Apple Tortillas  Dessert Recipe

1 cup milk
1 egg
1 tsp cinnamon
dash of vanilla
1 can apple pie filling
8 fresh flour tortillas
powdered sugar for dusting

In a pie pan mix together milk, egg, cinnamon, and vanilla. Heat apple pie filling in a small saucepot. Heat a large skillet. Dip tortillas in egg mixture, one at a time turning over to coat both sides well. Fry in skillet on both sides 1 minute. Top with 1 heaping tablespoon of apples and roll up. dust with powdered sugar. Repeat with remaining tortillas and apples. Serve warm for breakfast or with ice cream as a dessert.

Candy Apples Recipe

6 c. sugar
3 c. water
3/4 tsp. cream of tartar
Oil of cinnamon
Red food coloring

Boil to 290 degrees (stir just until sugar is dissolved). Add oil of cinnamon and red food coloring. Wash apple. Insert stick. Dip apple in sauce. Cool on buttered wax paper.

Fried Apple Rings Recipe

1 c. Bisquick baking mix
1 egg
1/2 c. milk
2 med. apples, pared & cored

Beat baking mix, egg and milk with rotary beaters until smooth. Grease griddle. Cut apples cross wise into 1/8 inch slices. Dip slices into batter. Cook on hot griddle until golden brown, turning once. Serve hot and if you wish, with syrup, jelly or powdered sugar.

Chicken Florentine Recipe

1 (10 oz.) pkg. frozen chopped spinach
1 tsp. (or more) lemon juice
1/2 tsp. salt
Dash pepper
1 1/4 c. cooked diced chicken
1 oz. grated cheese
Dash paprika

Thaw spinach enough to separate. Spread in 1 quart casserole. Sprinkle with lemon juice, salt and pepper. Spread chicken over spinach. Sprinkle with cheese and paprika. Bake 20 minutes at 350 degrees.

Chicken Tetrazzini Casserole Recipe

2 c. cooked chicken
8 oz. spaghetti, broken into 2 inch pieces cooked and drained
1 can cream of mushroom soup
1 can cream of chicken soup
1/3 can water
3 tbsp. onion, sauteed in 4 tbsp. butter
1/4 tsp. marjoram
1/2 tsp. celery salt
1/2 c. grated sharp cheddar cheese
1 can mushrooms
1 sm. jar pimiento, chopped

Add all ingredients together and place in a 13 x 9 inch casserole, top with grated cheddar cheese and Parmesan cheese. Bake 1/2 hour at 350 degrees.

Chili Relleno Casserole Recipe

1 lb. ground beef
1-1/2 cups onion, chopped
1/2 lb. green chilies, cut and seeded
1 1/2 cups shredded cheddar cheese
1 cup milk
1/4 cup all purpose flour
4 eggs, beaten

Preheat oven to 350°F. Heat a heavy nonstick skillet over medium high heat. Sauté meat and onions 5-7 minutes, stirring frequently until meat is brown and onion is tender. Drain and discard fat. Season with salt and pepper to taste. Arrange chilies in a 10x6 inch baking dish. Sprinkle with cheese, then top with meat mixture. Combine remaining ingredients in a bowl. Mix thoroughly until smooth. Pour over meat-chili mixture. Bake 40-45 minutes. Let cool 5 minutes before serving. (Alternate: You can also use a smaller dish and layer the chilies, cheese, and meat.)

Macaroni and Cheese Casserole Recipe

1 can cream of celery soup
1/2 c. milk
1/8 tsp. mustard
Dash of pepper
3 c. cooked macaroni
2 c. grated cheddar cheese
1 c. French fried onions

In 1-1/2 quart casserole dish blend soup, milk, mustard and pepper until smooth. Stir in macaroni and 1-1/2 cups cheese. Bake at 350 degrees for 25 minutes. Top with onions and remaining cheese. Bake for 10 minutes more.
Makes 4 servings.

Tuna Noodle Casserole Recipe

1 (7 oz.) can tuna, drained and flaked
1 (10 3/4 oz. can condensed chicken noodle soup
1 (10 3/4 oz.) can condensed cream of mushroom soup
1 (3 oz.) can Chinese noodles
1 (5 1/3 oz.) can evaporated milk

Mix all together. Place in greased 1 1/2 quart casserole and bake in 350 degree oven for 30 minutes. Serves 4. Seafood Casserole combines crab meat and shrimp to the delight of seafood fans. It's easy-to-prepare main dish.

Ham Slices with Sweet Potatoes Recipe

1-/2 c. mashed, cooked sweet potatoes
1/2 c. applesauce
1/4 tsp. cinnamon
2 center-cut ham slices, 1/2 inch thick
1/4 c. bottled lemon juice
1/2 c. brown sugar

Combine potatoes, applesauce and cinnamon. Spoon over 1 ham slices. Place remaining slice over potato mixture. Bake at 325 degrees for 1 hour. Combine lemon juice, sugar and 2 tablespoons pan drippings. Baste ham well. Bake for 15 minutes. Slice to serve. Yield: 4-6 servings.

Microwave Meatloaf Recipe

1 1/2 lb. ground beef
2 c. soft bread cubes
1/2 c. finely chopped celery
1/2 c. chopped onion
1/4 c. chopped green pepper (optional)
1 1/2 tsp. salt (or less)
1 egg
1/2 c. catsup

1/2 c. catsup
1/4 c. chili sauce
2 tbsp. brown sugar
1 tbsp. lemon juice
1 tsp. dry mustard
1 tsp. Worcestershire

Mix well. Pat evenly into 9x5 inch glass loaf pan. Brush meatloaf top with sauce or brush with catsup or barbecue sauce. Microwave for 25-35 minutes on medium high (roast) until well done in center, about 140 degrees. Pour off liquid and let stand, covered with foil for 5 minutes before serving.

Oven Fried Chicken Recipe

1 tbsp. margarine
2/3 c. Bisquick baking mix
1 1/2 tsp. paprika
1 1/4 tsp. salt
1/4 tsp. pepper
2-1/2 to 3-1/2 lb. fryer, cut up (or chicken pieces like legs or thighs)

Heat oven to 425 degrees. Melt margarine in 13 x 9 inch pan in oven. Mix baking mix, paprika, salt and pepper; coat chicken. Place skin sides down in pan (uncovered). Bake 35 minutes. Turn, bake about 15 minutes or until done. 6 servings.

This recipe was posted in the newsletter a few years ago. I don't remember for sure who submitted it. I think it was Chef Ramo.

Spam and Sauerkraut Foil Packets Recipe

1 can Spam
1 lb. sauerkraut, well drained
1 can prepared apple pie filling

Tear off 4 generous squares of HEAVY DUTY aluminum foil. Cut the Spam into 4 equal slices and place in the center of foil squares. Top each with a fourth of the kraut, then the pie filling. Bring up sides of foil to form well sealed packages. Place bombs on grill, Spam side down, over hot coals. Grill until Spam is browned and heated through. Can be eaten right from the foil. Adapts to oven cooking as well. Bake in oven about 30 minutes or heated through. Makes 4 servings.

Note: I tried this and found it works well baked in an oven and can be placed in a casserole dish without the aluminum foil. Just grease the casserole dish make stacks of spam, sauerkraut and apple pie filling into serving sized. Found it made four large servings. Think it could be done with 6 stacks instead of four.
