Cake Mix Bar Cookies Recipe

One stick butter, melted
Two eggs
One yellow cake mix
One pkg chocolate chips

Mix all together and press into 13 by 9 By 2 pammed pan
Bake 20 to 24 minutes till golden brown at 350 degrees

Cool and cut into bars
I would like to try a chocolate. Mix with mint chips. These are really good.

Robbie's Grape Salad Recipes
There was a recent request for the grape salad recipe that has frequently been in the newsletter. I failed to note the name of the individual, assuming that there would be lots of responses from other readers. Since I don't think anyone has responded I will share the two recipes that I have used. I view the first as the original recipe, but have used the second when serving people who I know hate brown sugar. You can toast the nuts if desired.

Grape Salad Recipe

3 Pounds seedless grapes (red or green or a combination)
1 4-1/2 Cups sugar (adjust to taste)
8 Ounces sour cream
8 Ounces cream cheese (softened)
1 Teaspoon vanilla
1 Cup walnuts or pecans, chopped
1/2 - 1 cup light brown sugar (adjust to taste).

Wash and stem grapes; drain. In large mixing bowl, combine sugar, sour cream, cream cheese, and vanilla till smooth. Pour over grapes; mix till thoroughly combined. In separate bowl, mix nuts and brown sugar together. (I use the maximum amount of brown sugar, because I love the mix of the flavor with the sweet/sour of the grapes.) Pour grape mixture into serving dish; sprinkle top with sugar and nut mixture. Chill and serve. This recipe makes a very large portion (suitable for a family gathering of 20 or possibly more, depending on appetites). Recipe may be halved. Keeps well in refrigerator for several days (if it lasts that long).

Grape Salad Using Powdered Sugar Recipe

2 4 lbs green or red seedless grapes cut in half if desired- can use a combination of the grapes
1 c. powdered sugar
1 tsp. vanilla
8 oz. cream cheese, softened
1/2 c. chopped pecans

Rinse and dry grapes, removing stems. Cream remaining ingredients together, and gently toss grapes with cream cheese mixture. Refrigerate.

Substitutions List  #1

Sweetened Condensed Milk
1-1/8 c. dry milk powder
1/2 c. warm water
3/4 c. granulated sugar

Mix dry milk powder and warm water in top of double boiler over gently boiling water. Stir in sugar and stir until sugar is dissolved. Remove from double boiler and it's ready to use.

Chocolate Substitutions
1 (1 ounce) square unsweetened chocolate = 3 tablespoons cocoa powder plus 1 tablespoon vegetable shortening

1 (1 ounce) square semi-sweet chocolate = 3 tablespoons semi-sweet chocolate chips or 1 (1 ounce) square unsweetened chocolate (or equivalent from above) plus 1 tablespoon sugar.

1 (6 ounce) package semi-sweet chocolate chips = 6 (1 ounce) squares semi-sweet chocolate or 6 tablespoons cocoa powder plus 7 tablespoons sugar and 3 tablespoons vegetable shortening

1 (4 ounce) bar sweet baking chocolate = 1/4 cup cocoa powder plus 1/3 cup sugar and 3 tablespoons vegetable shortening.

1 envelope premelted chocolate = 3 tablespoons cocoa powder plus 1 tablespoon vegetable oil or melted vegetable shortening.


1 c. sifted cake flour = 7/8 c. sifted all-purpose flour.
1 c. corn syrup = 1 c. sugar & 1/4 c. liquid used in recipe.
1 c. whole milk = 1/2 c. evaporated milk & 1/2 c. water.
1 c. of buttermilk = 1 tbsp. vinegar & 1 c. of milk.
1 c. sour cream = 7/8 c. of buttermilk or sour milk & 3 tbsp. butter.
1 c. of brown sugar = 1 c. granulated sugar & 2 tbsp. molasses.


Egg yolks
For thickening 2 yolks = 1 whole egg Self-rising flour = 1 cup of self-rising flour - 1 cup all-purpose flour plus 1 1/4 teaspoons baking powder plus 1/8 teaspoon salt.

Macaroni - uncooked 1 cup - cooked 2 cups
Noodles - uncooked 3 cups - cooked 4-1/2 cups
Quick oats - uncooked 1 cup - cooked 1 3/4 cups
Rice, long grain - uncooked 1 cup - cooked 3 cups
Pre-cooked rice - uncooked 1 cup, cooked 2 cups
Spaghetti - uncooked 7 ounce, cooked 4 cups


1 c. mayonnaise = 1 c. sour cream plus 1 tbsp. lemon juice
1 c. Miracle Whip = 1 c. mayonnaise plus 1 tbsp. vinegar

Frozen Strawberry Pie Recipe

2 egg whites
1 c. sugar
10 oz. pkg. strawberries, thawed
1 tbsp. lemon juice
1/2 c. heavy cream, whipped

Beat egg whites and sugar, strawberries, lemon juice at high speed for 15 minutes in large bowl. Fold in whipped cream and pat mixture in baked pie shell and freeze until serving.

Marinated Spaghetti Salad with Zucchini

2 c. halved cherry tomatoes or chopped tomatoes
3/4 c. chopped cucumber
3/4 c. sliced zucchini
1 sm. green pepper, cut into bite size strips
2 tbsp. chopped onion
1/4 c. red wine vinegar
3 tbsp. salad oil
2 tbsp. sugar
1 tsp. lemon juice
1 tsp. snipped fresh parsley
3/4 tsp. snipped basil
1 sm. clove garlic, minced
8 oz. spaghetti, broken
1 tbsp. salad oil
Lettuce leaves (optional)
Grated Parmesan cheese (optional)

In a large mixing bowl combine tomatoes, cucumber, zucchini, green pepper, and onion. In a screw top jar combine vinegar, 3 tablespoons salad oil, sugar, lemon juice, parsley, basil, garlic, 1/8 teaspoon salt and 1/8 teaspoon pepper. Cover and shake well. Pour over vegetable mixture. Cover and chill 2 to 24 hours. Meanwhile, cook spaghetti according to package directions. Drain; rinse under cold water. Toss with the 1 tablesppon oil. Cover and chill. To serve, spoon vegetables around spaghetti in a lettuce-lined bowl. Sprinkle with cheese. Toss before serving.
Makes 8 to 10 servings.

Marinated Squash Salad Recipe

2 sm. yellow squash
1 sm. zucchini squash
1 med. onion
1 bell pepper
1/2 c. apple cider vinegar
1/3 c. sugar
2 tbsp. oil
1 tsp. celery seed
Salt and pepper to taste

Slice first 4 ingredients in thin slices. Mix the last 5 ingredients and pour over vegetables. Marinate 12-24 hours. Keeps 1 week to 10 days.
Serves 6-8.

Mozzarella Salad Recipe

1 lg.package Mozzarella cheese
3 lg. tomatoes
1 sm. red onion
1 lg. zucchini, peeled

1/2 c. olive oil
2 tbsp. red wine vinegar
2 tbsp. chopped basil
1 tsp. salt
1/4 tsp. pepper
*Fresh basil leaves for garnish

Slice Mozzarella about 1/4 inch or less. Slice tomatoes, slice onion into rings, cut zucchini in half and then slice (long side). Layer in shallow (1 inch) plate or pan - zucchini first, onion, Mozzarella and top with tomatoes. Place all ingredients for dressing in covered container (except basil leaves). Shake well. Pour over layered Mozzarella. Chill first before serving. Garnish with basil leaves.

Dear Nancy,
I'M looking for a recipe its called pudding cake. It has instant vanilla pudding, cool whip, pecans the crust you bake, cream cheese other ingredients. not sure . My sister made this and its good but never got the recipe from her. Please try and help me i would like to make it in her honor!

Love this site. You do an excellent job. I was wondering can anyone give me any hints on how to file recipes and what do the put their recipes in? Does one use folders or glue recipes on to file cards. or do they use photo books or what? Any help would be welcome.

Substitution List #2

Need 1 tablespoon cornstarch for thickening? Use 2 tablespoons all-purpose flour.

Need 2 cups tomato juice? Use 1/2 cup tomato sauce plus 1/2 cup water.

Need 1 cup chicken or beef broth? Use 1 teaspoon instant chicken or beef bouillon granules plus 1 cup water.

Need 1 small onion? Use 1/8 teaspoon onion powder or 1 tablespoon dried minced onion.

Need 1 garlic clove? Use 1/8 teaspoon garlic powder.

Need 1 tablespoon fresh shipped herbs? Use 1 teaspoon dried herbs, crushed.

Need 1 square (1 oz.) unsweetened chocolate? Use 3 tablespoons unsweetened cocoa powder plus 1 tablespoon shortening.

Dear Nancy. Have you ever had fried green tomatoes.? They are great I would like to no if you would know how to prepare them to keep them for the winter so they dont rippen of to red I cant seem to find out if you can keep them green and how would you do it. I tried freezing them and when you take them out of the frezer they are waterly. please any help, thank you

Oreo Bread Pudding Recipe

4 cups day-old French bread or regular bread cubes
16 Oreo Chocolate Sandwich Cookies, coarsely broken
2 cups milk
1/2 cup sugar
1/4 cup butter, melted
2 eggs
1 teaspoon vanilla extract
Frozen yogurt or whipped cream, optional

Mix bread cubes and broken cookies in large bowl; set aside. Blend milk, sugar, butter, eggs and vanilla; pour over bread mixture, stirring to coat evenly. Pour into greased 1 1/2-quart round casserole. Bake at 350 degrees for 45 to 50 minutes or until set. Serve warm or at room temperature topped with frozen yogurt or whipped cream, if desired. Make 6 servings

My daughter brought a Jamaican Rum Cake back from her Caribbean Cruse . It had no fruit or nuts in it but it was delicious does any one have a recipe?

Angel Food Sticks Recipe

1 Angel cake, whole
4 tablespoons butter
1 cup brown sugar
1/4 cup cream
1 cup coconut

Cut cake into 1-1 1/2" sticks about height of cake. Mix butter-brown sugar and cream. Dip cake or frost cake and roll in coconut. Put under broiler until browned. Can also dip them is a powder sugar frosting and roll in coconut or nuts and freeze.

Help, I have a problem that is not looking for a recipe. I scorched a Teflon pan. I put baking soda in right away, most of it came out .But there is one tough spot. What I want to know is can I put more baking soda in and simmer this spot out. I guess the pan may be ruined, I hope not . I am hesitant to scour to much for fear of ruining the Teflon. Any suggestions.

Does anyone have the recipes for Golden Corral's meatloaf and pot roast and there fried chicken. All three are really great, and would love to have them. Love your newsletter Nancy. Look forward to reading it each time.
