Here is another low carb snack that a friend uses. I have not tried them, but she likes them a great deal.
These low-carb, high-protein muffins use unsweetened apple sauce and almond meal to cut down on added sugars and excess carbs. They're extremely portable and convenient if you're on the go and deliver less than 10 grams of carbohydrates per muffin.

Low Carb Muffins Recipe

2 cups almond meal
5 scoops vanilla protein powder
4 whole eggs
1 cup unsweetened apple sauce
1/2 stick butter
1 tablespoon cinnamon
1 teaspoon all spice
1 teaspoon cloves

Directions: Preheat oven to 350 degrees. Melt butter in microwave (~30 seconds on low heat). Thoroughly mix all the ingredients in a bowl. Spray muffin tin with non-stick cooking spray or use cup cake liners. Pour mix into muffin tins, make sure not to over fill (~3/4 full); this should make 12 muffins (2 muffin trays). Place one tray in the oven and cook for 12 minutes. Make sure not to overcook as the muffins will become very dry. Once cooked, remove from the oven and cook the second muffin tray.

Servings: 6 (2 muffins/serving)

My Favorite Left-Over Potato Recipe

Fry bacon crispy (enough according to the amount of left-over potatoes you have) & set aside. Cut up potatoes into slices or small chunks, whatever you prefer. Cut up onions & mix with your potatoes, according to your taste.

Place mixture in bacon grease, removing some of the grease if you have to much Warm mixture, then place your favorite cheese on top and mix with potatoes when melted. Add crumbled up bacon to the top of your serving.

No doubt, high fat, but so delicious once in a while! This came from a friend from Germany many years ago.

Sharon's Potato Ground Beef Recipe

2 lb. ground beef
8 potatoes, sliced thin
1 onion, chopped
1 bell pepper, chopped
1 (20 oz.) can pork and beans
2 cans tomato soup

Put potatoes in bottom of casserole bowl. Layer the peppers and onion, then meat over potatoes. Next layer the pork and beans and finish with the tomato soup.
Cook 1 hour at 350°.
Makes 6-8 servings

Sharon's Pork Chop Casserole Recipe

4 pork chops
1 can cream of mushroom soup
1/2 c. sour cream
1/4 c. water
2 tsp. chopped parsley
4 c. thinly sliced potatoes

Brown chops slightly on both sides. Place in greased casserole in layers as follows: a layer of sauce, one of potatoes, then salt, pepper and soup. Put pork chops on top with a little of the soup on top of them. Bake in covered casserole at 375° for 1 hour and 15 minutes or until potatoes are done.
Makes 4 Servings

Sharon's Crock Pot Pork Chop and Sweet Potatoes Recipe

4 pork chops
4 or 5 sweet potatoes
1 medium onion, chopped
1 can tomatoes

Brown chops and cut up meat. Place in crock-pot. Peel potatoes and slice. Add onion, potatoes and tomatoes; cook until potatoes are tender. White potatoes may be substituted for sweet potatoes. Salt and pepper to taste.

Ground Beef Recipes

Sharon's Crock Pot Pork Chops Recipe

6 to 8 pork chops (about 1-inch thick)
1/2 c. all-purpose flour
1 tsp. salt or less
1 1/2 tsp. dry mustard
1/2 tsp. garlic powder
2 Tbsp. vegetable oil
1 can chicken and rice soup (do not dilute)

Dredge chops in mixture of flour, salt, dry mustard and garlic powder. Brown in oil in skillet. Place browned pork chops in crock-pot. Add undiluted soup and cook on low for 6 to 8 hours.

Sharon's Crock Pot Easy Pork Chops Recipe

6 thick pork chops
Salt and Pepper to taste
6 Tbsp. Italian dressing

Flour pork chops well. Brown in hot shortening. Put in crock-pot. Add 1 tablespoon Italian dressing for each pork chop. Cook on low for 6 hours.

Mary J's Crock Pot Chicken Noodle Soup Recipe

2 sliced carrots
2 celery stalks (with leaves), cut up
2 c. water
1 (3 lb.) whole chicken
salt and pepper to taste
1 can cream of chicken soup
10 oz. bag egg noodles or spaghetti, broken into 2 to 3-inch pieces

Put cut up carrots and celery in bottom of crock-pot. Add chicken, water and seasonings. Cook on low for 8 to 10 hours (overnight). Remove chicken and bones from broth. Turn crock-pot to high and add 1 can cream of chicken soup and noodles. Add deboned chicken. Cook until noodles are tender. Add 1 cup of milk at the last before serving.
Makes 4-6 servings

Mary J's Easy Crock Pot Chicken Recipe

4 boneless skinless chicken breasts
1 pkg. Good Seasons Italian dressing mix (dry)
1 can cream of celery soup (low-fat or fat-free)

Place chicken breasts in bottom of crock-pot; sprinkle Good Seasons Italian dressing mix over chicken. Add celery soup (do not add water), spreading soup over chicken. Cook on low for 8 hours. Half hour before serving, add 8 ounces sour cream. Serve over rice or noodles. Leftovers may need another can of soup added.

Mary J's Crock Pot Chicken Spaghetti Recipe

6 to 8 boneless chicken breasts
1 (30 oz.) jar spaghetti sauce
1 tsp. garlic powder

Put chicken breasts in crock-pot; add spaghetti sauce and garlic powder. Cook 8 hours and serve over spaghetti.
Makes 6 to 8 servings

Sharon's Crock Pot BBQ Pork Chops Recipe

6 to 8 lean pork chops, thick
2/3 cup water
1/2 cup catsup
1/3 cup vinegar
1 tsp. salt
1 tsp. celery salt
1/2 tsp. nutmeg
1 bay leaf

Brown chops. Combine water, catsup, vinegar, salt, celery salt, nutmeg and bay leaf and pour over pork chops that have been placed in Crock-Pot. Cover and cook 8 on low.

Oma's Cabbage Goulash Recipe

1 head cabbage
1 lb. ground beef
1 can cream of mushroom soup
1/2 can evaporated milk (or 4 ounces regular milk)
1 onion, chopped fine

Brown beef and onion in fry pan. Slice cabbage into 1/4 inch strips. Lay cabbage over beef. Cover with soup and milk to make a sauce. Simmer until tender.
Serves 4 to 5.

Oma's Crock Pot Ham and Hash Browns for Two

1 Package Frozen Hash Brown Potatoes - (lg Pkg)
1 Can Mushroom Soup
2 Cups Sharp Cheddar Cheese
1 Can Cheddar Cheese Soup
1 Package Frozen Peas (10 oz)
1 Cup Milk
1 Can Ham or Spam - (12 to 16 Oz), diced

Mix all ingredients in a slow cooker and season to taste. Cover and cook on
low 8 hours.
Makes 4-5 servings
