More Gluten Free Recipes
For Nuncy who wanted gluten free recipes in the 9/2 newsletter, you can make a quiche gluten free by using rice to make the crust or making the quiche without a crust. You can substitute spinach for the broccoli in the first recipe and ad additional vegetables if you like. I hope these recipes help you. Try different types of rice to add additional flavor to each recipes.

Broccoli Rice Quiche

1 1/2 c. hot, cooked, rice
3 med. eggs
3 oz. grated, sharp Cheddar cheese
Salt and pepper to taste
1 1/2 c. (10 oz. pkg.) frozen chopped broccoli, thawed
3/4 c fresh or canned mushrooms, sliced -if using canned drain well
1/4 c. plus 2 tbsp. milk

Combine rice, 1 egg (slightly beaten), half the grated cheese and salt; mix well. Press firmly in an even layer on bottom of a 9 inch pie pan. Beat remaining eggs slightly. Stir in broccoli, mushrooms and milk. Season with salt and pepper. Spoon over rice in pie pan. Bake at 375 degrees (moderately hot oven) for 20 minutes. Sprinkle remaining cheese venly over broccoli - mushroom mixture. Bake 10 minutes longer.

Seafood Quiche with Rice Crust Recipe

1/2 c. cooked rice
1 c. Swiss cheese, shredded
3 eggs
1/4 lb. crab meat
1/4 lb. shrimp, chopped
1 sm. onion, thinly sliced
1/2 box frozen spinach, thawed and drained well or 1/2 c. chopped fresh spinach
1 c. milk
1/4 tsp. black pepper

Cook rice and let cool. Lightly grease 9 inch pie plate. Mix rice, 2 tablespoons cheese and 1 egg. Press in pie plate. Bake 5 minutes at 350 degrees. Let cool. Layer crab, shrimp, spinach, cheese, and onion over rice. Combine 2eggs, milk, and pepper and pour over mixture. Bake at 350 degrees until eggs have set, about 40 -50 minutes.

Does anyone have a recipe for breakfast cookies? I canít use anything with peanut butter and need recipes that are mailable. I already have one recipe from Better Homes and Gardens called Good-Morning Cookies. The more nutritious with less sugar, the better! Thanks.

Hi Nancy and the little ones,
I hope you are all well. You have been very quiet lately. My memory is not what it used to be. I was looking at the recipe from Ann in West TX for Bacon Bites for Dogs. I know it is an old one, but I have saved it, and wanted to try it.

My question is: What can I substitute for graham flour?

If there is no substitute, where would I find it? I havenít seen it in my supermarket.

Grilled Picante Chicken Recipe

4 chicken breast filets, pounded thin

8 oz. mild picante sauce
3 Tbsp. brown sugar
4 tsp. Dijon mustard

Place chicken on grill. Spoon sauce on top. Grill approximately 10 minutes. Turn and baste with sauce. Grill until done. Use remaining sauce for dipping. Good with corn chips.

Bread Mixes from The Prepared Pantry

Grilled Chicken in Foil Packet Recipe

1 boneless chicken breast per serving
red bell pepper
yellow bell pepper
sliced water chestnuts
teriyaki sauce (lite)

Place one boneless chicken breast on a square piece of aluminum foil. On top, place slices of onion, red bell pepper, yellow bell pepper and sliced water chestnuts. Pile it on because it will shrink as it cooks. Salt and pepper lightly. Sprinkle with teriyaki sauce and seal the aluminum foil. Place on preheated grill. Cook on low heat for 20 to 25 minutes. Serve with white rice.

Grilled Hamburgers Recipe

2 1/2 lb. ground beef
1/2 c. Ritz crackers, crumbled
1/2 c. applesauce
3 tsp. Accent
1/2 pkg. Lipton onion soup mix
1/2 tsp. garlic salt
3 tsp. Worcestershire sauce
2 tsp. Tabasco

Mix all ingredients well and cook on grill.
Makes about 10 hamburgers.

Grilled Fish Fillets in Foil Packets Recipe

2 lb. fresh fillets
2 green peppers, sliced
1 medium size onion, sliced
1/4 c. melted margarine or butter
2 Tbsp. lemon juice
1 tsp. paprika
dash of pepper

Cut fillets into serving-size portions. Cut 4 pieces of aluminum foil 12 x 12-inches each. Grease lightly. Place fish skin side down on foil. Top with green pepper and onion. Mix and pour sauce over fish. Bring foil up over fish and close all edges with tight double folds. Place package on grill about 5 inches from hot coals. Cook for 25 to 30 minutes or until fish flakes or turns shiny white.
Serves 4.

Grilled Zucchini in Foil Packets Recipe

3 medium zucchini, sliced
3 medium tomatoes, sliced
1 green pepper, sliced
1 envelope onion soup mix
1/4 c. margarine, softened
2 Tbsp. brown sugar
salt and pepper

Cut a large square of heavy-duty aluminum foil. Mix all ingredients and place on square. Fold up securely so no juices escape. Place on charcoal grill, turning once during cooking, 45 minutes to 1 hour. May also be placed in 350į oven.
Serves 6.

Grilled Chuck Roast in Foil Recipe

1 to 1-1/2 lb. chuck or round steak
1 can green beans
3 medium potatoes, peeled and sliced
1 envelope dry onion soup mix
4 Tbsp. butter or margarine
1 clove garlic, minced

Get a piece of foil out big enough to seal all ingredients in.

Place steak on foil. Season with salt, pepper and garlic. Place sliced potatoes on top of steak. Add drained can of green beans on top. Sprinkle onion soup on top and then add 4 tablespoons butter to top. Seal all in foil. Place on top of cookie sheet. Bake at 350į for 1 to 1-1/2 hours.
Serves 4.

Crockpot Taco Soup Recipe

2 lb. hamburger, browned
1 onion, chopped
3 cans stewed tomatoes
1 can corn, drained
1 small can chilies, drained
1 can pinto beans, undrained
1 can Ranch Style beans, undrained
1 pkg. taco seasoning

Brown ground beef. Drain and add other ingredients Mix together and cook in crock-pot 6-8 hours. Serve with Fritos and garnish with cheese.

Cantaloupe Salad Recipe

1 medium cantaloupe
1/2 honeydew melon
1 papaya
1 lb. seedless grapes
1/2 c. plain low-fat yogurt
2 Tbsp. apricot preserves
2 Tbsp. fresh orange juice

Peel and seed cantaloupe and honeydew; cut into bite-sized pieces. Peel papaya and cut into bite sized pieces. Combine melons, papaya and grapes in a large bowl. Chill until serving time. Combine yogurt, preserves and orange juice in a small bowl. Blend well. Add to salad; mix well.
Serves 8.

Fruit Compote Recipe

3 medium peaches
2 c. blueberries
3 medium bananas
1 (25 oz.) bottle pink sparkling Catawba grape juice, chilled
2 c. sliced strawberries
2 c. melon balls

Peel peaches and slice into bowl. Top with strawberries, blueberries and melon balls. Cover tightly and chill. Just before serving, peel bananas and slice into fruit mixture. Pour grape juice over fruit.
