Hello Everyone in Nancyland,
I just wanted to let everyone know that Arlene/Mo Oatmeal-Sunflower Bread recipe is delicious. We will be making it again. Arlene if you have any other bread recipes I would love to see them. I am sending in a wonderful Cinnamon Raisin Bread Recipe that my husband makes. I have never tasted a Raisin Bread that is so good. The crust is crunchy and it is absolutely delicious toasted with butter.

Cinnamon Raisin Bread [2 lb loaf]:Recipe

I make the dough in the bread machine, but use the oven for the final rise and cooking the bread.

Ingredients (in order they should be put in the bread machine pan):
1cups water
1˝ tsp salt
3 TBSP vegetable oil
4 cups white flour (I use 3 cups of unbleached white bread flour and 1cup of whole wheat flour)
1/3 cup skim milk powder
4 TBSP packed brown sugar
1˝ tsp ground cinnamon
1 tsp active dry yeast
1˝ cups golden seedless raisins

Directions
Set machine to <Basic Dough>. Proof the dough in the oven for 50 minutes. When this is complete, preheat oven to 350 degrees F and cook the loaf for 45 minutes.

Supper Nachos Recipe

Ingredients
1 lb. lean ground beef
1 large onion chopped
1/2 tsp. cumin
2 cans refried beans
1 pkg. Taco Seasoning mix
Nacho chips
2 cup grated Monterey Jack cheese
Salt, to taste
4 oz. can chopped green chilies, drained
3/4 cup taco sauce

Directions
Combine meat, onion and cumin in a large skillet; cook, stirring over moderately high heat until meat browns. Drain.
In separate bowl, combine beans, seasoning mix and Monterey Jack cheese.
Blend together. Add salt to taste. Put in 10 X 15 inch dish. Cover with meat mixture, sprinkle with chilies. Top with cheddar cheese. Distribute taco sauce evenly on surface.
Bake at 400 degrees for 25 min. Tuck chips around the edge.

Upside Down Pizza Recipe

Ingredients
2 lb. hamburger
1 onion chopped
2 8 oz cans tomato sauce
1 package dry spaghetti sauce mix
1 cup sour cream
2 or more cups mozzarella cheese or low fat cheese
1 can crescent rolls
Parmesan cheese

Directions
Brown hamburger with onion. Mix and simmer meat with tomato sauce and spaghetti sauce mix. Put meat into a 9 X 13 inch pan.

Spread sour cream on top. In place of sour cream , you may want to use 1 cup low fat cottage cheese blended with a small amount of low fat buttermilk in a blender. Sprinkle on cheese. (In roll crescent rolls on top. Sprinkle parmesan cheese over rolls.

Bake at 350 degrees for 20 min. Serves 8

No Work Standing Rib Recipe

1 standing rib roast, any size

Preheat oven to 350 degrees. After 1 hour roasting, turn oven off. DO NOT PEEK! 45 minutes before serving, turn oven on to 350 degrees. Roast will be tender and pink.

I made the Peach BBQ Sauce and used it on chicken. It was very good and the chicken had a great taste to it.

Two months ago I adopted a young cat from the local shelter. Since then I have seen her once, briefly.

I have set up a secluded bed with several toys in front. Also a bowl of food in my upstairs bedroom in an attempt to tempt her.

Although I don't get to see her she gives me pleasure. She does cute things with her toys like collecting them and putting them in line on her bed. One night she just took the blanket and covered them.

Anyone have ideas how to make her feel secure enough to come out? I've tried only putting food out during the day and she went hungry 2 1/2 days before I gave in.

Nancy I read sometime back that when the lights go out to bring in a solar light from outside and surround it with something to hold it up and you have light. Also there was something about using two bricks and put several of tea lights between them, then across the top place aluminum foil and you can warm food. Someone else might be able to add more idea's in what to do in case of power failure.

Many years ago a friend (Gaye Chapman) gave me this recipe. She used drumsticks when she made it, and I first started using thighs, but now I use breasts to make it. It is a family favorite, and I like it because I can prepare it on Saturday night, let it marinate overnight, and then just bake it when I get ready for lunch the next day.

California Chicken Recipe

Spray or grease a 9 X 13 pan, and in it combine the following:
6 oz. frozen orange juice concentrate, undiluted
2 tsp. salt
1/4 tsp. pepper
4 tsp. soy sauce
2 tbsp. butter, melted (I use cooking oil)
2 tsp. ground ginger

Directions
Add chicken to fill the dish in a single layer. I always use skinless chicken. The directions say 5 lbs, but I use what I have. Marinate for several hours. Bake uncovered at 350 degrees for an hour. Baste occasionally.

For Judy in Montana. Taste of Home has these instructions for converting bread machine recipes to be made by hand. I only use the bread machine to make the dough, then I shape it, and put in a loaf pan for the last rise. I usually bake mine at 350 degrees. Good luck! Arlene/Mo.

I don't own a bread machine. Could you please tell me how to make the dough for bread machine recipes without a bread machine? — J.A., Honolulu, Hawaii

I don't own a bread machine, either, but my favorite dinner roll recipe starts out in a bread machine. Any bread machine recipe can be made by hand if you follow steps common to most yeast breads. This method is for recipes using active dry yeast:

1. In a large bowl, dissolve yeast in warm water (110° to 115°).

2. If any of the following are included, add the eggs, additional liquid, sugar, honey, herbs, salt and most of the flour.

3. Beat until smooth.

4. Add enough remaining flour to form a soft dough that pulls away from the sides of the bowl.

5. On a lightly floured surface, knead dough until smooth and elastic.

6. Place in a large bowl coated with cooking spray, turning once to coat the top.

7. Cover and let rise in a warm place until doubled.

8. Punch dough down; shape dough, let it rise and bake as directed in the recipe.

Marinated Corn Salad Recipe

Ingredients
1 3/4 c. yellow corn, cut from cob (about 4 ears)
1/2 c. chopped celery
2 tbsp. thinly sliced green onions
3 tbsp. vegetable oil
1/2 tsp. Salt
1/8 tsp. Pepper
1/4 c. water
1/2 sm. green pepper, cut into 1/2" strips
1 tbsp. chopped pimiento
1 tbsp. chopped fresh parsley
1 tbsp. cider vinegar
1/2 tsp. dry mustard

Directions
Combine corn and water in a medium saucepan. Bring to a boil; cover, reduce heat and simmer 7 to 8 minutes or just until corn is tender; drain. Combine corn, green pepper, celery, pimiento, green onions and parsley. Combine oil, vinegar, salt, mustard and pepper in a jar. Cover tightly; shake vigorously. Pour over salad; cover and chill 4 hours.
4 to 6 servings.

Creole Corn Recipe

Ingredients
2 slices Bacon
2 cups fresh corn
4 lg. fresh tomatoes
Green pepper
Onion
1 c. fresh okra

Directions
Fry bacon and add corn, tomato, green pepper, onion and okra. Cook 30 to 45 minutes so as not to be soupy.

Herbed Corn on the Cob Recipe

Ingredients
4 ears fresh corn
1 tbsp. dried whole dillweed
1 tbsp. dried whole thyme
1 clove garlic, minced
1 tbsp. water
1 tbsp. cooking oil

Directions
Remove husks and silk from corn. Combine dill, thyme, garlic water and oil in a small bowl, stirring well. Brush herb mixture on corn and place each ear on a piece of aluminum foil, wrap tightly. Bake at 450 degrees for 25 min

Corn Souffle Recipe

Ingredients
2 c. fresh corn cut from cob
1 c. milk
2 tbsp. Butter
2 tbsp. Flour
1 tsp. Salt
1 tbsp. Sugar
Pepper
3 eggs

Directions
Cut corn from cob, add milk, butter, flour and seasoning. Stir in eggs, which have been beaten until light. Pour into buttered 4 cup baking dish and bake in 350 degree oven for 50 to 60 minutes or until firm like a custard.
Serves 6 people.

Spaghetti And Cucumber Salad Recipe

Ingredients
1 lb. spaghetti (break into 3-inch
lengths before cooking)
2 lg. tomatoes, chopped
2 cucumbers, chopped
1 sweet onion, chopped
1/2 c. broccoli florets
1/2 c. red and green peppers, chopped
2 sm. zucchini, chopped
12 oz. Seven Seas Herbs and Spices or
Viva Italian salad dressing
1/2 jar McCormick Salad Supreme

Directions
Cook spaghetti; drain and cool. Add remaining ingredients and toss well. Marinate in refrigerator overnight (or at least several hours). Add any other chopped vegetables.

Cucumber Rings Salad Recipe

Ingredients
2 lg. cucumbers, thinly sliced
4 (4 oz.) cans pimientos, drained and sliced
2/3 c. vegetable oil
1/4 c. white wine vinegar
1/2 tsp. salt
2 c. sour cream

Directions
Mix together cucumber and pimiento strips. Shake oil, vinegar and salt together. Pour over cucumbers and chill 1 hour. Drain well. Just before serving, blend with sour cream. Chopped green onion tops may be added while cucumbers are marinating, if desired.
Serves 12.

Sour Cream Cucumber Salad Recipe

Ingredients
2 medium cucumbers
1 1/2 tablespoons sugar
1 1/2 tablespoons cider vinegar
1/2 teaspoons salt
1/8 teaspoons pepper
1/2 cups sour cream
1 tablespoons fresh parsley, minced

Directions
Slice cucumbers paper-thin. Sprinkle slices with sugar, vinegar, salt and pepper. Marinate for 20 minutes, drain off liquid, and toss lightly with sour cream. Top with minced parsley.
Makes 4 Servings

Marinated Three Bean Salad Recipe

Ingredients
1 (8 1/2 oz.) can lima beans
1 (8 oz.) can cut green beans
1 (8 oz.0 can red kidney beans
1 med. onion, thinly sliced and separated into rings
1/2 c. chopped green pepper
2/3 c. vinegar
1/2 c. salad oil
1/4 c. sugar
1 tsp. celery seed

Directions
Drain the canned beans. In a large bowl combine the lima beans, green beans, red kidney beans, onion rings, and green pepper. In a screw top jar combine vinegar, salad oil, sugar and celery seed; cover and shake well. Pour vinegar mixture over vegetables and stir lightly. Cover and chill at least 6 hours or overnight, stirring occasionally. Drain before serving.

Spanish Green Beans Recipe

Ingredients
3 3/4 c. fresh green beans
1 onion, chopped
2 tbsp. reduced calorie margarine
1 1/2 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. pepper
5 med. tomatoes, diced
2 med. green peppers, chopped

Directions
Cut beans into 1 1/2 inch pieces; wash thoroughly and drain. Sauté onion in margarine in nonstick skillet until tender. Add beans, salt, garlic powder and pepper. Cover and continue to cook over low heat for 10 minutes, stirring frequently. Stir in tomatoes and green pepper. Cover and simmer 25-30 minutes or until beans are tender.
