Walt's Famous Watermelon Salad Recipe

2 c. (1" cubes) of watermelon 1 T. plain olive oil
6 sliced scallions, both parts 1 T. white wine vinegar
1 T. EACH snipped fresh mint & parsley
1-1/2 tsp. minced fresh jalpeno`

Combine fruit, vegetable, & herbs, cover & chill. Wisk together oil & vinegar; set aside at room temperature. When ready to serve, pour dressing over all & toss to coat. Serves 2, easy to increase.

Watermelon Nectarine Salad Recipe

1 heaping c. diced watermelon
1 nectarine, diced
1/4 c. minced red onion
1/4 large jalapeno`, minced (about 1 rounded T.)
Juice of 1/2 lime (can be lemon)
4 - 5 leaves basil, snipped*

Mix all together & chill at least 2 hours.
*If making a southern country dish, parsley is good in place of basil; if making a Tex-Mex dish, culantro is a good change. Serves 2 or 3; easy to multiply.

How does one tell if a watermelon is a good one. I see people thumping and smelling melons. What are they looking for in a good melon.

Mushroom Salad Recipe

1 lb. bacon
1 pkg. fresh mushrooms
1 head lettuce
1 medium red onion
1 c. sour cream
6 tsp. sugar, divided
1 to 2 Tbsp. milk (for thinning)
1 c. mayonnaise
3 oz. Parmesan cheese, grated

Fry bacon and slice mushrooms; set aside. Tear lettuce into bite-size pieces. Slice onion and separate into rings. Layer lettuce and onion rings on a platter. Combine sour cream, 3 teaspoons of sugar and enough milk to thin mixture. Drizzle over the lettuce and onions. Combine the mayonnaise, remaining sugar and enough milk to thin the mixture to drizzle over the sour cream mixture on the lettuce and onions. Sprinkle on the sliced mushrooms, crumbled bacon and Parmesan cheese. Do not pre-mix the 2 glazes and do not toss the salad. Chill for at least 3 hours before serving.

Kathy's Cucumber Salad Recipe

2/3 c. salad oil
1/4 c. vinegar
1/4 c. snipped parsley
1/4 c. sliced green onions
1 tsp. salt
1/4 tsp. pepper
1 clove garlic, minced
6 ripe tomatoes
1 onion
1 or 2 cucumbers

Mix dressing ingredients in deep bowl. Cut tomatoes into quarters or more if using larger tomatoes. Slice onion and cucumber. Marinate for 1 hour or longer. To serve, drain and layer on bed of lettuce.

Linguini Summer Salad Recipe

1 lb. linguini, cooked
8 oz. Italian salad dressing
1/2 bottle Salad Supreme spice
1 cubed cucumber
2 cubed tomatoes

Cook linguini and drain. While hot add the salad dressing and Salad Supreme spice. Mix well. Cool. Add cucumbers and tomatoes. Serve cold.

I also enjoy adding diced green peppers, cubed salami or pepperoni and cubed cheese.

Kathy's Squash Salad Recipe

1 small zucchini
1 tomato
juice of 1/2 lemon
2 Tbsp. salad oil
1/2 to 1 tsp. dried basil
salt and pepper to taste

Slice or chop vegetables. Mix other ingredients and drizzle over vegetables.
Makes 2 servings

Cinnamon Apple Pie Bread Recipe
Serves: 8

Forget the pie crust and get all the flavors in a quick and easy bread with brown sugar and cinnamon topping thatís as sweet as apple pie.

? cup light brown sugar (not packed)
1 teaspoon ground cinnamon
? cup white sugar
1/2 cup butter, softened
2 eggs
1-1/2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1-3/4 teaspoons baking powder
1/2 cup milk
1 apple, peeled and chopped ( Granny Smith)

Preheat oven to 350 degrees. Grease and flour a 9 x 5-inch loaf pan. Mix brown sugar and cinnamon together in a bowl and set aside. Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract and stir until incorporated.

Combine flour and baking powder together in another bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan. Next add half the apples and half the brown sugar cinnamon mixture. Lightly pat/push apple mixture into batter.

Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture. Lightly pat/push apples into batter; swirl brown sugar mixture through apples using a finger or spoon (I cleaned my hands and used my finger because it was easier).

Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 30 to 40 minutes. Mine took about 35. If you notice it getting too brown on the top, cover it loosely with tin foil and continue baking until the inside is done.

Hello Nancy and all Landers,
Thank you for the info Barb in OKC about the Black Forest Ham.

In Wisconsin we only have Cook's ham and Hillshire but I'm going to look online to see if I can order Black Forest Ham. Thank you too Robbie IN for the info about milk in your Peach Cobbler Recipe - would appreciate the amount of butter to use in the recipe.

I really thank all our Nancylanders for responding to questions about their recipes promptly as most of us are anxious to try them.

Tomato Watermelon Salad Recipe

1 part watermelon chunks
1 part fresh tomato chunks
Salt & pepper
Fresh or dried herb (basil, cilantro or mint)
Feta cheese crumbles
Olive oil
Red wine vinegar or your choice

Cut watermelon and tomatoes into pieces of the same size and sprinkle with salt. Let sit 30 minutes and pour off liquid. Sprinkle with black pepper and a fresh herb (basil, cilantro or mint) and crumbled feta cheese. Drizzle with olive oil and vinegar. We use red wine vinegar. Toss and serve.

NOTE: Another version adds 1 Tbsp. lime juice.

Watermelon for Jim:

Melon Ball Salad with Lime Syrup

3/4 cup sugar
1/2 cup fresh lime juice
2 T. finely grated lime zest
1 cantaloupe (about 3 lb)
1 honeydew ( abour 4 1/2 lb)
1/2 baby seedless watermelon ( about 2 1/2 lb)

Combine sugar, juice, & 1/4 cup water in small saucepan. Stir over med-hi heat until sugar dissolved (5 min). Remove from heat & add zest. Cover pan & set aside 15 min. Strain into small bowl, cover & refrigerate until chilled (2 hours +). Cut each melon in half, remove & discard seeds & scoop flesh with sharp 1 in. melon baller. Place all balls in large bowl, cover & refrigerate until 30 min. before serving.

Pour lime syrup over balls. Cover & chill at least 30 min. before servings. Divide into 8 tumblers & garnish w/mint.

Watermelon Gazpacho Recipe

Combine 3 c. diced watermelon, 2 c. chopped tomatoes, 1/2 cup diced cucumber, 2 T. chopped cilantro and 1 T each olive oil & sherry or red wine vinegar in bowl. Pulse half of mixture in food processor until finely chopped. Return bowl & season to taste.
Ladle into 4 serving bowls.

Watermelon-Ginger Granita

Combine 4 c. cubed watermelon w/6 T honey, 1 T fresh lime juice, and 2 t. finely grated fresh ginger in blender. Puree until smooth. Transfer to shallow 1 1/2 qt dish, cover & freeze overnight. Break up clumps w/fork until texture is grainy. Refreeze 20 min. or until firm. Keep frozen until ready to serve.
Serves 4.

Watermelon Popsicles Recipe

1 ripe watermelon

Seed the watermelon and puree it in a food processor or blender. Pour into plastic popsicle molds or paper cups and freeze for several hours. If you are using paper cups, wait until the popsicle is partially frozen, then insert a popsicle stick.

Watermelon Tortillas Recipe

1/2 watermelon
2 apples
1 qt. strawberries
sliced almonds
vanilla nonfat yogurt
tortilla shells

Cut watermelon, apples and strawberries in small pieces. Combine fruit and almonds in a bowl to make a fruit salad. Spread yogurt on tortilla shell. Add some fruit salad and roll up shell.
