For Sue. Notice I'm cheating with instant mashed potatoes, the older I get the more I appreciate these shortcuts. But you can certainly make your own from-scratch ones if you want. Don't know if this is like the "salad" you had, this is an old recipe, been in the family many many years. But maybe you could just add an ingredient you remember, such as the relish, & then it will come closer to what you want. I'd probably add a heaping tablespoon of relish if I was doing it, & that sounds good too.

Easy Baked Mashed Potato Salad Recipe

2 eggs, hard cooked & chopped
1 large rib celery, sliced
1 small onion, diced
1/4 small bell pepper, diced
2 c. cold water
1 tsp. chicken boullion granules
1 (4 oz.) pkg. Idahoan Buttery Homestyle instant potatoes
1/2 c. Hellman's mayonnaise
1 T. yellow mustard
2 T. butter, + more for the baking dish
1/2 c. fresh bread crumbs, no need to thaw if frozen
1 stem snipped parsley or 1 tsp. dried

Prepare eggs & chop vegetables, chill separately. About 35 minutes before serving, stir water, chicken granules,& potatoes together, stir in vegetables*. Microwave on High 3 - 4 minutes. Beat in mayo & mustard, then fold in eggs gently. Pour into a buttered 8" x 8" baking dish. Melt the 2 T. butter; when hot stir in crumbs & parsley; scatter this over salad. Bake at 400ļ for 15 - 20 minutes. Serves 4- 6.

* If everybody likes it, throw about a scant tsp. of minced garlic into the potatoes with the other vegetables.
Of course this can be made with 4 c. left-over mashed potatoes, too; just heat them & beat in the additional stuff.

About 1-1/2 year ago I saw a recipe for rhubarb/peach pie filling jam. I made it and it was delicious!!! I am diabetic so I donít eat a lot of jam . I gave some away and ate the rest. Now I want to make another batch and canít find the recipe (grrr) I donít know where I got the recipe so does anyone out there know what Iím talking about? It is soooo good!!

This and a banana is what I have for breakfast most mornings. It takes a little time to cook, but is easy to make. It makes five servings, so you can just heat the extras in the microwave. Recipe is from the 3-1-10 Springfield (Mo) News Leader.

Fiber Filled Oats Recipe

4-1/4 cups water
1/2 tsp. salt
1/2 cup oat bran
1 cup steel cut oats

Put all ingredients into a medium size saucepan and stir together. Bring to a boil, reduce heat and simmer 30-35 minutes until thickened, stirring occasionally. The directions say to cook with the pan covered, but I don't because it always boils over.

Mary J's Sauerkraut and Hot Dogs Recipe

2 lbs. Sauerkraut (fresh or frozen)
1 onion, chopped
1 potato, grated
1 apple, chopped
1 tbsp. brown sugar
1/2 tsp. caraway seed
1/2 tsp. celery seed
Pinch of ground bay leaf
2 c. chicken soup or chicken bouillon
1 package wieners

Drain and rinse sauerkraut. Add other ingredients, except meat. Stir and bring to boil. Place meat which has been cut to serving sizes on top. Cover and simmer for at least 1 1/2 to 2 hours.

Mary J's Hot Dog Casserole Recipe

1 can cream style corn
1 can cream of mushroom soup
1/4 c. onion, chopped
8 wieners
1 c. crushed potato chips

Mix corn, soup and onion. Cut wieners into 1/2 inch pieces and put in corn mixture. Pour into greased casserole dish and top with crushed chips. Bake uncovered in 350 degree oven for 30 minutes.

Mary J's Hot Dog Biscuit Casserole Recipe

1 lb. wieners, sliced
16 oz. can pork & beans
1/2 c. ketchup
1/2 c. chopped onion or 2 tbsp. minced onion
3 tbsp. brown sugar
7.5 oz. can biscuits (refrigerated kind)
1 c. shredded Cheddar cheese

Heat oven to 400 degrees. In medium saucepan, combine wieners, pork & beans, ketchup, onion, and brown sugar. Bring to a boil. Simmer 5 minutes. Spoon hot mixture into ungreased 8 or 9 inch square pan. Separate biscuit dough into 10 biscuits. Arrange over bean mixture. Sprinkle with cheese. Bake at 400 degrees for 20 to 25 minutes or until biscuits are golden brown. Serves 6.

Mary J's Pizza Hot Dogs Recipe

4 hot dog buns
4 wieners
12 slices Mozzarella cheese
Pizza sauce
Parmesan cheese, grated

Split hot dog buns and wieners lengthwise. Place layer of cheese on buns. Add wiener slices to each bun. Top with pizza sauce. Sprinkle with Parmesan cheese. Place on broiler pan. Broil until brown and bubbly.

Mary J's Hot Dog Wraps Recipe

8 wieners
Cheese, cut into strips
8 oz. can crescent rolls

Heat oven to 375 degrees. Slit wieners to within 1/2-inch of ends. Stuff with cheese strips. Wrap stuffed wieners with 1 crescent roll each. Place on ungreased cookie sheet, cheese side up. Bake 12-15 minutes.

Mary J's Hash Brown Hot Dog Recipe

1 lg. pkg. hash brown potatoes
1 pkg. wieners
3 eggs, beaten
1/2 c. cheddar cheese

In large heavy skillet, cook potatoes 8-10 minutes. Turn once. Place wieners on top. Cover with beaten eggs, cook another 10 minutes. Add cheese, cook until cheese melts.

Sharon's Strawberry Cake Recipe

1 pkg. yellow cake mix
1 (16 oz.) strawberry soda pop
1 family size strawberry Jello
2 pkg. Dream Whip or tub of Cool Whip

Prepare 1 package yellow cake mix as directed. Bake in tube or loaf pan; cool. Bring pop to a boil and dissolve Jello in pop. Punch several holes in cake with fork all the way to the bottom. Drizzle hot Jello over cake. Put in refrigerator until Jello is set. Then frost with Dream Whip or Cool Whip, garnish with halved or sliced strawberries.

Sharon's Strawberry Pudding Cake Recipe

1 c. flour
1 c. milk
1/4 c. shortening
3 tbsp. Shortening
1 tsp. baking soda
1/2 tsp. Salt
1 qt. fresh strawberries (or 2 pkgs. frozen)

Place strawberries in bottom of baking dish. Add small amount of water to strawberries. Place in preheated 350 degree oven. Mix all other ingredients together. Remove strawberries from oven. Pour mixture on top of berries. Bake approximately 30 minutes at 350 degrees.
