Pineapple Pudding Cake Recipe

i can (8 oz.) crushed pineapple
1 pkg. Jiffy (one layer) yellow cake mix
1 small pkg. (3 oz.) cream cheese, softened
1-1/2 cups milk
1 pkg. (4 servings) vanilla instant pudding mix
1 envelope Dream Whip prepared (can also use Cool Whip)
Chopped nuts
Maraschino cherries

Drain pineapple, reserving juice. Prepare cake mix, according to directions, adding pineapple juice to water to make the liquid amount the mix calls for. Pour into greased and floured 9 inch square pan. Bake at 350 for 2o to 30 minutes, or until tests done with toothpick. Cool. With electric mixer; beat cream cheese till fluffy, gradually beat in milk; add pudding mix and beat for 2 minutes at low speed.
Fold in drained pineapple. Spread on top cake and chill. Before serving top with whipped Dream Whip and garnish with nuts and a maraschino cherry.
Makes 9 servings.

These luscious bars are made with a brownie mix, and are very hard to resist!

Carmelicious Fudge Brownies Recipe

1 pkg. (family size) fudge brownie mix
20 Kraft caramels, unwrapped
3 tbsp. milk
1/2 cup semi-sweet chocolate chips
1/2 cup chopped pecans

Prepare and bake the brownie mix according to directions on the package in a 9x13" pan. Meanwhile, in small saucepan, melt caramels with the milk, stirring until smooth. Immediately after removing brownies from the oven, sprinkle with chocolate chips and pecans. Drizzle with caramel.
Cool completely before cutting into 24 bars.

You can serve these tangy meatballs over rice as a main dish, or as an appetizer. They always make a hit whenever I make them.

Honey Garlic Meatballs Recipe

1 (28 oz.) bag fully cooked frozen meatballs
1/4 cup brown sugar
1/3 cup honey
1/2 cup ketchup
2 tbsp. soy sauce (I use the low sodium)
3 cloves garlic, minced

In a medium bowl, mix together all ingredients except meatballs. Place frozen meatballs in 3 to 4 quart Crock Pot and pour sauce over. Stir so all the meatballs are coated evenly. Cover and Cook on low heat for 4 hours, stirring occasionally. Serves 6 to 8.

This easy to prepare Cornish game hen dish is quick to put together and tastes so good!

Cheese Crumbled Cornish Game Hens Recipe

2 rock Cornish game hens (12 oz. each)
1/4 cup garlic-flavored chip dip
1 cup crushed cheese crackers
1/4 tsp. dried thyme leaves, crushed
Dash pepper

Split game hens in half lengthwise; wash and pat dry. Coat well with the garlic dip. Combine crushed crackers, thyme and pepper. Roll hens in dry mixture, Place, skin side up, in shallow baking pan. Bake, uncovered, at 350 for 50 to 60 minutes, until done.
Makes 4 servings.

I'm not a big fan of Greek yogurt so will try with another kind next time.

Two Ingredient Muffins Recipe
Makes: 12-15 muffins

1-18.25 oz box, dry cake mix (any flavor you want)
2 cups plain Greek yogurt (or any flavor you wish)

Preheat oven to 350 degrees. Grease or line 12 count muffin pan.

In a bowl, mix dry cake mix with yogurt until fully combined.

Pour batter evenly into prepared muffin pan.

Bake for 15 minutes or until toothpick inserted comes clean.

Pumpkin Streusel Muffins Recipe

3 c. sugar
1/2 c. applesauce
1/2 c. canola oil
4 eggs
2 c. canned pumpkin
2/3 c. water
3-1/3 c. all-purpose flour
2 t. baking soda
1-1/2 t. salt
1 t. nutmeg
2 t. cinnamon, divided
1-1/4 c. chopped pecans, divided
1/3 c. brown sugar, packed
2 T. butter, room temperature

Combine sugar, applesauce, oil and eggs in a bowl. Beat with an electric mixer on low speed until blended; beat in pumpkin and water. In a separate bowl, whisk together flour, baking soda, salt, nutmeg and 1-1/2 teaspoons cinnamon. Add flour mixture slowly to pumpkin mixture; beat on low speed just until moistened and smooth. Stir in one cup nuts. Fill paper-lined muffin cups 2/3 full.

To make Streusel Topping, combine brown sugar, butter and remaining cinnamon and nuts; mix with fork until crumbly. Sprinkle batter with Streusel Topping. Bake at 350 degrees for 30 to 35 minutes, until a toothpick tests clean.

Batter may also be divided between 2 greased 9"x5" loaf pans; add topping and bake for about one hour. Makes 2 dozen muffins or 2 loaves.

I am always looking for healthy slow cooker recipes and tried this one yesterday:

Slow Cooker Turkey Chili Recipe
( 4-6 servings - I cut recipe in half)

1 1/4 lbs. lean ground turkey ( I use organic turkey breast)
1 large onion, chopped
1 garlic clove, minced
1 ( 1.25 oz.) envelope chili seasoning mix ( didnít have so looked
it up on internet and made my own)
1 12 oz. can of beer
1 1/2 cups frozen corn kernels
1 red bell pepper, chopped ( organic for me)
1 green bell pepper, chopped ( organic for me)
1 28 oz. can crushed tomatoes
1 15 oz can black beans, drained & rinsed (organic for me)
1 8 oz can tomato sauce
3/4 t. salt ( I use sea salt)

Toppings: shredded Cheddar cheese, finely chopped red onion,
sliced fresh jalapeŮos

Cook first 4 ingredients in skillet over med-hi heat, stirring often, 8 min. or until turkey crumbles. Stir in beer, cook 2 min., stirring occasionally. Spoon into 5 /12 qt. slow cooker, stir in corn & next 6 ingredients until well blended. Cover & cook LOW 6 hours. Serve w/toppings.
(Note! I prefer tomatoes in glass jars or boxes)

This is perfect for those of us watching our carb count. Gives the taste of chili without all the beans.

Beanless Beef Chili Recipe

1 pound lean ground beef
2 onions, sliced
2 cloves garlic, minced
1 (14-ounce) can no-salt diced tomatoes
1 (14-ounce) can low-sodium beef broth
1 (4-ounce) can chopped green chilies with liquid
1 teaspoon cumin
1 teaspoon chili powder

In a large skillet over medium heat, brown ground beef. Drain and discard excess liquid; set aside.

Add onions and garlic to skillet. Cook over medium heat about 10 minutes. Add tomatoes, broth, and green chilies. Bring to a boil and add cumin, chili powder, and ground beef. Reduce heat to low and simmer about 15 minutes.

Bacon Quiche Biscuit Cups Recipe

5 slices bacon (or Ĺ cup bacon bits Ė NOT imitation)
1 (8-oz.) pkg. cream cheese, softened
2 tablespoons milk
2 eggs
2 oz. (1/2 cup) shredded cheddar cheese
2 tablespoons chopped green onions
1 (12-oz.) can Pillsbury Golden Layers Refrigerated Biscuits

Heat oven to 375F. Spray 10 muffin cups with nonstick cooking spray. In medium skillet, cook bacon until crisp. Drain on paper towels. Crumble bacon; set aside.

Meanwhile, beat cream cheese in small bowl until smooth. Gradually add milk and eggs, beating at low speed until smooth. Stir in cheese and onions. Set aside.

Separate dough into 10 biscuits. Press or roll each to form 5-inch round. Place 1 biscuit round in each sprayed muffin cup; firmly press in bottom and up sides, forming 1/4-inch rim. Place half of bacon in bottom of dough-lined muffin cups. Spoon cheese mixture evenly into cups.

Weekly Specials at Prepared Pantry 

4 Ingredient Pie Recipe

1 can Eagle brand sweetened condensed milk
1 package lemonade or lime flavored Kool-Aid
8 oz. Cool Whip (thawed)
1 (9 inch) graham cracker or chocolate graham cracker crust

Mix milk and Kool-Aid together til thickened. Fold in Cool Whip and pour into pie shell.

Refrigerate several hours.

Sausage Gravy Recipe

1 pound ground pork sausage
3 tablespoons sausage grease
1/4 cup all purpose flour
3 cups milk
1/2 teaspoon salt
cracked black pepper

Brown sausage in a large skillet over medium high heat. Set aside, leaving the drippings in the skillet. Reduce heat to medium, combine with flour and stir constantly until mixture just turns golden brown. Gradually whisk milk into skillet. When the mixture is smooth, thickened and begins to bubble, return the sausage to skillet. Season with salt and pepper. Reduce heat, and simmer for about 15 minutes.
Serve over biscuits.

Tomato Gravy Recipe

1 28 ounce can crushed tomatoes
1/2 cup onions, chopped
4 slices of bacon
1/4 cup green peppers
3 tablespoons flour

Fry bacon in frying pan until done but not crisp, cut into pieces. Add onions and green peppers, saute until soft. Add tomatoes and simmer 20 minutes. Salt and pepper to taste. Mix flour with enough water to make a smooth paste. Add this to the other ingredients stirring constantly until thickened. Serve over rice.
Serves 4 to 6.
