Does anyone out there have a recipe for a topping for baked fish using ritz crackers and graham crackers. I know that there are other ingredients but the waitress did not know what they were, it is really very good and I am hoping someone will have an answer for me thanks in advance.

Make a Valentine Mocktail Recipe

Combine 1 cup pomegranate juice, 1 cup vanilla yogurt & 1 cup of ice. Mix in blender until creamy. Pour into martini glass. Enjoy!

Shrimp in Love Pasta (for two) Recipe

Cook large handful linguini according to pkg. directions. Drain & transfer to large bowl. Heat skillet to med-hi heat, add cup of uncooked, peeled, deveined shrimp, half a 19 oz. can diced tomatoes & half tub softened Philadelphia Spreadable Cream Cheese Spread. Stir & cook 3-4 min. or until sauce is blended & shrimp cooked through.

Toss large handful spinach leaves into cooked pasta. Pour shrimp mixture over; toss to coat. Divide between 2 bowls, or share by eating out of the same one.

This is for Sue of OH, 1-29-2016. For smaller amounts, change the quantities. Or for a heavier vanilla taste, add an extra Vanilla Bean. I started with a Rose & Ivy, Vanilla Infuser kit which can be found on-line & at Kitchen Stores.

Vanilla Bean Vanilla Recipe

Ingredients
3 Vanilla Beans
2 cups Premium Vodka

Directions
Split bean lengthwise and carefully scrape out some of the beans into container. Fill container with vodka. Seal tightly and store in cool dark place for 4-6 months. Replenish with vodka as used for up to 7 yrs.

For Lindy, who in the 1/28 newsletter wanted a sourdough starter, I don't have a recipe that I have found to consistently work. If others do not share a recipe or if you don't find one on your own, consider buying a starter. Amazon sells several sourdough starters. They are easy to use and work well and are easy to keep going.
King Arthur Flour also sells a great starter.

You might also try a local health food store in your area, if you do not want to order on line. Good Luck with all your bread making. We enjoy homemade bread a lot.

In the 1/28 newsletter Sue OH wanted to know how to make vanilla extract. some people say you should let the mixture age for up to six months before using. I think it is a matter of opinion and taste. Robbie In

Homemade Vanilla Extract Recipe

Ingredients
1 c. brandy, bourbon or Jack Daniels
6 whole vanilla beans, cut lengthwise into about 4 pieces

Directions
Combine brandy, bourbon or other favorite alcohol (even vodka) with vanilla beans in a jar with a tight fitting lid. Canning jars or wire bail fruit juice bottles with a rubber ring are especially well suited for this.

Close and allow to stand for 2-3 months, shaking 3 times a week; As it ages, it darkens. If desired, once aged, the mixture may be strained and stored and the vanilla beans reused. Or leave the beans in the mixture, adding additional alcohol as the vanilla is used. Use full strength in any recipe calling for vanilla extract.

Chicken Fried Steak Recipe

Ingredients
1-1/2 lb. round steak
2 tbs. milk
2 eggs, beaten
1 1/2 cup flour
1 tsp. salt
1/2 tsp. black pepper
1 tsp. garlic powder, optional

Preparation
You may prefer to use tenderized steak. You may also vary seasonings according to personal taste.( I use garlic powder, Greek seasoning, & sugar in most things I cook.) Cut Steak into pieces of desired size. Beat eggs slightly & add milk to eggs. Combine flour, black pepper, salt, Greek seasoning, & garlic powder & pour into a gallon freezer bag. Dip steak in egg mixture & drop into bag with flour. Shake until well coated. Fry in hot, deep fat until brown.

Cindy's Fried Dill Pickles Recipe

Ingredients
1 cup cornmeal
2 eggs beaten
2-1/4 cups flour
1 cup milk
1 Tbs. Worcestershire sauce
1/2 tsp. Tabasco
1 tsp. salt
3/4 tsp. pepper
1/4 tsp. Mrs. Dash
1/4 tsp. Garlic Powder
3/4 tsp. Cayenne Pepper
1 qt. sliced dill pickles
Vegetable Oil
salt & pepper

Directions
Combine 2 eggs, 1/4 cup flour, milk, Worcestershire sauce, Tabasco, cayenne pepper Mrs. Dash, and Garlic Powder; stirring well. Set aside. Combine cornmeal, 2 cups flour, salt, and pepper: mix well. Dip drained pickles into milk mixture and dredge in flour mixture. Deep fry at 350 degrees until golden brown. Drain. Salt and Pepper to taste.

Cindy's Fried Cabbage Recipe

Ingredients
1 head cabbage, shredded
4 slices bacon
1 onion, sliced thin
1 tsp. Salt
1/2 tsp. black pepper
1 tsp. sugar

Preparation
Fry bacon in large skillet, until crisp. Crumble bacon. A little extra oil may be added if needed. Add cabbage, sugar, onion, salt, and pepper; sauté (stirring to keep from sticking) until cabbage is partially cooked. Turn heat to high. Allow cabbage to cook until tender & lightly browned.

Green Beans and Red Potatoes Recipe

Ingredients
1-1/2 lbs. fresh green beans
5 cups water
1 tsp. salt
1/2 tsp. pepper
2 cups. small, whole, new potatoes
6-8 slices of bacon

Directions
Wash beans. Trim ends and remove strings. Break or cut into 1 inch pieces. Place in a large saucepan. Add water to cover then add , salt, pepper, bacon, and potatoes. Bring to a boil, then reduce heat. Cover and simmer until vegetables are tender. If potatoes get ready before the beans, remove the potatoes until beans are tender. Add potatoes back & heat. You may substitute margarine instead of bacon. If anyone does not know what new potatoes are, they are small, fresh, red potatoes.

Sue's Pineapple Upside Down Cake Recipe

Ingredients
1 cup sugar
2 tsp. baking powder
3 eggs, slightly beaten
1 cup flour
6 tbs. pineapple juice
1/2 box brown sugar
3/4 stick margarine, melted
1 can sliced pineapple

Directions
Drain pineapple reserving 6 tbs. of juice. Mix together sugar, eggs, baking powder, flour & 6 tbs. pineapple juice. Put melted margarine in bottom of iron skillet. Sprinkle brown sugar over margarine. Arrange sliced pineapple over the brown sugar. Pour cake batter over pineapple. Bake at 350° for 45 to 50 minutes.

Sue's German Chocolate Cake Recipe

Ingredients
1 pkg. sweet German chocolate
1 tbs. vanilla
1 cup shortening
pinch of salt
2 cups sugar
4 eggs yolks, beaten
1 cup buttermilk
4 egg whites, beaten
2-1/2 cups flour
1 tsp. soda

Icing:
3 egg yolks
1 tbs. flour
1 cup sugar
1/4 tsp. salt
1 tsp. vanilla extract
1 lg. can evaporated milk
1 stick margarine
1/2 cup chopped pecans
1 cup flaked coconut

Directions
Melt chocolate over boiling water. Add vanilla & salt to melted chocolate & set aside. Cream shortening & sugar. Add beaten egg yolks. Add 3/4 cup buttermilk alternately with flour. Combine soda & remaining 1/4 cup buttermilk & add to mixture. Stir in chocolate & fold in beaten egg whites. Divide into 3 9 inch pans. Bake at 350° for 25 to 30 minutes.

Icing Diretions
Beat egg yolks and set aside. Combine flour, sugar, & salt. Stir in milk. Add margarine and cook over low heat until margarine is melted. Pour a small amount over egg yolks & beat then add to sugar mixture. Add coconut & pecans. Cook until thick, stirring constantly. Remove from heat & add vanilla. Spread between layers & over cake.

Betsy's Vegetable Casserole Recipes

Betsy's Green Bean Casserole Recipe

Ingredients
1 can cream of mushroom soup, low-fat
1/2 cup reduced fat potato chips, crushed
2 cans green beans (drained)
dash of black pepper
3/4 cup chopped onion
1 small can mushroom pieces

Directions
Sauté' onion. Pour soup into a quart casserole. Add sautéed onion , both cans green beans, & pepper. Mix well. Sprinkle crushed potato chips on top. Bake at 350° F for 25 minutes.

Betsy's Squash Casserole Recipe

Ingredients
2 cups cooked yellow squash
1/2 cup fat-free margarine
Egg Beaters to equal 2 eggs
1 tsp. salt
1/2 tsp. black pepper
1 cup chopped onion
1 cup grated cheese, fat-free
1 cup evaporated skim milk
2 cups crushed Ritz Crackers, reduced fat
non-fat cooking spray

Directions
Cook, drain & mash squash. Add remaining ingredients except cheese & mix well. Pour into a baking dish sprayed with non-fat cooking spray. Top with grated cheese about 15 minutes before finished baking. Bake at 375° for 45 minutes.

Betsy's Carrot Casserole Recipe

Ingredients
1 can cream of mushroom soup, fat-free
1/2 cup onion, finely chopped
2 16 oz. cans carrots, diced
1/2 cup potato chips, reduced fat
2 pkg. Sweet n Low or substitute sweetner
non-fat cooking spray

Directions
Sauté onion in a pan sprayed with cooking spray. Combine mushroom soup & sautéed onion. Alternate layers of carrots & soup mixture in a 1 quart, greased casserole dish. Bake at 325° F for 20 to 25 minutes. Just before removing from oven, sprinkle with crushed chips. Brown lightly.

Tamale Pie Recipe

Ingredients
2 cups yellow corn meal
1 tsp. salt
2 cups cold water
4 cups boiling water
1 lb. ground chuck
1 chopped onion
1 tsp. garlic powder
1 tsp. salt
1 can tomatoes
1 chopped bell pepper
1 tbs. chili powder
1/8 tsp. black pepper
non-fat cooking spray
2 tbs margarine

Directions
Brown ground chuck. Add onion & bell pepper & cook until tender. Add chili powder, black pepper, garlic powder, 1 tsp. salt & tomatoes. Simmer for 10 minutes & keep warm. Mix cornmeal with cold water. Add boiling water & cook about 15 minutes, or until thick. Add 1 tsp. salt. Spray a casserole dish with cooking spray. Use 2/3 of cornmeal mixture on bottom & sides of casserole dish. Pour meat mixture into casserole dish. Spread the remaining 1/3 of cornmeal mixture over meat mixture. Dot with margarine. Bake at 375° for 40 minutes.

Judy's Crock Pot Main Dish Recipes - Part 1
This recipe for for the newly wed. It is easy to make. Just add a salad and a vegetable with it and it is a meal.

Judy's Crockpot Swiss Steak Recipe

Ingredients
1-1/2 lbs. round steak, trimmed of fat
1 chopped carrot
1 cup chopped celery
1 can tomato sauce
1 onion, sliced
2 tbs. flour
1 tsp. salt
1/4 tsp. black pepper
1 tsp. garlic powder

Directions
Cut steak into serving pieces. Combine flour, garlic powder, salt, & pepper & sprinkle over meat. Mix well & put into crock pot. Add carrot, celery, & onion. Pour tomato sauce on top. Cook on low for 8 to 10 hours.

Note: I add a can (14 to 16 ounce) of whole tomatoes. It is good with Italian tomatoes too.

Judy's Crockpot Spaghetti Recipe

Ingredients
1-1/2 lbs. extra lean ground chuck
1 cup onion , diced
1 cup bell pepper chopped
Large can tomato sauce
1 tsp. oregano
1 pkg. Spaghetti seasoning mix
1/2 can mushrooms
12 oz. pkg. spaghetti, cooked
Parmesan cheese, if desired

Directions
Heat crockpot. Brown beef, bell pepper & onion in non-stick skillet. Drain and place in crockpot. Add mushrooms, tomato sauce, spaghetti seasoning, & oregano. Cook 8 to 10 hours on low or 6 to 8 hours on high. Cook spaghetti according to package direction. Serve sauce over cooked spaghetti. Top with Parmesan cheese as desired.

A while back someone was asking for a split pea soup recipe. This is one we have used for a long time.

Mary's Crockpot Split Pea Soup

Ingredients
16 oz. pkg. dried green split peas
2 cups ham, trimmed of fat & diced
3 carrots, sliced
1 onion, chopped
2 stalks celery, diced
2 pkg. sugar substitute
1/4 cup fresh parsley, chopped
2 cloves garlic, minced
1 bay leaf
6 cups hot water
salt & pepper to taste

Directions
Wash peas & place in crockpot. Add remaining ingredients to crockpot. Do not stir. Cover and cook on high 4 to 5 hours or on low 6 to 8 hours (or until peas are very soft). Remove bay leaf. Leftovers may be frozen.

Jackie's Salad Recipes

Jackie's Tuna Pineapple Salad Recipe

Ingredients
1 can white tuna in water
20 oz. can pineapple chunks, in own juice
1 can mandarin oranges
1 tbs. soy sauce
1 tbs. vinegar
1/4 cup sugar
3 tbs. cornstarch
1 tsp. chicken bouillon crystals

Directions
Drain pineapple & orange & mix with soy sauce and vinegar. Combine sugar, cornstarch, & bouillon crystals & add to fruit mixture. Drain tuna & add to mixture. Add drained pineapple & mandarin oranges. Chill well.

May be served on lettuce leaves or fruit halves.

Jackie's Tuna Macaroni Salad Recipe

Ingredients
1 can tuna, drained & flaked
8 oz. shell macaroni, cooked
1/4 cup bell pepper, chopped
1 cup Miracle Whip
1/4 cup onion, finely chopped
1/2 cup celery, chopped
Salt & Pepper to taste

Directions
Cook macaroni according to package directions & drain. Rinse with cool water & drain well. Add remaining ingredients to prepared macaroni. Mix well.

Judy's Crock Pot Chili Recipe

Ingredients
1-1/2 lbs. ground chuck
1 bell pepper, chopped
1 cup chopped onions
1 cup chopped celery
1 can kidney beans
1 can tomato sauce
1 can northern beans
1 pkg. chili seasoning
1 can tomatoes
2 tbs. sugar
1 tsp. garlic powder
Salt and pepper to taste

Directions
Brown meat in a large skillet. Add celery, onion & bell pepper & cook until almost done. Drain & place in crock pot. Add remaining ingredients to crock pot & stir to mix.
Cook 4-6 hours.

Judy Crockpot Lemon Pepper Chicken Recipe

Ingredients
4 chicken breasts
2 tbs. margarine
1 tsp. salt
1/4 tsp. black pepper
1 tsp. garlic powder
lemon pepper
paprika
1/2 cup chicken broth or water

Directions
Rub the chicken breasts with margarine & season with salt & pepper. Sprinkle chicken generously with lemon pepper, garlic powder, & paprika. Pour broth into crock pot & add chicken. Cook on high for 3 to 4 hours or or low for 6 to 8 hours. Cook until chicken is well done.

Crockpot Beef and Vegetables Casserole Recipe

Ingredients
3 potatoes, sliced
3 carrots, sliced
2 onions, sliced
2 cups frozen English peas
1 1/2 lb. ground chuck
2 stalks celery
1 tsp. garlic powder
1 (10 ounce) can condensed tomato soup
salt & pepper to taste
1 soup can water

Directions
Peel and slice carrots, celery, potatoes, and onions. Place in bottom of crockpot. Season with garlic powder, salt and pepper. Brown meat, drain & spread evenly over vegetables. Combine soup and water & add to crockpot. Cover and cook on low 5 to 6 hours; stirring occasionally.
Serves 8 to 10.
