I made Mary J's Banana Pudding Cake which was posted earlier this month. It is excellent and I will make it many times more.

I made it using one small-med banana and baked it in a 13 x 9 metal pan. The recipe said to bake for 55-60 minutes but my cake was done in 30-35. Think it might have taken longer if I had used more banana as it would have been wetter. Just wanted to alert you of this. Don't just set the timer and walk away. I usually know when my cakes are ready because I can smell them.. LOL

The cake was "Company quality" good. I made a cream cheese frosting and added about 2 Tabs of the pudding mix.

Recently I downgraded my host server options and location to reduce costs. I am having problems on the site and am unable to post recipes on the site tonight. I am moving the recipes back to where they were because of the problems and almost 9.5 hours talking to hosting support. I should be able to post online sometime Wednesday. It is probable you will see nothing different from your end when the recipes actually are live again on the old server. I just can't update the site until changes have been made. It may take up to 24 hours.

Orange Cream Brownies Recipe

1 pkg. (3 oz.) cream cheese, softened
10 tbsp. butter, softened, divided
3 eggs, divided
1 cup sugar, divided
3/4 cup plus 1 tbsp. sugar, divided
1 tsp. grated orange peel
1 tsp. vanilla
2 squares (1 oz. each) semi-sweet chocolate, melted
1 square (1 oz.) unsweetened chocolate, melted

Line a 9 inch round baking pan with foil; grease and set aside. In mixer bowl, beat cream cheese and 2 tbsp. butter until smooth, at high speed. Beat in 1 egg, 1/4 cup sugar, 1 tbsp. flour and orange peel. In mixer bowl on high speed, beat
remaining 6 tbsp. butter and 3/4 cup sugar until creamy on high speed. Beat in remaining 2 eggs and vanilla. Stir in remaining 3/4 cup flour and melted chocolate.

Remove 1 cup of the chocolate batter. Spread remaining batter in prepared pan. Top with cream cheese mixture. Drop spoonfuls of reserved chocolate batter over cream cheese. With knife, swirl batters. Bake at 325 for 40 minutes. Cool in pan on wire rack. Lift out with foil. Discard foil. Cut into 12 wedges.

NOTE: Can garnish with mint springs, orange slices and grated orange peel, if desired, but I don't. Since I only have 1 bowl to my mixer, I beat the first mixer with my electric portable mixer, as it's a smaller amount.

It's like eating a taco salad without the fried tortilla shell. It's a great dish to serve at a party or get-together, and healthy too,
as each serving is under 300 calories.

Ground Turkey Taco Casserole Recipe

1 lb. ground turkey
1 small onion, chopped
1 clove garlic, minced
1 tbsp. cider vinegar
2 tsp. chili powder
1-1/2 tsp. dried oregano leaves, crushed
1/2 tsp. ground cumin
Dash ground red pepper flakes (optional)
1 can (15 oz.) black beans, drained
1/4 cup water
1 jar (16 oz.) mild or medium salsa
6 (6") corn tortillas, cut in 1" wide strips
3/4 cup reduced fat Cheddar Cheese

Cook turkey, onion and garlic till meat is no longer pink; drain. Add vinegar, chili powder, oregano, cumin and red pepper flakes. Cook and stir for 1 minute. Stir in beans and water and remove from heat. Place about 2 tbsp. salsa on the bottom of a 2 quart baking dish. Place half the tortilla strips in the dish. Top with half of the turkey mixture and half of the remaining salsa. Repeat layers. Cover and bake at 325 for 30 minutes. Uncover, sprinkle with cheese and bake 10 minutes longer, until cheese is melted and mixture is heated through. Serve atop shredded lettuce on individual plates.
6 servings.

This salad is so tasty and always a hit at a potluck. You can use Macadamia nuts or sunflower seeds in place of cashews, if desired.

Crunchy Cauliflower and Pea Salad Recipe

1 pkg. (10 oz.) frozen peas
1 cup thinly sliced celery
1 cup chopped fresh cauliflower flowerettes
1/4 cup diced green onion
2 tbsp. sliced pimiento
1 cup roasted cashews
1/4 cup crisp-cooked crumbled bacon
1/2 cup dairy sour cream
1 cup Ranch salad dressing
1/2 tsp. Dijon mustard
1 small clove garlic, minced

Rinse peas in hot water; drain. Combine vegetables, nuts and bacon with sour cream. Mix prepared dressing, mustard and minced garlic together and pour over salad; toss gently. Chill Serves 4, or more.

Greek Side Salad Recipe

3 c. torn romaine
1/2 c. chopped peeled cucumber
1 slice red onion, halved & separated
1 small tomato, sliced
1/2 c. cubed part-skim mozzarella cheese
6 pitted Greek olives
4-1/2 t. olive oil
1-1/2 t. lemon juice
1 t. minced fresh cilantro
1 t minced fresh parsley
1 garlic clove, minced
1/4 t salt
1/8 t pepper
2 T crumbled feta cheese
1 t grated Parmesan cheese

Combine first 6 ingredients. In small bowl, whisk oil, lemon juice, cilantro, parsley, garlic, salt & pepper. Pour over salad; toss to coat. Sprinkle w/feta & Parmesan chesses.

Hearty Pasta Salad for Two Recipe

2/3 c. cooked spiral pasta
1/2 c. chopped fresh broccoli
1/3 c. Italian salad dressing
1/4 c. chopped peeled cucumber
1/4 c. chopped sweet red pepper
6 slices pepperoni, chopped2 slices hard salami, chopped
2 T crumbled feta cheese
2 T sliced ripe olives
1 t. ranch salad dressing mix.
1/4 t. celery seed

Combine all but pasta. Rinse pasta in cold water. Add to mixture; toss to coat. Cover and refrigerate at least 1 hour.

Chocolate Wafer Dessert Recipe
This is the classic. I’ve seen variations adding a variety of flavorings or a little sugar to the whipped cream and fresh fruit or candies as a topping. So get creative. In the refrigerator overnight, the wafers, moistened by the whipped cream, become cakey in consistency.

1 teaspoon vanilla extract
1 pint (2 cups) whipping cream, chilled
1 package (9-ounce) Nabisco Famous Chocolate Wafers

In a large mixing bowl, combine whipping cream and vanilla. Beat with electric mixer until stiff peaks form.

Spread a teaspoon of whipped cream onto each wafer, remembering you need a lot for frosting. Stack wafers together, then stand on edge on a serving platter to make a log. Frost with remaining whipped cream.

Refrigerate at least 4 hours or overnight.

Cut dessert diagonally into 14 slices. Store leftover cake in refrigerator.

Sue's Chicken Salad Recipe for Two

spinach leaves
1 (5 oz.) can chunk white chicken, drained
1 c. cut-up, mixed fruit (oranges, strawberries or nectarines)
1 Tbsp. sliced green onion
1 Tbsp. sliced almonds (optional)
2 Tbsp. mayonnaise or Miracle Whip
4 tsp. orange juice
strawberries and orange, sliced (for garnish)

Lightly toss together chicken, 1 cup cut-up fruit, celery, green onions and almonds. Arrange spinach leaves on salad plates and top with chicken mixture.

In a cup, mix together mayonnaise and orange juice. Drizzle over chicken mixture. Garnish with strawberries and orange slices.
Makes 2 Servings.

Sue's Macaroni Salad Recipe

1 c. cooked macaroni, cooled
1 hard-boiled egg
2 Tbsp. chopped celery
2 Tbsp. chopped onion
3 Tbsp. mayonnaise or Miracle Whip
1 tsp. sugar
1 tsp. vinegar
1/4 tsp. salt
1/4 tsp. prepared mustard

Combine ingredients and chill
Makes 2 Servings.

Sue's Potato Salad  Recipe for Two

1 large potato, baked, cooled and diced
1/4 c. celery, chopped
1/4 c. bell pepper, chopped
1/4 c. onion, chopped
1/4 c. dill pickle slices, chopped
1 Tbsp. pickle juice
2 Tbsp. mayonnaise or Miracle Whip
2 Tbsp. mustard

Cool potato and dice for potato salad. Add celery, pepper, onion and pickle. In a small bowl or cup combine the pickle juice, mayonnaise and mustard. Pour over potato and mix well.
Makes 2 Servings.

Sue's Caesar Salad for Two Recipe

2 cloves garlic
3 anchovy fillets
1 coddled egg
1/2 lemon
1/4 c. olive oil (preferably extra-virgin)
1/2 tsp. balsamic vinegar (Italy; do not substitute)
2 to 3 Tbsp. freshly grated Parmesan cheese (hard Italian)
1 large head romaine lettuce *
1/2 c. croutons **

*Wash and dry. Roll in paper towels and refrigerate. Tear when ready to use.
**I make my own with French bread.

In a large wooden bowl, mash the garlic cloves with a fork. Add the anchovies and continue to mash together into a fine paste. Using the back of a wooden spoon, mash the paste into the sides and bottom of a wooden bowl. Break the egg into the bowl and juice the lemon. Mix thoroughly, then add the olive oil and vinegar; blend. Mix in the Parmesan. Add the lettuce and toss the leaves so they are coated with dressing, being careful not to bruise the lettuce. Add croutons.

I hope that everyone is enjoying the nice Spring weather that we are enjoying in Southeast Texas. That wasn't the case on Sunday, as I drove home through lots of hail, rain, thunder and lightning. Rather than a 3 hour drive, it took me 4 hours to get home.

My mother always canned and froze vegetables and fruit that she and my daddy grew. She did that as far back as I can remember, and then some. The story is that when I was due to be born, she went to the doctor and he told her to go straight to the hospital because it was time. Instead, she went home and finished canning her fig preserves and then went to the hospital. She said that the doctor was pacing the floor when they got there. LOL. My mother passed away suddenly on 12/1/2014, at the age of 90. I would like to carry on as far as canning, but, unfortunately, while she was alive, I didn't make the time to learn how to do much of what she did. Therefore, I would love to have any recipes for jellies, jams, pickles, etc., that the group would be willing to share with me. I am way behind in reading the newsletters (like 6 months or so), so if there have been some postings in that length of time, I will see them and copy them. I did see one recipe for Strawberry Fig Preserves that Judy in Montana submitted. I remember my mother making that one years ago.

Mary J's Beef and Macaroni for Two Recipe

1/2 lb. ground beef
1/2 c. uncooked elbow macaroni
1/4 c. chopped onion
1/4 c. chopped green pepper
1/4 tsp. garlic powder
1/4 c. corn oil
1 (12 oz.) can tomato juice
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. Worcestershire sauce

Sauté beef, macaroni, onion and green pepper in hot oil until macaroni turns slightly yellow. Drain off excess fat. Add tomato juice and rest of seasonings. Bring to a slow boil. Turn to "simmer." Cover and simmer on low. Check so it doesn't stick at 15 minutes. Can be served from pan.

Mary J's Microwave Omelet for Two Recipe

1 Tbsp. butter
4 eggs
4 tsp. water
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. shredded Cheddar cheese

Place butter in a 9-inch microproof pie plate and place in oven. Combine eggs, water, salt and pepper; beat lightly with fork. Pour into heated pie plate and cook for 60 seconds. Sprinkle with cheese and cook 1 1/2 minutes. Fold and cut in half and serve immediately.

Mary J's Swiss Steak Recipe for Two

1/2 to 3/4 lb. boneless beef steak, 3/4-inch thick
2 Tbsp. flour
1/2 tsp. salt
1 (8 oz.) can stewed tomatoes
1/4 c. chopped celery
1/4 c. chopped carrot
1 Tbsp. chopped onion
1/4 tsp. Worcestershire sauce

Cut meat into 2 portions. Mix flour and salt; pound into meat; set aside remaining flour. Brown meat in small amount of hot shortening. Place meat in small shallow baking dish. Blend remaining flour with drippings in skillet. Add remaining ingredients; cook, stirring constantly until mixture boils. Pour over meat. Cover and bake in moderate oven (350°) for 2 hours or until meat and vegetables are tender. Sprinkle cheese over meat. Return to oven for few minutes.

Note: I did not have any plain stewed tomatoes. I used Italian stewed tomatoes instead and left out the onion, salt and pepper.

Mary J's Pork Chops for Two Recipe

2 center cut pork chops, about 1/2-inch thick
1 medium onion, sliced 1/4-inch thick
1 (16 oz.) can tomatoes
1/4 c. rice, cooked and drained

Brown pork chops on both sides. Salt and pepper. Cover the chops generously with rice. Place onion slices on top of the rice, then top the rice with the tomatoes. Cover and cook slowly until chops are tender. The juice from the tomatoes may be poured around the chops and a little water added from time to time.

Mary J's Sausage Casserole for Two Recipe

1/2 lb. bulk sausage or ground meat
1/4 c. bell pepper, chopped
1/4 tsp. oregano
1/2 c. water
1 (8 oz.) can tomato sauce
1/2 c. macaroni, cooked

Cook sausage or ground meat, bell pepper and onion. Add remaining ingredients. Put in casserole dish and sprinkle with Parmesan cheese. Cover and bake for 25 minutes at 350°.

Mary J's Chicken for Two Recipe

2 skinless, boneless chicken breasts
2 medium potatoes, diced
2 carrots, diced
1 (10 ounce) can cream of chicken soup

Cook chicken in pan until done. Dice chicken breasts and add potatoes, carrots, cream of mushroom soup and 1 can water. Bring to boil and reduce heat. Simmer 20 to 25 minutes. Season to taste.

Mary J's Chili for Two Recipe

1/4 lb. ground beef
1 (8 oz.) small can kidney beans, drained
1 (16 oz.) can cut up tomatoes
1/4 tsp. salt
2 tablespoons minced onion
1/2 tsp. chili powder

Brown beef. Drain. Add all other ingredients. Simmer 20 minutes.

Note: I like this recipe better with Ranch Style Beans (rinsed) rather than kidney beans.

Mary J's Lasagna for Two Recipe

1 lb. ground meat
1 clove garlic, minced
1 Tbsp. Crisco oil
1 (8 oz.) can tomato sauce
1/2 tsp. salt
1/4 c. grated Parmesan cheese
1/2 tsp. dried whole oregano
5 lasagna noodles
1/2 lb. Mozzarella cheese
1/2 c. Ricotta cheese
1/2 tsp. pepper

Sauté beef and garlic in oil until meat is browned; drain. Add tomato sauce, salt, pepper and oregano; cover and simmer 15 minutes, stirring occasionally. Cook noodles according to package directions. Drain. Layer half of noodles, Mozzarella cheese, Ricotta, meat sauce and Parmesan cheese in a lightly greased 1 1/2-quart casserole. Repeat layers. Bake at 375° for 15 minutes.

Mary J's Zucchini Salad Recipe

2/3 c. cider vinegar
1/3 c. vegetable oil
1/2 c. sugar
1 tsp. salt
1/2 tsp. pepper
1 small zucchini, sliced thin
1 small onion, cut in rings
1/2 c. sliced green pepper
1/2 c. chopped celery

Combine first 5 ingredients. Let stand several hours to blend flavors. Prepare vegetables and add dressing. Cauliflower and broccoli are also good added to this.

Mary J's Easy Zucchini Salad for Two Recipe

1 medium zucchini
1 medium yellow Crookneck squash
1/4 small onion, diced
1/4 c. Italian dressing

Dice squash and zucchini. Add all ingredients together. Chill and serve.

Mary J's Tomato and Zucchini Salad for Two Recipe

2 large tomatoes
2 medium zucchini
1 small red onion
1/4 c. Italian dressing
2 tsp. basil

Slice tomatoes in wedges. Thinly slice zucchini and chop onion. Combine all vegetables. Mix dressing with basil. Add to vegetables and toss. Seal bowl and marinate at least 1 hour.

Linda's Salmon Recipe
We make this at LEAST once per week. You can use any amount of salmon you want I guess. We usually make about 8-10 oz per piece per person. (We eat a lot, and you may make less per per person of course. . If we want two pieces, each for one of us, we use two bags.

Ingredients for one piece per bag / one serving:
8-10 oz or less cut up fresh vegetables . - any kind. OR, you can make this with NO vegetables at all. Our favorites are yellow squash, zucchini red onions, beets; julienne red bell peppers and green bell peppers and cut up jalapeno pepper

Take a LONG piece of parchment paper and lay it out on your counter.

Add any kind of seasoning on your fish either by just shaking it on or rubbing it in.

Put your piece of salmon somewhere in the top 1/4 or 1/3 or the parchment paper, so that when you will be able to fold it over and it will come out "even" on the open end
Dump all of your vegetables on top - and add more seasoning if you want - anything

Fold one end of the parchment over the other from top to bottom

Fold up the end a little at a time using a regular stapler staple the end closed

Do the same thing on each side. Your "packet does not have to be tight. It can had a little room inside when you shake it

Put your packet on a baking sheet, one that has a lip just in case it leaks a little. You can put more than one packet on the sheet

Preheat oven to 400 degrees
Bake 20-25 minutes

Cut a tiny piece off one of the corners and tip over the sink to drain. BE CAREFUL,. The steam inside is very hot. Cut the whole bag open and slide it on to a plate - again, be careful when you do this

That is it! No fat, and easy to do! I have done this with tilapia, cat fish trout etc. ANY fish. You may want to adjust the time based on the oz of your fish, bur I would not recommend anything less than at least 20 minutes. ENJOY
