Yesterday I had 4 boneless chicken breasts, a small cabbage, and 1/2 a bag mini carrots left. I didn't have a recipe with those ingredients so went the the pantry and found a couple cans (14 ounce) of Mexican flavored stewed tomatoes. Put all the ingredients in the crockpot and let it cook all day while I was at work.

After I came home from work I wasn't sure how it would taste. It was a winner. My family loved it. Just served it with some green beans and a salad.

Deborah's Crock Pot Chicken Supper Recipe

4 chicken breasts (boneless and skinless)
1 small cabbage, cut in large large chunks
1/2 bag of mini carrots
2 (14 ounce) cans of Mexican flavored stewed tomatoes

Combine all the ingredients in a crock pot. Cover and cook all day on low.
Makes 4 servings

A While back I threw together this recipe in the crock pot. It turned out very good as well.

Deborah's Barbecue Pork Chops Recipe

4 pork chops cut thick
1 (12 ounce) can of Coke
1 cup ketchup
salt and pepper

Grease inside of crock pot. Salt and pepper pork chops and place on bottom of crock pot. Pour ketchup over pork chops and then pour coke over pork chops. Let cook all day on low.
Makes 4 servings.

Recently I ate some garlic chicken at a Chinese restaurant. I it was fried and tastes great. Does anyone have a recipe for this that is tried and tested? Would love it if you would share it.

Back in the old days (before I started working) I used to make a chicken pot pie with a jar of gravy, some chicken and had some sort biscuit topping. Could someone help me with a recipe for this. I don't remember how the amount of each ingredient. I suspect I used canned biscuits for the top. I think it had vegetables in it too.

I am new to this group. Everyone has posted recipes that sound so good. Does anyone know how to make egg custard with sugar substitute and egg beaters? Is it possible and if so what is the recipe?

Karen's Cookie Mix with Recipe

9 c. flour
4 tsp. baking soda
2 tsp. salt
3 c. brown sugar, packed
3 c. granulated sugar
4 c. shortening
4 (10 oz.) pkg. chocolate chips
4 c. chopped pecans

Combine dry ingredients in a large bowl. Cut in shortening and add chocolate chips and pecans. Store. (Keeps about 3 months)

To make cookies, combine 4 cups cookie mix, 2 eggs and 1 teaspoon vanilla. Bake at 375° for 10 to 12 minutes.
Makes 2 dozen.

Karen's Master Mix with Recipes
Here are some recipes I use and have tweaked a bit to make them taste and bake like they should.  These recipes are for 3,000 feet.  I am not sure how to adjust them for other altitudes.

Master Mix Recipe

1/3 c. baking powder
1 Tbsp. salt
2 tsp. cream of tartar
1/4 c. sugar
9 c. flour
2 c. shortening

Sift dry ingredients together 3 times into large bowl. Cut in shortening until crumbly. Store in airtight container at room temperature. Yields 13 cups mix.

This mix can be used in any recipe that calls for Bisquick. Following are a few basic recipes.


Biscuits

2 c. Master Mix
2/3 c. milk

Combine Master Mix and milk in bowl; mix lightly. Knead 10 times on floured surface. Pat to 1/2-inch thickness. Cut with biscuit cutter. Place on baking sheet. Bake at 425° for 10 to 12 minutes. Yields 10 biscuits.

For Drop Biscuits:
Mix ingredients as given, but, after mixing, simply drop by the spoonful onto cookie sheet. Bake as for Biscuits.



Pancake Recipe

2 c. Master Mix
1 egg
1 2/3 c. milk

Add milk and egg to Master Mix; beat with rotary beater or whisk until smooth. Grease griddle if necessary. Griddle is hot enough when water sprinkled on it jumps around. Turn pancakes when bubbles appear.
Makes about 18.


Cornbread Recipe

3/4 c. Master Mix
1/3 c. cornmeal
1/4 tsp. salt
1 Tbsp. sugar
1/2 c. milk
1 egg

Stir cornmeal, salt and sugar into mix. Combine milk and beaten egg; add to mix, stirring until blended. Bake in greased pan in hot oven (400°) for 20 minutes.
Yields 6 x 6-inch pan.



Oatmeal Cookies

3 c. Master Mix
1 c. sugar
1/3 c. milk or water
1 egg
1 tsp. cinnamon
1 c. quick rolled oats

Mix all ingredients until blended. Drop by spoonfuls on cookie sheet and bake 10 to 12 minutes at 375°.
Makes 4 dozen.


Muffins Recipe

1 c. Master Mix
1 Tbsp. sugar
1/3 c. milk
1 egg yolk

Add sugar to mix. Combine milk and beaten egg and add to mix until flour is just moistened. Bake in greased muffin pans in 450° oven for 20 minutes.
Yields 6 muffins.


Banana Nut Bread Recipe

1/2 c. vegetable oil
1 1/2 c. mashed bananas (3 large)
1/2 tsp. vanilla
3 eggs
2-1/3 c. Master Mix
1 c. sugar
1/2 c. nuts

Heat oven to 350°. Grease bottom of loaf pan well. Beat all ingredients 30 seconds with spoon. Pour in pan and bake for 55 to 65 minutes.


Gingerbread Recipe

1 3/4 c. Master Mix
1 tsp. ginger
1 tsp. cinnamon
1/2 tsp. cloves
2 eggs
1/2 c. brown sugar
1/2 c. milk
1/2 c. molasses
1/4 c. shortening

Mix dry ingredients. Beat eggs, milk, molasses and shortening. Blend with dry ingredients. Bake in oiled 7-inch square pan for 40 minutes at 350°.


Custard Pie (Makes own crust)

1 c. sugar
3 c. milk
3 eggs
1 tsp. vanilla
1/2 c. Master Mix

Combine and blend for 5 minutes. Pour into buttered 9-inch pie pan. Bake 45 minutes at 350°.


Pound Cake Recipe

2 c. Master Mix
1/4 c. flour
2/3 c. sugar
1/4 c. butter or margarine, softened
3 eggs
1/2 c. milk
1 tsp. vanilla

Combine all ingredients in a large mixing bowl. Beat 4 minutes on medium speed. Pour batter into greased and floured loaf pan, 9 x 5 x 3-inch. Bake 1 hour or until toothpick comes clean.


Corn Dogs Recipe

1 c. Master Mix
2 Tbsp. corn meal
1 Tbsp. sugar
2/3 c. water
salt and pepper to taste

Beat batter very well. Dip in cold hot dogs in this batter. Drop in hot fat for approximately 3 to 4 minutes.

For Linda, who recently inquired about removing lime deposits from a shower door, we have had good success with a product called CLR. It can be found at Wal-Mart and most hardware stores. Others have also recommended it in past newsletters. Once you get them clean you can put a layer of car wax on them to help prevent future build up. Rain-X and Turtle Wax are 2 products that are frequently recommended. If you can get everyone to squeegee the door after a shower it will also help prevent future problems.

Karen's request for recipes for tuna pot pie using biscuits, reminded me of this recipe. It is easy to make and can be a frugal meal, if you buy the tuna on sale. It can easily be cut in half. I do think I have the recipe Karen needs, but will have to find it, as it is not on my computer.

Tuna Cakes Recipe

2 cans (6 oz. each) light tuna in water, drained, flaked
1 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken
1 cup Shredded Mild Cheddar Cheese
1/2 cup shredded carrots
1/3 cup Mayonnaise
2 Tbsp. Sweet Pickle Relish
3/4 cup water

Mix all ingredients. Cover and refrigerate 10 min.

Heat large nonstick skillet sprayed with cooking spray on medium heat. For each tuna cake, shape 1/3 cup lightly packed tuna mixture into patty. Add patties to skillet in batches. COOK 3 min. on each side or until golden brown on both sides, turning over carefully. Can also add finely chopped celery, if desired.
Makes: 6 servings, two tuna cakes each

We really like this pie, as it is quick to make when having a chocolate craving. We like it best warm topped with a scoop of vanilla ice cream. It calls for 1 cup sugar, but I cut back some on that, as find it doesn't need that much.

Crustless Brownie Pie Recipe

1 (scant) cup sugar
1/2 cup flour
1/4 cup unsweetened baking cocoa powder
1/2 cup butter, softened
2 eggs
1 tsp. vanilla
Pinch salt
1/2 cup chopped pecans or walnuts (optional)

Combine all ingredients (except nuts) and beat 4 minutes at medium speed with an electric mixer. Stir in nuts, if using. Put batter into a buttered 9" pie plate. Bake at 325 for 35 to 40 minutes, until toothpick comes out clean, when inserted in the middle. The pie will puff up and then fall slightly. Serve with whipped cream or ice cream.

Judy's Chicken Recipes
If you are like me, I'm always looking for different ways to prepare chicken and the following two recipes have fast become favorites.

This tasty recipe makes a lot, but can be easily cut in half. Is a wonderful variation from just a usual baked chicken recipe. You have to allow for extra time for marinating, so has to be prepared a day ahead of cooking.

Honey Mustard Chicken

5 lbs. chicken thighs (can remove skin)
1/2 cup honey
1/2 cup prepared mustard
1 tbsp. apple cider vinegar
Salt & pepper, to taste

Combine honey, mustard and vinegar and marinade chicken covered overnight in refrigerator. Place chicken with marinade in baking pan and season with salt and pepper. Bake, uncovered at 375 for 1 hour, turning over once. You can also grill or broil, instead of baking.

This is a wonderful way to prepare chicken, and makes a great dish for a potluck, or company meal. This needs to be prepared the day before, so plan accordingly.

West Coast Chicken

1 tsp. salt (I cut down)
1/4 tsp. pepper
1 cup frozen orange juice concentrate, thawed
1/3 cup butter, melted
2 tsp. ground ginger
4 tsp. low sodium soy sauce
5 lbs. chicken thighs, skin removed

Combine all ingredients except chicken. Spray two 11 x 7 inch pans with cooking spray (or grease). Place single layer of chicken in each pan and pour sauce over; cover pans. Refrigerator overnight. Bake, uncovered at 350 for 1 hour, basting once during baking.
