Baked Shrimp Dish Recipe

1 Stick butter
1 1/2 lbs jumbo shrimp
6 cloves garlic chopped
3/4 Cup Seasoned bread crumbs (if you like more crumbs go for 1 Cup )

In skillet melt the butter; add garlic and cook until fragrant; add bread crumbs and stir to combine; lay shrimp in baking dish; pour on crumb mixture. Bake 350 degrees approx. 20 min. stir occasionally . Squeeze fresh lemon over dish when it comes out of the oven.

Note : This is a great dish. I've made it with a mixture of fish (cod,scrod ,etc) scallops and shrimp as well as just the shrimp. Also made it with just the fish and it really is delicious.
I sometimes will sprinkle about 1/4 -1/2 parmesan cheese over the top of the casserole before baking. Being of Italian heritage I just can't help myself (lol)!!!!

This is good with a salad!

Goat Cheese Crostini Recipe

3 oz. pkg. goat cheese
1 t. chopped fresh thyme
2 t. fresh lemon juice
1 clove garlic, minced
8 slices sourdough bread

Preheat oven to 400. Combine cheese, thyme, lemon juice & garlic in a bowl.

Place bread on sheet pan in single layer to toast 7-8 min. Turn slices over; spread w/cheese mixture; bake 5 min. longer. Serve hot.

Its peach season in Delaware!

Crock Pot Peach Crisp Recipe

4 heaping cups sliced fresh peaches ( can be peeled, I dont peel them)
2 T. maple syrup
1 T. lemon juice
2 t. vanilla
2/3 c. rolled oats
2/3 c. brown sugar
2 t. cinnamon
1/2 t. nutmeg
1/4 t. salt
1/2 cup butter

Combine peaches, maply syrup, juice & vanilla. Place in greased 3-4 quart slow cooker. In bowl, mix remaining ingredients except butter. Cut in butter until mixture resembles coarse crumbs. Sprinkle over peaches & press down slightly. Cover pot with paper towel. Put lid over towel & seal pot. Cook on Hi, 2 hrs. Serve w/vanilla ice cream.

Grandma's Deep Dish Peach Cake Recipe

5 fresh peaches

1 teaspoon cinnamon
1-1/4 cups sugar if diabetic I would use splenda instead)

1/4 cup unsalted butter, soft
1/4 teaspoon salt
1 egg
teaspoon vanilla
1-1/2 cups flour
1/2 Tablespoon baking powder
3/4 cup milk

Preheat oven to 350. Peel peaches and slice into inch slices. To peel peaches quickly bring a large pot of water to a full boil, add peaches and boil for 1 2 minutes. Remove from water with a slotted spoon into strainer and run cold water over them. Remove skin with paring knife.

Toss sliced peaches with cinnamon and cup of sugar and place in cake pan. Set aside.

Cream butter, 1 cup of sugar and salt in the bowl of a stand mixer. Blend in egg and vanilla until light & fluffy. Place flour and baking powder in a small bowl. Stir with a fork and set aside. On low speed blend in ⅓ of the flour mixture followed by half of the milk. Continue alternating the flour mixture and milk until everything is used. Spread batter on top of peaches and bake for 35 45 minutes or until a toothpick inserted into the center comes out clean.

Beef and Rice Dish Recipe

1 lb. ground beef
3/4 c. chopped onion
1 (16 oz.) can tomatoes, cut up and drained
1 (15 oz.) can kidney beans (undrained)
1/2 c. uncooked rice
1/2 c. water
3 Tbsp. chopped green pepper
1 1/2 tsp. chili powder
1/2 tsp. garlic salt
3/4 c. shredded cheese
Frito corn chips

In a skillet, fry ground beef and onions. Drain. Stir in remaining ingredients except cheese and corn chips. Bring to a boil; reduce heat, cover and simmer for 20 minutes, stirring occasionally. Serve over corn chips, then top with cheese.

Taco Sauce with Beef Dip for Chips Recipe

2 lb. ground beef
1 large onion, finely chopped
1 medium green pepper, chopped
1 lb. cubed Velveeta cheese
1 lb. cubed pepper Jack cheese
1 (16 oz.) taco sauce
1 (10 oz.) can diced tomatoes and chilies, drained
1 (4 oz.) can mushroom stems
1 (2 oz.) can sliced ripe olives, drained
tortilla chips

In a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in the cheeses, taco sauce, tomatoes, mushrooms and olives. Cook and stir over low heat until cheese is melted. Serve warm with tortilla chips.
Makes a lot.

Mixed Berries Salad Recipe

1 c. fresh blackberries
1 c. fresh blueberries
1 c. fresh raspberries
1 c. fresh strawberries, hulled
1/2 c. strawberry nectar
2 Tbsp. raspberry vinegar
1 Tbsp. vegetable oil

Wash berries thoroughly. Combine berries and toss gently. Combine strawberry nectar, raspberry vinegar and vegetable oil. Mix well. Pour mixture over berries; toss gently. Cover and chill 1 hour.
Serves 6

Strawberry Topping for Ice Cream Recipe

1 pt. fresh strawberries
4 Tbsp. sugar
2 c. milk
1 tsp. vanilla
1 pt. vanilla ice cream
fresh strawberries for garnish

Wash strawberries; remove caps. Mash or blend well. Mix sugar, milk and vanilla. Stir in strawberries. Scoop ice cream into tall glasses. Pour strawberry mix over the ice cream. Garnish with whole uncapped strawberries
Makes 6 Servings

Fresh Strawberry Smoothies Recipe

2 c. vanilla frozen yogurt
1-1/2 c. fresh strawberries
2 Tbsp. sugar
2 tsp. lemon juice
2 c. crushed ice
additional fresh strawberries

Combine yogurt, 1-1/2 cups strawberries, sugar, lemon juice and ice in container of an electric blender; process until smooth. Garnish with additional strawberries.
Makes 2 Servings

Reduced Calorie Strawberry Pie Recipe

1 (12 oz.) can diet strawberry soda
1 box sugar-free strawberry jello
1 c. cold water
fresh strawberries
graham cracker crust

Bring strawberry soda to boil. Remove from burner; add jello. Mix well. Add cold water. Slice fresh fruit to desire. Pour in graham cracker crust. Chill.
Serves 8.

Angel Food Cake and Strawberries Dessert Recipe

1 angel food cake
2 (8 oz.) pkg. cream cheese
2 c. powdered sugar
4 c. Cool Whip
1 1/2 to 2 qt. sliced, fresh strawberries
2 pkg. strawberry glaze

Break prepared angel food cake into chunks and spread into a 9 x 13 x 2-inch pan or 3-quart dish.

Blend the cream cheese, powdered sugar and Cool Whip and spread over cake. Top with sliced strawberries. Spread strawberry glaze over strawberries. Chill prior to serving.

Melon Salad with Grapes Recipe


Honey Orange Dressing
2 Tbsp. honey
2 Tbsp. orange juice
1 Tbsp. oil
1/8 tsp. ginger

1 c. cubed cantaloupe melon
1 c. cubed honeydew melon
1 c. seedless red grapes, halved

In jar with tight-fitting lid, combine all dressing ingredients; shake well. In medium bowl, combine all salad ingredients. Pour dressing over salad; toss gently. Refrigerate until serving time.
Makes 6 (1/2-cup) servings.

Summer Fruit Salad Recipe

This is one of my favorite fruit salads.

3 medium peaches
2 c. sliced strawberries
2 c. blueberries
2 c. melon balls
3 medium bananas
1 (1 pt. 9 oz.) bottle pink sparkling grape juice, chilled

Peel peaches and slice into bowl. Top peach slices with strawberries, blueberries and melon balls. Cover tightly and chill. Just before serving, peel bananas and slice into fruit mixture. Pour grape juice over fruit. Serve immediately.
Makes 4-6 Servings

Weight Watcher Corner

This week went pretty well. I could not weigh in on Saturday. My air conditioner went out and I waited for the repairman to come and fix it. By my home scales I lost 3.2 pounds. I am finding eating more often and smaller meals works better for me. Eating more fruit seems to help too. One thing that seems to help a lot is when I go out to eat I automatically ask for a container to take 1/2 of my food home and separate it before I start eating.

I seem to need something crunchy to eat for snacks. It used to be chips and salsa. Now I am eating carrot and celery sticks with salsa. Surprising to me was the carrot sticks and celery dipped in salsa works out pretty well as a snack. It is crunchy and is spicy. I even like pico de gallo and celery and carrot sticks.

I miss drinking Classic Coca Cola a lot. Have found that if I drink 4 ounces of Coca Cola, my need for it tends to goes away. I do have to pour out the rest of the coke left in the can or bottle before I drink my Coca Cola. For some reason the coke left in the can or bottle keeps yelling my name and I end up drinking the whole can or bottle.

I have not tried any new recipes in the past several days. I have been eating a lot of fresh fruit and vegetables. I have been using my little outdoor grill to cook, chicken, pork chops, hamburgers, and steaks.
