This is a shorter than usual newsletter.  Lubbock has thunderstorms coming in very soon.  I am trying to get the newsletter this evening.  Hopefully it can be done before the thunderstorm hits.

MJ submitted a recipe in the Feb 21 newsletter for Hamburger and Green Bean Casserole. I've made one like it since the 60's. Sometimes I add a can of Kidney Beans, drained or canned Corn, or both. Thanks MJ for sharing and sparking my
memory too.

Chocolate Chip Cloud Cookies Recipe

You'll feel like you've been transported to heaven when you bite into these pillowy-soft Chocolate Chip Cloud Cookies. Who knew that a low-carb cookie recipe could taste so light and airy?

1/2 cup rolled oats
1/4 cup margarine, softened
1/2 cup packed brown sugar
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup plain low-fat yogurt
1 egg
1/2 teaspoon vanilla extract
1 1/4 cup all-purpose flour
1 cup sugar-free chocolate chips

Preheat oven to 375 degrees F. Place oats in a food processor or blender. Cover and process until ground; set aside.
In a large mixing bowl, beat margarine, brown sugar, baking soda, and salt with an electric mixer until combined. Beat in yogurt, eggs, and vanilla. Add flour and mix until combined. Using a wooden spoon, stir in oats and chocolate chips.
Drop dough by rounded teaspoons on an ungreased cookie sheet. Bake for 9 to 11 minutes, or until bottoms are browned. Transfer to a wire rack to cool.

Crustless Taco Pie Recipe

1 pound extra-lean ground beef
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 1/2 cup liquid egg substitute
1 cup low-fat (1%) milk
1/2 teaspoon black pepper
1 cup reduced-fat, shredded Cheddar cheese

Preheat oven to 350 degrees F.
Coat a 9-inch deep dish pie plate with cooking spray.

In a large skillet over medium heat, cook the ground beef, chili powder, cumin, onion powder, and garlic powder 6-8 minutes, or until no longer pink. Evenly spread into pie plate.

In a large bowl, combine egg substitute, milk, and black pepper. Pour over beef. Sprinkle with shredded cheese and bake 40 minutes, or until center is set. Remove and let sit 5 minutes.

To really finish off this taco pie, top with some chopped tomatoes, avocado, and a dollop of fat-free sour cream!

Easy Cucumber Cups Recipe

2 large cucumbers, peeled and cut into 1-inch slices
1 cup cubed cooked ham
3 hard-boiled eggs
1/2 cup fat-free plain yogurt
1/4 cup light mayonnaise
2 tablespoons Dijon mustard
1/4 cup dill pickle relish, drained
1/2 cup chopped scallion (with 1 tablespoon reserved for garnish)
1/4 teaspoon black pepper

Partially scoop out the center of the cucumber slices, making sure to leave the bottom of each slice intact.
Place ham and eggs in a blender or food processor and process until finely chopped; place in a medium bowl.

Place remaining ingredients in blender or food processor and pulse until smooth. Add to ham and egg mixture and mix until well combined. Fill cucumber cups with ham mixture and top with reserved scallions. Serve immediately or refrigerate until ready to serve.

This tasty dessert pizza will be a hit at any gathering. Not only does it look delicious, but it tastes delicious too!

Fruit Pizza Recipe

1/2 cup butter
1/2 tsp. baking soda
1/8 tsp. salt
3/4 cup sugar
1 egg
1-1/2 cups flour
1 tsp. cream of tartar

1 pkg. (8 oz.) cream cheese, softened
1/4 cup sugar
1 tsp. vanilla

1/4 cup sugar
2 tsp. cornstarch
1/2 tsp. lemon juice
1/2 cup pineapple juice

Mix all crust ingredients well and press into well greased (can use cooking spray) pizza pan. Bake 10 minutes at 400 and cool. Mix filling and spread over crust. Arrange fruit on top. For glaze, cook the 4 ingredients, stirring until thick and then cool.

NOTE: you can use any combinations of fruit you want, sliced kiwi fruit, fresh berries, canned mandarin orange and pineapple tidbits (drained), and also banana slices, etc. Keep in refrigerator until time to serve.

Fish Sauce Recipes

Savory Sauce Recipe
Greece is surrounded by water, and fish is a main staple of food. This tasty dish is so easy to prepare and yet it adds so much flavor to the meal. It is usually poured over cold or room temperature fried fish. Good for lunch, dinner, or even a snack.

1 head garlic, minced
2 c. olive oil
1 c. wine vinegar
3 bay leaves
Salt to taste

Cook garlic in olive oil until lightly browned. Add vinegar and bay leaves and simmer for 5 minutes.
Pour over cold fried fish
Yield: makes 2-1/2 – 3 cups

Fish Sauce Recipe # 2
This is another version of fish sauce.

1 clove garlic, chopped
2 onions, minced
3 Tbs. olive oil
1 bay leaf
1/2 tsp. oregano
1 Tbs. parsley, chopped
1/2 c. dry white wine
1/2 c. water
Juice of 1 lemon
Salt and pepper to taste

Saute onions and garlic in olive oil until golden brown. Add bay leaf, oregano and parsley and cook for a few minutes longer. Pour in the water, wine, and lemon juice. Season with salt and pepper and simmer over low heat for 20 minutes longer. Remove from heat and cool. This sauce is very tasty served with fried fish.
Yield: 1 cup

This stew is really delicious. We like it served over hot buttered noodles.

Sweet and Sour Stew Recipe

2 tbsp. cooking oil
2-1/2 lbs. beef stew meat, cut into 1" cubes
2 medium carrots, cut up in small chunks
1 onion, chopped
1 can (8 oz.) tomato sauce
1/2 cup water
1/4 cup brown sugar
1/4 cup apple cider vinegar
1 tbsp. Worcestershire sauce
1 tsp. salt
1 tbsp. cold water
2 tsp. cornstarch

Brown meat in hot oil in 3 quart saucepan and drain. Add all remaining ingredients, except cold water and cornstarch. Cover and over low heat until meat and carrots are tender. about 1-1/2 hours. Blend cornstarch into cold water and add to stew and cook and stir until thickened.

Only 3 ingredients and you can have a scrumptious dessert to enjoy in a matter of minutes. I think this would be excellent with canned raspberry, strawberry or apple pie filling too? When I made it, I used the 1 can cherry pie filling as the recipe called for, but to make it even better, I'm going to use 2 cans of filling.

Chocolate Cherry Pudding Cake Recipe

1 chocolate cake mix (2 layer)
1 cup cola soda
1 can (21 oz.) cherry pie filling

Preheat oven to 350. Spread cherry filling in bottom of a 9x13 inch baking pan. In a bowl, mix together the dry cake mix and cola until combined and spread over cherries. Bake for 35 minutes. or until done. Best served warm, topped with a
scoop of vanilla ice cream.

NOTE: I added 1/4 tsp. almond extract to cherry filling before putting it in the pan.

This oven-fried fish can be made more healthy by using fat-free mayonnaise and reduced fat crackers to coat the fish, if you so desire. You can use any kind of white fish for this recipe. We like it with Rock Fish. This recipe only makes 2 servings, so may have to double it.

Crispy Oven-Fried Fish Recipe

2 fish fillets (1/2 lb.)
1/4 cup crushed Ritz crackers
1/4 cup panko bread crumbs
2 tbsp. grated Parmesan cheese
1/2 tsp. garlic powder
1/8 tsp. cayenne
1 egg
1 tbsp. mayonnaise
2 tsp. Dijon mustard
1 tbsp. flour

Mix cracker crumbs, panko crumbs, cheese, garlic powder and cayenne in pie pan. Beat egg, mayonnaise and mustard with a fork in separate pie plate until blended. Put flour on plate. Dip fish in flour to coat, then in egg mixture, and then into the crumb mixture, turning to coat evenly. Place on foil-covered baking sheet. Bake at 425 for 15 minutes, until fish flakes with a fork. Top fish with sauce, if desired.

While fish is baking, whisk 1/4 cup softened fat-free cream cheese with 1 tsp. Dijon mustard in bowl until blended. Gradually whisk in 1/3 cup fat free-reduce fat chicken broth. Stir in 1 tsp. lemon juice. Pour into a small non-stick skillet; bring to boil over medium heat, stirring. Simmer 5 minutes, until thickened, stirring constantly. Serve on top of fish.

Does anyone have a recipe for a bundt cake that has fruit..coctail baked up in the top of it? I don't remember what else rises up, but I can't find such a recipe anywhere. Its a very decadant cake.

Mango Jalapeño Chicken Salad in Cumin Tortilla Bowls

Enjoy an old favorite with a whole new twist--spicy, fruity chicken salad served in flavored tortilla bowls.


1/2 cup cubed peeled mango*
2 tablespoons mango nectar (from 12.5-oz can)
2 tablespoons white wine vinegar
1 tablespoon fresh lime juice
1 tablespoon fresh orange juice
1 tablespoon honey
1/3 cup CRISCO® Pure Canola Oil

4 Old El Paso flour tortillas for burritos (from 11-oz package)
1/2 teaspoon ground cumin
1/2 teaspoon salt

4 cups cubed cooked chicken breast
1-1/3 cups cubed peeled mango
1 tablespoon fresh lime juice
1-1/2 cups cubed peeled avocado (from 2 medium)
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped red onion
1/4 cup finely chopped seeded jalapeño chiles (2 medium)
1/4 cup chopped fresh cilantro
1 cup shredded iceberg lettuce
1/2 teaspoon salt

Heat oven to 400°F. Spray insides of 4 ovenproof 2-cup soup bowls with CRISCO® Original No-Stick Cooking Spray.** Set aside.

In food processor bowl with metal blade or blender, place all vinaigrette ingredients except oil. Cover; process until smooth. With food processor running, slowly pour oil through feed tube until mixture is thickened. Set aside.

Spray 1 side of each tortilla with CRISCO® Original No-Stick Cooking Spray. Sprinkle cumin and 1/2 teaspoon salt evenly over sprayed sides of tortillas. Press tortillas, seasoned sides up, in bowls. Place bowls in 15x10x1-inch pan. Bake 5 to 7 minutes or until edges are golden brown. Remove tortillas from bowls; place upside down on cooling rack. Cool completely.

In large bowl, mix chicken and 1 1/3 cups mango. In small bowl, mix 1 tablespoon lime juice and the avocado. Add avocado and remaining salad ingredients to chicken mixture; mix well. Add vinaigrette; mix well.

To serve, spoon chicken salad into tortilla bowls. (Bowls will be full.) Serve immediately.

Quick V8 Soup Recipe

1 pound ground beef, browned and drained
1 envelope dry onion soup mix
2 (14-16 ounce) cans mixed vegetables, juice and all
48 ounce can V8 juice

Combine all in a large pot and simmer 15 minutes or longer. Serve with crusty bread.
Serves 4 to 6.
