Low Carb Tortillas Recipe

1/4 cup plus 2 tablespoons water
2 eggs
2 tablespoons extra virgin olive oil
1 1/2 tablespoons of coconut flour
2 tablespoons of almond flour
1/2 tablespoon of ground flax seed
1/4 teaspoon baking powder

In a bowl whisk together water, eggs, and olive oil. In a separate bowl mix together coconut flour, almond flour, flax seed and baking powder. Mix the dry ingredients into the wet ingredients. Whisking as you pour so clumps don’t form.

In a medium to large frying pan heat several tablespoons of olive oil over medium high heat. When the oil is hot pour 1/4 cup of batter in the pan, tilting the pan so the batter spreads thinly.
Cook the batter for about 2 minutes or until it is slightly “toasted” looking. Flip the tortilla and fry for 2 more minutes.

Banana Pudding Recipe

1 box instant vanilla pudding
1 can Eagle Brand condensed milk
8 oz. container Cool Whip
Vanilla wafers

Mix vanilla pudding as instructed on package in overly large bowl. Add Eagle brand milk and continue stirring. Fold in Cool Whip until well blended (pudding will be thick). Layer with bananas and vanilla wafers.

Banana Split Shortcake Recipe
Makes 9 servings

2 1/3 cups Bisquick Original baking mix
1/2 cup milk
3 tablespoons sugar
3 tablespoons margarine or butter, melted
1 pint vanilla or chocolate ice cream
1 package (10 ounce) frozen strawberries in syrup, thawed
2 medium bananas, sliced
1 cup frozen (thawed) whipped topping
1/3 cup chocolate fudge topping, heated

Heat oven to 425 degrees. Stir baking mix, milk, sugar and margarine until soft dough forms. Drop by 9 spoonfuls onto ungreased cookie sheet. Bake 9 to 11 minutes or until golden brown. Split warm shortcakes. Fill and top with ice cream, strawberries, bananas, whipped topping and fudge topping. High Altitude (3500-6500 ft): Heat oven to 450°. Decrease sugar to 1 Tbsp.

Foil Grilled Banana Boats Recipe

Chocolate chips
Miniature marshmallows

After the coals from a campfire are glowing red, take a piece of foil and put together the following ingredients - to be enclosed in the foil and cooked on the coals: 1 banana in the peel - split lengthwise. Cut the banana (inside) in chunks - leaving it in the peeling. Sprinkle with chocolate chops and miniature marshmallows - wrap up securely in foil and roast.

Banana and Strawberry Shake Recipe

1 can (12 oz.) sugar free strawberry flavored carbonated beverage, chilled.
1/4 c. strawberry ice cream
1 med. banana, sliced
2 ice cubes
2 large strawberries

Place all ingredients except strawberries in blender. Cover and blend on high speed until well mixed, about 30 seconds. Garnish each shake with 1 strawberry. Serve immediately.
Serves 2.

Banana and Glazed Fruit Recipe

1 lg. pkg. of vanilla or banana instant pudding
3 lg. bananas
1 jar red cherries
1 lg. can sliced cling peaches
2 cans mandarin oranges
2 cans pineapple tidbits
2 cans fruit cocktail

Slice bananas. Drain all fruit and reserve liquid from pineapple, oranges and a small amount from cherries and use as the liquid for the pudding mix. Combine all fruit (cut cherries in half) and pour pudding over fruit mix gently and refrigerate.

Banana Cake with Cream Cheese Icing Recipe

2-1/4 Cups sifted flour
1-1/4 Cups sugar
2-1/2 Teaspoons baking powder
1/2 Teaspoon baking soda
1/2 Teaspoon salt
1/2 Cup butter, softened
1-1/2 Cups mashed, ripened bananas
2 eggs
1 Teaspoon vanilla

Mix the flour, sugar, baking powder, baking soda and salt; sift together in large bowl. Add softened butter, 1/2 cup mashed bananas and the eggs. Beat 2 mins. Add remaining bananas and vanilla. Beat 1 minute. Bake 375 degrees, in 2 well greased 8" round cake pans, for 25 min.

Crean Cheese Icing
beat well:
1/2 pound sifted powdered sugar,
1/4 cup softened butter,
8 oz. softened cream cheese and
1 tsp. vanilla.
Spread on cooled cake.

Banana Cookies Recipe

3/4 cup shortening
1 cup sugar
1 egg
1 teaspoon vanilla
3/4 teaspoon cinnamon
1 cup rolled oats
1-1/2 cup flour
1/2 teaspoon baking soda
1 teaspoon salt (optional)
1/2 teaspoon nutmeg
1 cup mashed banana
1/2 cup nuts

Cream shortening, sugar, egg, and vanilla. Add the dry ingredients and blend thoroughly. Add mashed bananas and nuts. Spoon onto cookie sheet and bake at 350F for 10-15 minutes, depending on size.

Banana Apple Salad Recipe

4 sweet apples (2 red, 2 yellow not peeled)
2 bananas
2 c. dry roasted peanuts
1/2 c. mayonnaise
2 tbsp. honey
2 tsp. orange juice

Cut apples into small pieces and combine with sliced bananas and nuts. Mix mayonnaise, honey and juice. Combine lightly with fruit. Serve on lettuce leaf. Serves 4-5.

Applesauce Banana Bread Recipe

3 1/2 cups self-rising flour
1 cup chopped pecans
2 1/2 cups
4 eggs, beaten
3/4 cup vegetable oil
2 tsp. vanilla
3 very ripe bananas, mashed well and with enough applesauce added to make a total of 2 cups applesauce-banana mixture.

Combine all ingredients in a bowl. Grease two loaf pans or muffin pans. Fill pans with batter. Bake at 350 degrees for one hour or till done. Cool on wire racks. Brush loaves with soft butter while still warm. Enjoy....

Banana Split Pie Recipe

1 1/2 bananas, sliced
1 prepared graham cracker crumb crust (6 oz.)
2 cups cold milk
1 package (4 serving size)Jell-O Vanilla or Banana Cream Flavor Instant Pudding & Pie Filling
1 tub (8oz.) Cool Whip, thawed
Chocolate, strawberry,and pineapple dessert toppings
Additional banana slices
Chopped nuts

Arrange banana slices on bottom of pie crust; set aside. Pour milk into large bowl. Add pudding mix. Beat with wire whisk 1 minute. Gently stir in 2 cups of the whipped topping. Spread over banana slices. Freeze 6 hours or until firm. Let stand at room temperature or in refrigerator 15 minutes or until pie can be easily cut. Top with dessert toppings, remaining whipped topping, banana slices and walnuts.
Makes 8 servings

Banana Pudding Cake Bread

1 med. or 2 sm. bananas
1 yellow cake mix
1 sm. pkg instant banana pudding mix
4 eggs
1 cup water
1/4 cup oil
1/2 cup chopped nuts (optional)

Slice bananas into mixing bowl. Beat till well mashed. Add remaining ingredients. Blend; then beat at med. speed for 2 min. Pour into a well greased and floured 10 in tube pan or bundt pan. Bake @ 350 for 60- 70 min. or till done. Sprinkle with powdered sugar when cool. May also be baked in a 9x13 pan for 50-55 min. also.

Crock Pot Banana Nut Bread Recipe

1/3 c shortening
1/2 c sugar
2 eggs
1-3/4 c all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c mashed ripe bananas
1/2 c chopped walnuts

Cream together shortening and sugar; add eggs and beat well. Sift dry ingreds; add to creamed mixture alternately with banana, blending well after each addition. Stir in nuts. Pour into well-greased 4-6 cup mold (I used a ceramic souffle dish). Cover with foil and tie a string tightly around it to keep foil down. Pour 2 cups hot water in slow-cooking pot. Place mold on rack or trivet (I modified a metal veggetable steamer) in pot. Cover with crockpot lid and cook on high 2 to 3 hours or until bread is done. Be sure not to check bread during the first 2 hours of cooking.

Frozen Banana Salad Recipe

1 c. sugar
1/2 tsp. salt
1 1/2 tbsp. flour
1 c. crushed pineapple, drained, 3/4 juice reserved
1 egg
2 tbsp. vinegar
3 bananas, mashed
12 maraschino cherries
1 pkg. Dream Whip, whipped

Combine sugar, salt, flour, pineapple juice, egg and vinegar in saucepan. Cook and stir until thick. Cool. Fold in remaining ingredients. Pour in 8 x 8 inch pan. Freeze.

Fried Bananas Recipe

1 banana
1 egg
Bread crumbs

Cut banana in half. Beat egg. Roll banana in egg, then in bread crumbs. Fry in oil until golden brown.
