Who doesn't love mac & cheese?! This recipe for it baked is really so easy to make and ohhhh, so yummy good!

Baked Macaroni and Cheese Recipe

Ingredients
8 oz. elbow macaroni, cooked & drained
1 tsp. butter, very soft
1 egg, beaten
1 tsp. salt
Pepper, to taste
1 tsp. dry mustard
1 tbsp. hot water
1 cup milk
3 cups shredded Cheddar cheese

Directions
Stir butter and beaten egg into cooked hot macaroni. Mix mustard, salt and pepper in hot water and add to milk. Add 2 cups of the cheese to the macaroni and put into a buttered casserole dish; add milk mixture and stir in. Sprinkle with remaining 1 cup shredded cheese. Bake at 350 about 45 minutes, until top is crusty and set.

I made this for our supper recently and we enjoyed it really well.
The seasoning combination on top of the chicken is really flavorful!

Southern Oven Fried Chicken Recipe

Ingredients
1 fryer chicken (about 3 lbs.) cut into pieces
1 cup butter, melted
2 cups Ritz cracker crumbs
1 tsp. garlic powder
1 tsp. dried parsley flakes
1/4 tsp. salt
1/2 tsp. pepper
1/4 tsp. paprika
1/4 tsp. sage
1/4 tsp. cumin

Directions
Spray a cookie sheet with cooking spray. Wash chicken pieces well and pat dry with paper towel. Melt butter in bowl. Place cracker crumbs on plate. Mix all seasonings together in small bowl.

Dip chicken pieces in butter and then roll in cracker crumbs; place chicken in prepared pan. Sprinkle chicken evenly with the seasoning mixture. Bake at 375 for about 55 minutes, until deep golden brown ad chicken juices run clear. You can turn chicken
pieces over half way through baking time, but it's not necessary.

Family and friends always seem to enjoy this tasty and moist chocolate cake with a hint of mint.

Fanny Mae Cake Recipe

Bottom Layer:
1/2 cup butter, softened
1 cup sugar
4 eggs (at room temperature)
1 tsp. vanilla
1 can (16 oz.) chocolate syrup
1 cup plus 1 tbsp. flour

Cream butter and sugar together well; add eggs, one at time, mixing well after each. Mix in vanilla and chocolate syrup. Beat in flour. Pour into greased 9 x 13" baking dish and bake at 350 for 35 minutes, or until tests done. Cool thoroughly.

Middle Layer:
2 tbsp. milk
2 cups powdered sugar
1/2 cup butter, melted
1 tsp. mint extract (not peppermint)
3 drops green food coloring

Beat together well and spread over cooled cake. Refrigerate until firm.

Topping:
6 tbsp. butter
1 cup semi-sweet chocolate baking chips

Melt together over low heat and spread evenly over top of cake. Refrigerate until completely set before cutting. Best if store in the refrigerator.

The Cherry Delight recipe that Judy shared in the 7/22 newsletter is a dish that I have often made and it is always quickly eaten. You can use other flavors of pie filling in this recipe, but cherry is our family's favorite followed by blueberry.

Both of these recipes have been around for years and are always devoured when I make them. They are also frequently requested. Since they were based on the larger cake mixes I use one of the options for increasing the smaller cake mixes that have frequently been listed in the newsletter.

Almost Better than Sex Cake Recipe

Ingredients
1 box yellow cake mix
1 (4 oz.) pkg. instant vanilla pudding
4 eggs
1 (8 oz.) carton sour cream
1/2 c. vegetable oil
1 c. water - I use milk
1 (4 oz.) pkg. German chocolate - grated
1 (6 oz.) pkg. chocolate chips- can use mini chips
1 c. chopped pecans- optional

Directions
In electric mixer bowl, combine cake mix, vanilla, pudding, eggs, sour cream, oil and water. Mix well. Stir in remaining ingredients and mix well again. Grease and flour a 10 inch tube or bundt pan. Spoon in batter and bake in 350 degree oven for 1 hour 15 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes, then invert on serving platter. Can frost your favorite frosting. I use cream cheese frosting, then sprinkle additional grated semi sweet chocolate or grated milk chocolate over top and sides of cake for garnish.

Kahlua Bundt Cake Recipe

Ingredients
1 pkg. sour cream devils food cake mix - 2 layer
3/4 c. oil
1 (16 oz.) tub sour cream
1 (6 oz.) pkg. chocolate chips
4 eggs
1/3 c. kahlua
1 sm. pkg. vanilla instant pudding

Directions
Mix together above ingredients. Pour into greased Bundt pan. Bake at 350 degrees for 45-50 minutes. Let cool in pan for 10 minutes, then invert on cake platter. Can sprinkle with powdered sugar, frost with your favorite icing or top with whipped cream or Cool Whip.

Baked Eggs in Avocado Recipe

Ingredients
1 ripe avocado
2 eggs
Salt and pepper, to taste
Optional toppings: red pepper flakes, fresh herbs, salsa

Directions
Preheat the oven to 425 degrees.
Slice your avocado in half. Remove the seed by carefully hitting it with a large knife. Place each avocado half in a small ramekin so the avocado half stays up. Spoon out a little bit more of the avocado flesh to ensure the whole egg fits. Crack each egg in a small bowl. Using a spoon, carefully spoon the yolk into the hole in the avocado. Be careful not to break the yolk. Then add the remaining egg white. Bake the avocados for 15-20 minutes, watching them carefully. When the whites are set, they're done. Sprinkle salt and pepper on top of the egg, and enjoy.
Yields: 1 or 2 servings, depending on how hungry you are

Tamale Pie Recipe

Ingredients
1 pound ground meat
1/2 chopped Onion
10 3/4 oz. can condensed tomato soup
1/2 cup water
1 tablespoon chili powder
1/2 teaspoon seasoning salt
Dash of black pepper
1/2 teaspoon garlic powder
1 cup , small can, whole kernel corn, drained
Small can of chopped green chilies

12 oz. package of Corn muffin mix or Mexican Cornbread
2/3 cup milk
1 egg

Directions
Brown meat, onion. Then add seasonings, corn, soup,chilis, and water. Pour into a 2 quart dish. Mix cornbread package with egg and milk. Spoon over meat mixture. Bake 30 minutes @ 350 degrees. Sprinkle with 1 cup of Cheddar cheese and return to oven about 3-5 minutes, or until cheese begins to melt.

Creamy 3-ingredient, No Churn Chocolate Ice Cream Recipe

This recipe is made to be a little less sweet than most traditional recipes, as it only uses about 1/4 the amount of sweetened condensed milk when compares to most recipes out there. You'll get plenty of sugar-rush from the chocolate syrup, but if you've got a sweet tooth, then add a little more sweetened condensed milk if you like. Adapted from
Nestle Creamy Vanilla Ice Cream.

Ingredients
2 cups (475ml) cold heavy whipping cream (cold)
1/4 cup (60ml) sweetened condensed milk (not to be confused with evaporated milk)
3/4 cup (180ml) chocolate syrup
(optional) pinch of sea salt

Directions
In large mixing bowl of stand-mixer or in a large bowl and using an electric hand mixer, add all the ingredients: heavy whipping cram, sweetened condensed milk, chocolate syrup and/or sea salt (optional). Whip the chocolate heavy cream mixture on high speed until stiff peaks form (to prevent massive splattering, start out at a slower speed and as the cream thickens, increase the speed). Be careful not to over mix or "break" the whip cream mixture. Pour the whipped mixture into a freezer safe container. We like to use a bread pan. Cover and freeze for about 4-5 hours. In about 3-4 hours you can have a "soft serve" type ice cream. If you prefer a more firm texture, freeze for at least 5-6 hours or overnight. Now eat and enjoy this creamy, luscious, delicious dessert!
Makes 1.5 quarts

Slow Cooker Beef Stroganoff Recipe

Ingredients
1lb round top steak, trimmed and cut into 1/4-inch thick slices
1 cup chopped onion
2 tablespoons fresh parsley
2 tablespoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon dried dill
1/2 teaspoon black pepper
8oz sliced mushrooms (about 2 cups)
2 teaspoons Worcestershire sauce
3 cloves garlic, minced
1/3 cup flour
1 cup beef broth
2 tablespoons cream cheese
8oz sour cream

Directions
Place steak, onion, parsley, Dijon mustard, salt, dried dill, black pepper, sliced mushrooms, and garlic into the slow cooker. Stir well In a small bowl combine flour, Worcestershire sauce, and broth, whisking until well blended.

Add broth mixture to slow cooker, then stir well.
Cover with lid and cook on high heat for 1 hour, then reduce the heat to low and cook for another 7 to 8 hours or until steak is tender.

Before serving, stir in the cream cheese, and cook covered on high for another 10 minutes. Stir in the sour cream, then serve over rice or egg noodles. Garnish with fresh dill or parsley

Baked Parmesan Zucchini Chips Recipe

Ingredients
2 medium-sized zucchini
1/2 cup freshly grated Parmesan cheese
Garlic salt & freshly ground black pepper, optional

Directions
Place oven rack in center position of oven. Preheat to 425F. Line a baking sheet with foil (lightly misted with cooking spray) OR parchment paper.

Wash and dry zucchini, and cut into 1/4-inch thick slices. Arrange zucchini rounds on prepared pan, with little to no space between them. If desired, lightly sprinkle zucchini with garlic salt and freshly ground black pepper. Use a small spoon to spread a thin layer of Parmesan cheese on each slice of zucchini. Bake for 15 to 20 minutes, or until Parmesan turns a light golden brown. (Watch these closely the first time you make them and pull them out of the oven early if the Parmesan is golden before 15 minutes!) Serve immediately.

Sharon's Favorite Jiffy Mix Recipes
This week Jiffy Cake Mixes and cornbread mixes were on sale. I got several and started looking through my recipes over the years for recipes I could use with the cake mixes. Here are a few that have been winners over the years.

Cajun Batter Mix Recipe

Ingredients
2 Tbsp. seasoned salt
1 Tbsp. Cajun powder
1 tsp. pepper
2 cups milk (for fish)

Directions
Preheat oil in deep fryer to 375F.
Combine ingredients in plastic bag. Place vegetables, meat, poultry or fish in bag and shake to coat thoroughly. (For fish, soak in milk, as long as possible, before coating.) Drop carefully into oil. Remove and drain on paper towel.
Makes 2 cups

Jiffy Cake Mix Cookies Recipes

1 box Jiffy cake mix
1 egg
1/2 stick margarine, melted
1/4 to 1/2 c. chopped nuts

May use 1/4 cup of oil in place of margarine. Mix all ingredients in bowl. Shape into 1-inch balls. Place 1 nut half on each cookie, if desired. Bake in greased cookie sheet at 350 for 8 to 10 minutes or until golden brown.

Jiffy Cake Mix Cobbler Recipe

Ingredients
1 box Jiffy cake mix
1 large can peach slices
1/2 stick margarine

Directions
Put can of peaches and juice in bottom of pan. Mix margarine and cake mix together. Sprinkle on top of peaches. Bake at 350 for 35 to 40 minutes.

Jiffy Cake Mix Strawberry Cake Recipe

Ingredients
1 Jiffy white cake mix
1 box vanilla instant pudding
2 c. milk
8 oz. cream cheese
1 qt. strawberries
1 pkg. glaze
9 oz. Cool Whip

Directions
Bake Jiffy cake mix as directed. Bake 10 minutes in 9 x 13-inch pan. Cool. Mix 1 box vanilla instant pudding with 2 cups milk and 8 ounces cream cheese. Let set. Layer on cake. Top with cut strawberries mixed with glaze. Top with 9 ounce Cool Whip. Refrigerate.

Jiffy Cake Mix Pineapple Upside Down Cake Recipe

Ingredients
1 Jiffy yellow cake mix
1/2 c. (1 stick) butter or margarine
1 c. brown sugar
1 can crushed pineapple

Melt butter in pan (9 x 9 x 2-inches). Add sugar, drain pineapple and add. Make cake mix as directed on box. Pour batter over mix. Bake at 350 about 45 to 50 minutes.

Jiffy Cornbread Mix Tamale Pie Recipe

Ingredients
1 lb. ground chuck
1 (14 ounce) can tomatoes
1 pkg. taco mix
1 can cream-style corn
1 package Jiffy Cornbread Mix

Brown beef; add next 3 ingredients and keep hot until the topping is made. Mix cornbread mix according to directions. Pour meat mixture in a 2-quart casserole. Pour cornbread mixture over meat mixture and spread. Bake for 15 to 20 minutes in 400 oven. Serve hot.
