The following has been one of my husband and children’s favorite for many years, and it’s so simple:

Sausage Combo Recipe

1 lb. pkg. ground sausage, any heat (spiciness) desired (or more sausage if you want)
Chopped onion, as desired
Chopped green pepper, as desired
Cooked rice

All you do is brown the sausage, breaking it up as it cooks, with the onions and pepper. When sausage is cooked through, add as much cooked rice as you want. No draining the sausage, though, because it adds the flavor. Serve and enjoy. This meal has some wonderful flavor to it!

Nancy, Marvis, and Athena, I loved the Lubbock stories in the last two newsletters. My family bleeds red and black from Texas Tech. My dad, sister, brother-in-law, nephew, niece, and I went to Tech. We have two young cousins going there now!  I remember an apartment my sister, brother-in-law, and I lived in on 33rd. I had to sweep sand out of my bed after dust storms.

Robbie, have used this recipe for years, maybe 50, so you know it is T & T !!! Everyone has a different opinion on the taste. Use this and adjust to yours.

Chinese Sweet and Sour Sauce Recipe

Combine and heat to boiling:
1 cup pineapple juice
1/3 cup vinegar
1/2 cup brown sugar, packed
3/4 cup chicken broth
2 tsp. soy sauce
Mix 1/4 cup broth with
2- 1/2 tbs .cornstarch

Add to sauce
Cook till thickened

I like to add 1/3 cup ketchup and not so much sugar, for the better color. Actually I use all the pineapple juice and adjust the rest for the taste I am wanting !!

I use tidbit pineapple, green pepper, and prefer some pre-cooked thin sliced carrot and 1/4 cup of sweet pickle slices and small chunks of peeled tomato in my recipe.

I like all in one meals that can be cooked in a skillet! This one is very satisfying.

Simple Salsa Skillet Recipe

1 green pepper, cut in thin strips
1 red pepper, cut in thin strips
1 tbsp. cooking oil
2 cups cubed cooked potatoes
1-1/2 cups cubed cooked chicken
1 can (15 oz.) whole kernel corn, drained
1 can (16 oz.) black beans, rinsed & drained
1 (16 oz.) jar salsa
Sour cream, optional

In large skillet, cook pepper strips in cooking oil for 2 minutes. Add potatoes, chicken, corn, beans and salsa stirring gently. Cover and cook over medium-low heat about 10 minutes, or until heated through, stirring occasionally. Serve with sour cream on top, if desired.
4 to 6 servings.

I add some diced red onion and 1 minced clove garlic, cooking with pepper strips.

I prefer using frozen corn (thawed) in place of the canned, I also sprinkle some fresh cilantro on top before serving.

A quick and easy self-frosted brownie-type bar for chocolate lovers.

Lazy Day Bars Recipe

2 eggs
1/4 cup water
1/4 cup butter, softened
1/4 cup packed brown sugar
1 German chocolate cake mix
1 cup butterscotch or semi-sweet chocolate chips
1/2 cup chopped nuts

Grease and flour a 15 x 10 inch jelly roll pan. Beat eggs, water, butter, brown sugar and half the dry cake mix until smooth. Stir i remaining cake mix.

Spread in pan; sprinkle with butterscotch (or semi-sweet chocolate) pieces and nuts. Bake 20 minutes at 375. Cool and cut into bars. Makes 30 bars.

This makes a large salad, so is good to take to potlucks, family reunions, etc. Is a real crowd-pleaser. Could easily cut recipe in half.

Fritos and Corn Salad Recipe

3 cans (11 oz. each) Mexicorn (corn with red & green peppers) drained
1 cup (8 oz.) dairy sour cream
1 cup (8 oz.) small curd cottage cheese
3 tbsp. prepared mustard
Few dashes hot pepper sauce
1 bunch small green onions, sliced (with tops)
1 bag (10 oz.) regular Fritos corn chips, coarsely crushed

Place drained corn in large serving bowl. In a medium bowl, combine sour cream, cottage cheese, mustard and hot pepper sauce. Pour over the corn; add sliced onion. Stir to blend well. Before serving, add Fritos to salad, stirring to combine.

Betty Crocker Free Samples Just for You 

We received 10 inches of snow over the weekend, so I have a pot of this soup on the stove to cheer and warm up. Tonight's forecast going in to tomorrow calls for freezing rain and sleet, which usually means we will loose power for a few hours or days. We are eagerly looking forward to spring arriving soon.

Spicy Black Bean Soup Recipe

1 tablespoon olive oil
12 to 16 ounces Andouille or spicy sausage, thinly sliced
1 large onion, diced
2 ribs celery, diced
2 cloves garlic, minced
1 small red bell pepper, diced, about 1/2 cup
2 tablespoons diced jalapeno peppers or more depending on your taste
4 cups beef broth
2 cans (15 ounces each) black beans, drained and rinsed
1 can (14.5 ounces) diced tomatoes with juice
1/4 teaspoon dried leaf thyme
1/4 teaspoon basil
1 bay leaf
Salt and pepper to taste
Dash of Tabasco sauce- optional

Heat olive oil in a large saucepan or Dutch oven. Add sausage and cook over medium heat until browned. Add onion, celery, red bell pepper, and jalapeno peppers; sauté for about 3 minutes, until tender. Add garlic and sauté for 1 minute longer. Add the beef broth, beans, tomatoes, and remaining seasonings. Bring to a boil. Cover, reduce heat to low, and simmer for about 45 minutes. Remove bay leaf before serving.
Serve with salad, cornbread or crusty rolls.

This is a favorite of ours. It can be baked satisfactorily in a bundt pan, 9x 13, loaf pans or 2 eight inch square pans. Our preferred method is to bake in 2 eight inch square pans. Eat one, freeze or give away the second. It freezes beautifully. The frozen one thaws , heats well even with the glaze.

Peach Pound Cake Recipe

1 Butter Golden Cake Mix
2/3 cup water
3 large eggs
1 stick butter or oleo, softened
1 small pkg. instant vanilla pudding
1 15oz. Can diced peaches OR sliced peaches diced, drained
1 teaspoon vanilla
1teaspoon butter flavoring

Spray 2 eight or nine inch square pans with Pam. Mix all ingredients according to cake pkg. directions. Fold in drained peaches, and add flavorings last. Pour batter into pans. Bake 30 minutes at 350 or till tests done in middle. Cool in pan about 10 minutes.

1-1/2 cups powdered sugar
1/4 cup softened oleo
1 tsp. vanilla
Add enough hot water for spreading consistency.

Sprinkle with toasted almonds.(opt.)

About a week or so, maybe longer, and not sure who sent it in, maybe Bill, someone told us what to do with those little silicone paks (silica gel) that come in just about anything you buy nowadays./ I neglected to copy and there were some good ideas for using them. Here is a recipe that we like for Cauliflower and cheese soup. My husband loved it and he doesn't even like cauliflower.

Cauliflower and Cheese Soup Recipe

1 stick Butter
1 small Onion, Finely Diced
1 whole Carrot Finely Diced
1 stalk Celery, Finely Diced
1 whole Cauliflower Head (roughly Chopped)
2 Tbs. Fresh Or Dried Parsley (chopped)
2 quarts Low-sodium Chicken Broth Or Stock
6 Tbs. Flour
2 cups Whole Milk
1 cup heavy whipping cream
2 tsp. To 4 Tsp. Salt, To Taste
2-3 cups shredded cheddar cheese

In a large soup pot or Dutch oven, melt butter. Add the onion and cook for a few minutes, or until it starts to turn brown.

Add the carrots and celery and cook an additional couple of minutes. Add cauliflower and parsley and stir to combine.

Cover and cook over very low heat for 15 minutes. After 15 minutes, pour in chicken stock or broth. Bring to a boil, then reduce heat and allow to simmer for 30 minutes. Puree the soup with an immersion blender or do in batches in a food processor or blender.

In a jar covered with a lid , Shake the flour with the milk and whisk to combine. Add flour-milk mixture slowly to the soup, stirring constantly.

Remove from heat and stir in 1 cup half-and-half. Allow to simmer for 15 to 20 minutes. Check seasoning and add more salt or pepper if necessary. Add cheddar cheese and stir until combined.

Serve immediately.

Lisa's Oven Baked Beef Stroganoff Recipe

2 lb. beef cubes
1 can cream of mushroom soup
1 can cream of celery soup
1 envelope onion soup mix
1 small container sour cream
1 small package egg noodles

In 2-quart covered casserole, stir soups. Add beef. Cover and bake at 325° for 3 hours. Before serving, add sour cream. Cook noodles according to package. Serve over noodles.

Lisa's Sauerkraut and Meatballs Recipe

2 lb. ground beef
1 pkg. onion soup mix
3 eggs
1 bottle chili sauce
1 bottle water
1/2 c. brown sugar
1 can whole or jellied cranberry sauce
1/4 c. barbecue sauce
2 lb. sauerkraut, drained

Mix ground beef, soup and eggs together. Shape into small meatballs. Place in a 9 x 13 pan. Cover with sauerkraut. Mix together the rest of ingredients and heat to dissolve cranberry sauce a little. Spoon mixture over sauerkraut and bake, covered, at 350° for 1 hour. Uncover and bake 30 minutes longer.

Lisa's Southwestern Meatballs Recipe

1-1/2 lb. ground beef
1-1/2 c. bread crumbs
1/3 c. chopped onions
1/3 c. milk
3 Tbsp. chopped parsley
1 egg
salt and pepper

Cheese Sauce
1 lb. Velveeta cheese
1 can cheese soup
1 (14 oz.) can green chilies
1 pkg. taco seasoning mix
3/4 c. water or milk

Mix first 7 ingredients and roll into bite size balls. Dredge in flour and bake.

Melt Cheese Sauce ingredients together and add cooked meatballs.
Serve hot.
Makes 4-5 Servings

Robbie, this is a very easy plum sauce. I have used it on ham, chicken and pork. It is especially good on spareribs as a dipping sauce.

1 c. plum preserves or canned mashed plums
1 Tbsp. sugar
1/2 tsp. chutney
1 Tbsp. vinegar

On low heat, cook until melted.
