This is a recipe that I used when I taught about Brazil. Since we've got the Olympics in Brazil, I thought someone may be interested. It is a really good recipe.

Myra Waldo's Brazilian Hamburgers Recipe

2 lbs. ground chuck or round (I only use grass fed)
1/2 cup grated Parmesan cheese
1 cup finely chopped green onions
1 cup finely chopped parsley
2 eggs, beaten
2 T. water
1 1/2 t. salt
Dash cayenne
Toasted hamburger rolls

Mix all except rolls in large bowl until well blended. Shape into 8 patties. Arrange patties on rack in broiler. Broil w/tops of patties about 3 in. from heat, turning once to brown both sides, for 10 min. or until beef is done to your liking. Or, pan-fry in 2 T. butter in large skillet, turning to brown both sides. Or, grill 5 in. above grayed coals, about 10 min., turning once. Serve on toasted hamburger rolls. Garnish w/green onion, parsley and hot pepper, if desired.

Good morning Nancy,
Newsletter looks great today. Many moons ago someone (I don't remember who) sent in a recipe for
Grape Salad. I would like to thank that person whoever they are. Went to a picnic last week and took this salad with me. Not a scrap left lol. Everyone loved it and asked for the recipe. This salad is so easy to make and is one of those salads you can make the day before and it tastes better the longer it sits in the frig. My local grocery store had grapes on sale for 79 cents a pound so the salad was also cheap to make.

Little One is helping with the newsletter tonight and it took much longer than usual to post the newsletter. Little One is on top of the keyboard trying to get my attention. I thought if I ignored him he might go away. Instead he is currently whacking me with his tail. The last few days I have worked a lot and have not been at home much. Both Little One and Ditto let me know that I am not giving them enough attention. Last night in the middle of the night both cats woke me up so they could tell me they loved me. I gave them a hug and tried to go back to sleep. 

The outdoor kitties are growing up. They are so cute. I think they may be about 4 to 5 weeks old now. They still find the whole world an exciting place. They love the water dishes. After the kitties leave the squirrels come and play in the water. Ditto and Little One enjoy watching the kitties and the squirrels.

Here is another way to use the zucchini that are so plentiful right now. I have used cooked, diced chicken in place of the sausage.

Sausage Zucchini Stuffing Recipe

1 1 lb. sausage- I use turkey sausage, but your favorite brand will work.
1 onion, chopped
1 grated carrot
1 c. sour cream
4 c. diced zucchini
1 can cream of mushroom or chicken soup
1 pkg. Stove Top dressing, make as directed

Brown and drain sausage, half through cooking add onion and carrots. Add remaining ingredients. Put in approximately 3-quart baking dish. Bake 30 to 40 minutes at 350 degrees.

Mary J's Apple Cinnamon Quesadillas Recipe
makes 4 servings

1 medium McIntosh apple, cored and chopped
3/4 c. no-sugar-added applesauce
1/8 t. ground cinnamon
4 flour tortillas (6-inch)
1/4 c. (1oz) shredded reduced-fat cheddar cheese
nonstick cooking spray

Prepare Spiced Yogurt Dipping Sauce.(below) Set aside.

Combine apple, applesauce and cinnamon in small bowl; mix well.

Spoon half of apple mixture onto tortilla; sprinkle with half of cheese. Top with another tortilla. Repeat with remaining tortillas and apple mixture.

Spray large nonstick skillet with cooking spray; heat over medium heat until hot. Cook quesadillas, one at a time, about 2 minutes on each side or until golden brown. Cut each quesadilla into four wedges. Serve with Spiced yogurt Dipping Sauce.

Spiced Yogurt Dipping Sauce
1/4 c. vanilla low-fat yogurt
2 T. no-sugar-added applesauce
Dash ground cinnamon

Combine yogurt, applesauce and cinnamon in small bowl; mix well.
Refrigerate until ready to use.

Calories 196; total fat 3g; saturated fat 1g; protein 6g; carbohydrate 36g; cholesterol 5mg; sodium 122 mg; fiber 2 g.

Sherry's Philadelphia Cream Cheese Pie Recipe

1/3 cup sugar, divided
1 T. cornstarch
1 cup crushed pineapple, undrained
1/2 cup sugar
1/2 t. salt
1 pkg. cream cheese, 8 oz
2 eggs
1/2 t. vanilla
1/2 cup milk
1 unbaked pie shell, 9 inch size
1/2 cup pecans, chopped

Blend 1/2 cup sugar with cornstarch and add pineapple. Cook, stirring constantly thick and clear. Cool. Mix 1/2 cup sugar with salt and cream cheese. Stir til well blended. Add eggs, one at a time, stirring well after each egg. Blend in vanilla and milk. Spread cooled pineapple mixture over crust and slowly pour cream cheese mixture on top and sprinkle with chopped pecans. Bake at 400 for 10 minutes and then lower temperature to 325 for 50 minutes. Helps pie to set. Chill 4 hours or overnight.

Lisa's Fruit and Spinach Salad Recipe
(makes 8 servings)

1 (10 oz) package cold water washed spinach, torn in bite sized pieces
1 large red delicious apple, cored and chopped
1 medium pear, cored and chopped
4 green onions, sliced

Combine these ingredients and toss with a fruited fat-free vinaigrette dressing.

Calories 54; total fat 0.28g; saturated fat 0.04g; protein 1.24g; carbohydrate 12.95g; cholesterol 0 mg; sodium 64 mg; fiber 2 g.

Lisa's Boiled Beer Shrimp Recipe
(4 servings)

2 lbs. Unshelled large raw shrimp, deheaded
2 (12 oz) cans lite beer
2 T. crab boil seasoning
Pepper to taste (optional)

In large pot, bring beer to boil with seasonings. Stir in shrimp and cover. Return to boil and simmer for 5 minutes. Turn heat off and leave shrimp in hot beer for a few more minutes. Drain shrimp and serve immediately. Serve with lemon wedges and cocktail sauce.

Calories 240; total fat 3.92g; saturated fat .74g; protein 46g; carbohydrate 2g; cholesterol 344g; sodium 335mg; fiber 0g.

Mary Ann's Meat Loaf Recipe

2 lbs. ground beef
2 eggs
1 cup sour cream
1 cup bread crumbs
1 pkg dry onion soup mix

Heat oven to 350 degrees. Brown ground beef in skillet. Drain well. Put into mixing bowl. Add remaining ingredients. Mix well. Put mixture into loaf pan. Bake for 20 minutes.

Oma's Cabbage Casserole Recipe

1 lb. ground meat
1 lb. pork sausage, (cut into sm. pieces)
1 (16 oz.) can whole tomatoes
1 onion
1 c. raw rice
1 tbsp. chili powder
1 1/2 tsp. salt
1 tbsp. garlic salt or 3 pods
1 bell pepper
1 med. cabbage
1 egg

Mix all ingredients together in covered roaster. Bake at 350 degrees oven for approximately 1 1/2 hours. Stir a couple of times

Judy's Macaroni and Cheese Pizza Recipe

1 (7-1/4 oz.) pkg. macaroni and cheese
2 eggs
1 can pizza sauce
1 sm. can sliced mushrooms
Browned Italian sausage
1-1/2 c. shredded Mozzarella cheese

Prepare macaroni and cheese as directed on package. Add eggs, mix well. Spread into well greased 12 inch pizza pan or 9 x 13 baking pan. Bake at 375 degrees for 10 minutes. When this is done baking, remove and spoon pizza sauce over macaroni and cheese mixture. Top with meat, mushrooms and cheese. Continue baking 10 minutes until gold and bubbly.

Judy's Peach Pizza Recipe

Step 1
1 1/2 c. self-rising flour
1 1/2 sticks margarine
1/4 c. brown sugar
1 c. chopped nuts

Mix all ingredients. Spread mixture in a 13x9 inch pan and bake for 30 minutes at 300 degrees. Let cool.

Step 2: Filling:
8 oz. cream cheese
1/2 box powdered sugar
1 lg. (12 oz.) container Cool Whip

Mix above ingredients and spread over crust. --

Step 3: Topping:
1 c. water
4 tbsp. cornstarch
1 c. sugar
1 (3 oz.) box peach Jello
4 c. peaches

Combine first 3 ingredients in pan. Boil until thick and clear. Stir in Jello and let cool. Mix in peaches and spread on top of the filling. Refrigerate overnight. Cut and serve.

I would like a good easy recipe for spaghetti sauce that could be frozen.

Brenda's Chocolate French Toast Recipe

8 Slices of desired bread
3 (12 oz.) Hershey Bars
Butter or Margarine
Confectioners Sugar
4 eggs
2 TBSP. milk

You start off by pouring the egg mixture into the bottom of a glass dish. You then dip the 8 slices of bread in on ONE side only, to soak up the egg mixture. Then, you heat up your skillet (medium heat) and lay two slices of bread in. Break up the candy bar and use 4-5 squares of the chocolate. Top this with another slice of the egg-soaked bread (face side up, of course). When fully browned on one side, flip and repeat. Sprinkle with sifted confectioners sugar and strawberry for garnish if desired.

Variations: We also wondered how good it would be with a thin layer of peanut butter and the chocolate squares on the inside. Enjoy ~ :o)

Mary J's Sweet and Sour Chicken Recipe

2 to 3 pounds chicken pieces
1 package dry onion soup mix
1 (12 oz) jar apricot preserves
1 (8 oz) bottle Russian salad dressing

Place chicken in shallow baking pan. Mix remaining ingredients and pour on chicken. Bake at 350 degrees for 1 1/2 hours. Serves 4 to 6.

I need an old fashioned recipe for fried fruit pies using dried apples, apricots or peaches. Can anyone help??

Sharon's Creamy Orange Pie Recipe

1pkg. [8oz.] light cream cheese, softened
1 can [14oz.] sweetened condensed milk [not evaporated milk]
1 can [6oz.] frozen orange juice, thawed
1 carton [8oz.] Whip Topping, light, thawed
1 - 9 inch graham cracker crust

In a large bowl with electric mixer, mix cream cheese until fluffy. Add condensed milk and mix until incorporated. Mix in orange juice until smooth and creamy. Gently stir in whipped topping. Pile into crust. Refrigerate at least 1 hour. [Pie may be refrigerated overnight] Serves 8.

I am looking for two recipes. One is for chow-chow and the other is sauerkraut (one that can be reduced to small batches. thank you)

I'm looking for an Italian meatball recipe made from ground turkey. They are to be served with spaghetti sauce.

I am looking for a recipe for a pasta salad that uses the colored spiral noodles and I know it has several raw veggies in it and Italian salad dressing. Does anyone have this recipe? Thanks!!

Mary J's Chocolate Ice Cream Recipe

2 cups heavy cream
1 cup half and half
1 cup sugar
1 1/2 t. vanilla
1/2 to 2/3 cups cocoa
4 oz. egg substitute

Combine cocoa and sugar in mixing bowl, processor or blender and mix well. Add eggs and vanilla to the mixture and blend well. Add cream and half and half. Beat well and freeze in 1 quart ice cream freezer.

Mary J's French Vanilla Ice Cream Recipe

2 cups heavy cream
1 cup half and half
1 cup sugar
1 tsp. vanilla
4 oz. egg substitute.

Beat eggs, cream and half and half together in large saucepan. Add sugar and cook over low heat, stirring constantly until thickened (about 10 minutes). Cool and add vanilla. Mix well and refrigerate overnight. Freeze in 1 quart ice cream freezer.
