I found this recipe many years ago in a magazine and it has remained a family-favorite through the test of time.

Favorite Spanish Beef Rice Recipe

1 medium onion, thinly sliced (I chop)
Cooking oil
1/2 cup chopped green pepper
1 lb. lean ground beef
1 cup raw regular long-gran rice
2 cans (8 oz. each) tomato sauce
1-3/4 cups hot water
Salt and pepper, to taste
2 tsp. prepared mustard (optional)

Brown rice, beef, onion and green pepper in a little cooking oil. Add remaining ingredients and bring to boil. Cover tightly and simmer for 25 minutes, until rice is tender.
Serves 4.

Note: Can add 1/2 cup grated cheese before serving and can also make without the beef, if desired.

This is one of our most favorite "comfort foods" for many years.

Chicken Broccoli Bake Recipe

2 cups chopped frozen broccoli, cooked & drained
2 cups cubed cooked chicken
2 cups soft bread cubes
2 cups shredded American cheese (or Cheddar)
1 jar (12 oz.) chicken gravy
1/2 cup evaporated milk (I usually add a little water to it)
Dash pepper

In buttered 9" square pan, layer broccoli, then chicken, bread cubes and cheese.
Combine gravy, milk and pepper and pour over mixture in pan. Bake at 375 for 40 minutes;
let stand 5 minutes before serving.

This is such a awesome cake! Easy to make with cake and frosting mixes, and would make any occasion special.

Coco Nutty Torte Recipe

1 pkg. German chocolate cake mix
1/2 cup butter, softened
1 can ready-to-spread coconut pecan frosting mix
1 envelope Dream Whip
1/4 cup cold milk

Prepare cake mix as directed on the package, except use the butter in place of the oil. Pour batter into two well greased and floured 8" round layer pans. Bake according to directions on pkg. for layer cake. Cool completely. Place one layer (rounded side down) on serving plate. Spread with 1/2 cup frosting; top with remaining layer, rounded side up.

Spread top with 1/2 cup frosting. Beat remaining frosting, dry Dream Whip and milk in mixer bowl, using low speed of electric mixer, and scraping sides of bowl. Beat at 2 minutes until smooth and fluffy. Frost sides of cake. Refrigerate.. Can decorate top with pecan halves to "fancy" it up.

Quick Chicken Rice Casserole Recipe

1 cup UNCOOKED rice, I use Minute Rice and you can use what
ever rice you like
1 pkg. Lipton onion soup mix
1 chicken in pieces
1 can cream of chicken soup
3/4 cup water but I now use chicken stock

Pour your cup of rice evenly in a 9"x13" pan. Mix dry onion soup with 3/4 cup water or chicken stock and pour over rice. Lay pieces of chicken over it. Mix together cream of chicken soup and 1 can of water or chicken stock. Pour cream of chicken soup mixture over chicken layer and bake at 300 degrees for 1 1/2 hours to 2 hours depending on if chicken is still not defrosted.
Serves 4 to 6 people.

The next recipe we always had this at our Church's Mother Daughter Banquet and enough was left for the men to have also. The daughters fathers served use and they were all dressed a like usually dark pants, white shirts and dark bow ties. Also these can be used for cocktail party or for college or pro football games.

Ham Balls Recipe

2-1/2 lbs. ground ham loaf
2 cups cracker crumbs
1 cup milk
2 eggs

1 cup brown sugar
3 tablespoons mustard
1 tablespoon vinegar

Mix all ingredients together except the sauce ingredients. Form into balls. Cook he ham ball for 50 minutes and take them out of the oven. Mix sauce ingredients together and pour on the ham balls; put back into the oven at 350 for 10 minutes. Serves 5 to 8 people depending how many each person takes.

Kelly Ripa's Artichoke Dip Recipe

4 (15 oz.) cans of Artichoke Hearts, quartered
4 cups of Mayo, 30 oz.jar
4 cups of roughly grated, NOT FINE, Parmesan Cheese

To bake put in your favorite baking dish at 350 degrees until golden brown, approximately 50 minutes. Arrange
with cut pita, sliced baguette and etc.

I first saw this dish on a quick video and thought "oh this will never work", but I was wrong! It's so easy and so delicious and you can make it ahead and refrigerate and bake the next day if you wanted to. Hope you like it.

Biscuits And Gravy Bake Recipe

Here’s what you need:
1 (12-oz tube) refrigerated biscuits
6 eggs
1/2 cup milk
1/2 tsp pepper
1/2 tsp salt
1 lb cooked sausage
1 cup shredded cheese (I used mild cheddar)
For the gravy:
4 Tbsp. butter
4 Tbsp. flour
salt & pepper to taste
2 cups milk

Here’s how to make it:
Cut each biscuit into 8 pieces. Set aside. In a bowl, mix the eggs, 1/2 cup milk, 1/2 tsp salt, and 1/2 tsp pepper. Set aside. In a saucepan, melt the butter. Stir in flour, salt, and pepper, and slowly add the 2 cups of milk. Simmer, stirring, until it’s thickened. In a greased 9x13 glass baking dish, layer the biscuits, sausage, cheese, egg mixture, and gravy. Bake at 350°F/180°C for 45 min, until the eggs on the bottom are cooked. Delicious!

NOTE: I added a sprinkling of red pepper flakes, extra pepper (we like peppered gravy in the south!) and a splash of hot sauce. This is all optional.

Chocolate Kahlua Cheesecake Recipe

1 1/4 cups graham cracker crumbs
1/3 cup butter, melted
1/4 cup sugar
1/4 cup baking cocoa

32 oz. cream cheese, softened
1 1/2 cups sugar
1 cup baking cocoa
4 eggs
1/2 cup strong coffee
1/2 cup Kahlua
2 t. vanilla extract

1 cup sour cream
2 T. sugar
1 t. vanilla extract
6 to 8 chocolate curls, optional

For crust, mix graham cracker crumbs, butter, sugar and baking cocoa in bowl. Press crumb mixture over bottom of a 9 inch spring-form pan. Bake at 325 for 5 minutes. Let stand til cool.

For filling, beat cream cheese in mixing bowl til lightly and fluffy. Scrape bowl occasionally. Add sugar gradually and beat til blended. beat in the baking cocoa. Add eggs, 1 at a time, beating well after each addition. Stir in coffee, Kahlua, and vanilla. Spoon into prepared pan. Bake at 375 for 50 to 60 minutes or til set. For topping, mix sour cream, sugar and vanilla in a bowl. Spread over the top of the hot cheesecake. Bake at 425 for 5 to 7 minutes. Cool in pan on wire rack to room temperature. Chill, covered, for 8 to 10 hours. Top with the chocolate curls. Serves 10 to 12

This taste like old fashion egg custard with a bit of coconut included. This is a simple , not too sweet but quite tasty, satisfying dessert.

Coconut Pie Recipe

1/2 stick oleo or butter, melted
2 eggs, beaten
1 tablespoon cornstarch
3/4 cup sugar
1 cup coconut
1 cup milk
1 teaspoon vanilla
Unbaked 9 inch shell

Combine ingredients in bowl. Pour I to unbend pie shell. Bake at 350 degrees about 45-60 minutes, till firm in center. Enjoy and recall a dessert perhaps made by your mom.

This an excellent change from regular potato salad. Flavor is very good.

Potato Salad Recipe

1 lb. potatoes, cut into chunks, preferably red potatoes
1/4 cup light zesty Italian dressing
1/3 cup light Miracle Whip
1 1/2 teaspoons Grey Poupon Dijon Mustard
1 hard boiled egg, chopped
4 green onions, sliced or chopped

Cook potatoes in saucepan with boiling water until tender. Drain. Rinse potatoes with cold water till cooled. Drain. Mix dressings, mustard in large bowl. Add potatoes. Add egg and onions. Mix lightly. Refrigerate at least 30 . This is better the second day.

Lemon Pistachio Bundt Cake Recipe
Makes 8 Servings

3 cups flour
1/2 tsp salt
2 cups each shelled roasted pistachios and sugar
1 1/2 cups unsalted butter
1 tbs lemon zest
1 tsp vanilla
4 eggs
1/4 cup rum

Heat oven to 35O degrees. Grease, flour a Bundt pan. Whisk together flour and salt in a bowl. Pulse pistachios in a processor until ground. Beat butter and sugar until fluffy. Add pistachios, zest, and vanilla, beat well. Add eggs, beat well. Beat in flour mixture and rum. Scoop batter into pan. -Bake until done 6O min. Cool in pan 2O min. then invert cake. Brush cake with lemon glaze. SERVE & ENJOY...

Lemon Glaze
Simmer 3/4 cup sugar, 2 tbs each lemon juice and water and a pinch of salt in a pan until sugar
dissolves. Stir in 1/2 tsp vanilla. Cool 1O min.

In response to Janis in Texas about my recipe for Chicken Fried Hamburger Patties, thanks for cream gravy suggestion. I will try that also. I also smother them sometimes with sliced onions and the canned brown gravy. Yes, a frugal recipe! When my husband was in grad school, and we were living on my teacher salary, I had recipes for 2 that used a 1/4 lb. hamburger meat for our meal. Talk about frugal!

I got without coffee filters few days ago, so I used paper towels until I could get to town.

Now, I love using the paper towels. Place the whole paper towel in the basket, put coffee grounds in, fold the paper towel over grounds to make fit. When coffee is made and grounds cool, they are all wrapped in towel and no mess to handle.

BUT, is this a smart idea? Is it safe to use the paper towel as a filter?

I use the full-size paper towel; it is solid white; name brand paper towel.

My coffeemaker is the most inexpensive Black n Decker.

I live in water-soaked area of Louisiana.

I live on hill, but water rushing downhill sometimes causes washouts.

I love the hills; love the sunshine that dries the ground; love God Who provides our need to restore washouts!

Best wishes to you, Nancy! Problems of the day (especially giving undivided attention to the Election) is the probable reason for delay in getting your need of recipes and tips. As many readers that you have, with everyone sent one monthly, it would be a lot (I am guessing)? Anyway, “Nancy” is just part of our lives!

Strawberry Swirl Cheesecake Cupcakes Recipe


For the crust:
3/4 cup crushed vanilla wafers
2 tablespoons melted butter
1 teaspoon granulated sugar

For the filling:
2 packages 1/3 reduced fat cream cheese, softened
3/4 cup sugar
Lemon zest of 1/2 lemon (or 1 teaspoon lemon juice)
1 teaspoon vanilla
2 eggs, room temperature
3 tablespoons frozen strawberries in sugar, thawed and

Preheat oven to 325 degrees F. Line a muffin pan with cupcake liners. Combine crushed vanilla wafers, melted butter and sugar in a bowl until fully combined. Spoon about 1 tablespoon of crust mixture into bottom of each cupcake liner. Using the bottom of a glass shot glass, press crust into bottom of liner. In the bowl of a stand mixer, beat cream cheese until fluffy. Add sugar, vanilla and lemon zest and combine. Add eggs one at a time. Fully combine each egg before adding second egg. Add about 3 tablespoons of cheesecake mixture to each cupcake liner. Drop 5 small drops of strawberry puree to the top of the cheesecake mixture. Using a toothpick, swirl the puree into the top of the cheesecake. Bake for about 20-22 minutes or until center has set. Remove from oven and let cheesecakes come to room temperature. Let chill for 3-4 hours at a minimum or for best results overnight.
