Best Scalloped Tomatoes Recipe

Ingredients
4 slices 40% less fat bacon*
1 bell pepper, diced
1 small onion, diced
1 24 to 28 oz. can whole peeled tomatoes, undrained
1/2 level c. packed brown sugar, divided
Lawry's Seasoned Pepper
5 slices well-browned but not burned toast, divided
2 T. butter

Directions
In a large skillet cook bacon till crisp; remove from skillet & set aside. In drippings, saute' bell pepper & onion till tender but not brown. Add tomatoes, breaking them up a little bit with a wooden spoon; stir in all but 1/2 T. of the sugar + the seasoned pepper. Simmer till juices are almost gone, then break in 3 slices of the toast & crumble in the bacon. Pour into a lightly buttered 8" x 8" baking dish or casserole; turn oven on at 350ļ. Make crumbs from the remaining 2 slices of toast, & cover the top of the tomatoes. Sprinkle on the last 1/2 T. of brown sugar & a tiny bit more seasoned pepper. Bake 20 - 30 minutes or till bubbly & the top is golden brown. Serves 4 to 6; can be doubled in a 2 qt. casserole. This is an old time favorite, deservedly so.

Scalloped Tomatoes Recipe

Ingredients
4 T. butter
1 cup bread crumbs or cubes
1 small onion
2 1/2 cups canned or fresh tomatoes
4 T. sugar, more if desired
salt, to taste
pepper, to taste
shredded cheese, if desired

Directions
Melt butter. Brown cubes slightly. Remove cubes & brown onion. Combine, bread, onion, tomatoes, sugar, salt & pepper. Put in 2 qt. casserole. Cover w/ bread crumbs & cook 30-40 min. at 350. Add cheese during last 15 min. Can also add a pinch of basil with the sugar.

I remember my mother making the tomato and bread dish for my dad. I think she used a can of tomatoes, broke up bread, added a pat of butter, salt and pepper and I don't think anything else. I never liked it so never paid much attention. I hope this is what you are looking for.

Fried Green Tomatoes Recipe

Ingredients
1 egg, beaten
1/2 c. milk
1/2 c. cornmeal
1/4 c. all-purpose flour
1 tsp. Salt
1/2 tsp. Pepper
4 med.-sized green tomatoes, cut into 1/2-inch slices
3 to 4 tbsp. vegetable oil

Directions
Combine egg and milk; set aside. Combine cornmeal, flour, salt and pepper. Dip tomatoes in egg mixture; dredge in cornmeal mixture. Fry in oil until golden brown.

Brussels Sprouts and Sun Dried Tomato Salad Recipe

Ingredients
3 Pounds Brussels sprouts, trimmed and cooked
1/2 Cup sun-dried tomato halves in oil, sliced thin
1/2 Cup rice wine vinegar
1/2 Cup olive oil
2 garlic cloves
3 Teaspoons sugar
Tabasco sauce to taste
4 green onions, chopped
1/2 Cup fresh parsley, minced

Directions
Mix all ingredients together and serve chilled.

Lisa's Grilled Tomatoes Recipe

Ingredients
6 tomatoes
1 green pepper
1/2 c. sugar
1 c. dried bread crumbs
Butter

Directions
Preheat oven to 325 degrees. Cut tomatoes in half (removing stems) and place in baking dish. Cut rounds of green pepper on top. Sprinkle with sugar and dried bread crumbs alternately. Add dot of butter in center. Bake 1 hour. Serves 6

Corn and Black Bean Salad Recipe

Ingredients
1 (16 oz.) can black beans, rinsed & drained
4 oz. Jack cheese, cubed 1/4"
1 (8 oz.) can whole kernel corn, drained*
3/4 c. sliced green onions
3/4 c. thinly sliced celery
1 sm. red pepper, diced
3/4 c. picante sauce (mild)
2 tbsp. olive oil
2 tbsp. lemon juice
1 tsp. cumin
1 clove garlic, minced

Directions
Combine beans, cheese, corn, onions, celery and red pepper in large bowl. Combine picante sauce, oil, lemon juice, cumin and garlic. Toss with bean mixture; chill. Serve with additional picante sauce, if desired.
Serves 8-10.

*Note - I prefer white shoepeg corn instead of whole kernel corn.

Jiffy Broccoli Casserole Recipe

Ingredients
1 box Jiffy cornbread mix
4 eggs, beaten
1 sm. chopped onion
3 c. chopped broccoli (frozen)
1 c. grated Velveeta cheese
1/4 c. milk
1 stick margarine

Directions
Mix 1/2 stick margarine and pour in cooking utensils. Mix all other ingredients and pour this cornbread mixture in and top with other 1/2 stick oleo, melted. Bake at 350 degrees for 35 or 40 minutes.

Italian Dressing Broccoli Recipe

Ingredients
1 (16-ounce) bag frozen broccoli pieces
1/3 cup fat-free Italian salad dressing

Directions
Mix the broccoli and salad dressing together in a microwave-safe dish, cover the dish and microwave on high for 7 minutes or until heated through, turn the dish once while cooking.

Yield: 4 (1/2 servings

Broccoli and Cheese Casserole Recipe

Ingredients
2 c. broccoli or 1 (10 oz.) pkg. frozen
1/4 lb. Velveeta cheese
4 tbsp. butter or margarine
12 butter crackers, crumbled

Directions
Cook and drain broccoli. Melt cheese and half of the butter. Mix with the broccoli. Place in greased baking dish. Melt remaining butter and mix with crumbled crackers. Sprinkle crumbs on top. Bake at 350 degrees for 20 minutes. Serves 3-4.
