We really like this quick dish for two.

Chicken Fried Rice Recipe

Ingredients
3/4 cup cubed cooked chicken
1/4 cup fresh mushrooms, chopped or sliced
1 tbsp. cooking oil
1-1/2 cups cold cooked long-gran rice
2 tbsp. reduced sodium soy sauce
1 egg, lightly beaten
1 bunch small green onions, sliced

Directions
In large skillet, or wok, stir fry the mushrooms in oil until tender. Stir in the rice, chicken and soy sauce. Cook over low heat for 8 to 10 minutes, stirring occasionally. Add egg and onion and cook and stir for 1 to 2 minutes or until egg is set.
Makes 2 servings.

NOTE: I also add 1 clove of garlic, minced

This is one of our most favorite pork chop recipes. The chops turn out so moist and tender and the rice is full of flavor. A enjoyable meal all-in-one!

You can use pork, lamb or veal chops for this. We prefer pork chops.

Skillet Chops and Rice Recipe

Ingredients
4 large chops, 1/2" thick
Salt & pepper, to taste
2 tbsp. cooking oil
1 medium onion, chopped
1/2 cup thinly sliced celery
2 cups water
2 tbsp. sugar
1-1/2 tsp. salt (I cut in half)
2 (8 oz.) can tomato sauce
1 cup regular uncooked rice
1 (10 oz.) pkg. frozen peas, thawed

Directions
Sprinkle chops with some salt and pepper to season. Brown on both sides in hot oil. Remove chops. In same skillet, sauté; onions and celery until golden. Add water, sugar, seasonings, and 1 can tomato sauce; bring to a boil. Stir in rice. Place chops on rice mixture, cover tightly and simmer 30 minutes, until chops are almost done. Add thawed peas on top and pour on remaining can of tomato sauce. Replace cover and cook 15 minutes longer.
Makes 4 servings.

Sharon's Ice Box Heath Bar Cake Recipe

Ingredients
1 box chocolate cake mix
1 can sweetened condensed milk
1 jar caramel ice cream topping
Cool Whip
crushed Heath bars

Directions
Make the chocolate cake as per directions on box. When cake is done, poke holes in the top with a wooden spoon handle. Pour the sweetened condensed milk and caramel ice cream topping over the cake. Cool cake. Top with the Cool Whip and sprinkle with crushed Heath bars. Keep refrigerated.

This cake is so moist and it doesn't need frosting to make it delicious. I have a hard time keeping hubby out of it!

Mahogany Pound Cake Recipe

Ingredients
1 cup butter, softened
2 cups granulated sugar
1 cup firmly packed brown sugar
6 eggs - separated (at room temperature)
2-1/2 cups flour
1/2 cup unsweetened baking cocoa
1 cup dairy sour cream
1/4 tsp. baking soda
1 tsp. vanilla

Ingredients
Cream butter and sugars together , beat well with electric mixer on medium speed. Add egg yolks, one at a time, beating after each addition. Mix flour and cocoa together and combine sour cream and soda. Add flour mixture alternately with sour cream, beginning and ending with flour. Mix just until blended, after each addition. Stir in vanilla. Beat egg whites until soft peaks form; fold into batter. Spoon batter into a greased/floured 10" tube pan. Bake at 325 for about 1 hour and 15 minutes, or until tests done with toothpick. Cool 10 minutes in pan and remove and cool completely on wire rack.
10 servings.

This is a salad I enjoy making when am preparing a meal for company, as can make it up ahead and put it in the freezer. It's a refreshing addition to any meal.

Frosty Fruit Mold Recipe

Ingredients
1 pkg. (8 oz.) cream cheese, softened
1/4 cup mayonnaise
1/4 cup powdered sugar
2 tbsp. lemon juice
1/2 tsp. vanilla
1 cup (1 can 8.4 oz.) pineapple tidbits, drained
1 (10 oz.) pkg. frozen blueberries, thawed and drained
1 pkg. (10 oz.) frozen peaches, thawed, drained and cut up
1 cup miniature marshmallows
1 cup whipping cream

Directions
In large bowl, combine cream cheese, mayonnaise, powdered sugar, lemon juice and vanilla; beat until smooth. Fold in fruits and marshmallows. Whip cream and fold into fruit mixture. Turn into a 6 cup mold and freeze. Allow to stand at room temperature 30 minutes before serving.
Serves 12.

Hello Nancy and all Landers,
The newsletter looks wonderful today. I've been busy trying to get my garden ready to be planted. Son's always say I plant too early but what do they know lol. Has anyone ever planted blueberry bushes in large pots? I want to order some from Gurney's but not sure how they would do. Any help would be appreciated.

June's Bake Recipe
I got this from a co-worker who's mom made it and it is great many years ago,

Ingredients
1 can 10 refrigerated biscuits
1 small box of red Jell-O you flavor choice
1 can apple pie filling
1 stick pure Butter

Directions
In a 9x9 or 10x8 baking pan, line bottom with biscuits. Pour apple pie filling over the biscuits. Sprinkle the Jell-O over the filling. Put pats of butter on top of Jell-O.
Bake about 3 minutes longer than you would the biscuits. DO NOT BROWN.
It is sooo good and east.

Lip Smackin' Beets Recipe

Ingredients
2 cans sliced beets drained
1-16oz can whole berry cranberry sauce
1/4 cup orange juice concentrate

Directions
Mix berries and orange juice wel and add beets. Put into sauce pan or into a microwave and heat completely through. Makes a great side dish any time of year.

Applesauce Cream Dessert Recipe

Ingredients
1 quart spicy applesauce preferably sweetened with maple syrup
1 pint heavy whipping cream
1/2 cup chopped pecans, walnut or almonds

Directions
Combine apple sauce and nuts. Whip cream, sweeten to taste and fold into apple sauce and nuts.

Pour mixture into a mold or pan and freezer. Remove from freezer 20 minutes before serving. Cut into slices.
This one of the best and easiest desserts ever.

There has been a problem with my internet the past several days. I was told by my provider it would be Wednesday before problems could be resolved. I was also told no one else in my neighborhood had a problem with their internet. I walked around my neighborhood and talked with 10 of my neighbors. The all were having the same problem, not being able to connect.  After giving them the phone number for tech support and asking them to call to get repairs done an amazing thing happened..We all were back online in less than 3 hours. I don't always believe what support says. Miracles happen in numbers, and so here is today's newsletter, LOL.

Sausage and Zucchini Casserole Recipe
great one pot meal also great for potlucks

Ingredients
3 TBSP olive oil
1 1/2 lbs. ground beef
1 lb. mild italian sausage links sliced
3 zucchini cut into 1/2 inch pieces
4 garlic cloves chopped
1 large onion chopped
1 cup long grain rice
1-14 1/2 oz can diced tomatoes
2 tsp fennel seeds
1/2 tsp red pepper flakes
1 TBSP fine chopped fresh basil ( 1 tsp dried)
1 tsp dried rosemary OR oregano
salt- pepper to taste
3 cups chicken broth
1 cup fresh grated parmesan cheese

Directions
Preheat oven to 375 degrees.

Heat oil in large 5 quart pot, add beef, sausage and brown. Drain and set aside. In the large pot sauté zucchini, garlic and onion til softened. Add rice and cook til opaque, about 2 minutes. Add tomatoes, fennel, red pepper, basil, rosemary , salt/pepper and chicken broth. Heat through until just to boil. Stir in meats. Transfer to a rectangular baking dish. Top with parmesan cheese bake 1 hour. When serving can add more cheese on top.

May be made 1-3 days ahead, it freezes well defrost and reheat at 350 degrees.

Quick Peach Cobbler Recipe
Preheat oven 350 degrees

Ingredients
1 cup sugar
1 cup flour
1 cup milk
1 stick pure butter
1 large can peaches, drained

Directions
Cut butter into slices and scatter in baking pan. Mix flour and sugar, add milk, mix well and pour over butter. Add peaches on top. Bake until top crust is bubbly and brown (about 45 minutes). Best served hot with vanilla ice cream.

Good Salad Dressing Recipe

Ingredients
1 can condensed cream of celery soup ( no water)
4 TBSP mayo
1 tsp onion juice or 2 TBSP fine minced sweet onion
1 TBSP fresh lemon juice
1/2 tsp soy sauce ( sometimes I add a little more)
1/2 tsp ground black pepper

Directions
Mix well. Is great on all salads except fruit salad.

Meat Loaf with Potato Topping Recipe

Ingredients
1-1/2 lb. ground beef
1/2 c. soft bread crumbs
1/3 c. minced onion
1/2 c. ketchup
1 1/4 tsp. seasoned salt
1/4 tsp. pepper
3 c. whipped potatoes
1/4 c. minced green onions
3 Tbsp. chopped parsley
1 egg

Directions
In large bowl, combine beef, bread crumbs, onion, egg, ketchup, 1 teaspoon salt and 1/8 teaspoon pepper. Blend well and shape into a loaf. Place in a shallow baking pan. Bake at 350° for 1 1/4 hours. Combine whipped potatoes, green onions, parsley, remaining 1/4 teaspoon salt and remaining 1/8 teaspoon pepper. Spread over top and sides of meat loaf. Bake 20 minutes longer. If desired, broil until golden brown.


Apricot Glazed Meat Loaf Recipe

Ingredients
1-3/4 lb. ground beef
1/2 c. rolled oats
2 eggs, slightly beaten
1/2 c. finely chopped onions
3/4 c. catsup
1/4 c. milk
1 tsp. Worcestershire sauce
1 tsp. prepared horseradish
2 tsp. salt
1/8 tsp. pepper
1/2 c. apricot preserves

Directions
Combine beef, oats, eggs, onions, 1/4 cup catsup, milk, Worcestershire sauce, horseradish, salt and pepper; mix well. Pack into lightly oiled ring mold. Bake at 350° for about 40 minutes. Let stand in pan 5 minutes.

Combine remaining 1/2 cup catsup and apricot preserves. Heat. Remove meat from ring mold onto a plate. Spoon 1/3 of sauce over meat ring and serve remaining sauce with meat.


Sweet and Sour Meat Loaf Recipe

Ingredients
1 (15 oz.) can tomato sauce
1/2 c. brown sugar
1/4 c. vinegar
1 tsp. prepared mustard
2 lb. ground beef
1/2 lb. ground veal
1/2 lb. ground pork
2 eggs, slightly beaten
2 small onions, minced
1/2 c. fine soft bread crumbs
1 Tbsp. salt
1/4 tsp. pepper

Ingredients
Mix tomato sauce, sugar, vinegar and mustard in a small bowl until blended. Place the remaining ingredients and 1 cup of the sauce mixture in a large bowl. Blend thoroughly. Place meat mixture in a 9 x 5 x 3-inch loaf. Pour 1/4 cup of the sauce over the top. Bake in a 375° oven for 1 hour, basting with the remainder of the sauce.
Serves 8 to 10.


Glazed Meat Loaf Recipe

Ingredients
1/2 c. ketchup
1/3 c. firmly packed light brown sugar
1/4 c. lemon juice
1 tsp. dry mustard
1 1/2 lb. lean ground beef
1 1/2 c. fresh bread crumbs (3 slices)
1/4 c. finely chopped onions
1 egg, slightly beaten
1 tsp. beef-flavor instant bouillon cubes

Directions
Preheat oven to 350°. In small bowl, combine ketchup, sugar, 1 tablespoon lemon juice and mustard. In large bowl, combine remaining ingredients and 1/3 cup of ketchup mixture. Mix well.

In shallow baking dish, shape into loaf. Bake 1 hour. Pour off fat. Pour remaining ketchup mixture over loaf. Bake 10 minutes longer. Garnish as desired. Refrigerate leftovers.
Makes 4 to 6 servings.


Oatmeal Meat Loaf with Glaze Recipe

Directions
1-1/2 lb. ground beef
1/2 c. milk
1 slightly beaten egg
1 tsp. Worcestershire sauce
3/4 c. quick-cooking oatmeal
1/4 c. chopped onion
1 tsp. salt
1/8 tsp. pepper

Topping
1/2 c. brown sugar
1/2 tsp. dry mustard
1/4 c. vinegar
1 tsp. Worcestershire sauce

Directions
Combine ingredients (except topping) and mix well. Press into a 9 x 5 x 3-inch greased pan.

Combine topping ingredients and pour over the top of the loaf. Bake at 350° for 45 to 60 minutes.


Extra Special Meat Loaf Recipe

Ingredients
1 (10 3/4 oz.) can cream of mushroom soup, divided
1 1/2 lb. ground beef
1/2 c. chopped onion
1/2 c. fine dry bread crumbs
1 egg
1 (8 oz.) pkg. refrigerated crescent rolls

Directions
In a large bowl, thoroughly mix 1/2 cup soup, beef, onion, crumbs and egg. In a 12 x 8-inch baking dish, firmly shape mixture into an 8 x 4-inch loaf. Bake at 350° for 1 hour. Remove meat loaf from oven. Pour off fat.

Unroll crescent rolls and separate dough into triangles. Place triangles crosswise over top and down sides of meat loaf, overlapping triangles. Bake 15 minutes or until browned.


Crock Pot Southwestern Meat Loaf Recipe

Ingredients
2 lb. ground chuck
1 c. coarsely crushed corn chips
1/3 c. taco sauce
2 Tbsp. taco seasoning mix
1 egg, lightly beaten
1/2 c. grated cheese (Cheddar or Monterey Jack)

Directions
Mix all ingredients together. Shape into a loaf. Place in crock-pot. Cover and cook on low 6-8 hours.


Meat Loaf with Zucchini Recipe

Ingredients
2 lb. ground beef
2 c. coarsely grated zucchini
1 c. dry Italian bread crumbs
1/2 c. grated Parmesan cheese
1 small onion, finely chopped
2 tsp. beef bouillon
1/2 tsp. salt
1 c. milk
1 large egg, beaten

Directions
Combine all ingredients. Mix well. Pack 9 x 5 x 3-inch loaf pan. Bake at 350° for 1-1/4 hours.


Meat Loaf with Carrots Recipe

Ingredients
1-1/2 lb. ground beef
2 eggs
2/3 c. milk
2 tsp. salt
1/4 tsp. pepper
3 slices bread crumbs
1 finely chopped onion
1/2 c. shredded carrot
1 c. shredded Cheddar cheese

Directions
Mix ingredients together, shape meat and place in baking dish. Pour glaze over top and bake at 350° until done.

Glaze: Heat in a saucepan: 1/4 cup brown sugar, 1/4 cup ketchup and 1 tablespoon prepared mustard.


Ann Lander's Meat Loaf Recipe

Ingredients
2 lbs. ground round steak
2 eggs
1-1/2 c. bread crumbs
3/4 c. ketchup
1 tsp. Accent
1/2 c. warm water
1 pkg. Lipton's onion soup mix
bacon strips
1 (8 oz.) can tomato sauce

Directions
Mix first 7 ingredients thoroughly. Put into loaf pan. Cover with 2 or 3 strips of bacon. Pour tomato sauce over all. Bake for 1 hour at 350°.
Serves 6.


Applesauce Meat Loaf Recipe

Ingredients
2 lb. ground beef
1 c. crushed cornflakes
1 1/2 tsp. salt
1 egg beaten
1/2 c. applesauce
1/2 tsp. allspice
1 large onion, sliced
1 large pepper, sliced
1 can stewed tomatoes
1 Tbsp. brown sugar

Directions
Mix together first six ingredients. Shape into loaf. Put in pan, add onion, peppers, tomatoes and brown sugar over top. Bake at 350° for 1-1/4 hours.


Cranberry Sauce Meat Loaf Recipe

Ingredients
1/4 c. brown sugar
1 small can whole cranberry sauce
1 lb. ground beef
3/4 c. milk
3/4 c. cracker crumbs
2 eggs
1 1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. diced onion
3 bay leaves

Directions
Spread sugar over bottom of greased loaf pan. Mash cranberry sauce and spread over sugar. Combine remaining ingredients, except for bay leaves. Shape into loaf and place on cranberry sauce. Place bay leaves on top of loaf. Bake at 350° about 1 hour. Remove bay leaves. Turn upside down and serve.


German Style Meat Loaf Recipe

Ingredients
1-1/2 lb. ground beef
1 c. dried bread crumbs
1 onion, chopped
1 egg
1 (8 oz.) can tomato sauce (reserve 4 oz. for sauce)
1 tsp. salt
1/4 tsp. pepper

Sauce
3/4 c. water
2 Tbsp. brown sugar
2 Tbsp. mustard
4 oz. tomato sauce
1 Tbsp. vinegar

Directions
Mix meatloaf ingredients and shape in loaf. Mix sauce ingredients and pour over meat loaf. Bake at 350° for 1-1/2 hours basting occasionally.


Easy Meat Loaf Recipe

Ingredients
1-1/2 lbs. ground beef
3/4 c. instant oats, uncooked
1 can Del Monte garlic and onion diced tomatoes, drained
2 eggs
1 pkg. dried onion soup mix

Directions
Mix ingredients. Shape into loaf. Bake at 375 degrees for 60 minutes. Let stand for 10 minutes before serving.


Mexican Meat Loaf Recipe

Ingredients
1 1/2 lb. ground chuck or low fat ground beef
1 egg
1 - 10 oz. can tomatoes and green chilies
1 small onion, chopped
1 1/2 c. bread crumbs
Salt and Pepper
3/4 c. cheddar cheese

Directions
Mix all ingredients together and put into loaf pan. Bake at 375° for 1 hour. Top with grated cheese. Return to oven just long enough to melt cheese.
