Marilyn's Tex-Mex Green Olive Mango Relish/Salsa/Salad Recipe

Ingredients
1 ripe but not squishy soft mango, peeled, seeded & diced
1/4 c. chopped pimento stuffed olives
1/8 c. minced purple onion
2 Ė 3 leaves culantro, snipped
1 scant T. olive oil

Directions
Mix, cover, & chill. Even better the next day. Delish beside sandwiches or on rice. Thanks to Better Homes & Gardens Authentic Mexican 2014 Special Magazine.

I believe it was Mary Ann who wanted recipes for fried pies using dried apples earlier this month. Sorry for the slow response; I hope this helps. You can use your own recipe for the pie crust instead of what is listed in this recipe, if you prefer. Also, feel free to adjust the spices to your liking.

Fried Apple Pies Recipe

ingredients

Pastry
2 c. flour
1 tsp. salt
1/2 c. shortening
1/3 c. cold water

Directions
Mix flour and salt; cut in shortening. Add water until right consistency for rolling out. Cover and let stand a few minutes.

Filling
2 c. dried apples
1 c. sugar or to taste
Grated rind of 1 lemon
1 tsp. cinnamon
1/2 tsp. nutmeg

Put apples in saucepan over low heat. Add just enough water to cook. Cover and when they begin to boil, remove lid and stir and cook until soft consistency. Add other ingredients and let cool.
Roll pastry to about 1/8 inch thickness and cut in 24 small circles. (Can use saucer as a guide.) Moisten edges with water. Spoon desired amount of filling on half of circle. Fold over and pinch edges for half-moon shape. Have skillet bottom covered with shortening. (an electric skillet is best heated to about 375 degrees.) Fry until golden brown on each side. Drain on absorbent paper. Do not pile hot pies on top of each other as this will make them soggy. Can dust with sugar or cinnamon sugar if desired. Makes 12 pies.

Tomato Beef with Curry Recipe

Ingredients
1/2 lb beef top round steak
2 Tbsp cooking oil
salt and pepper to taste

2 onions cut into small wedges
1 bell pepper (any color) chopped
1/4 cup chicken broth
1 Tbsp sugar
1 tsp curry powder
1/4 tsp salt
1 Tbsp cornstarch
1 Tbsp water
3 tomatoes cut into quarters
Hot cooked rice

Ingredients
Partially freeze meat for easier slicing. Slice meat into 2x1 inch pieces, about 1/4 inch thick. Heat oil in skillet or wok. Add beef; sprinkle lightly with salt and pepper. Stir fry for about 1 minute, remove meat.

Add onions. bell pepper and chicken brith. Cover and cook 4 minutes over medium heat. Stir in sugar, curry and 1/4 tsp salt. Stir fry 1 minute.

Blend together cornstarch and water; stir into skillet/wok. Cook and stir til thickened and bubbly. Add meat and tomatoes; heat thru. Serve with hot rice
Serves 4

Honey Cream Cheesecake Recipe

Ingredients
1/4 cup butter, softened
1/2 cup sugar/splenda
1/2 all purpose flour
1/2 tsp ground cinnamon
11 lb cream cheese at room temperature
1/2 cup honey
4 eggs
1/2 cup FRESH lemon juice
1/8 cup lemon zest(grated fresh lemon rind)
1 tsp vanilla extract
1 Tbsp all purpose flour

Ingredients
Preheat oven to 375 degrees Butter a 9 inch square cake pan. In a medium size mixing bowl, cream butter and stir in

1/4 cup sugar/splenda.
Add the 1/2 cup of flour and cinnamon, mix until ingredients are well blended. Pat mixture evenly and firmly onto the bottom of the prepared pan. Bake 15 minutes or until crust is lightly browned; remove from oven. Turn oven up to 500*.

In a large bowl beat cream cheese until light with electric mixer. Add honey and rest of splenda/sugar and beat until light and fluffy.Add eggs one at a time, beating well after adding each one. Add remaining ingredients and beat until well blended. Pour cheese mixture evenly over crust in pan. Bake 12 minutes.

Turn oven down to 300 degrees and bake 30 minutes longer. Turn oven off. Leave cake inside oven with door closed for 30 minutes. Remove cake from oven, let cool completely. Cover cake with foil and chill in pan in refrigerator, several hours or up to 2 days.

Berry Crumble Recipe

Ingredients
3 cups fresh blueberries(can use thawed unsweetened frozen berries)
3 cups fresh or thawed blackberries
1 Tbsp FRESH lemon juice
6 Tbsp either sugar or splenda sweetner
1/4 cup all purpose flour
cooking spray such as pam ,etc.

Crumb Topping
3/4 cup all purpose flour
2 Tbsp sugar or splenda sweetner
1/2 cup packed browm sugar
1/2 tsp ground cinnamon
5 Tbsp butter
1/4 cup chopped nuts

Directions
Preheat oven to 375 degrees. In a large bowl place all the berries, lemon juice, 6 Tbsp sugar/splenda and 1/4 cup flour, stir gently to combine. Transfer to a 8x8 baking dish coated with cooking spray. In a small bowl, stir together1/4 cup flour, 2 Tbsp sugar/splenda, brown suga and cinnamon. Cut in butter with a fork untill mixture is crumbly. Stir in nuts and sprinkle evenly over fruit mixture. Bake 45 minutes or until topping is golden brown and fruit is bubbly.
Serve warm.
Serves 9

Chocolate Upside Down Cake Recipe

Ingredients
3/4 c. sugar
2 tbsp. butter
1/2 c. milk
1 c. flour
1/4 tsp. salt
1 tsp. baking powder
1-1/2 tbsp. cocoa

Sauce
1/2 c. sugar
1/2 c. brown sugar
1/4 c. cocoa
1-1/4 c. boiling water

Directions
Cream sugar and butter. Add milk. Sift and add dry ingredients. Pour into 9 inch square greased pan. Sprinkle with nuts. Make sauce and pour over batter. Bake at 350 degrees for 45 to 50 minutes. Cool in pan. Serve with ice cream or whipped cream.

NOTE: This recipe has no eggs and little butter.

Apple Cider Upside Down Cake Recipe

Topping
2 tbsp. plus 2 tsp. margarine
1/2 c. brown sugar
1/4 c. raisins
2 c. apple slices
2 tbsp. chopped maraschino cherries

Cake
1-1/3 c. sifted flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/3 c. softened margarine
2/3 c. cider
1 tsp. vanilla
1 egg

Directions
Preheat oven to 350 degrees. Melt margarine in 9 inch cake pan. Sprinkle brown sugar evenly over bottom of pan. Arrange apple slices and sprinkle with raisins and cherries. Sift first 5 cake ingredients into bowl. Add margarine, cider and vanilla and beat for 2 minutes. Add egg and beat again for 2 minutes. Pour batter over ingredients in pan. Bake at 350 degrees for 40 minutes. Let cool for 5 minutes before inverting into serving plate

Upside Down Spice Cake Recipe

Ingredients
1/4 c. butter or margarine
3/4 c. packed brown sugar
1/2 c. shredded coconut
1 (16 oz.) can peach slices, drained
1/5 recipe (3 1/3 c.) Basic Cake Mix (recipe above)
1/2 tsp. ground allspice
3/4 c. milk
2 eggs
1 tsp. vanilla

Directions
In a 13 x 9 x 2 inch baking pan melt the butter or margarine. Stir in the brown sugar and coconut. Top with the peach slices. In mixer bowl combine the Basic Cake Mix and allspice. Add the milk. Beat at low speed of electric mixer until moistened. Beat 1 minute at medium speed. Add eggs and vanilla. Beat 2 minutes at medium speed. Spread batter evenly over peach mixture in pan. Bake in a 350 degree oven for 35 to 40 minutes or until wooden pick inserted near center comes out clean. Cool cake 5 minutes on wire rack; invert onto cake plate. Serve warm.

Upside Down Date Cake Recipe

Ingredients
1 tbsp. margarine
1/2 c. sugar
1 c. flour
1/2 tsp. soda
1 tsp. baking powder
1/4 tsp. nutmeg
1/2 c. milk
1/2 c. dates, cut up
1/2 c. nuts
1 tsp. vanilla

Sauce
3/4 c. brown sugar
1 tbsp. margarine
1 c. hot water

Directions
Cream margarine and sugar. Sift dry ingredients. Add vanilla to creamed mixture, then milk alternately with flour mixture. Stir dates and nuts in last. Place batter in greased dish. Heat sauce ingredients and pour over batter. Bake at 350 degrees 30 minutes.

Blueberry Upside Down Cake Recipe

Ingredients
1 pt. blueberries
1/2 c. sugar
1/4 c. shortening
1 egg
1 c. flour
1 1/2 tsp. baking powder
1/8 tsp. salt
1/2 c. milk

Directions
Pour washed blueberries into buttered casserole (1 1/2 quart size). Sprinkle with 1/4 cup sugar. Cream 1/2 cup sugar and 1 egg together. Sift together flour, baking powder, and salt. Add this to creamed mixture alternately with 1/2 cup milk. Bake at 375 degrees for 45 minutes. Spoon out while hot and serve with whipped cream, ice cream, or milk.
Serves 4 to 6.

Upside Down Apple Cake Recipe

Ingredients
3 Granny Smith or other tart cooking apples
3 tbsp. lemon juice
1 tbsp. pumpkin pie spice
1/4 c. butter
1 (16 oz.) pkg. golden pound cake mix
2 eggs, for use in cake mix
2 tsp. grated orange peel (optional)

Directions
Core apples, cut into slices. Toss with lemon juice and spice. Melt butter in a 10 inch cast iron or oven proof skillet. Remove from heat. Stir in brown sugar. Arrange apple slices in skillet in circular pattern. Pour in any juice remaining in bowl. Mix cake mix according to package directions, using the 2 eggs; add peel if desired. Pour batter over apples. Bake at 350 degrees for 40 to 45 minutes. Cool completely in pan before turning onto platter. Serve with vanilla ice cream.

Maple Upside Down Cake Recipe

Ingredients
Prepare 1 box white cake mix as directed on package. Pour into 9 x 13 inch pan. Pour the following warm syrup mixture in a zig-zag fashion over the cake: 2 c. warmed maple syrup
1/2 c. whipping cream
1/2 tsp. salt

Directions
Bake as usual. (This syrup mix will form its own goodie on bottom of cake pan. Serve warm with commercial sour cream mixed with syrup.)

Fudge Upside Down Cake Recipe

Ingredients
3/4 c. sugar
1 tbsp.butter
1/2 c. milk
1 c. flour
1/4 tsp. salt
1 tsp. baking powder
1 1/2 tbsp. cocoa
1/2 c. chopped nuts

Topping
1/2 c. sugar
1/2 c. brown sugar
1/4 c. cocoa
1 1/2 c. boiling water

Directions
Cream sugar, butter and milk. Sift flour, salt, baking powder and cocoa and add to creamed mixture. Place cake mixture in buttered and floured pan, a 9 x 9 inch pan. Sprinkle with nuts. TOPPING: Combine sugars and cocoa. Sprinkle over batter. Cover with hot water. Bake at 350 degrees for 30 minutes.

Pineapple Upside Down Cake Recipe

Ingredients
1-1/2 sticks margarine
2 c. light brown sugar, packed
Pineapple & juice
3 eggs
1 c. sugar
1 tsp. vanilla
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt

Directions
Use 9 or 10 inch iron skillet or round pan. Melt margarine over low heat in skillet. Remove from heat, add brown sugar. Mix together 8 slices of pineapple or 2 cups crushed pineapple (drained). Pour evenly over margarine and sugar. Separate eggs in large bowl. Beat yolks until light and smooth. Add sugar with 1/2 cup pineapple juice and vanilla. Beat until sugar is well dissolved. Sift flour, baking powder and salt. Mix well. Beat egg whites until stiff then fold into the above mixture. Pour onto the margarine, sugar and pineapple mixture. Bake at 350 degrees for 35 to 45 minutes. Let cool for 10 minutes, put plate over skillet or pan and dump upside down.

Hi,
I am wondering if anyone can give me a recipe for "mashed potato salad" like I remember from college in Texas. They used mashed potatoes, eggs, maybe pickle relish and quite a bit of mustard, but I don't know what else or in what amounts. I would like to make it for my family..
