Robbie's Finger Sandwiches Recipes
Here are more recipes for finger sandwiches. You can change the type of cheese you use based on your preferences.

Ham Finger Sandwiches Recipe

1 pkg. dinner rolls
sliced ham
grated Swiss cheese
1 tbsp. butter or cream cheese
1 tbsp. Worcestershire sauce
2 to 3 tbsp. mustard
3 tbsp. poppy seeds
2 tbsp. chopped onion

Slice entire package of dinner rolls in half. Cream butter, Worcestershire sauce, mustard, poppy seed and chopped onion together. Spread evenly over bottom half of rolls. Layer ham and Swiss cheese over creamed mixture. Cover with top of rolls.
Bake on baking sheet at low temperature until warm and cheese is melted.

Cheese Bacon Finger Sandwiches Recipe

1 loaf bread with crust removed
1/2 lb. shredded sharp Cheddar cheese
1 lb. crispy fried bacon
1 sm. onion chopped
1 sm. pkg. sliced almonds
1 c. mayonnaise
2 tbsp. Worcestershire sauce
Pepper to taste

Spread mix onto slice of bread and then cut into thirds. Place onto foil covered cookie sheet. May freeze until ready to cook. Cook uncovered at 400 degrees
for 10 minutes.

Ham and Pineapple Party Finger Sandwiches Recipe
36 finger sandwiches

1 med. onion, chopped
1 sm. can crushed pineapple, well drained
1/2 c. pecans, chopped
1/2 c. celery, chopped
1/2 c. mayonnaise or cream cheese at room temperature

Combine all ingredients. Take 18 slices of bread and cut the crust off. Make 9 sandwiches and cut them each into 4 squares. Makes 36 finger sandwiches. Best if made right before serving, so bread does not get soggy and make sure to drain pineapple thoroughly. Can use flavored cream cheese, if desired.

Olive Nut Mixture for Finger Sandwiches Recipe

8 ounces cream cheese, softened- can use flavored cream cheese
1/2 c. mayonnaise
1/2 c. finely chopped pecans
1 c. chopped pimento stuffed olives, well drained
Dash of pepper

Blend the softened cream cheese with mayonnaise until very smooth - no lumps. Stir in chopped pecans, olives and pepper. Mix well, cover; place in refrigerator
overnight. Set out at room temperature for about 1 hour until ready to use. Spread on crustless bread and cut in thirds or fourths, depending on the size of the bread.

Hi Nancy and Nancylanders,
My daughter, her boyfriend and I went to an early Christmas party this past weekend. One of the appetizers on the buffet was what we think was candied jalapenos. It was served over a block of cream cheese and then on crackers. Now, I have had the jalapeno jelly served like this, but these were sliced jalapenos, seeds and all. They were delicious. Does anyone have a recipe that they would share? I would love to make these to take to a party this weekend.

Lady M asked for candied pecan recipe. This one is like the ones sold in malls that smell so good.

Candied Pecan Recipe

4 cups pecan halves
1 cup each of white and brown sugar
3 tbsp. cinnamon
1/4 tsp. salt
3 egg whites
2-1/2 tsp. vanilla extract
3 tbsp. water

Whisk the egg whites and the vanilla extract in a bowl till foamy and set aside.

In another bowl combine the two sugars, the cinnamon and salt.

Place the pecans in the egg white mixture and toss to coat.

Then place then in the cinnamon sugar and toss till well coated.

Pour into a crock pot that has been lightly buttered.

Let cook with lid on for 3 1/2 hours at the low setting. Stir every 20-30 minutes. When the cooking time is up sprinkle with the3 tbsp. of water. They will be sticky at this stage. Turn out on a lightly buttered or Pam sprayed cookie sheet . Cool completely and the sugar will crystallize and be crunchy. Store in an airtight container. Mason jars are good especially in the jelly size.

Cheese and Bacon Triangles Recipe

6 8 inch flour tortillas
12 slices American cheese
1/2 cup cooked bacon bits
salsa and sour cream

Cut tortillas in half to form 12 half circles. Place one slice of cheese over each tortilla half, tearing to leave a 1/4 inch border around edges. Top cheese with bacon bits. Brush a small amount of water around the edges of the tortilla. Fold in half forming a triangle. Press the watered edges of tortilla together to seal. Cook triangles in a small amount of butter in a skillet over medium heat until golden brown, about 3 minutes per side. Let stand one minute before serving. If desired, serve with salsa and sour cream.

Rolled Sandwich Recipes
Here is another recipe I like for lunch but could certainly be used for appetiser sandwiches. You see these sandwiches in the mall some are called rolly polly or "hovan rolls". This is my version.

Cheese Spread for Lavash Bread Rolled Sandwiches

16 ozs. Soft cream cheese
4 Tbs. softened butter
! Tbs. Dill weed
1/4 tsp thyme
1/4 tsp basil
1 tsp chopped parsley
Garlic powder to taste
Onion salt to taste
Salt and pepper
Chopped Chives (optional)

Thoroughly mix together all ingredients and spread a thin layer over lavash.


Rolled Sandwiches

1 Package of Lavash (cracker bread) frozen

Cheese spread as above
Ham, thinly sliced, ( I prefer Black forest)
Turkey breasts, thinly sliced ( I like mesquite)
Cheese slices, I prefer Swiss but use what ever you like

I keep my lavash in the freezer and take out just the amount I am going to use. I spread the Cheese spread thinly on the frozen bread. (It will be thawed by the time you finish making the sandwich and is easier to spread when frozen.) Then put a thin layer of ham, cheese , and turkey. Cover lavash with the lunch meat and cheese except about one inch on the edge away from the side you are going to roll up. ( Now add tomato and lettuce if using, placing it about 2" from the bottom so that it will be in the middle of your sandwich when rolled.) If I am going to use immediately you can add thin slices of tomato and lettuce. If you have to make ahead I don't use the tomato or lettuce as they just get soggy. Roll up in jelly roll fashion and then cut into 3/4" slices. This will keep for about 1 day in the fridge, after that the Lavash gets soggy. But theses are so delicious when made fresh.

Turkey Avocado Roll Ups Recipe

4 flour tortillas; (10-inch)
1 lb Smoked sliced turkey
2 cups shredded iceberg lettuce
1/3 cup shredded sharp Cheddar cheese
1 ripe avocado; peeled and diced
1/2 cup Thousand Island dressing

Heat a skillet or griddle over medium heat. Add one tortilla and heat, turning frequently, until soft and pliable. Repeat with remaining tortillas.

Divide turkey among tortillas. Toss lettuce, cheese, avocado and Thousand Island dressing in bowl. Top each tortilla with 2/3 cup lettuce mixture. Roll up.
Makes 4 servings.

Chocolate Drop Oatmeal Cookies Recipe
No-bake cookie recipe

1 Stick butter
2 cups sugar
1/2 cup cocoa
1/2 cup milk
2-1/2 cups quick-cooking oats
1 teaspoon vanilla
1/2 cup creamy peanut butter

Bring butter, sugar, milk, and cocoa to a rolling boil. Remove from heat and blend in peanut butter, vanilla, and oats. Drop by teaspoonfuls onto waxed paper and let cool.

Corn Flake Macaroons Recipe

2 Egg whites
1 cup sugar
1/2 teaspoon vanilla
1 cup coconut
2 cups corn flakes
1/2 cup nuts or whole salted Spanish peanuts, chopped

Beat egg whites until stiff and dry. Fold in sugar gradually. Add flavoring, coconut, corn flakes and nuts. Drop by teaspoonfuls onto well-oiled baking sheet. Bake at 375 degrees until delicate brown: 8-12 minutes.
Makes 36 cookies.

Christmas Vanilla Sugar Cookies Recipe

1-1/2 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter
3/4 cup sugar
1 egg
1/2 teaspoon vanilla

Stir together flour, powder & salt in med bowl. Beat butter, sugar, egg & vanilla in bowl until well blended. Stir in flour mixture. Gather dough together & shape into ball, wrap & refrigerate several hours or overnight. Preheat oven to 350. Lightly coat baking sheets with nonstick spray. Roll out dough with lightly floured rolling pin on lightly floured surface to 3/8" thickness. Cut into cookies with 2-1/2" holiday shaped cookie cutters.
Place cookies on prepared cookie sheets, spacing 1 1/2" apart. Decorate with colored sprinkles, sugars and gum drops if you wish. Bake in oven 10-12 minutes or until lightly browned around edges. Remove to wire racks to cool.

Holiday Caramel Krispie Bars Recipe

3/4 cup margarine
8 cups mini marshmallows
8 cups Rice Krispies
14 oz caramels
14 oz can sweetened condensed milk

Melt 1/4 cup margarine and 4 cups marshmallows. Add 4 cups Rice Krispies. Pat in buttered 9 x 13 inch pan. Melt caramels, 1/4 cup margarine and sweetened condensed milk together. Pour over Rice Krispies in pan. Refrigerate 30 to 40 minutes. Prepare another Rice Krispie mixture like the first. Put on top of caramel layer. Keep refrigerated.
Cut into squares.
