I am going through my vegetable recipes, sending a few that I don't think I have submitted before.

Stuffed Baked Potato Recipe

4 baking potatoes
1/4 cup sour cream
6 slices bacon, fried and crumbles
2 Tbsps. butter
2 Tblsps. chopped green onions and tops
1 tsp. salt
1/2 tsp. white pepper
1 cup shredded sharp cheddar cheese

Bake potatoes at 350 degrees for 1 hour. Cut each in half.
Using pot holders, hold half a potato and scoop out the pulp leaving 1/3 inch in shell.
Mash potatoes well with a fork. Mix potato pulp with sour cream, crumbled bacon, butter, green onions and tops, salt and pepper. Blend together well and spoon bake in to potato shells. Place in a shallow pan, cover with foil and return to oven. Bake 20 to 25 minutes until hot. Remove foil. Sprinkle evenly with all the cheddar cheese. Bake 2 minutes longer and serve. Makes 8 servings.

Asparagus and Zucchini Stir fry Recipe

1-1/2 Tbsps. Butter
3 lbs. fresh asparagus, trimmed and cut into 2 lengths
1-1/2 lbs. zucchini cut into thick strips
1/2 cup pine nuts, optional
1/2 cup fresh chives, chopped

Melt butter in wok or skillet. Cook asparagus and zucchini about 4 minutes, stirring frequently, until asparagus in almost tender, Add nuts and cook 2 minutes or until nuts are golden brown. Stir in chives and serve.
per serving; calories 139, fat 8.7 g., carbs. 16.2 g., fiber 6.8 g. (recipe didnt list how many servings. Im thinking about 4.)

Oven Crisp Potatoes Recipe

1/3 cup flour
3/4 tsp. salt
1/2 tsp. dried thyme and tsp. dried marjoram OR 1 tsp. Herbs de Provence
1/8 tap. Pepper

5 - 6 medium potatoes, peeled and cut into 1 inch cubes.

1/4 cup melted butter
2 cloves garlic, minced
1 bay leaf

Shake potatoes in a plastic bag with the flour, salt and seasonings
Mix together the melted butter and garlic. Put potatoes into a 13 x 9x 2 baking dish. Lay bay leaf on top. Cover and bake @ 450 degrees for 20 minutes. Uncover, stir and toss. Bake 15 to 20 minutes more until lightly browned and tender. Discard bay leaf.

Shortcut Potato Pie

1 9" pastry crust, frozen, freshly made, or from dairy case
9 - 10 scallions, both parts, sliced, & divided
2 c. water
1 T. butter
1/8 tsp. EACH white pepper, celery salt, & garlic powder
1 tsp. vegetable bouillon granules (opt)
1 4 oz. package Idahoan Buttery Homestyle Instant Potatoes
1/2 c. sour cream, lower fat is o.k. but full fat cuts better
1/4 c. bacon bits from artificial bacon
1 c. shredded cheddar or mozzarella cheese
1/2 T. plain olive oil
1 large tomato, halved & sliced into half-moons

Thaw crust 10 minutes if frozen. Bake crust 6 minutes at 450 & set aside to cool; reduce oven temp. to 400. Meantime slice scallions. Combine water, butter, seasonings, granules & potatoes in a giant measuring cup; cook on High 3 minutes or as your microwave reccomends; stir in sour cream, then bacon. Slice tomato. Layer into the crust: cheese, most of the scallions, potato mixture. Rim pie with overlapping tomato half-moons, & scatter rest of scallions over all. Using the oil, brush lightly over the entire top of pie. Bake at 400 for 20 minutes, then rest for 5 - 6 minutes before cutting. Serves 4. Good with greens or a rather basic green salad. Also makes a very different side dish for company.

Pinto Skillet Recipe

3/4 T. olive oil
1/2 c. EACH chopped bell pepper & onion
1 heaping tsp. minced garlic
1 # 2 can diced tomatoes with onion & garlic
1 # 2 can pinto beans, drained
1/2 to 1 c. sliced summer squash, green or wax beans, corn, or other favorite veggie

2 stems snipped culantro, parsley, marjoram, oregano, ....your choice

Shredded cheese (or oven-fried fish or oven-fried chicken if you are not a vegetarian)

Cook pepper, onion, & garlic in oil 4 - 5 minutes; stir in tomatoes, beans, the other vegetable added, & the herb; reduce liquid on Low heat till quite thick. Serves 2 - 3 as a Main Dish, 4 - 6 as a Side. Skillet without topping is just 35- 40 calories, lowest, squash, highest, corn.

Grits with Black Beans Recipe

A favorite plain grits recipe equaling 2 to 6 cups of cooked grits

1 #2 can black beans, rinsed & drained
1 c. favorite chunky salsa
3 leaves culantro, divided
Colby-Jack or Mixed Mexican shredded cheese to taste
1 handful shredded romaine per serving, kept chilled till served

Make grits & hold over hot water, meantime heating beans & salsa together; snip in half of culantro.
On serving plates put the handful of lettuce, scatter on a thin layer of cheese; add a serving of grits, top with bean mixture. Then divide culantro & more cheese if you like over top.

Italian Baked Macaroni and Cheeses Recipe

2 -to 4 oz. canned parmesan cheese

8 to 12 oz shredded cheddar or cheddar-colby cheese
Lawry's Seasoned Pepper, divided
12 oz. linguini, speghetti, thin spaghetti or fettucine
2 # 2 cans diced tomatoes with garlic & herbs*
1/2 T. olive oil
1 1/2 c. fresh bread crumbs
2 T. butter, divided

Mix cheeses & a dash of pepper & set aside. Cook pasta as package directs, drain, & toss with oil.

Butter a 9" x 13" baking dish with a little of the butter; put in 1/3 of the sauce, 1/3 of the pasta, & 1/3 of the cheeses; repeat twice more. Scatter on crumbs, dot with rest of butter, & dust with a little bit more pepper. Bake at 375 20 - 30 mnutes, or till top browns & whole dish is very hot & bubbly.
Serves 6.

*You can use a combo of tomato sauces, etc., but be sure there are lots of chunky pieces in it, even if you have to cut up a ripe tomato. Keeps 4-5 days if covered tightly, so can be made ahead. Re-heats fine in microwave, if sprinkled with a little water.

Bread Mixes from The Prepared Pantry

Baked Fish Recipe

1 lb. fish (haddock, perch, etc.)
1/3 c. seasoned crumb topping (see below)
2 Tbsp. margarine, melted
2 Tbsp. lemon juice

Seasoned Crumb Topping
2 c. multi grain cereal, crushed
3/4 tsp. salt
1/4 tsp. onion salt
1/4 tsp. dill (optional)

Preheat oven to 350. Grease a 9-inch square pan. Seasoned Crumb Topping: Prepare topping; set aside. Cut fillets into serving size pieces. In small bowl, mix margarine and lemon. Dip fish, then coat with crumb topping. Bake, uncovered, for 25 to 30 minutes, or until fish flakes.

Baked Fish in Foil Packets Recipe

4 to 6 pieces fish
4 oz. sliced mushrooms
salt and pepper
1/2 tsp. lemon juice
2 Tbsp. butter
2 Tbsp. flour
1/2 tsp. Worcestershire sauce
1 c. milk
1/4 c. chopped parsley
1/4 tsp. seasoned salt

Place each piece of fish on piece of foil. Top with mushrooms. Add salt, pepper, paprika and lemon juice. Melt butter in saucepan; blend in flour, Worcestershire sauce and seasoned salt. Add milk; cook until thickened, stirring constantly. Top each fish piece with about 1/4 cup of sauce. Sprinkle with parsley. Wrap tightly in foil. Bake at 400 for 30 minutes.

Baked Fish and Potatoes Recipe

4 to 6 medium potatoes
1 medium onion
1/4 c. margarine, melted
1 lb. frozen fish fillets
1/2 c. bread crumbs
salt and pepper to taste

Peel potatoes and cut in half lengthwise, then crosswise into 1/4-inch slices. Quarter onion and cut into 1/4-inch slices. Place onions and potatoes into a 13 x 9 x 2-inch baking dish and drizzle with 3 tablespoons of melted margarine. Bake in 400 oven for 35 minutes or until golden, turning potatoes with spatula at least once. Dip fish fillets in remaining melted margarine and coat with crumbs. Arrange over top of potato mixture; sprinkle with paprika, salt and pepper. Bake an additional 15 minutes or until fish flakes.

Blackened Fish Recipe

2 lb. fish fillets (1/2 to 3/4-inch thick)
3/4 c. butter
1 Tbsp. paprika
3/4 tsp. cayenne pepper
1 tsp. salt
1/2 tsp. black pepper
1/2 tsp. white pepper
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. dried thyme
1/2 tsp. dried oregano
1 dash cumin

Mix dry ingredients on large plate. Melt butter in heavy skillet (do not use light weight or nonstick skillet). Pour off all but 3 tablespoons into 9 x 12 x 1-inch pan. Turn on hood vent and turn heat to high. Dip each fillet in melted butter (in the 9 x 12-inch pan) and then dip in the dry ingredients, patting the fillets by hand. Cook fish on each side for 2 to 3 minutes, being careful when turning them over. The fish will look charred "blackened" and there may be some smoke, but not an excessive amount. The blackening seals forming a spicy, crunchy coating, sealing in moisture and flavor.

Carrot and Cabbage Casserole Recipe

1 small head cabbage
1 large onion, sliced thin
5 or 6 carrots, grated

Slice cabbage, onion and pepper very thin. Put the cut cabbage in a top of the stove casserole. Put sliced onion over cabbage, then sliced peppers and a little more salt. Top with grated carrots. Dot with oleo (I use squeeze oleo because it is easier). Now add 1/2 cup water. Bring to a boil and cook 25 or 30 minutes on very low heat. Be careful and don't let it scorch.

Green Bean and Carrot Casserole Recipe

1 Tbsp. chopped onion
3 Tbsp. cooking oil or butter
2 Tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 1/2 c. milk
2 eggs, beaten
1/2 c. grated cheese
1-3/4 c. cooked green beans
1-3/4 c. cooked carrots, sliced
1/2 c. bread crumbs
3 Tbsp. butter

Cook onion slightly in oil. Add flour and seasoning. Blend well; add milk gradually and cook until slightly thickened. Add eggs and cook slowly 1 minute, stirring constantly. Add grated cheese and stir in vegetables. Pour into greased baking dish; cover with crumbs. Dot with butter. Bake in moderate oven at 350 for 30 minutes.
Serves 8.

Crock Pot Spinach Casserole Recipe

2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
2 c. cream-style cottage cheese
1/4 c. butter, cut into pieces
1-1/2 c. cubed American cheese
3 eggs, beaten up severely
1/4 c. flour
1 tsp. salt

Combine and mix all ingredients in a bowl. Pour into greased crock-pot. Cover and cook on high 1 hour. Then cook on low for 4 to 5 hours.
Serves 8 to 10.

I was really surprised how good this cake turned out. I usually don't eat pinto beans. This cake recipe was given to me by a friend online. I made it for a bridge group. They had no idea it contained pinto beans.

Southern Pinto Bean Cake Recipe

1 c. sugar
1/4 c. butter
1 egg, beaten
2 c. cooked pintos, washed (I use canned beans)
1 c. flour
1 tsp. soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. allspice
2 c. raw apple
1 c. raisins
1/2 c. chopped nuts
1 tsp. vanilla

Cream sugar and butter. Add beaten egg and mashed beans. Sift all dry ingredients together; add sugar mixture. Add apples, raisins, chopped nuts and vanilla. Pour into well-greased 10-inch tube pan. Bake at 375 for 45 minutes. Glaze and decorate with maraschino cherries and walnuts.

I made this for my bridge group too. Wanted to make something that was different. Served it the same day as the Pinto Cake. No one had any idea it had blackeye peas in it. Everyone asked for the recipe. It turned out great.

My friend remined me the make sure I got the black-eyed peas did not contain jalapenos in it.

Black-Eyed Pea Pie Recipe

1 can black-eyed peas, drained and pureed
3/4 c. butter, softened
3 eggs
1 can evaporated milk
1/2 c. whole milk
1 Tbsp. flour
1 tsp. vanilla
1/2 tsp. allspice
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1 c. chopped pecans
1 prepared pie crust

Beat peas and butter in bowl. Stir in rest of ingredients. Pour into crust. Bake 55 to 60 minutes at 350. Cool. Cover and store in refrigerator.

Cheese Potatoes in Foil Packets Recipe

3 large baking potatoes, pared
cracked or coarsely ground pepper to taste
salt to taste
4 or 5 slices bacon, cooked
1 large onion, sliced
1/2 lb. sharp cheese, cubed
1 stick butter or margarine

Slice potatoes onto a large piece of foil. Sprinkle with pepper and salt. Crumble bacon over potatoes. Add onion and cheese. Dot with butter. Wrap loosely and seal well with double fold. Cook in 350 oven for about 1 hour or until done, turning occasionally.
Yields 4 to 6 servings.

Chicken Foil Packets Recipe

2 c. cooked chopped chicken
4 oz. cream cheese
2 Tbsp. chopped chives
2 pkg. refrigerator crescent rolls
2 Tbsp. milk
salt and pepper to taste

Mix chicken, cream cheese, milk, chives, salt and pepper. (This can then be frozen.)

To Prepare Packets: Open crescent rolls and carefully unroll. Separate so two crescent rolls are attached, forming rectangles (4 in each packet). Pinch center seam closed. Place approximately 1/4 cup of chicken mixture and fold over. Pinch closed. Repeat for each packet. Bake at 350 for 20 minutes.

Salmon Foil Packets Recipe

4 medium size new potatoes, cooked
1/4 c. melted butter or margarine
1/2 c. chopped green onion
1 1/2 lb. salmon fillet
salt and pepper
1 tsp. dill weed
lemon wedges

Cut potatoes into 1/3-inch thick slices. Cut 4 pieces of foil, each about 8 inches square. Dip potato slices in the butter, then place equal portions on pieces of foil. Top each with 2 tablespoons of green onion. With a sharp knife, cut strips of salmon away from the skin in pieces 3 to 4 inches long, 1 1/2 inches wide and 1/2 inch thick. Place equal portion over potatoes. Sprinkle each with salt and 1/4 teaspoon of dill. Drizzle with remaining butter. Pull up corners of foil and twist to seal. Bake in a 325 oven for 20 to 25 minutes until fish turns pink. Serve with lemon wedges.
Serves 4.

I may have found this recipe in a past newsletter. It is one I really like. If I don't have a grill going I put it in the oven and bake it.

Veggies in a Packet Recipe

3 tomatoes, quartered
3 sliced squash
1 sliced onion
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. basil
2 tsp. margarine

Place tomatoes, squash and onion on a large piece of heavy-duty aluminum foil. Sprinkle with salt, pepper and basil. Dot with margarine. Fold foil edges over and wrap securely. Grill packet over coals for 25 minutes. Turn after 10 minutes.
