For when needed:

Apple Pie Cupcakes Recipe

1 box white cake mix
1 tsp. cinnamon
1 can (22 oz) apple pie filling
Ice cream for topping (optional)

Chop apple pie filling, then pour into a bowl and set aside.

In another bowl, add white cake mix, made according to box. Add 1 tsp. of cinnamon and blend. Fill 3 Tbsps. batter into each muffin cup. Top with 1 Tbsp. pie filling per muffin cup.

Bake in the oven 18 to 20 minutes at 300 įF. Top with caramel, ice cream, and dash of cinnamon. Serve and enjoy!

Magic Chicken Ranch Casserole Recipe

1 lb. boneless, skinless chicken breasts, diced
a few pinches of kosher salt
freshly ground black pepper
4 oz. reduced-fat cream cheese
16 oz. bag frozen peas and carrots (or your choice of mixed vegetables)
8 oz. reduced-fat sour cream
1 oz. packet of ranch seasoning mix
1 small bunch of green onions, thinly sliced (about 1/4 c.)
1 c. milk
2 eggs
1 tbsp. vegetable oil
1/4 tsp. garlic powder
1 tsp. dried dill
1/4 tsp. kosher salt
1 c. all purpose flour

Preheat oven to 400 degrees F. Spray a 9 x 13″ baking dish with cooking spray and set aside.

Spray a large skillet with cooking spray and heat over medium-high heat. Add chicken to hot skillet, and sprinkle with a couple pinches of salt and black pepper to taste. Saute until mostly cooked on the outside, about 5 minutes.

Add cream cheese, and stir until melted and chicken is coated. Stir in frozen vegetables, and cook 3 minutes, stirring frequently.

Turn off heat, and add sour cream, ranch mix, and green onions. Stir well to combine, and transfer chicken and vegetable mixture to the prepared baking dish.

In a medium bowl, whisk together eggs, milk, vegetable oil, dill, garlic powder, and 1/4 tsp salt. Add flour, and whisk for about a minute until smooth. Pour batter evenly over chicken mixture.

Bake in preheated oven for 40-45 minutes, or until topping is puffy and starting to brown. (The puffing happens at the end, so donít worry if it still looks pretty flat for the first half hour or so!).

Broccoli Salad Recipe
Servins 8, Serving Size 3/4 cup

1/4 cup non-fat Greek yogurt
1/4 cup low-fat mayonnaise
2 tablespoons honey
2 teaspoons lemon juice
4 cups broccoli florets
1 red bell pepper, cut into 1/2-inch chunks
1 cup shredded carrot
1 scallion, sliced
1/4 cup raisins
1/4 cup roasted sunflower seeds
1/4 cup diced white Cheddar cheese (optional)

In a large bowl, combine yogurt, mayonnaise, honey, and lemon juice; mix well.

Add broccoli, bell pepper, carrot, scallion, raisins, sunflower seeds, and cheese, if desired; toss until evenly coated. Serve immediately or cover and chill until ready to serve.

Butterscotch Cake Recipe

Cook a 4 serving size box of butterscotch pudding with 2 cups milk as directed on package.

Stir in 1 box yellow cake mix and blend well.

Pour into a 9x13 buttered and floured pan.

Sprinkle with a 12 oz . package butterscotch chips. May add chopped pecans or walnuts as well if desired.

Bake at 350 degrees for 30-35 minutes or until cake springs back when touched with fingertip.

Maple Pecan Coffee Cake Recipe

12 tablespoons (1-1/2 sticks) unsalted butter at room temperature
1-1/4 cups granulated sugar
1/4 cup pure maple syrup
3 extra-large eggs at room temperature
1 teaspoon maple extract
1-1/4 cups sour cream
2-1/2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt

1/4 cup light brown sugar, packed
1/2 cup all-purpose flour
2 teaspoons ground cinnamon
1/4 teaspoon kosher salt
3 tablespoons cold unsalted butter, cut into pieces
1 cup chopped pecans, optional

1/2 cup confectioners sugar
3 tablespoons real maple syrup

Prepare 10-inch tube pan by greasing and flouring it. Set oven to 350 degrees F and allow it to preheat while you prepare the coffee cake. In a small mixing bowl, sift together the flour, baking powder, baking soda, and salt, set aside. In a large mixing bowl and using an electric mixer, I used my stand mixer; cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, allowing each egg to mix in fully before adding the next egg. Stir in the maple syrup, extract and sour cream. Reduce the mixer to low and stir in the flour mixture until combined, scraping down the bowl as needed. Prepare streusel.

In another small mixing bowl add brown sugar, flour, cinnamon and salt. Using a pastry blender or just your fingers work in the butter until it makes a crumble. Mix in the pecans. Spoon in all of the batter into the prepared 10-inch tube pan. Spread out evenly using a knife, top with ĺ cup of the streusel. Add the remaining batter on top of the streusel and spread it evenly once again. Top with remaining streusel and bake in preheat oven for 50-60 minutes. Or until a light golden brown and the cake it starting to pull away from the pan, if your cake tester (i.e.: toothpick) comes out clean you are ready to remove from the oven.

Let cake cool on a wire rack for 30-45 minutes. Remove cake from pan and transfer to a cake plate or dish, placing streusel side up. While cake I cooling on cake plate, make the drizzle. Whisk together confectioners sugar and maple syrup, adjusting the amount of maple syrup to your taste and the consistency you want for your icing. Cut, serve and devour - the best kind of coffee cake is one that is shared. Enjoy!

Reuben Casserole Recipe

1 lb corned beef lunch meat, I have some leftover from St. Pat's day or you can get from Deli counter
6 slices rye bread
6 sliced rye bread, crumbled
6 slices reduced fat Swiss cheese
1, 16 oz., sauerkraut, drained well
1/2 cup low fat Thousand Island dressing

Preheat oven to 350 degrees. Spray a 9"x13" baking dish with cooking spray. Place bread on the bottom, then layer with the corned beef and sauerkraut. Dot with the dressing, and then top with the slices of cheese. Then put the rye bread crumbles on top. Cover with foil and bake in oven fro about 20 minutes, then remove foil and place back in oven for another 10 minutes. Let cool about 5 minutes before serving. Serves 6

The next two recipes are the same but one Eggplant is breaded and the other is not. Yes, I have used both recipes depending how much time I have. The first recipe is the breaded one and the second one is not. Some people like breading and others don't.

Easy Eggplant Parmesan Recipe

1 large eggplant, peeled, I don't peel and cut into 1/3 inch slices
2 eggs, beaten
1 1/2 cups seasoned dry bread crumbs
1/4 cup olive oil
3 cups spaghetti sauce
1/2 lb shredded mozzarella cheese
1/3 cup grated Parmesan cheese

Arrange a layer of eggplant slices in a colander. Sprinkle generously with salt. Continue layering and salting all eggplant slices. Let stand 30 minutes. Rinse and pat dry. Dip each eggplant slice in beaten egg, and dredge with bread crumbs. Heat oil in a heavy skillet. Over medium high heat fry eggplant in hot oil about 2 minutes per side until golden. Drain on absorbent paper. Preheat oven to temperature 350 degree. Arrange half of the eggplant slices in the bottom of baking dish sprayed lightly with nonstick spray. Spread half the sauce over the top. Sprinkle with half the mozzarella and half the Parmesan. Repeat layers. Bake 20-25 minutes or until mixture is bubbly. Serves 4

Eggplant Parmesan Recipe

2 1/2 cups pasta sauce
1 medium eggplant, about 1 1/2 to 2 lbs.
4 oz. mozzarella cheese, grated or more
1/2 cup grated parmesan cheese

Preheat oven to 350 degrees. Spray or lightly oil a 9"x13" pan. Spread 1/2 cup of sauce in pan. Peel eggplant, I don't peel ours, and slice 1/2" thick. Arrange 1/2 the slices in the baking pan. Top with 1/2 cup sauce, 1/2 the mozzarella, the remainder of the eggplant slices, and the remainder of the sauce. Cover with foil and bake 45 to 55 minutes. Top with the remainder of the mozzarella and the parmesan and return to oven, uncovered, under the broiler, until the cheese is lightly browned and bubbly.

Super Easy Vitamin C Spinach Salad Recipe

2 cups Spinach washed
1 small or the amount red onion sliced
1 or 2 oranges sections or you can use grapefruit
Italian Salad Dressing bottled or home made

Wash spinach in a clean sink. Put cold water in a plugged sink dropping spinach in and leaving in there for about 30 minutes. By washing spinach this way the sand and others things taking spinach out of sink very carefully. Put spinach on paper towels. Then put the spinach in a bowl and add onion slices. Then cover bowl and you can put this in the refrigerator until ready to eat. When ready to eat take out of refrigerator adding Italian salad dressing and toss.

Nancy, I have been looking for recipes have have not eaten in a long time. Here are a couple we have not had for sometime.

Broccoli Casserole Recipe

2, 10 oz, pkgs. chopped frozen broccoli
1 cup chopped onion
1, 8 oz., pkg. shredded cheddar cheese
1 cup mayonnaise
1 can mushroom soup
2 eggs

In a medium sauce pan cook broccoli and onion until tender, drain. In large bowl add remaining ingredients. Add broccoli and onion. Mix well. Put in a 9"x13" baking dish. Bake at 350 degree for 30 to 45 minutes.

Pork chops in Gravy Recipe

1 egg
2 tablespoons water
8 pork loin chops (1/2" thick)
3/4 cup seasoned bread crumbs
2 tablespoons vegetable oil
1 can mushroom soup, undiluted
1 can condensed french onion soup, undiluted
1/4 cup grated parmesan cheese

In a bowl beat egg and water. Dip pork chops in egg mixture. Coat with bread crumbs. In a large skillet brown chops in oil. Transfer to greased 9"x13" baking dish. Mix the soups together and pour over the pork chops then sprinkle with cheese. Cover and bake at 325 for 1 1/2 hours or until tender.

One reviewer wrote this review. To keep from heating the house up with the oven, I cooked these in my pressure cooker for 25 minutes, (with 1/2 cup water added to make steam). They were fanastic!! I would have never though of using these two soups together, but WOW!! This is really a great recipe!!

Big Boy Strawberry Pie Recipe

1 pie shell 9" baked
4 cups strawberries, fresh and sliced
1 1/2 cups water
3/4 cup granulated sugar
2 tablespoons corn starch
1, 3 oz., pkg. strawberry gelatin

In baked pie crust add sliced strawberries. In small sauce pan mix water, sugar and corn starch and bring to boil. Boil until mixture is clear and thick, approximately 2 minutes. Remove sauce pan from heat and add the strawberry gelatin, stirring until dissolved. Pour this over the strawberries in pie shell. Chill and serve.

Had no idea that the recipes I was posting a complete meal.

Lemon Dump Cake Recipe

1 pkg. pound cake mix
1/4 cup cooking oil
3/4 cup apricot nectar
1 pkg. (3 oz.) lemon Jell-O
1 tsp. almond extract
4 eggs

Dump all ingredients, except eggs in mixing bowl, and beat together well, using medium speed of electric mixer. Add eggs, one at a time, beating well after each. Pour batter into a greased and floured 10 inch tube pan. Bake at 350ļ for 50 to 60 minutes, or till paring knife stuck near the center comes out clean. Prepare Lemon Glaze. Pour glaze over top while cake is still hot. Remove from pan in about 20 minutes.

Lemon Glaze
Beat together well in small bowl; 1 cup powdered sugar, 1 tbsp, butter and 2 tbsp. lemon juice.

Sweet Italian Salad Dressing Recipe

1 cup cider vinegar
1 cup olive oil
3/4 cup sugar
2-1 ounce packets of Good Seasons Italian salad dressing

Mix all together and Enjoy!

Pudding Milkshake Recipe

1 c. milk
2 tbsp. Jell-O pudding, any flavor
1 scoop (1/2) ice cream, any flavor, softened

Pour milk into shaker. Add pudding mix and ice cream. Put lid on shaker. Shake hard for 1 minute. Open shaker. Pour into glass and drink. Makes 1 serving
