Linda's Crock Pot Barbecue Chicken Recipe

1 frying chicken, cut up (or favorite pieces)
3/4 c. onion, chopped
3 Tbsp. brown sugar
1 Tbsp. Worcestershire sauce
1/4 tsp. thyme
1 can condensed tomato soup
1/4 c. vinegar
1/2 tsp. salt
1/4 tsp. sweet basil

Wash chicken and place in crock-pot. Combine all other ingredients and pour over chicken. Cover and cook on low for 6 to 8 hours.

Linda's Crock Pot Pork Chops Recipe

Ingredients
4 pork chops in crock-pot
1 jar mushrooms
1 pkg. dry Lipton onion soup
1/4 c. white wine (I use water)

Directions
Just cook on low for 4 to 6 hours.

Crockpot Pork Chops Recipe #2

Ingredients
1/2 c. flour
2 tsp. salt
1-1/2 tsp. ground mustard
1/2 tsp. garlic powder
6 pork chops (3/4 inch thick) trimmed
2 Tbsp. oil
1 can cream of chicken soup, undiluted
1/3 c. water

Directions
In a shallow bowl, combine flour, ground mustard, salt and garlic powder and dredge pork chops. In a skillet, brown both sides in oil. Place in greased crock pot. Combine soup and water until smooth; pour over chops. Cover and cook on low for 6 to 8 hours.

Linda's Crock Pot Chicken Enchiladas Casserole Recipe

1 lb. ground beef
1 onion
1 small can of chilies
1 small can of mild enchilada sauce
1 can golden mushroom soup, undiluted
1 can cheddar cheese soup, undiluted
1 can cream of mushroom soup, undiluted
1 can cream of celery soup, undiluted
1 large package of Dorito chips

Brown ground beef and chopped onion, drain off grease. Put all ingredients in crock pot except Dorito chips. Mix and cook low 5 to 6 hours. Last 15 minutes before you are ready to eat, add Dorito chips and stir.

Hamburger Stroganoff on a Bun Recipe

Ingredients
1 to 1-1/2 lbs. ground beef
3 slices bacon, diced
1/2 cup chopped onion
1 1/2 T. flour
3/4 t. salt
1/4 tp. paprika
Dash pepper
1 can condensed cream of mushroom soup
1 cup sour cream
8 to 10 hamburger buns, split and toasted

Directions
Put ground beef and bacon in electric skillet, heat to about 30. Cook and stir til beef is browned. Add onion and cook til just tender. Spoon off fat. Blend flour, salt, paprika, and pepper into meat. Stir in mushroom soup. Cook, uncovered, at about 220 for 15 to 10 minutes stirring often. Stir in sour cream; heat. Serve in buns. Serves 8 to 10

Thank you so much Robbie IN for the pickle recipes and anyone else who sent pickle recipes in. I'm just amazed at my garden this year compared to last year. We have had just the right amount of rain and sun to make a bountiful garden. I truly appreciate all the recipes our Nancylanders send in and all Nancy's hard work getting the newsletter out to us all.

I would like to thank Robbie IN for all the pickle recipes. I'll have a bumper crop of cukes so will try them all.

I have a new flat screen monitor for my computer - can anyone tell me how to clean it? Son got some splatters of milk on it and I don't know how to clean it without harming the screen.

1st thing, is to stop, and get a plan of attack. Don't use water and anything that has alcohol. Including the cleaning sprays from Radio shack.

It is extremely easy to really damage the screen if you do it wrong. Pick a time when kids are gone, and you are relaxed to clean it, and don't have a war against it

Easy Oreo Cheesecake Squares Recipe

Ingredients
16 ounces Oreo cookies (or off-brand equivalent)
1/2 cup butter (1 stick), melted
2 (3-ounce) boxes of instant vanilla pudding
3-1/2 cups milk
8 ounces cream cheese
12 ounce tub whip topping

Directions
Roll or crush cookies into fine crumbs. Reserve 1/4 cup of the crumbs, and mix the remaining crumbs with the melted butter. Press mixture into the bottom of a 9 x 13 dish.

Thoroughly combine the pudding mix, milk, and cream cheese. Pour over prepared crust. Spread on Cool whip and sprinkle remaining cookie crumbs. Chill.

Oma's Blackened Fish Recipe

Ingredients
4 fresh or frozen catfish, cod, pollock, pompano or haddock fillets (1 lb.)
1/4 tsp. onion powder
1/2 tsp. garlic salt
1/2 tsp. ground red pepper
1/2 tsp. dried basil, crushed
1/4 tsp. ground white pepper
1/4 tsp. dried thyme, crushed
1/4 tsp. black pepper
1/8 tsp. ground sage
1/4 c. margarine or butter, melted

Thaw fish if frozen. In a small mixing bowl combine onion powder, garlic salt, red pepper, basil, white pepper, thyme, black pepper and sage. Brush both sides of fish with melted margarine; coat with seasoning. If using a charcoal grill, remove grill rack and place an unoiled 12-inch cast-iron skillet directly on hot coals. If using a gas grill, turn to high and place skillet on the grill rack. Preheat the skillet 5 minutes or until a drop of water sizzles. Add coated fillets to skillet. Carefully drizzle about 2 teaspoons of melted margarine over the fish. Grill fish 2 1/2 to 3 minutes or until blackened. Turn fish and drizzle with 2 teaspoons of melted margarine. Grill 2 1/2 to 3 minutes more. Transfer to serving plates. Drizzle with any remaining melted margarine.
Makes 4 servings.

Oma's Cajun Shrimp Recipe

Ingredients
1/4 c. butter or margarine
1/4 c. dry white wine
1 Tbsp. garlic salt
1/2 Tbsp. dried rosemary, crushed
1/2 Tbsp. paprika
1/4 Tbsp. dried basil, crushed
1/4 to 1/2 tsp. dried oregano, crushed
1 lb. fresh large shrimp, peeled and deveined with tails left on

Directions
In large skillet, melt butter. Add wine and seasonings. Bring to a boil. Reduce heat and simmer, uncovered, 5 minutes.

Wash shrimp. Pat dry with paper towel. Add to skillet mixture and saute until shrimp turn pink. Serve over hot, cooked rice or spaghetti.

Oma's Easy Spaghetti Recipe

1 Tbsp. oil
1 large onion, chopped
1 lb. ground beef
1 1/2 tsp. salt
pepper to taste
8 oz. can tomato sauce
1 pt. canned tomatoes
1 1/2 c. water
1/4 lb. uncooked spaghetti
grated cheese

Heat oil in skillet. Add onion and cook until soft; crumble in beef in chunks. Stir and fry until it loses its red color. Add salt and pepper to taste. Pour in tomato sauce, canned tomatoes and water and bring to a boil. Break spaghetti in desired lengths, sprinkle in a little at a time, stirring it into sauce and keeping it separated. Cover tightly. Simmer 20 to 30 minutes. Stir as needed. Serve with cheese.
Makes 4 large servings.

Crock Pot Green Beans and Potatoes Recipe

3 cans whole Del Monte green beans, drained
1/2 lb. bacon, fried crisp, crumbled
1/2 c. vinegar
1/2 c. sugar
1 onion, thinly sliced
1/4 c. bacon grease
4 Irish potatoes, quartered

Drain beans. Place beans and potatoes in crock pot. Top with sliced onion and crumbled bacon. In small sauce pan, combine bacon grease, sugar, vinegar and water. Bring to boil and pour over beans. Cook on low 5 -6 hours.

Oma's Crock Pot Beef Tips Recipe

2-3 pounds of beef tips
1 10.5 oz can cream of mushroom soup
1 10.5 oz can french onion soup (not the dry)
1 8- oz carton sour cream

Brown beef in skillet. The combine the beef tips, mushroom and onion soups in crock pot and let simmer all day. Just before serving add the sour cream. Serve over rice or egg noodles.

Oma's Crock Pot Chicken Recipe

4 chicken breasts (boneless and skinless)
salt and pepper to taste
1 c. bell pepper, diced
1 (16 oz.) can white beans, drained and rinsed
1 (14 oz.) can tomatoes (undrained)

Place the chicken in a crock-pot. Sprinkle salt and pepper. Add bell pepper, beans and tomatoes. Cover and cook on low setting for 6-8 hours.
Serve with rice.

Crockpot Chicken and Vegetables (Mississippi Mud Style)

Ingredients:
Two boneless skinless chicken breasts
3 cups whole green beans (fresh) see note below
5 medium red potatoes (cut up in chunks)
1 package dry ranch dressing mix
1 package dry chicken gravy mix
1/2 stick butter
1/3 cup water

Directions:
Wash and place green beans on one side of the Crockpot. Place cut potatoes on the other side and the chicken in the center. Mix together the Dry Mixes and Sprinkle evenly over the chicken. Place the 1/2 of butter on top. Slowly pour water on vegetables (not chicken). Cook on low heat for 6-8 hours until chicken is done and tender.
I used canned cut green beans but added them the last 2 hours of cooking with great success.

Willie's Cookie Recipes



No Bake Chocolate Cookies Recipe

Ingredients
6 T. cocoa
2 cups sugar
1 cube margarine
1/2 cup milk
3/4 cup peanut butter
1 tsp. vanilla
3 cup quick-cooking oats

Directions
Mix together cocoa and sugar; add margarine and milk. Boil 1 minute; remove from heat. Add peanut butter vanilla and oats. Stir; drop by spoonfuls on waxed paper.

Pumpkin Cookies Recipe

Ingredients
1-1/2 cup pumpkin
1/2 cup oleo
1 cup sugar
1/2 tsp. salt
1 tsp. vanilla
2 cup unsifted flour
1 tsp. soda
1 tsp. baking powder
1 tsp. cinnamon
1 package butterscotch morsels

Directions
Mix all ingredients in order given; drop by spoonfuls onto greased cookie sheet. Bake in 375 degree oven for 12 to 14 minutes. Raisins, pecans or coconut may be substituted for the butterscotch chips.
Yield: 4 dozen

Peanut Butter Drop Cookies Recipe

Ingredients
2 cup brown sugar
2 eggs
1 1/4 cup shortening
1 tsp. vanilla
1/2 cup water
4 cups flour, sifted
1 tsp. soda
1 tsp. salt
Chunky peanut butter

Directions
Cream brown sugar, eggs and shortening. Add vanilla and water. Add sifted dry ingredients. On greased cookie sheet, drop spoonfuls of cookie dough, 1/2 tsp. chunky peanut on top of each and another 1/2 tsp. cookie dough as top layer. Bale at 350 degrees until done.
Yield: 5 dozen
