Apple Streusel Coffee Cake Recipe

A wonderful moist coffee cake. Sounds like a lot of work but it is really very simple to make.

9 inch greased springform pan
2-1/4 c. flour
3/4 c. white sugar
3/4 c. marg (I used Becel)

Combine these 3 ingredients so it forms small pea like consistency. Save 1/2 c. of this mixture for the streusel topping.
Peel and chop 9 apples in fairly large bowl. Add 3/4 c. white sugar to the apples. I cook the apples for awhile in the microwave just to soften a bit. You may get some juice from this mixture but you will use this as well.
Next add to cake mixture above:
1/2 tsp. baking powder
1/2 tsp. taking soda
1 egg
1 c. buttermilk
Stir this lightly just until it is moistened and mixed completely.
Take out 2/3 of this batter and use it on the bottom and the sides (about 2 /12 inches up sides) of springform pan. Put apples and the juice in the pan. Dot remaining 1/3 of cake batter on the top of the apples. Now sprinkle the 1/2 streusel mixture all over the top of the cake.

Bake at 350 degrees for 55 mins. Makes a big cake.

On the subject of quiche: I used to prepare a meal called a French Fête which included the following recipe plus Petits Pois Francais, Tartes Parisiennes and Salade Verte.

Quiche Bretagne Recipe

1/2 c. mayo
2 T. flour
2 eggs, beaten
1/2 cup white wine
1-2/3 cups crabmeat (drained & flaked) 7 1/2 oz. can
1 cup cooked shrimp
1 8 oz. pkg. Natural Swiss Cheese, sliced, chopped
1/2 c. sliced celery
1/3 c. sliced green onion
1 9 inch unbaked pastry shell

Combine mayo, flour, eggs & wine; mix until blended. Stir in crabmeat, shrimp, cheese, celery & onion. Pour into pastry shell. Bake 350, 35 - 40 min.
Serves 8.

Judy's Fruit Salsa Recipe

2 cups watermelon cut into small pieces
1 cup fresh pineapple chopped into small pieces ( could use a can of pineapple tidbits drained and rinsed)
2 Tbsp SWEET onion chopped fine
1/2 bunch cilantro or italian parsley chopped fine
dash of salt.

Mix all ingredients into a bowl. Chill overnight to let flavors blend.

My neighbor served this with chicken and was so good.
makes about 1 quart

Crock Pot Turkey Breast with Cranberries Recipe

1 Tbsp melted butter
1/2 cup chicken broth
1 large apple, cored and chopped
1/2 large onion chopped
1 stalk celery chopped
1 cup whole cranberry sauce
3/4 tsp poultry seasoning
2 cups seasoned crumb style stuffing
2-3 lbs. turkey breast cutlets

In a large bowl, combine butter, broth, apple, onion. celery, cranberry sauce and poultry seasoning. Place 3 Tbsp stuffing mix on each cutlet. Roll up and tie, place in crockpot. Cover; cook on low 8 hours on high 4 hours.

Judy's Crock Pot Smoked Sausage and Cabbage Recipe

1-1/2 lbs. smoked sausage, cut into 2 inch lengths
3 apples, thickly sliced any kind, tart ones are best
1/2 head red/green cabbage, shredded
1 onion sliced
1/2 cup brown sugar
1 tsp salt
1/2 tsp black pepper
1/2 cup apple juice

Layer sausage, apples, cabbage and onion in crockpot in the order listed above. Sprinkle the brown sugar, salt and pepper on top. Pour the apple juice over all the other ingredients, do NOT stir. Cover, cook on low 6-8 hours or high 3-4 hours.

Judy's Crock Pot French Beef Burgundy Recipe

1/4 cup flour
1/2 tsp each salt and pepper
2 lbs. boneless beef chuck roast cut into 1 inch cubes or stew meat
5 Tbsp olive oil
1 onion sliced
1/2 lb. fresh sliced mushrooms
1/3 bunch fresh parsley minced
3 garlic cloves minced
3 bay leaves
1 cup burgundy wine
1/2 cup beef broth

Combine flour, salt and pepper. Dredge the meat in the flour mixture and brown in olive oil. Place beef and remaining ingredients into crockpot. Mix thoroughly to combine. Cover; cook on low 4-6 hours or high for 2-3 hours.
Serves 4

Dinah's Mild Salsa Recipe

4 quarts tomatoes, chopped and most juice and seeds removed

Put in blender and blend and chop together:
1 extra large onion
1 bell pepper
2 hot peppers, seeds removed
2 6 oz. cans tomato paste
1 tablespoon garlic
2 cups lemon juice
2 tablespoons sea salt
1 teaspoon black pepper
1 tablespoon sugar

Add to tomatoes and cook over medium heat 30 minutes or until very hot. Put in pint jars and process in canner for 20 minutes at 10 pounds pressure.
Makes approximately 10 pints.

If like spicy, can add more peppers, 1 tablespoon oregano and 1/4 teaspoon cumin and any other spices desired.

I wanted a mild salsa and couldn't find a recipe so I looked and read lots on Pinterest and came up with one that tasted just like I wanted. I hope others will make and enjoy. This tastes a lot like the one served at a Mexican Restaurant in a nearby city. Let me know if you make it and enjoy it.

Judy's Crock Pot Pork Mushrooms Recipe

1 Tbsp olive oil
1 cup mild onions , chopped
2 cups sliced fresh mushrooms
1 Tbsp FRESH rosemary or 2 tsp dried rosemary
1-14oz. can diced tomatoes
2 cloves garlic minced
2 lbs. boneless pork shoulder or any boneless pork roast, sliced into 1/2 inch slices

Heat oil in a skillet and brown the pork. Remove and drain excess oil and place the pork in the crockpot. Add the remaining ingredients and stir well. Cover and cook on low 8 hours or on high for 4 hours.
Serves 5-6

I am trying to find some type of software in which I can scan in my Grandmom's recipes. I would like to preserve the handwriting as well as the recipe. I would also like to be able to print this on recipe cards for family members. I am not having much luck with this. Do you have any suggestions?

Sherry's Baked Nacho Dip Recipe

8 oz. cream cheese, softened
1 can chili with or without beans, 15 oz
1 bunch scallions, trimmed and finely chopped
8 oz cheddar cheese, shredded

Spread cream cheese evenly over bottom of baking dish. Layer with chili, scallions and cheese in that order. Bake at 350 for 20 minutes or til cheese melts and dip is bubbly. Serve warm with tortilla chips. Serves 8 to 10.
