This salad has been a favorite of our family for many years. Our oldest son asks for it when he is coming home for a visit, and is always on our Easter menu. I have tried using mayonnaise in it, and another kind of cheese, but just isn't the same, so I would
suggest do not substitute any of the ingredients.

Macaroni and Cheese Salad Recipe

1 pkg. (12 oz.) salad macaroni
4 hard-cooked eggs, diced
1 medium onion, diced
1 cup shredded American cheese
2 tsp. prepared yellow mustard
Salt & pepper, to taste
2 tbsp. cider vinegar
1 cup Miracle Whip salad dressing
1/2 tsp. celery seed

Cook macaroni according to directions on the package; drain and rinse with old water. Add remaining ingredients and mix in large bowl. Sprinkle top with paprika. cover and chill well before serving.

This is a wonderful potato dish to serve with any meal, and always makes a hit at a potluck. You need to plan ahead, as it has to chill overnight.

Judy's Potatoes Romanoff Recipe

6 medium cooked potatoes diced small
1 pint (2 cups) dairy sour cream
1 bunch green onions, chopped fine
1-1/2 cups shredded Cheddar cheese
1-1/2 tsp. salt, or to taste
1/4 tsp. pepper

Mix together all but 1/2 cup cheese. Put in 2 quart casserole dish. Cover and chill overnight. Sprinkle with 1/2 cup cheese. Bake, uncovered at 350 for 30 to 40 minutes until thoroughly heated.

I am seeking a recipe for potato soup that is served in Panera Bread Company restaurants throughout the area. If anyone has such a recipe, I'd appreciate a copy of it.

Our family likes anything made with Oreo cookies. This has always been a hit when I make it.

White Russian Pie Using Oreos Recipe

24 large marshmallows
1/2 cup milk
21 cream-filled chocolate sandwich cookies, finely crushed
3 tablespoons butter, melted
1/3 cup coffee liqueur or strong black coffee, chilled
2 cups whipped cream or whipped topping
Chocolate curls (optional)

In a medium saucepan, combine marshmallows and milk; cook over low heat until marshmallows melt, stirring constantly. Let cool in the pan 15 minutes.

Meanwhile, in a medium bowl, combine cookie crumbs and butter; mix well then press mixture firmly over bottom and sides of a 9-inch pie plate. Freeze 15 minutes, or until firm.

Place cream that has been whipped or dessert topping, like Cool Whip, in a large bowl. Stir liqueur into marshmallow mixture then gently fold mixture into whipped cream; spoon into crust then cover loosely.

Freeze pie for 8 hours, or until firm. Just before serving, garnish with chocolate curls, if desired. Can also use additional crushed cookies as garnish.

Triple Layer Decadent Mud Pie Recipe

3 squares BAKER'S Semi-Sweet Baking Chocolate, melted- 1 Cup
1/4 cup canned sweetened condensed milk-not evaporated milk
1 OREO Pie Crust (6 oz.)
1/2 cup chopped Pecans, toasted
2 cups cold milk
2 pkg. (4-serving size each) JELL-O Chocolate Flavor Instant Pudding & Pie Filling
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Mix melted chocolate and condensed milk until well blended. Pour into crust; sprinkle with pecans.

Pour milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. (Mixture will be thick.) Spoon 1-1/2 cups of the pudding over pecans in crust. Add half of the whipped topping to remaining pudding; stir with wire whisk until well blended. Spread over pudding layer in crust;
top with remaining whipped topping.

Refrigerate at least 3 hours before serving. Store leftover pie in refrigerator.

Southern Ice Tea Punch Recipe

2 family-size tea bags
1/2 cup sugar
1 6-oz can frozen lemonade concentrate
1 12-oz can pineapple-orange concentrate
1 lemon or orange, sliced (optional)
2 mint sprigs (optional)

Bring 8 cups water to boil. Add the tea bags; steep for 5 minutes. Remove tea bags and discard. Stir in sugar until dissolved. Pour the tea into a gallon plastic jug with a tight lid.

Add the concentrates, stir and chill, up to 24 hours in advance. Before the picnic, fill the rest of the jug with ice cubes and add the fruit slices and mint sprigs. Serves: 16

Can also add 1 liter of ginger ale if desired.

Mushroom Fruit Salad Recipe

2 oranges
1/2 lb (228 g) button mushrooms
1 oz (29 g) flaked almonds
4 ozs (115 g) strawberries
1/2 lemon
1/2 cucumber, sliced
1 tablespoon (15 ml) fresh mint, finely chopped

Peel one orange & remove the pith. Cut the orange into rings, then into quarters. Mix the orange with the mushrooms, almonds & strawberries. Squeeze the juice from the remaining orange, as well as the 1/2 lemon.

Pour the fruit juices over the mushrooms. Arrange the cucumber slices around the edge of a salad bowl. Then, put
the mushroom mixture in the centre. Sprinkle with chopped mint. Chill for 1 hour.

Easter Cookie Recipes

Lemon Butter Cookies Recipe

1 cup butter
1-1/2 cups sifted powdered sugar
1 egg (beaten)
2 tsps. lemon juice
2 cups all-purpose flour (sifted)
1 tsp. cream of tarter
1/2 tsp. salt
1/2 tsp. baking soda

Cream butter and sugar together until fluffy. Add lemon juice, cream of tartar, then egg, stirring well after each. To this, add the salt and flour and mix well then chill. Drop by rounded tsps. onto a lightly greased cookie sheet and sprinkle a little granulated sugar on each one. Bake at 375 for 12 to 15 mins. until just beginning to brown.
Makes 4-1/2 doz. cookies

Soft Molasses Cookies Recipe

2-1/4 cups all-purpose flour (sifted)
1 tsp. ginger
1 tsp. cinnamon
1/4 tsp. salt
2 tsps. baking soda
2 Tbsps. hot water
1/2 cup soft shortening
1/2 cup sugar
1/2 cup molasses
1 egg
6 Tbsps. cold water
1/2 cup seedless raisins or dates

Sift together flour, ginger, cinnamon, and salt. Dissolve soda in hot water. Mix shortening, sugar, molasses, and egg until creamy. Stir in flour mixture alternately with cold water, then add soda and all but a few of the raisins or dates. Drop by rounded Tbsps. 2 inches apart onto a greased cookie sheet. Sprinkle with remaining fruit. Bake 12 mins. until done.

Lemon Cake Mix Cookies

1 (18.25 ounce) package lemon cake mix
2 eggs
1/3 cup vegetable oil
1 teaspoon lemon extract
1/3 cup powder sugar

Preheat oven to 375 degrees F.
In large bowl pour in cake mix. Stir in oil, eggs and lemon extract until well blended.
Put powder sugar in a small bowl then drop teaspoonful of dough into sugar and roll them around so that they are lightly covered. Place them onto increased cookie sheet. Bake for 6-9 minutes in the preheated oven. The bottoms will be lightly brown and insides chewy.
Yields: 36 servings

Lemon Sugar Cookies Recipe

1 pkg. (2 layer) lemon cake mix
3/4 c. butter; softened
1 egg
1 cup yellow cornmeal
2 tablespoons finely shredded lemon peel

Preheat oven to 375 degrees. In a large mixing bowl, beat butter and egg with an electric mixer on medium speed for 30 seconds. Gradually beat in cake mix until combined. Stir in cornmeal and lemon peel.
(If you want your cookies to be a bright yellow, add a few drops of yellow food coloring)

Roll dough into 1" balls. Roll in granulated sugar. Place on an ungreased cookie sheet about 2 inches apart. Bake 9 to 10 minutes until lightly browned on the bottom. Let cool on cookie sheet for 1 minute so they don't fall apart when you take them off. Cool.

Ham and Ham Glaze Recipes

Easter Baked Ham Mustard Glaze Recipe

3/4 c. brown sugar
1/4 c. dry mustard (scant)
1 tbsp. flour
3/4 c. bouillon (diluted somewhat)
2 egg yolks, beaten

Mix brown sugar, dry mustard and flour. Add bouillon and beaten egg yolks. Cook in a double boiler, stirring constantly. Serve with baked ham.

Easter Fruit Ham Glaze Recipe

1 c. apples, diced
1 c. apricots
1/2 tsp. dry mustard
2 c. apple cider
1/2 tsp. crushed cloves

Soak apricots in cider for 1 hour. After ham has cooked 1-1 1/2 hours, remove from oven. Add above ingredients, blended together. Ham rule of thumb = 325 degrees
at 25 minutes per pound.

Easter Dijon Mustard Ham Glaze Recipe

1/2 c. (6 oz.) apple jelly
1 tbsp. Dijon mustard
1 tbsp. bourbon (opt.)
1 1/2 tsp. lemon juice
1/8 tsp. ground cloves

For Garnish: Fresh pineapple wedges. Melt jelly in a small saucepan or in microwave. Remove from heat. Whisk in remaining glaze ingredients until well blended. Cool to
room temperature. Heat oven to 350 degrees. Have a roasting pan ready. Unwrap ham. Stand cut side down in roasting pan (this seals in moisture and keeps slices from separating during heating). Bake about 1 hour (8 minutes per pound). Remove from oven. Increase oven temperature to 450 degrees. Brush ham with glaze and return to oven 5 to 7 minutes longer until glazed. Remove from oven and let stand 10 minutes before serving.

To Serve: Place ham on its side on serving platter. Gently fan slices out from bone. Surround with pineapple wedges.

Ham Honey Sauce Recipe

1/2 c. cultured sour cream
1/4 c. strained honey
1/2 c. mayonnaise
1 tsp. prepared mustard
1 tbsp. horseradish

Fold ingredients together. Serve with baked ham or on ham sandwiches.

Easter Baked Ham Raisin Sauce Recipe

2 tbsp. vinegar
1/2 c. brown sugar
1 tsp. lemon juice
1 tsp. mustard
1 c. water
2 tbsp. flour
3/4 c. raisins or more

Mix together. Cook until thicken. Serve with baked ham.

Easter Ham Cherry Almond Glaze Recipe

1 (12 oz.) jar cherry preserves
1/4 c. vinegar
2 tbsp. corn syrup
1/4 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
1/3 c. slivered almonds
3 tbsp. water

In a saucepan, combine all ingredients except almonds and water. Bring to a boil. Reduce heat; simmer 2 minutes, stirring frequently. Stir in the almonds. About 15 minutes before ham is done, spoon 1/4 to 1/3 cup glaze over ham. Repeat if desired. Stir water into remaining glaze; heat through and serve with ham.
Makes 1-1/2 cups glaze.

Easter Cherry Pie Filling Ham Sauce Recipe

1 can cherry pie filling
1 c. orange juice
1/2 tsp. ginger
1/2 tsp. cinnamon

Mix all ingredients. Heat and serve over baked ham.

Easter Coca Cola Ham Glaze Recipe

6 oz. Coke
2 tbsp. mustard
1 tsp. ground cloves
1/4 c. brown sugar

Mix together. Keep basting ham with glaze.

Easter Mustard Pears Ham Sauce Recipe

1/3 c. sugar
1/3 c. prepared mustard
1 c. vinegar
1-1/2 c. juice drained from 1 lg. can pear halves

Bring sugar, mustard, vinegar and pear juice to boiling point. Pour over pears. Let stand in refrigerator several hours or overnight. Place pears around a baked ham or a thick slice of ham.

Easter Crabapple Ham Glaze Recipe

1 (17 oz.) jar spiced whole crabapples
1 c. brown sugar
1 fully cooked center cut ham sliced
1" thick (about 1 1/2 lb.)

Drain apples reserving 1/2 cup syrup. Combine syrup with brown sugar; heat until boiling. Put crabapples in foil with a little syrup drizzled over, seal and put over fire at edge of barbeque grill. Grill ham over low coals 10-15 minutes on each side. Brush with syrup. Cook 1-2 extra minutes.

Easter Orange Juice Baked Ham Recipe

1 c. orange juice
1 c. white grape juice
1/2 c. honey
1 tbsp. white vinegar
2 tsp. dry mustard
1/4 tsp. ginger
1/4 tsp. ground cloves
Dash of cinnamon
Canned ham

Mix thoroughly ingredients and marinate 2 hours, at least, or overnight. Coat ham with glaze. Baste now and then. Bake according to directions. Broil and baste baked ham slices with glaze.

Easter Ham with Pineapple Mustard Glaze Recipe

3-4 lb. ham
1 c. brown sugar
1 tbsp. cornstarch
1/4 tsp. salt
1 can crushed pineapple
1 tbsp. mustard
2 tbsp. lemon juice

Place ham fat side up on a rack in a shallow roasting pan. Remove skin and excess fat. Score fat surface lightly, cutting diamond shapes. Place a clove in the center of each diamond. Bake at 325 degrees for 1 1/2 hours. In a saucepan, combine brown sugar, cornstarch, salt, pineapple (with juice), mustard and lemon juice. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove ham from oven. Brush glaze over ham and return to oven for 1/2 hour. Reserve some of the glaze to serve on the side. Before slicing ham, remove cloves.

Easter Baked Ham with Spicy Mustard Glaze Recipe

1 fully cooked boneless ham (5 lbs.)
1 (18 oz.) jar Kraft orange marmalade
1/2 c. stone ground mustard
2 tbsp. dry mustard
1 garlic clove, minced
1/2 tsp. ground ginger

Heat oven to 350 degrees. Place meat fat side up on rack in baking pan; score ham. Mix remaining ingredients until well blended. Set aside half of marmalade mixture. Brush ham with remaining marmalade mixture. Roast 2 hours or until meat thermometer registers 140 degrees, brushing with marmalade mixture every 15 minutes. (Temperature will rise 5 to 10 degrees F. during standing.) Let stand 10 minutes. Serve with reserved marmalade mixture.
Makes 10 to 12 servings.
