This is a very good salad that is sure to please anyone that likes shrimp. I usually double it, as it disappears quickly whenever I make it.

Macaroni Shrimp Salad Recipe

1-1/2 cups cooked (about 3/4 cup uncooked) small sea shell pasta
1/2 lb. cooked cleaned small (cocktail size) shrimp
1/3 cup chopped celery
2 tbsp. sliced pimiento-stuffed green olives
1 tbsp. fresh snipped parsley
1/2 cup mayonnaise
2 tbsp. red wine vinegar
2 tsp. lemon juice
1/4 tsp. garlic salt
1/4 tsp,. dry mustard
1/4 tsp. paprika

Combine macaroni, shrimp, celery, olives and parsley in a bowl. Combine remaining ingredients and toss with pasta mixture. Chill well.
4 servings.

This is a really delicious cake! I can't always find a orange cake mix, so will use a regular yellow cake mix and add some grated fresh orange rind to the batter.

Double Orange Refrigerator Sheet Cake Recipes

1 pkg. orange cake mix, or yellow mix with grated orange rind added
1 pkg. (3 oz.) orange Jello

Mix and bake cake mix as directed on the package for a 9x13" pan. While cake is baking, mix Jello into 3/4 cup boiling water and stir until dissolved; Stir in 1/2 cup cold water and let stand at room temperature. Cool cake for about 20 minutes. Poke holes in the top of warm cake with a meat fork at 1inch intervals and slowly pour Jello over. Refrigerate until cold.

Topping: In a chilled deep bowl, blend 1 envelope Dream Whip, 1 pkg. (4 serving size) vanilla instant pudding, 1-1/2 cup cold milk ad 1 tsp. orange extract. Beat until stiff (3 to 8 minutes) and immediately frost cake. Refrigerate until serving time. Can also freeze frosted cake.

I have many many wonderful Sloppy Joe mixtures over the years, but this is still our favorite. It seems to have just the right blend of ingredients with a great tangy taste that bursts when it hits your mouth.

Beef Barbecue Recipe

1-1/2 lbs. lean ground beef
1 cup diced celery
1/2 cup diced onion
2 tbsp. brown sugar
1 tbsp. cider vinegar
2 tbsp. prepared mustard
1 cup Ketchup
2 tbsp. flour
2 tbsp. Worcestershire sauce

Brown meat, celery and onion till meat is no longer pink. Add remaining ingredients. Cover and simmer 20 to 30 minutes, stirring occasionally. Serve on buns.

Corn Souffle Recipe

2 eggs
2 tablespoons cornstarch
2 tablespoons sugar
Salt/pepper to taste
16 oz. can cream style corn
1/2 cup sour cream

With electric mixer, beat eggs till foamy. Beat in remaining ingredients. Pour into Pam sprayed 8 x 8 inch square baking dish. Bake in preheated 400 degree oven for 35 minutes or until knife comes out clean.

Stuffed Zucchini Squash Recipe

3 medium zucchini squash
1 lb. Italian sausage
1/2 c. seasoned bread crumbs
1 egg, beaten
grated Parmesan cheese

Wash zucchini and cut in half lengthwise. Place in boiling salted water and boil until tender. Remove from water and scrape out pulp. Drain well. Remove sausage from casing and fry until no longer pink. Combine pulp, sausage, bread crumbs and beaten egg. Mix gently. Fill squash lengths with mixture and sprinkle with grated Parmesan cheese. Place in a lightly oiled baking pan. Bake at 375 for 20 to 30 minutes.

Zucchini and Sausage Casserole Recipe

4 or 5 zucchini squash
1/2 lb. Jimmy Dean sausage
1 medium size onion, chopped
2 eggs
3/4 cup Jack Cheese

Boil squash until tender; drain liquid. Chop onion and fry with sausage. Place a layer of squash, a layer of sausage and onion and a layer of Jack cheese until casserole dish is full. Beat 2 eggs well and pour over mixture. Bake at 400 until eggs are well done.

Fresh Tomato and Zucchini Gratin Recipe

2 lb. zucchini
6 Tbsp. butter or margarine
2 1/2 lb. tomatoes
2 cloves garlic, minced
2 Tbsp. fresh basil, chopped
salt and pepper to taste
1/4 c. bread crumbs
1/4 c. Parmesan cheese
1 small onion

Slice unpeeled zucchini into 1/4-inch pieces. Melt butter in a large skillet and cook zucchini, stirring for 10 minutes. With a slotted spoon, transfer zucchini to a bowl, cover and set aside. Peel and chop tomatoes and place in skillet with onion, garlic and basil. Cook over medium heat about 15 minutes or until some of the liquid evaporates. Season with salt and pepper. Combine tomatoes and zucchini and place in a shallow baking dish (7 1/2 x 10 1/2-inch).

Combine crumbs and cheese; sprinkle over the top. Dot generously with butter and bake 10 minutes at 350. Run dish under broiler briefly to brown.
Makes 6 to 8 servings.

Note: This is one of our family favorites.

Carrot and Zucchini Salad Recipe

1 (16 oz.) can sliced carrots, drained
1 (16 oz.) can green beans, drained
6 thin slices large red onion
2 Tbsp. apple cider vinegar
pickled beets, sliced (optional)
1/4 c. oil
3 Tbsp. honey
1/8 tsp. salt
lettuce, chopped (optional)

Combine carrots, green beans and onion in glass jar with good lid. Combine oil, vinegar, honey and salt. Pour over vegetables. Marinate several hours or overnight (turn jar upside down a couple times). When marinated, drain well. (Because of the honey, you may want to blot vegetables by pouring about a third at a time on a paper towel lined platter.) Arrange on chopped lettuce. Garnish with pickled beets, or put marinated vegetables in glass bowl and serve as vegetable dish.
