Southwestern Shrimp Recipe

Ingredients
1 pound shrimp, cooked, peeled with tails left on
1/4 cup lime juice
3 tablespoons olive oil
2 cloves garlic, minced
4 green onions, chopped with tops
1 jalapeno pepper, seeds removed, finely chopped
1 roasted red pepper or pimiento, chopped
3 tablespoons fresh cilantro, chopped
6 leaves Boston or red leaf lettuce

Ingrediens
Place shrimp in a glass bowl or zip top bag. Combine all the other ingredients except the lettuce in a small bowl; pour over the shrimp. Toss well to cover all surfaces of the shrimp. Refrigerate at least 1 hour to marinate, turning every 30 minutes. Lift the shrimp, with onion and pepper bits, from the marinade with a slotted spoon. Discard the marinade. Serve the shrimp on lettuce leaves.
Makes 6 Servings

Baked Brussels Sprouts Recipe

Preheat oven to 450 degrees.

Combine in a small bowl
1 teaspoon grated orange rind
1 tablespoon fresh orange juice
2 tablespoons olive oil.

Place
1 pound halved Brussels sprouts on a jelly-roll pan coated with cooking spray.

Drizzle orange juice mixture over Brussels sprouts and toss until coated.

Salt and pepper to taste. Bake at 450 degrees for 15 to 20 minutes until edges of Brussel sprouts are lightly browned and crisp.
Makes 4 servings

Balsamic Chicken Recipe

ingredients
1/4 cup fat free Italian salad dressing
1 tablespoon balsamic or red wine vinegar
1 teaspoon sugar
4 medium skinless, boneless chicken breasts halves
Nonstick spray coating
2 medium zucchini, sliced 1/4 inch thick
2 teaspoons cooking oil
4 Roma tomatoes, quartered

Directions
Stir together salad dressing, vinegar, and sugar in a small bowl, set aside. Slice each chicken breast half lengthwise to make 4 strips. Spray an unheated 12 inch skillet with nonstick spray. Heat skillet over medium heat.

Add zucchini, cook and stir for 3 to 4 minutes. transfer to serving platter and keep warm. Heat oil in same skillet and add chicken, cook and stir for 3 to 4 minutes or until chicken is no longer pink. Transfer chicken to platter.

Stir tomatoes and dressing mixture into skillet. Cook and stir about 30 seconds or until heated through. Spoon over chicken and zucchini.

Baked Potato Skins Recipe

4 medium potatoes
1/2 cup grated fat free cheddar cheese
3 tablespoons very lean, cooked bacon bits
1/4 cup minced green onion

Scrub potatoes and pierce each with a fork. Bake in a preheated 400F oven until soft; about 1 hour. Cut potatoes in half lengthwise and scoop out centers, leaving a 1/4 inch shell. Reserve removed potato for another use. Cut potato halves lengthwise. Spray potato shells with butter flavored spray, then place on a large baking sheet. Bake in a preheated 500F oven for 15 to 20 minutes, until brown and crisp. Sprinkle evenly with cheese, bacon bits and green onion. Return to 400F oven for 3 minutes longer to melt cheese.

Makes 4 Servings
Per serving: 54 calories, 4g protein, 8g carbohydrate, 0g fat, 2g fiber

Baked Pepper Fish Recipe

Ingredients
1 (4 ounce) fish fillet such as scrod, cod, or
white fish, haddock orange roughy
2 tablespoons fat free ranch dressing
dash cayenne pepper
1/2 red bell pepper, diced
1 onion thinly sliced
1/2 cup broccoli florets

Directions
Preheat the oven to 450F. Spray a 12 inch piece of heavy aluminum foil with nonstick cooking spray. Place the filet on the foil. Spread the dressing over the filet with a small spoon or pastry brush and sprinkle with red pepper. Arrange the vegetables over the fish. Fold the foil over and seal the edges. Place the foil packet in the middle of the oven directly on the rack. To prevent spills, you may want to place the foil packet on a small baking sheet.

Bake for 20 minutes or until the fish is white through the center and flakes easily with a fork. To microwave, place the filet and other ingredients directly on a microwave safe plate. Cover with plastic wrap and microwave on high for 5 minutes or until done. Remember to turn the filet halfway through the cooking time for even cooking.

Cabbage Casserole Recipe

Ingredients
Vegetable cooking spray
4 cups cabbage -- coarsely chopped
1 cup carrot -- coarsely shredded
1/2 cup sliced green onions
1 cup skim milk
1/4 cup Gruyere cheese
1/2 teaspoon caraway seeds
1/4 teaspoon salt
2 eggs, lightly beaten
1 egg white
2 tablespoons minced fresh parsley
1 tablespoon grated Parmesan cheese

Directions
Coat a small saucepan with cooking spray; place over medium heat until hot. Add cabbage, carrot, and green onions; saute 7 minutes or until tender. Spoon cabbage mixture into a 10 x 6-inch baking dish coated with cooking spray. Combine milk and next 5 ingredients (milk through egg white) in a medium bowl; stir well. Pour over cabbage mixture. Combine parsley and Parmesan cheese; sprinkle over cabbage mixture. Bake at 375 degrees for 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

Makes 6 Servin gs
89 Calories; 3g Fat, 7g Protein; 8g Carbohydrate; 2g Dietary Fiber; 69mg Cholesterol; 188mg Sodium.

Unstuffed Cabbage Recipe

Ingredients:
1 1/2 to 2 pounds lean ground beef
1 tablespoon extra virgin olive oil
1 large onion, chopped
1 clove garlic, minced
1 small cabbage, chopped
2 cans (14.5 ounces each) low sodium diced tomatoes
1 can (8 ounces) tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

Directions:
In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.
Add the garlic and continue cooking for 1 minute.
Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.
Yield: Serves 6 to 8.

Good morning,
Please tell Jerry that I've been much in prayer for him since I read his post. He's been on my mind a lot! Also, last night was Bible Study at my church, and he was lifted up in prayer there as well. We'll keep prayin'!

I have a quick and tasty recipe that I found about a bazillion years ago from an old TV series called, "Alive and Well." We love it's flavor, and I love how easy it is to pull together (not that I'm lazy, mind you, just efficient.

Low Calorie Sweet and Sour Chicken Recipe

4 lg. chicken breasts (2 lbs.) or 1 fryer
1/2 c. wine vinegar (I used Red Wine vinegar)
1/2 c. soy sauce
1/4 t. granulated garlic
1 t. prepared mustard
1/4 c. catsup
2 T. honey
1/2 c. chicken bouillon

Place cleaned chicken (all skin & fat removed) in 2 qt. casserole and cover with sauce made of the remaining ingredients. Cover and bake at 350 ° for 45 minutes to 1 hour, or until tender (depends on the size of the pieces. Serves 4 at 220 calories each.

With summer time and fresh fruits and veggies, fruit flies, gnats, can become a pest in the kitchen. My cousin shared her solution. It does help.

Pour into a small clear glass about 1/4-1/2 cup apple cider vinegar. Wrap glass securely with saran wrap, add rubber band around top.

Punch a couple of holes in Saran wrap that are large enough for gnats to enter. Push Saran wrap down into glass in order that it almost touches the vinegar. Drop a couple of drops of vinegar on top of Saran wrap. Place prepared glass near the source that attracts the gnats. Trap awaits intruders!

Be sure to use apple cider vinegar for best results. It seems to produce more odor to attract the pests than white vinegar. Also, clear glass enables one to see if trap is doing its job.

This is another delicious cake for a cake contest.

Lady Bird’s Famous Lemon Cake from the LBJ Ranch

1 1/4 cups sugar
3/4 cups butter
8 egg yolks
1 1/2 cups cake flour; sifted
3 t. baking powder
3/4 cups milk
1 t. vanilla
1 t. lemon juice
1 t. grated lemon rind
1/4 t. salt
2 cup confectioner’s sugar
1/4 cup soft butter
1 t. cream ( or more)
1 lemon rind; grated
1 lemon, juice of

Sift sugar. Beat butter until soft. Add sugar gradually. Blend
until light & creamy. In separate bowl beat egg yolks until very
light and lemon colored, then blend them into the butter mixture.

Resift cake flour, baking powder & salt 3 times & add these ingredients to the butter mixture in thee parts alternately w/thirds of the 3/4 cup milk. Beat thoroughly after each addition. Add & beat for 2 min. vanilla, lemon juice & lemon rind. Bake in greased 9 in. layer pans in moderate oven ( 375) for about 20 min. Spread with lemon icing.

Lemon Icing:
Blend sugar, butter & cream. Beat in grated rind and lemon juice.

( Note! I have used a greased & floured 10-12 cup bundt pan,
like the Nordic Ware Blossom Bundt Pan, and baked at 325 for one hour or until cake tests done. Cool in pan 10-15 min.; invert on wire rack or serving plate to complete cooling. Sprinkle top with confectioner’s sugar instead of icing, if desired)
