Oma's Cottage Fried Potatoes Recipe

Ingredients
3 Tbsp. oil
3 c. cubed potatoes, cooked with skins
1/4 c. onions
1/2 tsp. salt
1/8 tsp. pepper

Directions
Heat oil in a large iron skillet. Sauté onions until tender. Add cooled, peeled and cubed potatoes. Fry until browned on both sides. Season with salt and pepper.
Makes 4 to 6 servings.

Oma's Fried Potatoes, Carrots and Onions Recipe

Ingredients
2 carrots
2 medium potatoes
1 medium onion
2 Tbsp. oil
salt and pepper to taste

Directions
Slice the carrots and potatoes thin. Cut up the onion fine. Put all ingredients in iron skillet and cook on low for about 20 minutes or until tender.
Makes 4 servings

Oma's Fried Potatoes and Okra Recipe

4 to 6 potatoes, diced
1 lb. okra, cut up
cornmeal
salt and pepper
oil
small onion (optional)

Peel and dice potatoes. Wash and cut up okra. Coat with cornmeal, salt and pepper. Heat oil in skillet; add okra and potatoes and cook until tender and brown.
Makes 4-6 Servings

Oma's Fried Potato Patties Recipe

2 c. cooked, mashed potatoes
1 c. shredded Mozzarella cheese
1 large egg, lightly beaten
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. pepper
1 large egg, lightly beaten
1 c. soft bread crumbs
1/2 c. vegetable oil

Combine first 7 ingredients. Shape mixture into 6 patties. Dip each patty into lightly beaten egg and lightly coat with bread crumbs. Pour vegetable oil into a large skillet. Fry in hot oil over medium heat until lightly brown. Drain on paper towels.
Makes 4 Servings

Mary J's Spaghetti Salad Recipe

Ingredients
2 whole tomatoes
2 cucumbers
1 large purple onion
1 bottle Schilling Salad Supreme
1 green bell pepper
1 large bottle Italian dressing
1 (8 ounce) pkg. spaghetti

Directions
Cook spaghetti and drain; set aside. Dice tomatoes, cucumbers, onion and bell pepper. Mix spaghetti and vegetables together. Pour Italian dressing and Salad Supreme; mix well. Chill in icebox for approximately 1 hour. Serve.

Mary J's Macaroni and Chicken Salad Recipe

Ingredients
4 chicken breasts, cooked and cubed (for fat free use boneless and skinless)
2 c. sea shell macaroni
1 can mushroom soup
1 c. Miracle Whip (can use fat free)
1 tsp. celery salt
3 Tbsp. green, yellow or red pepper
3 Tbsp. diced celery
2 Tbsp. diced onions
salt and pepper (black or white) to taste
paprika to taste
cubed pickles to taste

Directions
Boil chicken in minimum amount of water. Allow all water to cook out to preserve flavor. Cook macaroni as package suggests. Stir all ingredients together. Add no water to mushroom soup. Any or all ingredients after Miracle Whip may be left out. That gives you the flavors you like. Keep refrigerated.

Lisa's Squash Casserole Recipe

Ingredients
3 lb. summer squash
1/2 c. chopped onion
1/2 c. cracker crumbs
1/2 tsp. pepper
2 eggs, slightly beaten
1/2 stick butter, melted
1 Tbsp. sugar
1 tsp. salt (optional)
1/2 c. butter

Directions
Cut up, boil, drain and mash summer squash. Add 1/2 cup onion, pepper, eggs, 1/2 stick butter(melted), sugar and salt. Mix well. Put into baking dish. Pour 1/2 cup butter on top and sprinkle with cracker crumbs. Bake at 350° for 1 hour.

Lisa Cucumber Salad Recipe

1 to 2 green onions, chopped
1/4 lb. fresh mushrooms, sliced
2 cucumbers, sliced
2 to 3 radishes, sliced
1 c. plain nonfat yogurt or nonfat sour cream
1 to 2 cloves garlic, minced
2 Tbsp. minced dill or chives or 1 tsp. dried
2 Tbsp. lemon juice
freshly ground pepper to taste

Place cucumbers and mushrooms in colander; set aside to drain. Mix all remaining ingredients. Put cucumbers and mushrooms into a large bowl and stir in yogurt mix. Cover and chill several hours or overnight.
Makes 4 servings

Lisa's Marinated Slaw Recipe

1 head cabbage, shredded
1 onion, grated
1/2 c. grated green bell pepper
1 c. sugar
3/4 c. oil
1 c. white vinegar
1 tsp. mustard seed
1 tsp. celery seed
1 tsp. salt

Layer cabbage, onion and pepper in a salad bowl. Sprinkle with sugar. Bring oil, vinegar, mustard seed, celery seed and salt to a boil in saucepan. Pour over layers. Chill for 4 hours to overnight.
Makes 12 servings.
