I use skinless thighs and drumsticks with the bones in them for us. We really like this for something different.

Super Crunch Chicken Recipe

8 (1 lb.) boneless skinless chicken thighs
1/4 cup Miracle Whip dressing, or mayonnaise
1 pkg. Stove Top stuffing mix for chicken
1/4 cup Kraft grated Parmesan cheese

Spread or Brush chicken with dressing. Put dry stuffing into a pie plate; add cheese and mix. Coat each piece of chicken well with the dry stuffing mixture. Place on foil-covered baking sheet. Discard any leftover stuffing mixture. Bake chicken at 375 for about 50 minutes (less time if boneless).

The meat turns out so delicious and I thicken the sauce for delicious gravy to serve over mashed potatoes.

Sunday Supper Steaks Recipe

6 to 8 cubed beef steak
Cooking oil
Pepper, to taste
1 envelope dry onion soup mix ( I use onion-mushroom)
1 can mushrooms, drained
1 medium onion, sliced thin
1 can (or jar) of beef gravy
1 gravy can of water

Dredge steaks in flour and sprinkle with pepper and brown lightly in hot oil. Place in greased 9 x 13" pan. Sprinkle dry soup over meat and cover with mushrooms and onions. Mix gravy and water and pour over top. Do not stir! Cover tightly and bake at 250 for 3 to 4 hours.

Wacky Smacky Cake Recipe

1-1/2 cups flour
1 tsp. baking soda
1 cup sugar
3 tbsp. unsweetened baking cocoa
1/4 tsp. salt
1/3 cup cooking oil
1 tbsp. cider vinegar
1 tsp. vanilla
1 cup cold water
1 cup mint flavored baking chips

In large bowl, combine flour, soda, sugar, cocoa and salt. Using fingers or spoon, make 3 holes in the flour mixture. Fill 1 hole with oil, 1 with vinegar and 1 with vanilla. Pour water over and with fork mix together until smooth. Pour batter into buttered 9" springform pan. bake 30 minutes at 350, or until toothpick inserted in the center comes out clean.. Top cake immediately with the mint chips; return to oven for 1 minute until chips partially melt. Spread chips with spatula. Cool 20 minutes.
Remove cake from pan; cool completely.

Betty Crocker Free Samples Just for You 

Shrimp and Broccoli Packet Recipe

2 sheets ( 12 x 18 in. each ) Heavy Duty aluminum foil
1/2 lb. med. raw peeled & deveined shrimp
1 c. instant rice
2 t. seafood seasoning
2 cloves garlic, minced, divided
2 c. broccoli florets
2 T. butter, cut in pieces
8 ice cubes
1/2 c. water

Preheat to 450. Spray foil w/nonstick spray. Center 1/2 shrimp on each sheet of foil. Arrange rice around shrimp; sprinkle shrimp & rice w/ seasoning & 1/2 garlic. Place broccoli over shrimp; sprinkle w/ remaining garlic. Top w/ butter. Place ice cubes on top. Bring up foil sides. Double fold top and one end. Through open end, pour in water. Double fold remaining end to seal packet, leaving room for heat circulation inside. Repeat to make 2 packets. Bake 15 - 18 min. on cookie sheet in oven. Stir rice before serving. 2 Servings. Squeeze fresh lemon mice over shrimp before serving.

Good morning Nancy and all Landers,
I'm getting ready for the Super Bowl tonight by making some of the wonderful recipes posted on Nancy's Kitchen. Newsletter looks great. I like many people in Wisconsin are ready for winter to be over lol or at least give me some sunshine. But on the other hand I'm glad we don't have all the snow like out east.

Years ago my sister had a great recipe for jerky. The other day I asked her for it and she could not find it. Does anyone have a tried and tested recipe for beef Jerky?

Sauerkraut Soup Recipe

Recipe? There's a recipe? Okay, I'm a touch cook for things like soup. This soup is almost like a juicy stew. I figure on what I'd serve per person if it were a dinner plate and work from there. If I'm not using my own homemade sauerkraut, I buy it from the European grocers/deli where it can be purchased in bulk. When cooking for the family, I'd use about 3/4 cup or 6 oz. sauerkraut per person, maybe more. One potato each, new potatoes are best, 1 1/2 smoked sausages each, or well seasoned fresh if it's what's in the freezer needing to be used. Let's see, a good sized onion, a stalk of celery and a small carrot, maybe a small turnip for the whole pot, and more for a larger batch. I like my soup chunky, so everything is chopped fairly coarsely. Fry up the chopped sausage, or cook fresh sausage, then cut into rounds and chop, add the vegetables, toss in the sauerkraut, a few good grinds of pepper, whatever herbs you like, thyme for me, and enough chicken or vegetable stock to cover. I sometimes use stock cubes. I've put in that sad looking tomato, and it's nice, but my favorite weird addition, several whole cloves of garlic. They taste mild this way. Cook until the vegetables are done.

I don't drain the sauerkraut, but it's not got a lot of juice anyway. If it tastes a little too salty, before cooking, I'll rinse it, but that's rare. And no additional salt in the soup, unless it needs it, at the end. A dollop of sour cream is nice to serve, but I don't usually bother.

Serve with that nice sourdough or whole wheat buns from the bakery. Freezes well.

This is a good wintertime pie when there are not many fresh fruits available. In a mixing bowl combine:

Nana's Oatmeal Cookie Pie Recipe

3 eggs lightly beaten
1 cup clear corn syrup
3 tablespoons melted butter
Add in 3/4 cup dry oatmeal
1 tablespoon flour
1 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup raisins

Pour into an unbaked pie shell. Bake at 325 for 45-50 minutes. Top should be golden brown and center set.

When I first subscribed to this newsletter (about 2005) Zelma (or a similar name) sent in a recipe for German Chocolate Cake. I don't remember what all went into the cake except that the icing was included in the cake before it was baked. Does anyone have that recipe. When I moved I misplaced several recipes.

Is there a way to get green tomatoes at the grocery store this time of the year. If so how. They never seem them out in the produce area. Fried green tomatoes are so good fried.

Chicken and Bacon Recipe

10-12 Pieces Of Bacon
2 Chicken Breasts
Half a small onion Finely Diced
Half a cup of Grated Mozzarella Cheese
Half a cup of Diced Tomatoes
2oz Softened Cream Cheese
Good Handful of fresh Spinach
2 Tablespoons of Finely Chopped Cilantro
Salt and Pepper to taste

Pre-heat oven to 450F. Pound out the chicken breasts until thin enough to roll. Lay out the bacon flat barely overlapping. Place the Chicken on top. Mix the spinach, cilantro, tomatoes, mozzarella and onion together in a bowl. Spread the cream cheese on the chicken breast and salt and pepper to taste. Place mixture from bowl onto middle of chicken breast. Careful roll up the chicken breast and use the bacon to secure in place (if you wish to secure in place with wooden skewers please do). Careful place completed roll into an cast iron skillet on a medium heat. Brown the bacon on all sides being careful when turning to avoid roll falling apart.

Place skillet in oven at 450F for 20 mins to complete cooking. Remove from oven and allow to rest for 5 minutes before slicing.

Just got this recipe from a friend in Michigan who swears this one the very best recipes she has ever tried.

Chili Mac Recipe

8 oz. elbow macaroni
1-1/2 lbs. lean ground beef
4 cloves garlic, minced
1/2 cup medium onion, finely chopped
2 ribs celery, finely chopped
1 can 16 oz. chili beans
1 can (14 oz.) Mexican-style tomatoes
1 can (8 oz.) tomato sauce
1 beef bouillon cube, crushed
1 tbsp. chili powder

Brown beef in large skillet with onion, celery, green pepper and garlic. Add remaining ingredients, except macaroni and cook on low heat for 1 hour. Cook macaroni according to directions on package; stir in chili mixture.

A few months ago, at a wedding dinner, guests were served a dish called Peppercorn Chicken. It consists of skinless chicken breasts covered with a white sauce with whole black peppercorns. I have surfed the net looking for something similar but cannot find such a recipe. Any ideas?

Nancy, when making a home made cake and using Splenda someone told me you need to add baking powder and something else to make it rise better? Can anyone help me with this. Thanks and love your newsletter and all your hints.

There have been a lot of crock pot recipes lately.  I don't remember seeing the ones I use all the time.  I have never contributed before so here are mine.

Emma's Crock Pot Pepper Steak Recipe

1-1/2 to 2 lb. round steak, cut in strips
1/4 c. soy sauce
1 c. chopped onion
1 clove garlic, minced
1 tsp. sugar (optional)
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground ginger
4 tomatoes (cut in wedges) or 1 can (16 oz) tomatoes, with liquid, cut up
2 lg. green peppers, cut in strips
1 can beef broth may be added

Brown meat in oil in skillet. Transfer to slow cooker, along with the rest of ingredients. Combine 1/2 cup water, 1 Tbsp cornstarch. Stir into liquid in cooker. Cover and cook on high for 5 to 6 hours. Serve over noodles or rice.
6 to 8 servings.

Emma's Crock Pot Scalloped Potatoes Recipe

2 c. water
1 tsp. cream of tartar
5 medium potatoes, thinly sliced
1/4 c. all-purpose flour (plain)
1 tsp. salt
1/8 tsp. pepper
1-1/2 c. milk
1 to 1-1/2 c. shredded cheese

Combine water and cream of tartar in large bowl; mix well. Add potatoes and stir well. (This will help keep the potatoes from darkening.) Drain. Turn potatoes into slow cooker.

In a saucepan, stir together flour, salt and pepper. Whisk in milk gradually until no lumps remain. Heat and stir until boiling and thickened. Stir in cheese to melt. Pour over potatoes. Cover and cook on low for 6 hours.

Emma's Crock Pot Barbecue Pork Roast Recipe

1 pork roast
1/2 c. margarine
3/4 c. vinegar
1/3 c. ketchup
3 Tbsp. brown sugar
1/2 tsp. dry mustard
2 Tbsp. Worcestershire sauce
1/4 tsp. red pepper

Combine ingredients in crock pot. Cook on low for 6 hours.

Emma's Crock Pot Pork Ribs and Sauerkraut Recipe

pork shoulder or spare ribs
Lawson's seasoning salt to taste
2 medium onions, sliced
1 large jar Claussen sauerkraut (found in refrigerator section)
5 to 6 potatoes, scrubbed well and diced

Place meat in bottom of crock-pot. Sprinkle with seasoning salt. Make layers of onions, kraut and potatoes. Sprinkle again with seasoning salt. Cook on low 8 hours.

Emma's Crock Pot Sweet and Sour Ribs Recipe

3 to 4 lb. pork spareribs
1 c. chicken broth
1/4 c. brown sugar
1/4 c. vinegar
1 Tbsp. soy sauce
salt and pepper to taste
onion and onion powder to taste
2 Tbsp. cornstarch
1 c. orange juice

Place ingredients in a crock-pot and cook 6-8 hours.

Emma's Crock Pot Pork Chop Recipe

4 pork chops
1 can tomato soup
1/2 c. water
1 tsp. Worcestershire sauce
1/2 tsp. salt
1/2 tsp. oregano
6 to 8 small potatoes
4 carrots, split lengthwise and cut in 2-inch pieces

Brown chops; pour off fat. Place pork chops on bottom of crock pot. Add rest of ingredients on top of pork chops and cook 6-8 hours on low.

Looking for a recipe for chicken alfredo

Hamburger Broccoli Casserole Recipe

2 lbs. ground beef
1- 16 oz. pkg. frozen broccoli
1 cup grated cheddar cheese
1 med. onion, chopped
2 or 3 stalks celery, chopped
1 stick butter
1- 20 oz. bag frozen tater tots
2 cans cream of mushroom soup

Sauté onions and celery in butter. Brown ground beef and drain. Cook broccoli in salted water until tender, then drain. Place ground beef in casserole dish. Pour onions and celery on top. Then place cooked broccoli on top. Place tater tots on top, then pour soup over them.
Sprinkle cheese on top and bake 1 hr. @ 350 degrees.

Skillet Pineapple Upside Down Cake Recipe

1/4 cup butter or margarine
1 cup firmly packed brown sugar
1/2 cup chopped pecans
1(15 1/4oz. can pineapple slices, undrained
3 eggs (separated)
1 cup all-purpose flour
1 cup sugar
1 tsp. baking power
1 tsp. salt
6 or 7 maraschino cherries

Melt butter in a 9 inch cast iron skillet. Add brown sugar, pecans. Mix well. Drain pineapple ,reserving 1/4 cup plus 1 Tbsp. pineapple juice, set aside. Arrange pineapple slices in a single layer over brown sugar mixture, set aside. Beat egg yolks until thick and lemon colored. Gradually add sugar, beating well. Combine flour, baking power and salt, Add to egg mixture. Stir in reserve pineapple juice. Beat egg whites (at room temperature) until stiff peaks form. Fold into flour mixture. Spoon batter evenly over pineapple slices. Bake at 375°for 30 to 35 minutes. Immediately invert cake onto a serving plate. Place cherries in center of pineapple rings. yield one 9-inch cake.

Linda's Flavored Butter Recipes

Easy Raspberry Butter
4 oz. of unsalted butter, softened
4 tbsp. strained raspberry jam

Whip butter in an electric mixer until fluffy. Beat in raspberry jam. Spoon into a small crock or bowl, and refrigerate. Set out to soften well ahead of time.

Strawberry Butter
1 (10 oz.) pkg. frozen berries, thawed and drained
1 c. butter
2 c. powdered sugar

The fruit and butter should be at room temperature. Cream butter and sugar until fluffy. Add berries. Refrigerate.
Makes 4 cups.

Cranberry Apricot Butter
1/2 c. butter, softened
1/4 c. apricot preserves

In small bowl, combine. Beat until light and fluffy. Makes 3/4 cup.

Cranberry Butter
1 bag cranberries (coarse chopped, grated in priocessor (can use less)
1/2 c. powdered sugar
1 stick unsalted butter (1/2 c.)
1 tbsp. lemon juice

Blend sugar and butter together. Add lemon juice and then add cranberries. Put in bowl and refrigerate.

Honey Pecan Butter
1/2 c. butter, room temperature
2 tbsp. honey
1/4 tsp. cinnamon
1/4 c. chopped pecans

Mix and serve with nut breads, croissants or biscuits. (Good on pancakes or waffles, too.)

Honey Butter
1 c. soft butter
1 c. powdered sugar
1 tsp. cinnamon
1 c. honey

Cream butter, sugar and cinnamon thoroughly. Add honey and cream again. Pour into jars and cover. Serve with homemade bread.

Honey Lemon Butter
1/2 c. butter, softened
2 tbsp. honey
1 tsp. fresh grated lemon peel
1 tbsp. fresh squeezed lemon juice

In small bowl, combine all ingredients, blending well. Makes about 1/2 cup.

Please if anyone has an old recipe for apple butter, I would truly appreciate one. I remember my Mom making it when we were kids, but of course we are always too busy to sit down and get the recipes from them and don't realize until it's too late. Please I need some home made apple butter, and don't forget your Mom.
