooking.

Gumbo Pork Chops Recipe

6 pork chops, 3/4" thick
6 tsp. prepared mustard
1 can chicken gumbo soup

Brown chops. Spread mustard over each chop and place in a Crock pot. Pour condensed soup over and cook on low for 7 hours, or until chops are very tender.

This is a Greek recipe made in almost all Greek households. Greece is divided into various regions, and the cooking varies from one region to another, but the Kapama is universal.

Kapama Recipe

1 chicken, cut into serving pieces
1 can tomato paste (or a half can of tomato paste and a small can of Hunt’s tomato sauce)
1 medium onion, chopped
1 cinnamon stick
Juice of 1 lemon
Salt and pepper
Butter and oil for frying

Season the chicken with salt and pepper. Sprinkle with lemon juice and set aside for at least 15 minutes. Brown the chicken in a frying pan in a combination of half-butter and half-oil ( I use Canola). Place chicken in a deep saucepan.

Sauté the onion in the same frying pan, and add tomato, salt an pepper. Bring to a boil. Put entire mixture into the pan with the chicken. Add the cinnamon. Add enough water to cover the chicken. Bring to a boil and simmer about one hour until the chicken is tender. Serve with spaghetti, rice or noodles.

NOTE: You can remove the chicken from the pot. Add more water and a small chicken bouillon cube, and bring to a boil. Add rice or noodles and simmer on low heat, stirring often to prevent sticking.

Hi all, they say that necessity is the mother of invention but in my case, it was desperation. My neighbor makes the best meatloaf I've ever tasted so I was thrilled when she said she was making it for supper Sunday and I was invited over. And then she added, oh, btw, could you bring dessert?

That wouldn't have been a problem but supper was only about an hour away and I didn't have a clue what to fix. Took stock of items on hand and saw I had strawberries, strawberry roll-up cakes, and cool whip in the freezer. Figured that surely I could fix something with that. Didn't turn out bad, except was dry. Oh my, how to moisten it? Then, saw the vanilla creamer that I use in my coffee and had an inspiration. Actually turned out good and there's not a smidgen left. In fact, think I'm gonna make it on purpose in the future.

Sherry's Strawberry Dessert Recipe

1 package ripe strawberries
1 (8 oz) container whipped topping, thawed
1 8-count package strawberry roll-up cakes
Vanilla creamer, as needed
Splenda, as needed

Clean and finely chop strawberries. Wash and place in shallow bowl. Cover with splenda, stir, and set aside. Place strawberry cake in dessert bowl and cut in half length-wise. Cover with strawberries then add a spoonful of whipped topping. Pour about 1/4 cup vanilla creamer around outside edge of cake. Chill until ready to serve.

P.S. This makes from 4 to 8 servings, depending on if you use one or two cakes per person and on how many strawberries you put in each dish.
