 Here are some of my most used recipes for the lady that is going back to work and wanting main dish crock pot recipes.

 Linda's Crock Pot Baked Pork and Beans Recipe

Ingredients
1 large (28 ounce) can pork and beans
1 c. brown sugar
1 tsp. mustard
1 Tbsp. vinegar
1 Tbsp. Worcestershire sauce
1/3 c. ketchup
1 lb. ground beef

Directions
Brown ground beef; drain. Mix all ingredients well. Cook in crock-pot on low for 5 hours.

Linda's Crock Pot Roast with Vegetables Recipe

Ingredients
3-1/2 to 4 lb. beef round or chuck pot roast
1 can cream of mushroom soup
1 pouch onion dry soup mix
6 potatoes, quartered
6 carrots, cut into 2-inch slices
1/4 cup water

Place roast in crock-pot containing a 1/4 cup of water. Pour onion soup mix over roast. Place carrots and potatoes in pot and add soup, undiluted. Cover and cook on low for 8 hours.

Linda's Crock Pot Beef Stroganoff Recipe

Ingredients
2 lb. stew beef, cut into one inch pieces
1 can French onion soup
1 can cream of mushroom soup
1 can celery soup
1 soup can water

Directions
Place beef, soups, and water in crock-pot; cook on low 8 hours. Serve over noodles.

Crock Pot BBQ Chicken Recipe

1 (4 lb.) chicken, cut up (or chicken pieces)
1 small bottle catsup
1 medium onion, chopped
1 (10 oz.) bottle Coca-Cola

Place the ingredients in a 3 1/2-quart crock-pot and in the order listed. Stir once. Turn pot to low setting and cook 6-8 hours. Remove bones from chicken and serve meat and sauce over hot rice.
Serves 6.

Linda's Crock Pot Swiss Steak Recipe

2 lb. round or Swiss steak, cut into 8 pieces
salt and pepper to taste
1 large sliced onion
1 (14-1/2 oz.) can tomatoes

Season steak with salt and pepper. Place in crock-pot with onion. Pour tomatoes over top. Cook 6-8 hours on low.
Makes 6-8 servings

Mary J's Crock Pot Cabbage Soup Recipe

Ingredients
1 lb. ground beef, browned and drained
4 carrots, sliced
4 stalks celery, sliced
1 small head cabbage, cut into eighths or smaller
1 (6 oz.) can V-8 juice or tomato juice
1/2 c. uncooked rice
salt and pepper to taste

Directions
Place browned meat in bottom of crock-pot. Layer prepared vegetables on top. Pour in juice. Cook for 4 to 5 hours on high. If you use rice, add during last hour of cooking. Serves 6 to 8.
Makes 4-5 Servings

Mary J's Pork Chops with Gravy Recipe

Ingredients
4 (6 1/2-inch) pork chops
mustard
2 cans cream of chicken soup
1 chopped onion
1 c. celery
1 c. water
garlic salt
salt and pepper

Directions
Brush pork chops on both sides with mustard. Brown lightly in frying pan. Layer pork chops with soup, onion and celery in crock-pot. Cook on low for 8 to 10 hours or until completely cooked.
Serves 4

Mary J's Crock Pot Pineapple Pork Chops Recipe

Ingredients
4 pork chops
1 c. water
1 can sliced pineapple
salt and pepper to taste

Directions
Spray crock pot with Pam. Put pork chops in first. Add water and pineapple. Put a slice of pineapple on each pork chop. Cook on low for 6-8 hours or until done.

Mary J's Crock Sweet and Sour Pork Recipe

Ingredients
2 lb. lean pork, cut in strips
1 green pepper, cut in strips
1/2 med. onion, thinly sliced
1/4 c. brown sugar, packed
2 Tbsp. cornstarch
2 c. pineapple, reserve juice
1/4 c. cider vinegar
1/4 c. water
1 Tbsp. soy sauce
1/2 tsp. salt

Directions
Spray with Pam. Place pork strips in crock pot. Add green pepper and onion. In bowl, mix brown sugar and cornstarch. Add 1 cup pineapple juice, vinegar, water, soy sauce and salt. Blend until smooth. Pour over meat and vegetables. Cover, cook on low 6 hours. One hour before serving, add pineapple chunks. Stir into meat and sauce. Serve over rice or chow mein noodles.
Makes 4-5 Servings

Mary J's Crock Pot Pork Chops with Cabbage Recipe

Ingredients
4 pork chops
4 Tbsp. all-purpose flour
2 Tbsp. vegetable oil
3 to 4 medium potatoes, quartered
1 medium onion, chopped
1 small cabbage, chopped in large wedges
3/4 c. water
salt and pepper to taste

Directions
Coat chops with flour and brown in oil in skillet. Chops do not have to be done, just brown. In crock-pot, place potatoes and onions. On top of potatoes, place cabbage, salt and pepper. Place browned chops on top and pour in water. Do not stir! Cover and cook on low for 6 to 8 hours or until tender.

Grilled Porter House Steak Recipe

Ingredients:
2 pounds porterhouse steak
8 cloves garlic
6 tablespoons chipotle chile powder
6 tablespoons kosher salt
6 tablespoons vegetable oil
1 tablespoon black pepper

Directions:
Combine garlic, chile powder, salt, oil and pepper in a small bowl. Mix until it forms a thick paste.

Rub paste over the entire surface of the steak. Wrap steak in plastic wrap and refrigerate for several hours. Preheat grill. Grill steak over as high a heat as you can for 2 minutes. Flip and continue grilling for 2 more minutes. Move to a cooler part of the grill or reduce heat to medium. Continue grilling until done. About 4 minutes per side.

Crock Pot Sweet and Spicy Chicken Recipe

Ingredients
1 package taco seasoning mix
8 ounces apricot jam
12 ounces salsa
1-1/2 pounds chicken pieces

Directions
Spray crock pot with non stick spray or use a crock pot liner. Put chicken in the bottom of the crock pot, pour over the remaining ingredients (mixed) and cook 8 hours on low.

Crock Pot Lemon and Garlic Chicken Recipe

Ingredients
2 Cloves Garlic, chopped
4 Tablespoons Olive Oil
2 Tablespoons Chopped Parsley
3 Tablespoons Lemon Juice
1/8 Teaspoon Pepper
1 1/2 Pounds Chicken Pieces

Directions
Spray crock pot with non stick spray or use a crock pot liner. Put chicken in he bottom of the crock pot, pour over the remaining ingredients (mixed) and cook 8 hours on low.

Crock Pot Blackberry BBQ  Chicken Recipe

3/4 cup Ketchup or your favorite BBQ sauce
3/4 cup Blackberry Jam (Strawberry, peach, and apricot also work well)
1/4 cup White Vinegar
1 Teaspoons Worcestershire sauce
2 Teaspoons Chili Powder
Salt to taste

Spray crock pot with non stick spray or use a crock pot liner. Put chicken in the bottom of the crock pot, pour over the remaining ingredients (mixed) and cook 8 hours on low.

Here is a easy and inexpensive dish that our kids and grandkids like. You can use your own chili instead of buying it and often in this area hot dogs are on sale.

Robbie's Mexican Hot Dog Casserole Recipe

1 pkg. hot dogs
1 can (20 oz.) chili
1 can (8 oz.) tomato sauce
1 pkg. (12) flour tortillas
1 pkg. (8 oz.) cheddar cheese, grated
Chopped onion

Roll each hot dog in tortilla and secure with toothpick. Place them side by side in a 13 x 9 inch pan. Mix chili with tomato sauce and spoon over hot dogs in tortillas. Sprinkle cheese and onion over top. Bake at 350 degrees for 25 to 30 minutes.

Happy New Year, Nancy and all!

Crockpot for Betty L and frugal for Mary Ann and healthy for the new year! I've used this recipe for many years. It's never the same twice. If you don't use it all, it's great reheated in the microwave, or covered, in the oven. Keep it in mind for those especially cold winter days. I really do prefer it meatless, but it's a great way to use up leftovers. The nice thing is that you can do all the prep the night before, and toss it in the crockpot before you go out the door. And don't forget to set the crockpot before you head out for work!
You can also serve it with rice or artisan bread.


Winter Vegetable Stew Recipe
This is a combination or 3 or 4 recipes I found online many years
ago. Sadly, it was well before I saved URLs, but because it's so mixed
up.

1-1/2 cups diced onions , whole pearl onions, or shallots
2 cups carrots or 3 carrots, chopped, diced, sliced
2 cups rutabagas or 1 small, cut in small chunks, diced
2 cups potatoes, larger chunks
2 cups turnips or 3 turnips, peeled and sliced in small chunks
1 apple, peeled, cored, in chunks
(1 lb ground beef or fresh sausage or smoked sausage, chopped)
1 (20 ounce) can diced tomatoes with juice or 3 good sized roma
tomatoes, coarsely chopped
(1-2 bouillion cubes, dissolved in 1/2 cup hot water )
2 cloves garlic, or more
1/2 tablespoon desired dried seasonings, I prefer thyme only
1/2 teaspoon pepper
(be careful with salt if using bouillion cubes)
Liquid: use up to 2 cups red wine, or white wine or apple juice and
water or whatever you have at hand. If using canned tomatoes and
juice, use less of other liquids.

Alternates: I've also added a few tablespoons of barley.
Also consider sweet potato, squash, parsnips, lentils, a stalk of
celery, some people don't like rutabaga, so, don't add it, bay leaf, a
hot pepper or whatever your heart desires.

Brown meat, if using.
Place first 5 ingredients in pot.
Place meat over veggies in pot.
Add tomatoes and boullion mixture.
Add seasonings.
Add extra liquid, if using. You may want to thicken this later. I don't.
Cook on low for 10 hours.
Serve with a dollop of sour cream or yogurt.

Notes: My crockpot is small, and I cook for one, so I reduce all ingredients drastically.

I usually use 1 carrot, 1 potato, 1 smallish onion, 1 roma tomato, and so on.
