Hi, All~
My little "Husky" Cherry Tomato bush is starting to be loaded with bunches of green globes--and I'm begging for TNT cherry tomato recipes. Definitely I'd like one for Salsa like served in Mexican restaurants. Other than that & putting them in usual salads would be welcome. Thanx in advance.

My husband had open heart surgery 2 weeks and can no longer have salt. I would really appreciate some recipes that use no salt or very reduced salt. I am in my 60’s and am an old fashioned cook. Went to the grocery store today and WOW, you can’t believe how much salt is in everything we eat. Dressings for salads, casseroles and any other recipes that might be suited for low or no salt cooking. Thanks in advance for any help you can give me.

This is a lovely chocolate pie that is especially refreshing on a warm day. You must plan ahead, allowing time for it to freeze. I like to let it sit at room temperature about 15 minutes before serving.

German Chocolate Pie Recipe

1 pkg. German's sweet chocolate
1/3 cup milk, divided
2 tbsp. sugar
1 pkg. (3 oz.) cream cheese, softened
1 (8 oz.) container Cool Whip
1 prepared (9 inch) graham cracker crust
Chocolate curls (optional)

Heat chocolate and 2 tbsp. of the milk over low heat, stirring until melted. Beat sugar into cream cheese. Add remaining milk and melted chocolate mixture; beat until smooth. Fold Cool Whip into chocolate mixture. Spoon into prepared crust. Freeze about 4 hours.

Choco Chocolate Chip Cookies Recipe

2/3 cup shortening
1-1/2 cups sugar
2 eggs
1 cup applesauce
3 cups flour
1-1/2 tsp. baking powder
1/2 tsp. salt- I cut in half
6 tbsp. unsweetened baking cocoa
1-1/2 cups semi-sweet chocolate chips
1 cup chopped nuts

Cream sugar and shortening. Add eggs and applesauce and mix well. Mix in dry ingredients. Stir in chocolate chips and nuts. Drop by spoonfuls onto greased baking sheets. Bake 350 for 12 to 15 minutes until golden brown.

I have been preparing this delicious chicken for many years, and is one of the recipes I have repeated many times, because it's hard to beat. With only 3 ingredients this is company-worthy. This uses the already prepared packaged corn flake crumbs. The amount for the garlic powder is correct

Crunchy Baked Chicken Recipe

1 (2-1/2 to 3 lb.) chicken, cut up
1 cup prepared corn flake crumbs
1 tbsp. garlic powder
1/3 cup evaporated milk

Combine corn flake crumbs and garlic powder in shallow pan. Dip chicken pieces in milk and roll in crumb mixture to coat well. Place in foil-lined 10x15 inch jelly roll pan. Bake at 375 for 55 to 60 minutes, until deep golden brown.

Spinach and Ricotta Stuffed Tomatoes Recipe

8 ripe tomatoes
salt, for draining tomatoes
3 tablespoons olive oil
1 cup onion, finely chopped
10 oz. frozen spinach, defrosted, drained and squeezed dry
salt and pepper, to taste
nutmeg, to taste
1 cup ricotta cheese
2 eggs
1/2 cup toasted pine nuts- optional
1/4 cup grated Parmesan cheese
additional Parmesan cheese (to top tomatoes)
1/2 cup parsley, chopped

Select large symmetrical tomatoes, the riper the better. Cut off the tops with a serrated knife and discard ops. Use the handle-end of a teaspoon to scrape out all the seeds, juice and partitions, leaving a shell (be careful not to pierce the sides). Salt the cavities and set the tomatoes upside down on a paper towel for 30 minutes. Blot tomato cavities with a paper towel, if desired.

Heat olive oil in a skillet, add the onions and cook, covered until tender and lightly colored. Chop spinach and add to skillet. Combine onions and spinach thoroughly, season to taste with salt, pepper and nutmeg, and cover. Cook over low heat, stirring occasionally, for 8 minutes. Do not let mixture burn.
Beat ricotta and eggs together thoroughly in a mixing bowl. Add spinach mixture, pine nuts, 1/4 cup of the Parmesan and the parsley, and season to taste with salt and pepper.
Spoon an equal share of the spinach mixture into each tomato. Top each tomato with a sprinkle of additional Parmesan.
Arrange in a shallow baking dish and set in the upper third of a preheated 350°F oven. Bake until tops are well browned and filling is hot and bubbly, about 20 minutes. Serve immediately.

Tomatoes Stuffed With Ham and Corn Recipe

6 lg. firm tomatoes
sugar and salt
1 cup minced onion
1 cup minced green pepper
3 tbsp. butter or olive oil
1 cup minced, cooked ham
1 1/2 tsp. ground cumin
3 cups scraped fresh corn
1/2 cup heavy cream
1 tsp. salt sugar and pepper to taste
6 tbsp. minced fresh parsley
6 tsp. butter, softened or olive oil

Cut off and discard top half of tomatoes and remove seeds. Scoop out the pulp, chop it and put in a sieve to drain. Sprinkle the pulp and the insides of the shells lightly with sugar and salt, and invert the shells on paper towels to drain for at least 30 minutes. In large skillet, saute onion and green pepper in butter until softened. Add ham and cumin and stir the mixture over high heat for 1 minute. Add tomato pulp and cook mixture over moderate heat for 4 minutes. Stir in corn, cream, salt, sugar and pepper. Cook mixture, covered, for 3 minutes. Remove cover and stir mixture over high heat for 1 minute. Sprinkle the inside of each tomato shell with 1 tablespoon of parsley. Fill shells with corn mixture, dot each with 1 teaspoon butter and place in a lightly buttered baking pan.
Bake at 350 degrees F. for 10 to 15 minutes or until tomatoes are soft.

Re Duke's mayo - I saw it advertised in an ad for Dollar General. I thought it was an "off brand". But in reading your newsletter everyone is raving about it, so I will get it there. It was $2.95. This is in Parma, a suburb of Cleveland, OH.


Banana Pecan Ice Cream Dessert Recipe

1 pt. nonfat sugar-free vanilla frozen ice cream or yogurt
1 very ripe banana, mashed
1/4 c. pecans

Allow frozen ice cream to thaw slightly. Beat in mashed banana and chopped pecans. Pack in a freezer container. Cover and freeze until firm.

Frozen Apricot Dessert Recipe

12 oz. box vanilla wafers (crushed)
1/2 stick margarine
1 tsp. almond extract
2 pkg. slivered almonds (toasted)
1/2 gal. vanilla ice cream
2 lb. jar apricot preserves

Melt oleo and add almond extract and toasted almonds. Mix this with crushed wafers. Put half of mixture in bottom of large (13 x 9-inch) oblong dish. Slice ice cream and put half of it over wafers. Place layer of apricot preserves (use all) over ice cream. Add another layer of ice cream. Add remainder of wafers on top. Freeze. To serve, add whipped cream.
Serves 18.

Broiled Tomatoes with Parmesan Recipe

4 ripe tomatoes, cut in half
salt and pepper to taste
2 cloves garlic (crushed)
2 Tbsp. olive oil
1/2 c. bread crumbs
dried basil
fresh grated Parmesan or Romano cheese

Slice tomatoes in half cutting across the grain. Arrange on a baking sheet. Add salt and pepper. Mix the garlic, oil and bread crumbs together and place some on the open face of each tomato half. Sprinkle a bit of basil on each and top with about 1 tsp. cheese for each tomato. Broil until cheese melts a bit and turns golden brown. Remove from oven and heat oven to 375°. Heat the tomatoes for about 15 minutes before serving. Do not overcook or they will be mushy.

Broiled Tomatoes with Herbs Recipe

6 medium firm, ripe tomatoes
3 Tbsp. margarine or butter
1/2 c. bread crumbs
1/4 tsp. rosemary leaf, crumbled
1/2 tsp. basil leaf
1/2 tsp. salt
1/4 tsp. pepper

Wash tomatoes and remove stem ends. Cut tomatoes in half crosswise. Melt butter in saucepan. Brush over cut surface of tomatoes with butter. Combine bread crumbs, rosemary, basil, salt and pepper. Sprinkle crumbs over tops of tomatoes. Pour remaining butter over top of crumbs. Broil under low heat with tops of tomatoes about 3-inches from heat for 10 to 12 minutes until tomatoes are heated through and crumbs are well browned.

Baked Onions and Tomatoes Recipe

2 large tomatoes, cut into halves
1 tsp. Dijon-style mustard
1/2 c. sliced onion, separated into rings
1 tsp. brown sugar

Place tomato halves in broiler pan or on aluminum foil. Spread each with mustard and top with onion rings. Sprinkle with brown sugar. Broil 3 minutes.

Baked Tomatoes Recipe

3 tomatoes, cored and halved
3/4 c. bread crumbs (fresh)
1/2 c. Cheddar cheese, grated
salt and pepper to taste
sugar to taste
butter (clarified, as needed)

Place tomatoes on greased baking sheet and sprinkle salt, pepper and sugar over each half. Combine bread crumbs and cheese; place equal amounts on each tomato half. Drizzle each tomato with butter and bake in oven at 350° for 10 to 15 minutes, until cheese melts. Remove from oven and serve.
Serves 6.

Baked Tomatoes with Green Bell Pepper Recipe

4 large tomatoes
2 Tbsp. melted butter
1/2 bell pepper
1 stick celery
1/2 green onion
prepared mustard

Halve each tomato. Place cut side up on baking dish. Sprinkle with salt and spread with mustard. Finely chop the pepper, celery and onion; mix with melted butter and spoon over each tomato half. Bake in a 325° oven for 30 minutes.

Lemon Watermelon Strawberry Slush Recipe
This icy beverage is a great way to escape the heat and enjoy a healthy helping of fresh fruit.

2 cups sliced strawberries
2 cups seeded watermelon, chunks
2 tablespoons sugar
1 cup ice cubes
1/4 teaspoon McCormick® Pure Lemon Extract
10 drops McCormick® Red Food Color

Place strawberries and watermelon in blender container; cover. Blend on high speed until smooth. Add remaining ingredients; cover.
Blend until well mixed and smooth. Serve immediately in tall ice-filled beverage glasses.
