Oatmeal Packet Cookies Recipe

You can start with any flavor oatmeal packet you like. Then, choose to add a small handful of toppings that sound like a perfect match to really take your cookie up a notch and cut the cravings. Each packet makes 1-2 cookies; depending on the size you make them, so get creative and make as many different flavor combinations as you like!

Each packet makes 1-2 cookies; depending on the size you make them, so get creative and make as many different flavor combinations as you like!

Only three ingredients are added to make these little guys. I added a tiny bit of flour for a little substance, so it tastes more like a cookie, than just some baked oatmeal. A little baking powder to give them a little rise and make them a little more light and fluffy. And lastly, some fruit puree to hold it all together. The natural sweetness of the applesauce or mashed banana makes these perfectly sweet, moist and chewy. Then, you can top it all off with some of your favorite oatmeal cookie mix-ins!

I paired the apples & cinnamon oatmeal packet with a small handful of white chocolate for extra sweetness before baking. You could also try dried cranberries which I thought would be a good combo too.

I added a little swirl of glaze, made from about 1/4 cup of powdered sugar mixed with a tiny bit of milk, to the top of the baked cinnamon & spice packet cookie, to create a little "cinnamon roll" cookie.

Lastly, I kept it classic and added some good ol' raisins to a maple & brown sugar oatmeal packet cookie before putting it in the oven, for a traditional oatmeal cookie taste, but chocolate chips or chocolate covered raisins would also work.

Yield: 1-2 cookies

1 packet instant flavored oatmeal, not cooked/just the dry oats ("apples & cinnamon", "maple & brown sugar", "cinnamon & spice", etc.)
1 tablespoon flour (may use oat flour or gluten free flour)
1/4 teaspoon baking powder
3 tablespoon applesauce or very ripe mashed banana
1 tablespoon toppings (raisins, white chocolate chips, chopped nuts, cream cheese swirl, dried cranberries, mini chocolate chips, icing swirl, etc)

Preheat the toaster oven to 350 degrees F. Stir together the oat packet, flour, and baking powder in a small bowl. Add the applesauce or mashed banana and stir in any toppings you choose. Flatten the mixture on a foil or parchment lined baking sheet, into one large or two smaller cookies. Bake for 8-10 minutes.

Peaches and Cream Pizza Recipe

Ingredients
8 oz. crescent dinner rolls
8 oz. cream cheese, softened
1/2 cup sugar
21 oz. can peach pie filling
1/2 cup flour
1/4 cup brown sugar
3 tablespoons oleo
1/2 cup sliced almonds
1/2 teaspoon almond flavoring

Directions
Separate dough into 8 triangles. Press onto a greased 12 in. Pizza pan; seal seams. Bake in 375 degrees oven for 8-10 edges are golden. Cool slightly on wire rack. In small mixing bowl beat cream cheese, sugar, and almond flavoring til smooth. Spread over crust. Top with pie filling. In small bowl, combine flour and brown sugar, cut in oleo until crumbly, sprinkle over peaches. Top with almonds. Bake 20-25 minutes or til golden brown. Cool, refrigerate. Serve with Cool Whip, opt.
Yield 12-16 servings

This is a very tasty , not too sweet , bread. One to eat, a second one to give away or freeze for later. I used this as a take home favor for a ladies' luncheon. I baked different kinds of bread by using different pudding mixes and baking in mini loaf pans. Initially, I baked them ahead of time placed them in
clear plastic bags from hobby store,and froze them in large freezer bags. On luncheon day, I removed them from freezer and tied pastel ribbon on end of each clear bag.They were quite well received.

Buttery Poppyseed Bread Recipe

Ingredients
1 Butter Cake Mix
Instant pudding mix(3.4 oz)vanilla or coconut
4 eggs
1 cup water
1/4 cup canola oil
2 tablespoons poppyseed
1teaspoon vanilla flavoring
1/2 teaspoon coconut flavoring
1/4 cup chopped pecans
1/4 cup coconut

Directions
In large bowl, combine all ingredients EXCEPT pecans and coconut. Best at medium speed for 2 minutes. Stir in pecans and coconut. Pour into 2 sprayed 9x 5 x 3 inch pans. Bake at 350 for 35-45 minutes or until a toothpick comes out clean in center. Cool 10 minutes before removing from pan.

Baked Beans with Dried Beef Recipe

Ingredients
1 small jar or package dried beef
1 tablespoon butter
1 medium can baked beans
2 tablespoon catsup
1 tablespoon sugar

Directions
Break dried beef into small pieces; brown in butter. Add beans, catsup and sugar. Heat and serve on pieces of brown toast.

Creamed Meat Luncheon Recipe

Ingredients
1 cup chopped dried beef
1 can peas or corn
1 small can chopped mushrooms
2 cup medium white sauce

Directions
Combine all ingredients and heat over low fire until near boiling temperature. Serve over toast or frozen waffles. Yield: 6 servings.

Dried Beef and Sauce Recipe

Ingredients
4 tablespoon margarine
2-4 tablespoon flour
2 to 2-1/2 cup milk
1/8 tsp. pepper
1 (6 oz.) jar dried beef

Directions
Melt margarine over low heat. Add flour and mix. Slowly add milk, stirring until of medium consistency. Season with pepper. Break up dried beef; add to sauce. Serve over baked potato or toasted bread.
Yield: 3 or 4 servings.

Chicken Supreme Recipe

Ingredients
2 cup dry herb dressing
1 3 lb. chicken cut up
1 cup buttermilk
paprika

Directions
Line 9 X 13 inch baking pan with foil. Roll dressing so it will be fine crumbs, put in bag with crumbs and shake until covered. Place in pan; sprinkle with paprika. Bake in 350 degree oven 1 hour and 15 minutes or until chicken is tender. Serve hot, but is also delicious when served cold. Yield: 4 servings.

Chicken Wingding Recipe

Instructions
16 chicken wings
1 medium onion, chopped
Oil
2 cans tomato soup
2 soup cans water
1 tsp. salt
1/4 tsp. chili powder
1/8 tsp. pepper
1/8 tsp. sweet basil

Directions
Brown wings and onion in small amount of oil. Stir in soup, water and seasonings. Cover tightly. Simmer 40 to 50 minutes or until chicken is tender. Can substitute 2 1/2 lbs. chicken parts for wings. Yield: 6-8 servings.

Peach Meringue Pie Recipe

Ingredients
5-6 ripe peaches
1-2 T. sugar
Few drops lemon juice
2 egg whites
4 T. confectioners or granulated sugar

Directions
Prepare baked pie shell - 7 in. Peel & slice fresh peaches
sprinkling a little sugar over them, also the lemon juice.
Whip eggs until stiff, beat in sugar, 1/2 t. at a time.
Continue beating until mixture is very heavy & stands in peaks.
Place peaches in shell, cover w/meringue. Bake 300 for 15 min.
or until meringe is brown.

Peach Streusel Pie Recipe

Instructions
5 cups peeled, sliced peaches
3/4 c. sugar
1/4 c. all-purpose flour
1/4 t. salt
1 T. lemon juice

Directions
Place in unbaked pie shell.
Combine 1/2 c. sugar, 1/2 cup flour, 1/4 t. ground cinnamon,
1/4 t. ground nutmeg. Cut in 3 T. cold butter. Sprinkle filling
over top. Bake 375 for 1 hour until bubbly & browned.

Iím looking for a pie recipe, or any dessert, with pumpkin pie spice only, no pumpkin, as my father-in-law canít have pumpkin due to a kidney problem. His diet is very limited and itís difficult to find recipes to make for him. If you have any suggestions for using the flavor but not the pumpkin Iíd appreciate them. Thanks in advance!

Such a great newsletter today. These are the kind of recipes I like - short and sweet! I especially will be trying the Sunrise Cherry Pie that Judy sent in.

Also, a couple of weeks ago someone was talking about cooking corn. For years now I cook it this way - shuck the corn, wrap it in paper towel, slightly dampen it and pop it in the microwave for 2-3 minutes per ear. Delicious and fast.

Marinated Grilled Chicken with Zucchini Recipe
Weight Watcher Plus Points = 6

Ingredients

Marinade
Juice of 2 clementine oranges (1/2 cup)
1 tablespoon olive oil
1 cloves garlic, minced
1/8 teaspoon ground Black pepper
Cooking spray
1 pounds boneless chicken breast tenderloins
Zucchini
2 medium zucchini, sliced into 1/2-inch circles
2 tablespoon olive oil

Instructions
In a medium bowl, whisk together all marinade ingredients. Place the chicken tenderloins in a large plastic storage bag. Pour marinade over tenderloins and coat well. Seal bag and refrigerate 1 hour or overnight.

Spray grill with cooking spray and preheat to medium-high. Place chicken tenderloins on grill and brush with any remaining marinade. Grill about 4-5 minutes per side or until done. Brush zucchini with olive oil. Grill 3-5 minutes per side. Serve chicken tenderloins with zucchini rounds. Serves 4

Chili Lime Corn on the Cob Recipe
Weight Watcher Plus Points = 3

Ingredients
4 medium ears corn on the cob, shucked
1 lime, juiced
1 teaspoon lime zest
2 tablespoons light trans-fat free margarine, softened
1 teaspoon chili powder

Directions
Preheat the grill to medium-high.
In a small bowl, mix together the lime juice, lime zest, margarine, and chili powder.

Using a spoon and your hands, spread the margarine mixture evenly over the 4 ears of corn.

Wrap the corn individually in aluminum foil. Grill 20 minutes, turning frequently. Serve hot.
Serves 4 (serving size 1 cob)

Guacamole Stuffed Cherry Tomatoes Recipe
Weight Watcher Plus Points = 1 point

Ingredients
24 cherry tomatoes (round, not grape style)
1 ripe avocado
1 lime, juiced
1 clove garlic, minced or grated
2 tablespoons chopped cilantro, divided
1/2 teaspoon salt (optional)
1/2 teaspoon ground black pepper

Directions
Cut out the stem of each cherry tomato, cutting deep enough to make a hole into the middle of the tomato without going through the other end.

Scoop the insides of the tomato out and finely chop the insides of tomato and reserve for the guacamole. Place each scooped out tomato upside down on paper towels to drain.

In a medium bowl, mash the avocado with a fork and mix in the scooped out tomato pieces, lime juice, garlic, 1 tablespoon cilantro, salt (optional), and pepper.

Scoop or pipe the guacamole into the hollowed out tomatoes, dividing it equally among each tomato. Sprinkle the remaining cilantro on top of each tomato.
Serves 12

Pork Chops with Peach Salsa Recipe
Weight Watchers Plus Points = 5

Ingredients
1 pound boneless, pork loin chops (4 pork chops)
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 teaspoon dried oregano

Peach Salsa
2 peaches, peeled, cored and diced
1/2 green pepper, finely diced
1/3 cup red onion, finely diced
1 tablespoon rice wine vinegar
1 teaspoon olive oil
1 teaspoon fresh cilantro, chopped
1 packet sugar substitute

Instructions
Prepare an indoor or outdoor grill. Season pork chops with pepper, garlic powder and oregano. Grill pork chops over medium heat for 3-4 minutes per side or until done.

In a small bowl, mix together salsa ingredients.

Top each cooked pork chop with about 1/4 cup salsa mixture and serve.
Serves 4

Cilantro Lime Roasted Chicken Recipe
Weight Watcher Plus Points = 3 Points

Ingredients
Cooking Spray
2-1/2 pound whole chicken, cut into 8 pieces
2 tablespoons chopped cilantro
1 lime, zested and juiced
1 tablespoon honey
2 cloves garlic, minced
1/2 teaspoon ground black pepper
1/2 teaspoon salt (optional)

Instructions
Preheat oven to 375 degrees F. Coat a baking dish with cooking spray.

Remove the skin from the chicken and arrange in a single layer in the baking pan.

In a small bowl, whisk together the cilantro, lime zest, lime juice, honey, garlic, ground black pepper and salt (optional). Pour the mixture evenly over the chicken and bake for 45-50 minutes or until the internal temperature of the largest piece of chicken is 165 degrees.
Serves 6
