Nancy, we are now on the low carb diet so I'm having to find more vegetable to make. The recipes below are 2 I have worked on.Tuna Noodle Casserole and Southern Smothered Cabbage.

Tuna Noodle Casserole Recipe

Ingredients
1, 6.4 oz, or 2,2.6 oz, Pouches or 2, 5 oz, cans, if using cans, drained Chunk Light Tuna in Water
1 cup frozen peas
1/2 cup milk,1/2 cup chicken stock
3/4 cup butter crackers, crushed, I used 1/3 to 1/2 cup crackers
4 oz, about 2 1/2 cups, egg noodles, I used 1 1/4 cups
1 can, 10 3/4 oz, cream of mushroom soup
1/4 teaspoon garlic powder
1/4 teaspoon dried thyme, optional
1/2, 4 oz oz, can mushroom, optional

Directions
Preheat oven to 375 degree. Cook noodles according to package instructions, adding peas during the last 2 minutes of cooking; drain in colander. In a separate bowl, mix together soup, milk/stock and garlic powder. Stir in noodles, peas, tuna and thyme. Transfer to a 1 1/2 quart casserole Bake 15 minutes; top with cracker crumbs. Continue baking 5-10 minutes or until heated through.

Southern Smothered Cabbage Recipe

Ingredients
1 head cabbage, sliced
1 lb bacon, I use 4 to 6 slices bacon cut into small pieces
1 onion, chopped or 1 use 2 shallot sliced
salt and pepper to taste
1/2 to 1 teaspoon caraway seeds

Directions
In a large pot cook bacon, remove and drain, reserving the fat. Add onion to bacon, fat and cook for about 3 minutes, the smell is fabulous. Add cabbage and drained bacon and saute for 5 to 10 minutes. Salt and pepper to taste. You can add the caraway seed now or as I do is add it when I add the cabbage to cook.

Slow Cooker Zucchini Soup Recipe
You will need a 5 or 6 quart slow cooker

Ingredients
1-1/2 lbs sweet Italian sausage
2 cups celery, cut in 1/2" pieces
2 lbs. Zucchini, cut into 1/2" slices
2, 28 oz, cans diced tomatoes
2 green peppers, cut into 1/2" slices
1 cup onions, chopped
2 teaspoons salt
1 teaspoon white sugar, optional, I didn't need to use this
1 teaspoon dried oregano
1 teaspoon dried Italian seasoning
1 teaspoon dried basil
1/4 teaspoon garlic powder
6 tablespoon grated Parmesan cheese or to taste

Directions
Heat a large skillet over medium high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; discard grease. Mix celery into cooked sausage; cook and stir until celery is softened, about 10 minutes. Combine sausage mixture, zucchini, tomatoes, bell peppers, onion, salt, sugar, oregano, Italian seasoning, basil,and garlic powder in a slow cooker. Cook on low for 4 to 6 hours. Garnish each serving with 1 tablespoon Parmesan cheese. This make a lot of soup.

This is a good recipe to take to a pot luck dinner. Next time I make it, I would sprinkle extra cinnamon and sugar over the rolls before I rolled them up.

Mountain Dew Dumplings Recipe

ingredients
2 cans Crescent rolls
2-3 firm apples, peeled, cored, and cut into small pieces
1-1/2 cups sugar
1 tsp. cinnamon
2 sticks butter
1 can (12 oz.) Mtn. Dew

Directions
Preheat oven to 350 degrees. Separate Crescent rolls into triangles. Place one or more apple slices on each triangle of dough. Roll up large end to small. Place all rolls in a 9 X 13 inch baking dish. Melt butter in a small pan, add cinnamon and sugar. Pour mixture over dumplings, and then pour the Mtn. Dew over all. Bake 45 minutes. Makes 18 dumplings.

This is for Lisa who is having problems making bread. You didn't say what the problem was so I'm not sure how to help you. Is your machine designed for a 1 1/2 lb loaf or 2? Did you make sure the recipe was for the right size loaf for your bread maker? Did you put the ingredients in the bread maker in the order listed in the recipe? Is your flour still good?

I didn't know flour went bad (except for self-rising because of the baking powder), but when my cookies wouldn't turn out right, I finally switched to a new bag of flour and everything was fine.

This is the recipe that came with my Oster bread machine.

Bread Machine Traditional White Bread Recipe

Oster
1.5 pound loaf
1 cup and 2 Tbs. water
1 Tbs. butter or margarine
1 3/4 tsp. salt
3 cups bread flour
1 Tbs. dry milk
2 Tbs. sugar
2 3/4 tsp. active dry yeast

2 pound loaf
1 and 1/3 cups water
4 tsp. butter or margarine
2 tsp. salt
4 cups bread flour
4 tsp. dry milk
2 Tbs. sugar
2-3/4 tsp. active dry yeast

1) Measure and add liquid ingredients to the bread pan.
2) Measure and add dry ingredients (except yeast) to the bread pan.
3) Use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure the yeast and carefully pour it into the well.
4) Snap the baking pan into the bread maker and close the lid.
5) Press "Select" button to choose the Basic setting.
6) Press the "Crust Color" button to choose light, medium or dark crust.
7) Press the "Start/Stop" button

Susie's Roman Holiday Recipe

Ingredients
1 lb ground beef
1 medium onion, chopped
1/2 bell pepper, chopped
2 small or 1 large tomato sauce or try with stewed tomatoes or diced tomatoes
1 small pkg. elbow macaroni or try 1 or 1 1/2 rice
green pimento stuffed olives
1/4 teaspoon garlic powder
salt and pepper to taste
American cheese or Cheddar cheese shredded

Directions
Prepare meat sauce using the ground beef, tomato sauce, onion and peppers. Salt and pepper and garlic to taste. Dash of oregano. Boil 3/4 package of elbow macaroni or rice until done and drain. In a large oblong casserole, slice enough olives to completely cover bottom. I would put them on top just under cheese. Layer macaroni, meat sauce, olives and cheese repeat the layers once again. Cover with foil and bake at 375 degrees for 20 to 30 minutes or until cheese has melted. Linda as you can see I change a recipe to fit what I had that I like and want to make it at home.

Ana this is Ann Lander's Meatloaf and surprise I make this with no changes.

Ann Lander's Meatloaf Recipe

Ingredients
2 Lbs. ground round
1 1/2 cups bread crumbs
1 teaspoon Accent seasoning
1, 1 1/4 oz., pkg Lipton Onion Soup Mix
3 slices bacon
2 eggs
3/4 cup catsup
chili sauce, or 8 oz tomato sauce, optional

Directions
Mix all ingredients together except bacon and chili sauce. Put in loaf pan. Cover with bacon strips. Pour chili sauce over top. Bake at 350 degrees for 1 hour.

Bread Machine Favorite Potato Bread Recipe

Ingredients

2 and 1/2 tsp. active dry yeast

Directions
1) Measure and add liquid ingredients to the bread pan.
2) Measure and add dry ingredients (except yeast) to the bread pan.

For Anna wanting vegetarian recipes she can prepare for her son, there are many meatless soups. Here are two we like a lot. If you want to serve sandwiches with the soups consider grilled cheese, grilled cheese with mushrooms, egg salad, or bean burgers. Other great soups are meatless chili, black bean chili, cream of broccoli soup, butternut soup and beer cheddar soup. Let us know if you want any of these recipes. Just remember to substitute vegetable stock for chicken or beef stock in any recipe.

Italian Skillet Roasted Veggie Soup Recipe

Ingredients
1 medium red pepper, chopped
1 medium yellow pepper, chopped
1 garlic clove minced
1 medium zucchini, thinly sliced
1 (14 1/2 oz can) fire-roasted diced tomatoes
2 cups water
1/8 tsp. red pepper flakes
1 (15 oz can) navy beans, rinsed and drained
4 tbsp. chopped fresh basil
1 tbsp. balsamic vinegar
1 tbsp. olive oil
salt to taste
1/2 tsp liquid smoke

Directions
Spray a Dutch oven with cooking spray, place over medium-high heat. Add peppers, cook and stir 4 minutes or until browned at edges.

Add garlic. Cook, stir for 15 seconds. Add zucchini, tomatoes, water and pepper flakes. Bring to boil over high heat. Reduce to simmer. Cover, simmer 20 minutes.

Add beans, basil, vinegar, oil, salt and liquid smoke. Remove from heat. Cover, let rest for 10 minutes.

Good morning Nancy and all Landers,
This is for Lisa who is having problems with her breadmaker. When I bought my breadmaker the salesperson told
me a hint that I use every time I make bread either in winter or summer. Fill your bread pan with HOT water and leave sitting for about ten minutes before you use it. Don't know why but the bread pan seems to work better if it's warmed up first. I would also try adjusting the amount of flour you
use. Not all breadmakers like all bread recipes.
I would also look online for LIGHT BREAD RECIPES FOR BREADMAKERS. I'm amazed at all the recipes there are out there for breadmakers. Hope this helps.

Blueberry White Chocolate Macadamia Muffins Recipe

Muffins:
1 pkg Jiffy brand blueberry muffin mix
3 Tbsp instant vanilla pudding mix
1/4 cup white chocolate chips
1/3 cup chopped macadamia (or your favorite nut)
1 egg
1/4 cup milk

Frosting:
1/4 cup white chocolate chips
1tsp milk

Preheat oven to 400 degrees. Grease muffin pan or use paper baking cups.

For muffins, combine muffin mix, pudding mix, white chocolate chips and nuts. Add egg and milk , mix well. Fill muffin cups 3/4 full. Bake 13-15 minutes. Remove from pan and cool slightly.

Frosting:
Combine ingredients and microwave for30 seconds; stir. Microwave for additional 15 seconds. Stir till smooth. Drizzle over muffins.
6-8 muffins

Makeover Poppy Seed Chicken Recipe

Ingredients
3 cups cooked chicken breast, cubed
2 cans reduced sodium cream of chicken soup
1 cup reduced fat sour cream
2 tsp poppy seeds
1 cup reduced fat butter flavored crackers, crushed
1 tbsp reduced fat butter, melted
1/3 cup Parmesan cheese

Directions
Combine chicken, soup, sour cream, poppy seeds. In another bowl, combine crumbs & butter. Set aside 1/2 cup for topping. Mix remaining crumbs with chicken mixture. Transfer to 11 x 7" baking dish. Top with reserved crumbs. Bake at 350* 30-35 min until bubbly.

1 cup= 332 cal; 13 g fat; 87 mg cholesterol; 705 mg sodium; 23 g carbohydrates; 27 gm protein

This is a recipe a friend brought to a potluck; I have made it many times. It can easily be baked ahead & rewarmed as well as increased or decreased. I hope this works for you. Emjoy
