A Baker’s Basic Kitchen Library eBook Collection (free from the Prepared Pantry)

Since I don't remember the name of this recipe, I'll call it simply:

Dee's Favorite Chicken Recipe

6 Tbls. all purpose flour divided
1 tsp paprika
1- 1/2 tsp salt divided
1/4 tsp black pepper
6 boneless skinless chicken breasts halves
1/4 cup butter
2 Tbls water
1 1/ 4 cups half & half
6 ounces fresh mushrooms sliced
1 Tbls lemon juice
1-1/2 cups shredded cheddar cheese

in a shallow dish or bowl, combine 4 Tbls flour, paprika , 1 tsp salt and pepper. Coat chicken breasts with flour mixture. In a large skillett , brown the chicken in 1/4 cup of butter or margarine . Add water; cover and let simmer covered for 25-30 min. Meanwhile , preheat oven to 350 degrees. (175C)

When chicken breasts are done simmering, remove from skillet and place in 9 x 13 inch dish, save drippings. Combine remaining 2 Tbls flour , 1/2 tsp salt and half and half. Mix together and cook until thick and bubbly . Add mushrooms and lemon juice and stir together. Pour sauce over chicken and bake uncovered in oven 30 minutes.

Sprinkle with cheese and bake 3-5 min. until cheese melts.
* I usually only use 2 breasts but we both love a lot of the gravy, so I keep that part pretty much the same . Enjoy!

1 Minute Cinnamon Bun Recipe

2 tablespoons applesauce
1 tablespoon vegetable oil
1 tablespoon milk
1/4 teaspoon vanilla extract
1/3 cup all-purpose flour
3 tablespoons packed light brown sugar
1 1/4 teaspoons ground cinnamon, divided
1/4 teaspoon baking powder
1/8 teaspoon salt

Cream Cheese Icing
1 tablespoon cream cheese, softened
3 tablespoons confectioners' sugar
1 teaspoon milk

Coat an 8-ounce microwaveable mug with cooking spray.
In a small bowl, combine applesauce, oil, milk, vanilla, flour, light brown sugar, 3/4 teaspoon cinnamon, the baking powder, and salt. Reserve 1 tablespoon batter in another small bowl and place remaining batter in mug.

Add remaining cinnamon to 1 tablespoon batter, then swirl mixture into batter in mug.

Microwave 60 to 70 seconds, or until center is set. Let cool 4 to 5 minutes, then remove to a plate.

In a small bowl, combine icing ingredients, stirring until smooth. Spread on cinnamon roll and serve.

Berry Crisp Recipe

32 oz bag of frozen berry medley, which contained strawberries, blueberries, raspberries and blackberries.
1/4 cup sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract
1/2 cup white whole wheat flour
1 cup old fashioned oats
1/4 cup brown sugar
3/4 teaspoon ground cinnamon
1/2 cup chopped walnuts
5 tablespoons butter, melted
ice cream for serving, optional

Take the frozen fruit out of the freezer and place in a bowl. After about 30 minutes cut up the whole berries into smaller pieces.

Preheat the oven to 375F degrees.

To the bowl of fruit add sugar, cornstarch and vanilla extract. Toss to combine. Transfer berry mixture to a 9x13 inch baking dish. In a small bowl, combine whole wheat flour, oats, brown sugar, cinnamon, walnuts and melted butter. Crumble oat and walnut topping over berries evenly. Bake for 35-40 minutes or until topping is nicely browned and berry mixture is bubbling. Serve either warm or at room temperature with ice cream.

Hot Chicken Salad Casserole Recipe
Serves: 6

Cooking Time: 30 min

3 cups cubed, cooked chicken breast
2 celery stalks, sliced
1 red bell pepper, chopped
1/2 cup finely shredded reduced-fat Cheddar cheese
1 (10-3/4-ounce) can reduced-sodium cream of chicken soup
1 (6-ounce) plain low-fat yogurt
2 scallions, thinly sliced
1/4 teaspoon ground ginger
1/4 teaspoon black pepper
1/4 cup sliced almonds

Preheat oven to 400 degrees F. Coat an 8- x 8-inch baking dish with cooking spray. In a large bowl, combine chicken, celery, bell pepper, cheese, soup, yogurt, scallions, ginger, and black pepper. Spoon into baking dish. Sprinkle almonds on top. Bake, uncovered, 30 to 35 minutes, or until heated through.

Mary Ann's Bread Recipes

Potato Bread Recipe

1 small potato, shredded
1/2 cup orange juice concentrate
1/4 cup water
1/3 cup orange marmalade
1/4 cup vegetable oil
1 egg, beaten
3 cups flour
1/2 cup sugar
2 teaspoon baking powder
1/4 teaspoon salt

Cook the shredded potato in just enough water to cover it, for 10 minutes. Cool and drain. Combine cooled and drained potato with orange juice concentrate, water, marmalade, oil and egg. In a large bowl, soft together the flour, sugar, baking powder and salt. Add the liquid ingredients and stir just until combined. Spoon batter into 3 greased mini loaf pans and bake at 350F for 30 to 35 minutes or until tester comes out clean. Cool in pans for 10 minutes then remove from pan and let cool.
Makes 3 Loaves

Honey Wheat Bread Recipe

1-1/2 cups water
1 cup cream style cottage cheese
1/2 cup honey
1/4 cup margarine
5-1/2 to 6 cups flour
1 cup whole wheat flour
2 tablespoons sugar
3 teaspoons salt
2 packages dry yeast
1 egg

Heat first 4 ingredients in medium saucepan until warm; 120F to 130F. Lightly spoon flour into measuring cup and level off. Combine warm liquid, 2 cups flour and remaining ingredients in large bowl; beat 2 minutes at medium speed. By hand, stir in remaining flour to make a stiff dough. Knead dough on well floured surface, until smooth and elastic, about 20 minutes. Place in a greased bowl. Cover. Let rise in warm place until light and doubled in size about 45 to 60 minutes. Grease 2 loaf pans. Punch down dough; divide and shape into 2 loaves. Place in greased pans. Cover; let rise in warm place until light and doubled in size about 45 to 60 minutes. Heat oven to 350F. Bake 40 to 50 minutes until deep golden brown and loaves sound hollow when lightly tapped. Immediately remove from pans. If desired, brush with butter or margarine.
Makes 2 Loaves

Zuchinni Bread Recipe

3 cups grated zucchini
1 cup salad oil
1 1/2 cups sugar
3 eggs, beaten
1 teaspoon vanilla

Sift in and stir to blend:
3 cups flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1-1/2 teaspoons cinnamon
1 teaspoon salt
1/2 teaspoon ginger

Add and beat 4 minutes:
1 cup chopped nuts
1 cup raisins

Place in greased loaf pan and bake 1 hour at 350F.
Makes 1 loaf.

Whole Wheat Bread Recipe

5 cup all purpose flour
2 packages active dry yeast
2 3/4 cups water
1/2 cup packed brown sugar
1/4 cup shortening
1 tablespoons salt
3 cups whole wheat flour

In large mixer bowl combine 3-1/2 cups of the all purpose flour and the yeast. In saucepan heat water, brown sugar, shortening and salt just until warm; 115F to 120F, stirring constantly to melt shortening. Add to dry mixture in mixer bowl. Beat at low speed with electric mixer for 1/2 minute, scraping sides of bowl constantly. Beat 3 minutes at high speed. By hand, stir in the whole wheat flour and enough of the remaining all purpose flour to make a moderately stiff dough. Turn out onto a lightly floured surface and knead until smooth and elastic about 10 to 12 minutes. Shape into a ball. Place dough in a lightly greased bowl, turning once to grease surface. Cover and let rise in a warm place until double, about 1 hour. Punch dough down; turn out onto lightly floured surface. Divide in half. Cover and let rest 10 minutes. Shape dough into 2 loaves and place in 2 greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans. Cover and let rise in a warm place until almost double, about 45 minutes. Bake at 375F for 40 to 45 minutes. If necessary, cover loosely with foil the last 20 minutes of baking to prevent over browning. Remove from pans and cool on wire racks. Makes 2 loaves. Before taking bread out of loaf pans baste with oil, then remove from pans.

Sue's Cube Steak Recipes
Here are some of my recipes that might help the newly married gal. The recipes are easy to make and require only a few ingredients.

Cube Steaks with Potatoes Recipe

4 potatoes, peeled and cubed
4 cube steaks
1 can cream of mushroom soup, undiluted
1 onion
salt and pepper

Put steaks on bottom of baking dish. Mix potatoes, soup, chopped onion, salt and pepper and a half can of water together. Spread over steaks. Bake for 1 hour covered with foil and 1/2 hour uncovered. Bake at 375°.


Swiss Cube Steak Recipe

4 (4 ounc) cube steaks
1 cup flour
salt and black pepper to taste
1 ounce oil
3 cups beef stock
1 cup beer
cornstarch to thicken
cilantro and rosemary for garnishing

Mix flour, salt and pepper. Dip cube steak and fry in oil. Pour beef stock and beer over meat and simmer for 30 minutes in 350F oven. When meat is done, thicken liquid with cornstarch. Add cilantro and rosemary to sauce and serve.
Makes 4 Servings


Breaded Cube Steaks Recipe

4 cubed steaks
3 eggs, beaten
1/2 cup Italian Progresso bread crumbs (or cracker crumbs)

Dip steaks in beaten eggs and then coat with bread crumbs. Fry in Wesson oil on medium heat until done. Drain well


Barbecue Cube Steaks Recipe

4 pounds cubed steak
1/4 cup flour seasoned with salt and pepper
3 tablespoons fat
1 medium onion
1/8 teaspoon pepper
1 tablespoon vinegar
2 tablespoons lemon juice
1/2 cup ketchup
2 tablespoons Worcestershire sauce
1/2 teaspoon salt
1/2 cup water
1 tablespoon brown sugar

Flour and season steak and brown in fat. Add chopped onion, brown lightly. Mix the rest of the ingredients, pour over steak. Cover slightly. Cook slowly 35 minutes, or until steak is tender.


Cube Steak with Rice Recipe

4 cube steaks
1 can beef broth
1 can French onion soup
1 c. rice

Salt, pepper and flour cube steak slices. Brown steak in a small amount of oil. Drain oil. Add soups and rice; bring to a boil. Add browned steak slices. Cover pan; lower heat to low. Cook for 15 to 20 minutes, until rice is tender.


Cube Steak Stroganoff Recipe

1 medium white onion, chopped
4 tablespoons butter
1/4 pound sliced mushrooms
1 1/2 pounds cube steak, cut in 1 inch strips
1 cup beef broth
2 tablespoons lemon juice
1 cup sour cream

Saute the onion in 1 tablespoon butter until golden. Remove from pan, add another tablespoon butter and cook the mushrooms, about 5 minutes. Remove from pan. Flour the steak strips lightly and brown them in the remaining 2 tablespoons butter. Return onions and mushrooms back into pan; add beef broth and lemon juice. Simmer for 15 minutes, add the sour cream and heat gently. Makes about 4 servings.


Cube Steak Casserole with Vegetables Recipe

4 cube steaks
3 potatoes, sliced
1 can cream of celery soup, undiluted
1 onion, sliced
3 carrots, sliced
1/4 stick butter

Place steak in 1-1/2 Quart Pyrex casserole dish. Layer onion, carrots and potatoes on top. Heat soup with butter and pour over casserole. Cover and bake at 375° for 1 hour.

Note - I reduced butter to a couple of tablespoons and sprayed the dish with Pam.


Hawaiian Cube Steak Recipe

1/4 cup cooking oil
1 can sliced water chestnuts drained
4 cube steaks, cut into 1/4 inch strips
1 jar homestyle beef gravy
1 bell pepper cut into strips
chow mein noodles
1 pound mushrooms, sliced
1/2 teaspoon salt

Cut steak into 1/4 inch strips. Heat oil over medium high heat. Add steak, onion, green pepper, mushrooms and salt. Cook until meat is brown, stirring constantly. Drain and add water chestnuts and gravy. Cover and simmer 1 1/2 to 2 hours, stirring occasionally. Serve over rice and sprinkle with chow mein noodles.


Cube Steak Parmigiana Recipe

4 cube steaks
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. oil
1 (15 oz.) can tomato herb sauce
1 (4 oz.) can sliced mushrooms
2 Tbsp. Parmesan cheese
4 slices Mozzarella cheese

Season cube steaks with salt and pepper; brown both sides in oil. In skillet, drain fat. Add sauce and mushrooms. Top each steak with slice of Mozzarella; sprinkle with Parmesan. Simmer, covered, for 5 minutes. Serve over hot spaghetti noodles.


Steak Dijon Recipe

1 Tbsp. butter
4 cube steaks or round steaks
1 jar brown gravy
3 Tbsp. half and half
1 Tbsp. Dijon mustard
2 Tbsp. chopped parsley

Brown steak in skillet in butter until done, turning once. Remove. Keep warm. Reduce heat. Add gravy, half and half and mustard. Heat, stirring until bubbly. Add meat to sauce. Sprinkle with parsley. Cover. Simmer on low for 10 minutes.
Serves 4.


Cube Steaks in Gravy Sauce

4 cube steaks
1 pkg. gravy mix (brown or mushroom)
2 Tbsp. butter
1/4 c. water

In plastic bag, shake steaks in the gravy mix. Brown quickly in butter. Add remaining gravy from bag by adding some of the water to the bag and pour into the pan with the cube steaks. Add rest of water to the pan. Cover and simmer 15 minutes. This is also good made with beef cubes and served over rice.

My mom fixed these rolls often. My family loves these as well.

Potato Rolls Recipe

1 pkg. active dry yeast
1-1/2 c. warm water
2/3 c. sugar
1-1/2 tsp. salt
2/3 c. shortening
2 eggs
1 c. mashed potatoes
7 to 7-1/2 c. all-purpose flour

Dissolve yeast in warm water. Stir in sugar, salt, shortening, eggs, potatoes and 4 cups of the flour. Beat until smooth. Mix in 3 to 3 1/2 more cups flour with spoon until easy to handle. Knead dough until smooth and elastic on a lightly floured surface. Place in a greased bowl and turn greased side up. Cover tightly and refrigerate overnight. (Dough can be kept up to 5 days covered and in refrigerator.) Punch down dough, take out amount you need. Roll out dough and cut with a biscuit cutter. Let rise about an hour. Bake 15 minutes in 400° oven.

Hamburger and Green Bean Casserole Recipe

1 lb. hamburger
1 can tomato soup
1 can green beans
3 Tbsp. Worcestershire sauce
1/2 c. warm milk
1 egg, beaten
5 medium peeled potatoes, cut into small pieces

Brown hamburger. May add a little onion and/or salt and pepper if you like. Add soup, green beans and Worcestershire sauce to hamburger once it is browned. Can either use remaining ingredients to make mashed potatoes or use instant, depending on your time frame. Bake at 350° for 30 minutes.

Chicken Pasta Salad Recipe

8 oz. cooked and drained pasta
1 c. celery
1 c. frozen English peas
3/4 c. Ranch dressing
12 oz. cooked chopped chicken

Mix well and chill. Can be served with cashews on top.

Chicken and Corn Casserole Recipe

1 cup chicken, cubed
1 can cream of chicken soup
1 can small English peas
1 can whole kernel corn
1 can biscuits (10) biscuits
salt and pepper to taste

Pour all ingredients including juices into a casserole dish. Mix well and season to taste. Open 1 can of biscuits and place over top of mixture. Bake at 325° until biscuits are done and browned.
