This is a dessert we really enjoy a lot. You can use canned peaches (drained) but it's much better using fresh peaches. It calls for a larger cake mix, so you will need to use 6 tbsp. dry cake mix from a 2nd box and store remainder in a air-tight
container to use another time.

Fresh Peach Cake Recipe

1 (18.25 oz.) yellow cake mix
3 eggs
1/2 cup dairy sour cream
1 tsp. vanilla
1 cup butter, softened
1/4 tsp. cinnamon
1 (3 oz.) pkg. peach Jello
3 fresh peaches, peeled and sliced
1/8 tsp. nutmeg

Mix cake mix, eggs, sour cream, butter, vanilla, cinnamon, and Jello on medium speed of mixer for 2 minutes. Spread in greased and floured 13x9 inch baking dish. Lay peach slices over the top and sprinkle with nutmeg. Bake at 350 for 40 to 45 minutes until tests done.

Can sprinkle the top with powdered sugar, but I never do. Is excellent warm or cold with vanilla
ice cream, or whipped topping.

Pasta Dinner Salad Recipe

8 oz. Rotini pasta, uncooked
2 cups cubed cooked ham
1 cup fresh broccoli floweretes
1 cup shredded carrots
1 cup sliced pitted ripe olives
1 small green, red or yellow pepper, chopped
1/4 cup sliced green onion
3/4 cup bottled Italian dressing
1/4 cup grated Parmesan cheese
1 tbsp. Dijon-style mustard

Prepare pasta according to directions on package; drain. In large bowl, combine all but salad dressing, cheese and mustard. In small bowl mix dressing, Parmesan and mustard; add to salad and toss to coat. Cover, chill thoroughly. Toss gently and serve.

Lemon Cake Mix Cookies Recipe

1 lemon cake mix (2 layer)
1 box instant lemon pudding (3-1/2 oz.)
1 egg, beaten
1 c. oil
1 c. nuts (optional)

Mix cake mix and pudding together with your hands. Add other ingredients and mix well. Roll into balls and place on cookie sheet. Press down slightly with hand. Bake at 350° for 12 minutes.

I made this for our supper last night and we really thought it was good. I think a person could mix it altogether too before putting it in the oven and put the cheese on the very top, or put half the combined mixture in a casserole, top with half the cheese, then put in remaining mixture and the rest of the cheese on the very top.

Mema's Hamburger Macaroni Casserole Recipe

1 lb. lean ground beef (I used 1-1/2 lbs.)
1 medium onion, chopped
1 jar (20 to 24 oz.) spaghetti sauce
1/4 tsp. garlic powder
1 tbsp. Worcestershire sauce
1 tbsp. Ketchup
1 tbsp. Italian seasoning
1 tsp. sugar
1 tsp. salt (I cut down)
1/4 tsp. black pepper
8 oz. (2 cups) Mozzarella cheese, shredded
8 oz. elbow macaroni

Brown beef and onion and add spaghetti sauce and other ingredients, except cheese and macaroni. Simmer, covered on low heat for 30 minutes, stirring occasionally. Meanwhile cook macaroni in boiling salted water and drain. In a 9x9" casserole dish layer macaroni, meat sauce and cheese; repeat each one more time, ending with cheese on top.

Bake at 350 for 20 minutes, until heated through and cheese is melted.

This is cabbage at its finest. Fit for family or company meals. Enjoy.

Cabbage Parmesan Recipe

1 medium head of cabbage
1/4 cup oleo
1 garlic clove
1teaspoon Italian herb seasoning
Salt and pepper to taste
1/4 cup sliced almonds, toasted
1/3 cup Parmesan cheese

Brown almonds over low heat. Set aside. Cut cabbage I/2 inch slices; separate strips and layer in skillet with oleo, garlic, seasoning, salt and pepper. Cook over medium heat till tender, stirring frequently. Garnish with cheese and almonds.

Cake Mix Cookies Recipe

1 pkg. cake mix, with pudding
1/3 c. margarine, melted
2 eggs
1/4 c. water
1 c. semisweet chocolate chips

In a large bowl, combine cake mix, margarine, eggs, and water; mix well. Add chocolate pieces; dough will be stiff. Drop by rounded tablespoons onto an ungreased cookie sheet. Bake at 375° for 8 to 10 minutes.
Makes about 3-1/2 dozen.

Turkey or Chicken Salad Recipe

1 small can boned turkey or chicken
3/4 c. chopped apples
1/2 c. chopped celery
2 Tbsp. raisins
1/2 c. Italian dressing
1 Tbsp. brown sugar

In medium bowl gently stir together turkey or chicken, apples, celery and raisins. In cup stir together dressing and brown sugar. Pour over turkey mixture. Toss lightly to coat. Serve on lettuce leaves.
Makes 1-1/2 cups or 2 servings.

Chicken Casserole Recipe

4 c. cooked chicken
2 c. chopped celery or frozen peas
2/3 c. cream of chicken soup
2/3 c. mayonnaise
2 Tbsp. lemon juice
1 tsp. chopped onion
1 tsp. salt
4 chopped, hard-boiled eggs
1 c. diced cheese

1-1/2 c. potato chips, crushed

Mix all 9 casserole ingredients together. Put in 9 x 13-inch pan. Put the potato chip topping on and bake at 350° for 20 to 25 Serves 6 to 8.

Chicken Cashew Casserole Recipe

3 large chicken breasts, cooked and cut up
2 cans condensed cream of chicken soup
1 (15 oz.) can fancy Oriental vegetables, drained
1 Tbsp. chopped onion
1/2 lb. sliced mushrooms
1 c. chopped celery
1/2 c. mayonnaise
1 (5 or 6 oz.) can water chestnuts, sliced and drained
1 tsp. lemon juice
1 (3 oz.) can chow mein noodles
2 to 3 c. cashews

On the day before the casserole is to be served, mix all items together except the cashews. Place in a 9 x 13-inch casserole and refrigerate. Before baking, cover top with cashews. Bake 45 minutes at 350°.

Fried Chese Pear Salad Recipe

1/4 cup chopped walnuts
3 tbs olive oil
1 tbs cider vinegar
1 tsp Dijon mustard
1 egg, beaten
2/3 cup panko breadcrumbs
6 oz goat cheese
2 tbs canola oil
8 cups baby kale
1 pear, cored, sliced
1/4 cup dried cranberries

Heat oven to 350 degrees. Spread walnuts on a baking sheet. Bake until toasted 10 min. Transfer to a bowl. In a bowl, whisk olive oil, vinegar, mustard, and salt. Place egg in a bowl. Place breadcrumbs in another bowl. -Line a baking sheet. Slice goat cheese log into 8 rounds. Dip rounds into egg, then into breadcrumbs. Place on baking sheet, freeze 5 min. Warm oil in a skillet. Cook goat cheese rounds until breadcrumbs is golden. Transfer to a plate. -Toss kale and pear with dressing, divide among 4 plates. Top each with 2 goat cheese rounds. Sprinkle with walnuts and cranberries. Serve and enjoy.

Banana Pudding Recipe

1 box vanilla wafers
3 bananas, sliced
1 can Eagle Brand milk (small)
1 pkg. instant vanilla pudding
1 carton Cool Whip (light)
1 c. skim milk

In a large bowl, add vanilla pudding and skim milk until smooth. Stir in Cool Whip and Eagle Brand milk. Add as many cookies and bananas as desired. You may add a sprinkle of cinnamon or pineapple, if desired.

Rice Pudding Recipe

2 qt. milk
1 c. rice
3/4 c. sugar
1 tsp. cinnamon
3 tsp. vanilla

Put rice, sugar and cinnamon in bowl and stir thoroughly. Add 1/2 of milk and mix well. Add vanilla and rest of milk, stir thoroughly; sprinkle with cinnamon, if desired. Bake 1 hour at 350°.

Bread Pudding Recipe

1 stick butter, melted in baking dish
4 to 5 slices toasted bread, broken into pieces and dipped into butter
3 eggs
1 c. sugar
1/4 tsp. salt
1 tsp. vanilla
2 c. milk, scalded

Whip together the eggs, sugar, salt and vanilla with a whisk. Mix the scalded milk with the sugar and egg mixture and pour over buttered bread in baking dish. Sprinkle cinnamon and nutmeg on top. Bake in pan of water 35 to 45 minutes at 350° or until knife inserted in center comes out clean.

Baked Fresh Peach Pudding Recipe

2 c. peeled and sliced raw peaches

3/4 c. sugar
4 Tbsp. butter
1 c. flour
1/2 tsp. salt
1 tsp. baking powder
1/2 c. milk

Cream together sugar and butter. Sift together dry ingredients and add to creamed mixture alternately with milk. Spread over fruit.

1 c. sugar
1 Tbsp. cornstarch
1/4 tsp. salt
1 c. boiling water

Mix sugar with cornstarch and salt. Sift over the top of the batter. Pour the boiling water over all. Bake at 325° for 50 minutes.

Serve warm with cream, if desired.
Makes 6 to 8 servings.

Baked Cherry Pudding Recipe

1 c. sugar
1 Tbsp. butter
1 egg
1 c. red sour pitted cherries
1/2 c. nuts
1 c. flour
1/2 tsp. baking soda

Cream sugar and butter. Add egg, beating until mixed. Add cherries and nuts. Mix soda with flour and combine with first mixture. Bake at 350° for 30 to 45 minutes, depending on pan size.

In response to Diana in GA; Yes. The brisket recipe does use a whole bottle of "Liquid Smoke". When I do a brisket, I do a lot, maybe 10 pounds or more. Here are the last of my soup recipes.

Okra and Tomato Soup Recipe
A summer soup with Cajun seasoning
Serves 4

1 Tblsp. olive oil
1 Tblsp. butter
4 green onions, white bulb and most of the green, sliced
1 clove garlic, minced
1 rib celery
*2 to 4 cups chicken broth, start with 2 and add more as you go to get the desired consistency
1 can diced Tomatoes with Basil and Garlic. Do not drain.
8 to 10 ounces, about 3 to 4 cups, okra; fresh, if possible, or frozen, thawed
1 cup corn kernels (used scraped from the cob or frozen. If using canned, use the liquid too and include it in the amount of broth you use.
1 tsp. Cajun or Creole seasoning (I use Tony Chachere Seasoning.)
Dash of fresh ground pepper
(The original recipe called for salt but I dont use any, there was enough in the broth.)

In a heavy sauce pan, heat the olive oil and butter over medium to low heat. Add onion, garlic, celery and sauté until the celery is tender.. Add 2 cups of the chicken broth, tomatoes, sliced okra, corn kernels, Cajun seasoning and pepper. Bring to a boil. Reduce heat to a simmer, cover and simmer for 20 to 30 minutes or until okra is tender.

Note; the original recipe was on, southern food but I have changed it. I use it as a guide but I always add more vegetables than called for. I usually use squash, both zucchini and yellow squash in summer or butternut or acorn squash in the winter. That is why I add more chicken broth than original recipe calls for. Also, I want more than 4 servings so and the recipe is just a guide.

I dont know where the original recipe came from. Again, I have changed it.

Easy Minestrone Soup Recipe

6 cups low sodium chicken broth
1 15.5 ounce can cannelloni beans, drained and rinsed
1 28 ounce can diced tomatoes with juice
2 Tblsps. olive oil
2 onions, chopped fine
1 cup red, yellow, orange or green peppers, chopped, optional
2 shredded or minced carrots, optional
2 fresh zucchini, diced, optional
4 cloves garlic, minced
½ cup dry pasta, orzo or some other very small pasta is best
1 (16 oz.) bag of frozen vegetables, Italian blend if available
¼ cup fresh basil leaves, minced
½ tsp. Italian Herbs
½ tsp. sugar
(1 tsp. soy sauce - I often add a little soy sauce to recipes but its just an alternative to salt)
Salt and pepper to taste

Bring broth, beans and tomatoes to boil. Heat olive oil and cook onion until softened, about 5 minutes, add garlic and cook until fragrant, 30 seconds. Stir in broth and pasta and simmer until pasta is tender, about 10 minutes. Stir in vegetables and basil, Italian Herbs, sugar, and simmer another 5 or 10 minutes until vegetables are just tender. Taste and add salt and pepper or a little soy sauce.

Last week was so hard but this week has been easier on the Weight Watcher Plan. So far no treats and snacks that have tempted me.  I have a hard time passing up Lemon Squares.  It seems like they keep calling my name and begging me to eat them.  This week I have only one event that has refreshments.  Hopefully there will not be any lemon squares. 

Eating more healthy has really raised my energy level. Exercising everyday has helped as well. 

I have tried several recipes from the past the past several days.  Freezing the extra portions allows me to have meals for next week.  I can just add a salad and some fruit. 

Weight Watcher Corner

Tuna Stuffed Tomatoes Recipe

6 medium tomatoes
1 cup dry curd cottage cheese
1/2 cup plain low fat yogurt
1/4 cup chopped cucumber
1/4 cup chopped green pepper
1/4 cup thinly sliced radishes
1/4 cup chopped green onions
1/4 teaspoon dried basil leaves, crushed
1/4 teaspoon garlic powder
1 (6-1/2 counces) can tuna, packed in water, drained
lettuce leaves

Cut each tomato in 6 wedges, cutting into but through, base of each tomato. Refrigerate in medium bowl. Combine cottage cheese and yogurt. Mix remaining ingredients except lettuce leaves. Place tomatoes on individual lettuce lined plates. Spoon mixture into the center of each tomato.
Makes 6 servings

Calories 98, Fat 1g, Sodium 48g, Protein 14g, Carbohydrate 9g, Fiber 2g, Cholesterol 8mg
Weight Watcher Plus Points = 2

Note: I tried this recipe with canned chicken. It was good too. This recipe was very filling and low in WW Plus Points.

Baked Cod Recipe

1 pound fillets, cut into 2 inche pieces
1 can (14 ounces) Italian Style Tomatoes, diced, drained
2 tablespoons chopped pitted olives
1 teaspoon bottled garlic, minced
2 tablespoon fresh parsley, chopped

Preheat oven to 400 degrees. Spray 9 by 13 inch dish with Olive Flavored Pam. Arrange cod fillets in pan and season to taste with salt and pepper.

Combine tomatoes, olives and garlic in bowl. Spoon over cod fillets. Bake 20 minutes or until fish flakes when tested with a fork. Sprinkle with parsley.
Makes 4 servings
