Nancy, you asked about the English cucumber. I have a friend who gardens year round and sells his veggies. I usually order his cucumber seed for him. Check out "Sweet Success Cucumbers," they are so delicious. He sells out of them every day during the season for them. They seem to have an early season and last a long time. Hope this helps you. This is hubby's favorite baked chicken. It is delicious either hot or cold, so is ideal to take to a cookout to a picnic, etc.

Cheesy Crispy Chicken Recipe

12 chicken drumsticks
8 oz. bottle of Blue Cheese dressing
2 cups dry bread crumbs
1 tbsp. seasoned salt (can cut down)

Pour salad dressing in a shallow dish. In another dish, combine bread crumbs and seasoned salt. Roll drumsticks, one at a time, first in the dressing and then in the crumbs. Place evenly in single layer on large baking pan. Bake 375 for 30 minutes. Turn over carefully, so as not to disturb the crust and bake 30 minutes longer. Delicious hot or cold.

We really like this satisfying dish. I use a cooked chicken from the deli section and I also sauteed some sliced fresh mushrooms and added - GOOD!

Cheddar Chicken Spaghetti Recipe

1 pkg. (7 oz.) spaghetti, broken
2 cups cubed cooked chicken
2 cups shredded cheddar cheese, divided
1 can cream of chicken soup
1 cup milk
1 tbsp. diced pimentos, drained
1/4 tsp. salt
1/4 tsp. pepper

Cook spaghetti according to package directions; drain. Combine chicken, 1 cup cheese, soup, milk and pimentos and salt and pepper. Add chicken mixture to cooked spaghetti and combine. Put into a greased 9x13 inch baking dish. Sprinkle with remaining 1 cup cheese. Bake at 350 for 20 to 25 minutes, until bubbling around edges and heated through.

This is such a good dessert. We like it with a graham cracker crust (directions following recipe) although the original recipe doesn't call for it.

Banana Split Dessert Recipe

1 box Jello No-bake Cheesecake Mix
1 can (20 oz.) crushed pineapple, drained
3 bananas, sliced
1 can strawberry pie filling
1 (12 or 16 oz.) Cool Whip, divided
1/2 cup nuts, finely chopped

Prepare cheesecake according to directions on the box. Put on crust (if using) in 9x13 inch dish; layer in order: bananas, some Cool Whip, drained pineapple, another layer of Cool Whip, strawberry filling, another layer of Cool Whip and sprinkle nuts on top. Chill before serving.

For crust
1-1/2 ups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter

Mix together well in small bowl and press into bottom of dish.

A friend shared this recipe with me a long time ago and we have always liked these for a change. We have them as a side dish, such as we do with potato pancakes.

Zucchini Pancakes Recipe

1/3 cup flour
1/2 tsp. baking powder
Salt to taste
1/8 tsp. pepper
1/4 cup grated Parmesan cheese
2 eggs, slightly beaten
2 cups shredded zucchini

Mix all ingredients together, mixing in zucchini last. Make into patties; Fry in hot oil until golden brown and crisp on both sides. I yield 4 pancakes the size I cook.

Aunt Bonnie's Spaghetti Pie Recipe

6 oz. spaghetti
2 Tbsp. margarine
1/3 c. grated Parmesan cheese
2 well beaten eggs
1 c. cottage cheese
1 lb. ground beef or Italian sausage
1/2 c. chopped onion
1/4 c. chopped green pepper
1 (8 oz.) can tomatoes, cut up
1 (6 oz.) can tomato paste
1 tsp. sugar
1 tsp. dried oregano, crushed
1/2 tsp. garlic salt
1/2 c. shredded Mozzarella cheese

Cook the spaghetti according to package directions; drain (should be about 3 cups, cooked). Stir in margarine. While hot, stir in Parmesan cheese and eggs. Form spaghetti mixture into a "crust" in a buttered 10-inch pie plate or quiche dish. Spread cottage cheese over crust.

In skillet cook meat, onion and pepper until vegetables are tender and meat browned. Drain off fat. Stir in undrained tomatoes, tomato paste, sugar, oregano and garlic salt; heat through. Pour meat mixture into spaghetti crust. Bake, uncovered, at 350 for 20 minutes. Sprinkle with Mozzarella cheese and bake 5 minutes longer or until cheese melts.
Makes 6 servings.

Grace's Frozen Cherry Dessert Recipe

8 oz. cream cheese
1 large Cool Whip
1 can Eagle Brand milk
1 can cherry pie filling
1 medium crushed pineapple
1 c. pecans, chopped

Mix all ingredients together. Can be frozen in cupcake liners in muffin pans. Can be poured into a graham cracker crust, frozen and served as pie.

Strawberry Frozen Dessert Recipe

1 graham cracker crust
1 medium or small container of whipped topping
1 pkg. frozen strawberries

Partially thaw strawberries. Mix whipped topping and strawberries. Pour into crust. Chill until firm.

Baked Chicken and Stuffing Recipe

4 chicken breasts
4 slices Swiss cheese
1 pkg. Pepperidge Farm stuffing mix
2 cans cream of chicken soup
1 stick margarine, melted

Put chicken in baking pan or dish and cover with Swiss cheese. Spread stuffing mix over chicken and cover with soup and margarine. Bake at 350 until done and tender.

Chicken Taco Casserole Recipe

1 (12-oz) bag of tortilla chips, divided
4 boneless, skinless chicken breasts, cooked and chopped, divided
1 (10 1/2-oz) can of chicken and rice soup, divided
2 cups grated sharp cheddar cheese, divided
1 (10-oz) can of tomatoes with green chiles, divided

Cook's note: Casserole freezes well. Also, to save time, in the morning I put the chicken in a crock pot with the chicken and rice soup and add water as necessary.

Frozen Chocolate Dessert Recipe

2 c. chocolate cookie crumbs
6 Tbsp. melted margarine
1 (8 sq.) pkg. semi-sweet chocolate
1/4 c. margarine
3 eggs
1/4 c. sugar
1 1/2 tsp. vanilla
5 1/4 c. Cool Whip, thawed

Line 9 x 5-inch loaf pan with waxed paper. Extend over sides. Mix crumbs with 6 tablespoons margarine; set aside. Melt 7 squares chocolate and margarine over very low heat, stirring constantly. Cool. Beat eggs in large bowl. Beat in sugar at high speed of mixer until thick about 10 minutes. Fold in chocolate mixture and vanilla, then 4 cups of Cool Whip. Spoon about 1 1/2 cups into pan. Sprinkle 2/3 cup cookie crumbs; press lightly. Repeat layers. Freeze overnight. Garnish with remaining Cool Whip and drizzle with chocolate.
Procedure: Grease a 1-qt casserole dish. Preheat oven to 350 degrees. Crush chips. Place half in a layer on the bottom of the prepared casserole. Sprinkle half of the chicken over the chips. Pour several spoonfuls of soup on top. Sprinkle with a layer of cheese. Top with layer of the tomatoes with green chiles. Repeat layers, topping casserole with additional cheese if desired (but good). Bake for 25 minutes!
Yield: 4-6 servings.
