Impossible Seafood Pie Recipe

1 can (6 oz.) tuna, drained, or 8 oz. frozen crab meat or shrimp, thawed & drained
1 cup shredded American (or Cheddar) cheese
1 pkg. (3 oz.) cream cheese, cut up
1/4 cup sliced green onions
1 jar (2 oz.) chopped pimiento, drained (optional)
2 cups milk
1 cup Bisquick baking mix
4 eggs
Dash nutmeg
3/4 tsp. salt (I hardly use any)

Grease a deep 10" pie plate. Mix seafood, both kinds of cheese, onions and pimiento in plate. Beat remaining ingredients 15 seconds in blender on high or 1 minute with hand beater. Pour into pie plate. Bake at 400 for 40 to 50 minutes, or until knife inserted, comes out clean. Cool 5 minutes. Can garnish with sliced tomatoes. 6 to 8 servings.

This is really good. I have sometimes used canned pizza sauce instead of the marinara sauce and that works good too.

Beef and Macaroni Casserole Recipe

2 tbsp. cooking oil
1/3 cup chopped onion
2 tbsp. finely chopped green pepper
1 clove garlic, minced
1-1/2 lbs. lean ground beef
2 can (8 oz. each) tomato sauce
1 can (16 oz.) marinara sauce
1/4 cup Ketchup
1/2 tsp. pepper
1 tsp. salt (I cut down)
2 cups cooked elbow macaroni

Brown hamburger with onion, green pepper and garlic in skillet with oil; drain. Add remaining ingredients and spoon into a 2-1/2 quart casserole. Bake 25 to 30 minutes at 350.
Serves 6 to 8.

Good morning Nancy and all Landers,
I would like to thank all our Nancylanders for their suggestions about using caramel ice cream topping instead of caramels. Robbie IN your second recipe sounds similar to mine so I will try that. I never thought of the ice cream topping being thinner than melted caramels. Newsletter looks awesome today too. I am so thankful I can count on all our Nancyland cooks/bakers for help when I have a question.

Dianne, I would weigh the caramels. It should work out using the same weight in topping. The consistency might be a bit different.

This is a awesome snack, and nobody will be believe it is made with graham crackers and goes together so easy and then in 12 minutes it's done!

Sinful Sesames Recipe

Whole graham crackers
1 cup butter
1/2 cup sugar
1/2 cup chopped nuts
1/4 cup sesame seeds

Line a 15x10" jelly roll size pan with whole crackers. Boil butter and sugar for 2 minutes and pour over crackers. Spoon nuts and sesame seeds over the top. Bake at 350 for 12 minutes.

Separate crackers, remove immediately to waxed paper too cool.

Bread Mixes from The Prepared Pantry

Shepherd's Pie Soup Recipe

2 tsp (10 mL) olive oil
1 onion, chopped
2 cloves garlic, minced
2 tsp (10 mL) chopped fresh thyme
450g=1-1/4 pounds lean ground beef
1 large carrot, diced
1 rib celery, diced
450 g white potatoes, (2 to 4), peeled and cut in 1/2-inch (1 cm) chunks
2 tbsp (30 mL) tomato paste
1 tbsp (15 mL) Dijon mustard
1 tbsp (15 mL) Worcestershire sauce
1 pkg (900 mL) sodium-reduced beef broth
1/4 tsp (1 mL) pepper
Pinch salt
1 cup (250 mL) frozen peas

In Dutch oven or large heavy pot, heat oil over medium-high heat; sauté onion, garlic and thyme until onion is just softened, about 2 minutes. Add beef, carrot, celery and potatoes; cook, stirring and breaking up beef with spoon, until beef is no longer pink, about 3 minutes.

Stir in tomato paste, mustard and Worcestershire sauce; cook until slightly thickened, about 2 minutes.

Add broth, pepper and salt; bring to boil. Reduce heat, cover and simmer until potatoes are tender, about 6 minutes. Stir in peas; cook until heated through, about 1 minute.

Tator Tot and Green Bean Casserole Recipe

1 lb. or more hamburger
1 can green beans, drained
1 can cream of mushroom soup
1/3 of pkg. tater tots

Brown the hamburger. Put in casserole or pan in the order given. Salt and pepper to taste. Bake at 375 degrees for about 50-60 minutes.
Note: I use cream of chicken or cream of celery soup

Steamed Vegetables Recipe

1-1/2 c. water
1/2 tsp. salt
3 med. potatoes, sliced (2 c.)
2 c. fresh cut green beans
1 lg. onion, sliced
2 zucchini, sliced (2 c.)
1 med. sized yellow squash, sliced (2 c.)

Bring water and salt to a boil in large skillet. Add sliced potatoes in skillet. Layer green beans on potatoes. Add sliced onion. Cover, reduce heat and simmer 5 minutes. Add sliced zucchini and squash. Cover, simmer 5 minutes or until vegetables are crisp-tender. Toss half vegetable mixture with Lemon Herb Butter and serve hot. Toss remaining vegetables with Zesty Marinade. Cover and refrigerate overnight. Serve cold the next day.

Lemon Herb Butter
Melt 1/3 cup butter in saucepan. Stir in 1 tablespoon freshly squeezed lemon juice and 1/2 teaspoon salt. Add a dash of pepper.

Southwestern Rice Recipe

2 cups water
2 cups MINUTE White Rice, uncooked
1 cup canned black beans or red beans, drained
1 cup thick and chunky salsa

Bring water to boil in medium saucepan. Stir in rice, beans and salsa; cover. Cook on low heat 5 minutes. Stir.

Crusted Steak Recipe Recipe

1/2 cup plain dry bread crumbs
1/4 cup margarine or butter, melted
2 tablespoons chopped fresh parsley
2 tablespoons Dijon-style mustard
1 clove garlic, finely chopped or 1/2 teaspoon garlic powder
1 boneless beef top round or sirloin steak (about 2 lbs.), 2 inches thick and fat trimmed
1 envelope Lipton Recipe Secrets Onion Soup Mix

Preheat oven to 350°. In small bowl, combine all ingredients except steak. On broiler pan, arrange steak. Press onion mixture on top and sides of steak. Bake uncovered 45 minutes or until steak is done.
Makes about 8 servings.

Potato Stuffed Meat Loaf Recipe

2 pounds ground beef
1-1/2 cups dry seasoned bread crumbs
1 cup water
2 eggs
1 cup shredded cheddar cheese (about 4 oz.)
3 cups stiff mashed potatoes
1 envelope Lipton Recipe Secrets Onion Soup Mix

Preheat oven to 350°.

In large bowl, combine onion soup mix, ground beef, bread crumbs, water and eggs. On waxed paper, shape into 14 x 9-inch rectangle; set aside.

In medium bowl, stir cheese into mashed potatoes; spread over ground beef mixture leaving 1-inch border. Using waxed paper as a guide, roll, starting at 9-inch side, jelly-roll style, removing waxed paper while rolling; seal edges tightly. In 13 x 9-inch baking or roasting pan, place meat loaf seam-side-down. Bake uncovered 1 hour or until done. Let stand 10 minutes before serving. Makes about 8 servings.

Southwestern Meat Loaf Recipe

2 lbs. ground beef
2 cups cornflakes or bran flakes cereal, crushed (about 3 oz.)
1-1/2 cups frozen or drained canned whole kernel corn
1 small green bell pepper, chopped
2 eggs
3/4 cup water
1/3 cup ketchup
1 envelope Lipton Recipe Secrets Onion Soup Mix

Preheat oven to 350°. In large bowl, combine all ingredients.

In 13 x 9-inch baking or roasting pan, shape into loaf. Bake 1 hour or until done. Let stand 10 minutes before serving.

Serve, if desired, with salsa.

Cucumber In Sour Cream Salad Recipe

1 ea Med cucumber, sliced thin
1 t Salt
1/2 c Sour cream
1 T White vinegar
2 Drops of tabasco
2 T Chopped chives
1 t Dill seed or fresh chop dill
1 Dash of pepper

Sprinkle the cucumber with salt. Let stand 30 minutes. Drain thoroughly. Dry on peper towel. Combine sour cream, vinegar, tabasco, chives, dill seed and pepper. Pour over cucumber. Chill well before using. Garnish with fresh dill.

Squash Stir Fry Recipe

3 c. squash (yellow or zucchini)
1/2 med. red pepper
1 sm. onion
2 tsp. oil
1/4 tsp. salt
1/8 tsp. pepper

In large bowl, combine vegetables. Heat large skillet over medium heat until hot. Add oil, heat until ripples. Add vegetables, stir fry 5 to 6 minutes or until crisp tender. Season with salt and pepper.

Squash and Ground Beef Dish Recipe

1 lb.ground beef
2 yellow or zucchini squash, chopped fine
1 onion, chopped
1 14 ounce can whole tomatoes
1 green pepper

Cook ground beef until lightly done. Add other ingredients and continue cooking at low temperature for about 1/2 hour. Salt and pepper to taste.

Squash Pie Recipe

1-1/2 c. squash
3/4 c. sugar
2 eggs
1 c. milk
1/2 tsp. salt
1-1/4 tsp. cinnamon
1-1/4 tsp. ginger
1-1/4 tsp. allspice
1 unbaked pie crust

Stir all together. Pour into pie crust. Bake at 400 degrees for 50 minutes.

Lime Chicken Recipe

4 (5 ounce) chicken breasts (boneless and skinless)
Juice of 3 limes
2 tablespoons chopped garlic
2 cups fresh sliced mushrooms
salt to taste
pepper to taste

Slice chicken into thin strips. Saute Chicken in garlic and lime juice until chicken is tender. Add mushrooms and continue to cook until chicken is lightly browned.

Sage Seasoned Pork Recipe

4 (1/2 inch) pork loin chops, trimmed of fat
1/2 teaspoon died sage
1 small onion, sliced and separated into rings
2 apples, cored and cut into thin wedges.

Rub sage onto both sides of chops. Place chops into a large skillet sprayed with nonstick cooking spray. Cook chops for 5 minutes on one side. Turn chops and add pnion and apples. Cook for 7 minutes move or until cho

Braised Swiss Steak Recipe

1 pound boneless round steak, 3/4 " thick trimmed
1/4 tsp each salt & pepper
Nonstick cooking spray
2 Tbs all purpose flour
1 can ( 14 1/2 oz) low sodium tomatoes cut up in juice
2 stalks celery cut 1/4 " pieces
1 large onion cut into wedges
3/4 cup frozen corn
1-1/2 tsp oregano

Preheat oven to 350. Cut the steak into 4 pieces. Pound steak until it is 1/2" thick. Sprinkle steak on both sides with salt & pepper. Coat a 12" skillet with cooking spray. Heat skillet over moderately high heat. Brown steak, and cook for about 3 minutes on each side. Transfer to a 9x13x2 baking dish. Stir flour into the drippings in the skillet. Stir in the tomatoes, celery, onion. corn, and oregano. Bring to a boil over moderate heat and boil for 1 minute, stirring constantly. Pour mixture over the meat in the baking dish. Cover and bake 75 minutes. or until the meat is tender.

Spaghetti Casserole Recipe

2 tbsp. vegetable oil
1 lb. lean ground beef
1 pkg. spaghetti seasoning
2 (15-1/2 oz.) cans spaghetti in tomato sauce
1/2 c. grated Parmesan cheese

Place oil in skillet and heat over medium-high heat. Add meat and brown. Add the package of spaghetti seasoning. Stir well. Add the cans of spaghetti. Stir well. Pour mixture into 2 quart casserole dish. Sprinkle Parmesan cheese over the top. Bake in oven at 350 degrees for 30 minutes.

Sautéed Bananas with Praline Sauce Recipe

5- 1/2 tbsp maple syrup
3 tbsp fat-free (skim) milk
3 tbsp chopped pecans
4 large banana(s), peeled, halved lengthwise and then crosswise

Combine maple syrup, milk and pecans in a small saucepan; set pan over medium-high heat. Bring mixture to a boil, reduce heat to medium-low and simmer until the mixture thickens and reduces to about 1/3 cup, about 15 minutes.

Meanwhile, coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add bananas and sauté until golden brown, about 1 minute per side.

Transfer bananas to dessert plates and spoon praline sauce over top. Yields 1 banana and about 1-1/2 tablespoons of sauce per serving.

Baked Chile Relleno Recipe for One

1 lg Egg, separated
1 lg Egg white
Salt to taste
1 Canned whole small green chili, drained
3/4 oz Shredded cheddar cheese
Hot or medium salsa

Preheat oven to 350F. Spray 6" au gratin dish with nonstick spray. Set aside.

In a medium bowl, with electric mixer on high speed, beat egg white and salt until stiff.

In a small bowl, lightly beat egg yolk; fold into egg whites. Spread half the mixture in prepared dish. Open chile and place flat on top; sprinkle with cheese. Spread remaining egg mixture on top to make an even layer.

Bake until golden brown and center is set; 15-20 minutes. Serve with salsa if desired.
Makes 1 serving

If you like the taste of a chile relleno this recipe is so good. I tend to use a fresh roasted Anahiam Chile for this recipe too.. I also have used mild roasted Hatch Chiles from New Mexico. They are roasted at the store and available from the United Grocery Stores at this time of the year.
I buy a bunch of the freshly roasted ones and freeze them for later use.
