Good morning Nancy and all Landers,
Newsletter look wonderful this morning. Nancy, don't the kitties act like people lol. My big male (now 28 pds he is part Mane Coon- six toes on back feet) taps me on the leg for a treat. When I give him ONE he whacks me really hard on the leg because he wants another one in case I forget lol. When one of my little females wants to go out on the porch
and the patio door is shut she comes over to me and won't quit meowing til I let her out. When I have the A/C on I shut the porch door. The male will follow me around the house meowing til I get the message that their food bowl is empty. Now who is trained me or them lol.

There are two mama cats that bring over their little kittens each day to play in my fenced in backyard. Because the temps here have been above 100 degrees almost everyday, I put out some water dishes yesterday so they would have water to drink. When I looked outside yesterday both the kitties and the birds first drank the water and then played in the water.

Today I want to Walmart and got some shallow plastic containers usually used to put under large flower pots. I thought they would be the perfect water containers for the little kittens that come visit in the back yard. I got 4 of them so that there would be enough for both the kitties and the birds. I put them in the yard and the birds and the kitties had so much fun splashing in them. I thought the shallow dishes would be safer for the little kittens since they are barely walking. Ditto and Little One were making sweet sounds as they watched them. After the cats went home I went out to dump the water out of them. I looked out of the window and saw the cats were gone but there were two squirrels playing in the water. I waited a few minutes before I went out to dump the water. I didn't realize my backyard was a day spa for birds, cats and squirrels.

Nancy, I have a question concerning a recipe and it is Applesauce Banana Bread. The third ingredient down says 2 1/2 cups of what? I would like to try this bread because I am tired of bread from the store.

I'm having Macaroni Beef Casserole tonight for dinner because it is so easy to make. I have done this in the oven and in my Crock Pot

Macaroni Beef Casserole Recipe

1 lb beef, cooked
1 1/2 to 2 cups macaroni
1/2 medium onion, chopped
1 to 3 cloves garlic, mashed
1, 28 oz, can tomatoes, diced
1/3 cup beef stock
1 cup mozzarella cheese or any cheese you wish to use

If using the oven method cook the beef, the macaroni and I throw the rest ingredients making sure to use half of the cheese. Put this in a casserole dish putting it in the oven at 350 degrees for 45 minutes to 1 hour. The last 10 minutes put the rest of the cheese on top. Now the Crock Pot method is cooking the beef then add the rest ingredients to the pot, Set the Crock Pot on low and cook for 6 to 8 hours depending if pot is old or new. Enjoy

Angel Hair Pasta with Chicken Recipe

2 tbsp olive oil, divided
2 skinless, boneless chicken halves, cut into 1-inch cubes
1 carrot, sliced diagonally into 1/4-inch pieces
1 onion, chopped
1 (10 oz pkg) frozen broccoli florets, thawed
2 cloves garlic, minced
12 ounces angel hair pasta
2/3 cup chicken broth
1 tsp dried basil
1/2 cup grated Parmesan cheese
Salt and pepper to taste

Heat 1 tablespoon oil in a skillet over medium heat. Add chicken, cook, stirring until chicken is cooked, 5 minutes. Remove from skillet and drain on paper towels.
Heat remaining oil in same skillet. Begin to boil water for pasta. Add carrot to skillet, cook, stirring for 4 minutes. Add onions and broccoli and garlic to skillet. Cook, stirring for 2 min.

Cook pasta as directed. Add chicken broth, basil and Parmesan to skillet. Stir to combine.

Return chicken to skillet. Reduce heat and simmer for 4 min. Drain pasta. Place in a large serving bowl. Top with chicken and vegetable mix.

Serve with extra Parmesan cheese.

Lemon Cream Fruit Tart Recipe

1 3/4 cups graham cracker crumbs
3 tablespoons granulated sugar
1/2 cup (1 stick) butter, melted
1 (.25 ounce) envelope unflavored gelatin
1/4 cup water
1 (8-ounce) package cream cheese, softened
1 cup lemon Greek yogurt
3/4 cup heavy cream
1 1/2 cups confectioners' sugar
3 tablespoons lemon juice
1 teaspoon lemon zest
Assorted fruit for garnish

In a medium bowl, combine graham cracker crumbs, granulated sugar, and butter; mix well. Press mixture into bottom of 9-inch springform or tart pan. Refrigerate until ready to fill.
In a small, microwave-safe bowl, sprinkle gelatin over water; let stand 5 minutes. Heat in microwave on high power for 20 seconds, then stir thoroughly until gelatin is completely dissolved.

In a large bowl, beat cream cheese and yogurt until creamy. Add heavy cream and confectioners sugar and beat 2-3 minutes or until thickened and fluffy. Beat in lemon juice, lemon zest, and gelatin mixture until smooth. Pour lemon mixture into crust.

Cover and refrigerate 8 hours or overnight. Garnish with fruit.

Note: To take this over the top, in a small bowl, whisk 1/2 cup confectioner’s sugar and 1 tablespoon of your favorite coffee creamer. Drizzle over tart.

Hillbilly Pasta Bake Recipe

1 pound ground beef
1 cup chopped onion
1 green bell pepper, chopped
1 teaspoon salt
1/2 teaspoon black pepper
2 (10-3/4-ounce) cans tomato soup
1 (8-1/2-ounce) can cream-style corn
1 (16-ounce) package processed cheese spread, cut into cubes
1 (16-ounce) package elbow macaroni, cooked according to package directions

Preheat oven to 350 degrees F. Coat a casserole dish with cooking spray.

In a soup pot over medium-high heat, cook ground beef, onion, green pepper, salt, and pepper 6 to 8 minutes, or until beef is no longer pink. Stir in remaining ingredients including macaroni; mix well. Pour into prepared casserole dish and cover with foil.

Bake 45 minutes, then uncover and continue baking 10 minutes, or until bubbly and hot in center.

Meatball Casserole Recipe

1 bag frozen meatballs
½ lb. pasta, your choice, cooked as package directs.
3 cups marinara sauce
2 cups shredded mozzarella cheese

Preheat oven to 350. Spray a 9 x 13 inch casserole with cooking spray. Layer meatballs, pasta and marinara sauce with half of the cheese. Cover and bake for 45 minutes til meatballs are heated through. Uncover and top with remaining cheese. Bake for 10 minute more or til cheese is browned and bubble. This is great served with garlic bread. Just pop a frozen loaf in the oven when you put in the casserole for the second time.

Coffee Brownies Recipe

4 large eggs
2 T. instant coffee
1 t. vanilla extract
¾ cup butter or margarine, 1 ½ sticks
4 squares (4 oz) unsweetened chocolate
2 cups white sugar
1 cup flour
1 cup toasted coarsely chopped nuts, optional

Heat oven to 350. Line a 13 x 9 inch baking pan with foil; lightly butter foil. Stir eggs, instant coffee and vanilla in small bowl til well blended; set aside. Microwave butter and chocolate in microwavable bowl on high for 2 minutes or til butter is melted. Stir til chocolate is completely melted. Stir sugar into chocolate mixture til well blended. Mix in egg mixture. Stir in flour and nuts. Spread batter in prepared pan. Bake for 30 minutes or til toothpick inserted in center comes out clean. Don’t over-bake. Cool completely in pan on wire rack. Cut into squares to serve. Store in tightly covered container. Makes 24 brownies.

Note: If you have a recipe for a bittersweet coffee glaze, it goes very nicely spread over the brownies. It’s optional, though.

Drink's Buttery Rice Recipe
Seeing all the BBQ recipes in yesterdays Newsletter prompts me to post this "guaranteed" Side Dish recipe that will go well with any BBQ entree and also with almost anything else, especially seafood and chicken. The first posting is the recipe as I received it and the second recipe is as I have tweaked it after making it a couple times. I promise a rich wholesome tasting side dish but won't comment on the calorie count LOL. Drink - Lake Forest, CA

Stick of Butter Rice Recipe

1 (10 oz) can beef broth
1 (10 oz) can French onion soup
1 cup long grain white rice, long grain
1/4 lb (1 stick) butter

Preheat oven to 425°. In an 8 x 8-inch baking dish combine the rice, soup and broth. Cut butter into slices and place on top of the mixture.

Cover with aluminum foil and bake in the preheated oven for 30 minutes. Remove foil and bake 30 minutes more. Yield: 6 servings.

Tweaked Recipe:

Buttery Rice Recipe

1 cup long grain white rice *
1 (10.5 oz) can French onion soup
Beef broth or beef bouillon (see note)
1/8 lb (1/2 stick) butter
Preheat oven to 425°. In an 8 x 8-inch baking dish combine the rice, soup and broth. Cut butter into slices and place on top of the mixture.

Cover with aluminum foil and bake in the preheated oven for 30 minutes. Remove foil and bake 30 minutes more. Yield: 6 servings.

* Actually I don't see why almost any rice could be used in this recipe. The next time I make this I'm going to use brown rice.

Note: Put the soup in a measuring cup that is large enough to hold at least 3 cups of liquid and then enough beef broth or bouillon to make 2 1/2 cups total of the combination of soup and broth/bouillon. You can make your own broth by using either beef bouillon granules or cubes and water...

Cook's Note: At the 30 minute mark of cooking when removing the foil the dish will still be quite soupy/liquid but during the final 30 minutes most of the liquid will be absorbed. The final dish will not be a fluffy rice type dish but rather a rich somewhat moist consistency.

Spinach Dip Roll-ups Recipe

1 (8-ounce) package cream cheese, softened
3/4 cup mayonnaise
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1 teaspoon lemon juice
1 (10-ounce) package frozen chopped spinach, thawed and well-drained
2 (2-ounce) jars diced roasted red bell peppers, drained well
1 (3-ounce) package bacon bits
5 (10-inch) flour tortillas

In a large bowl, combine cream cheese, mayo, Parmesan cheese, garlic powder, and lemon juice; mix well. Stir in spinach, roasted bell peppers, and bacon bits.

Spread mixture on tortillas, distributing evenly. Roll up jellyroll fashion; wrap each in plastic wrap.

Chill 1 to 2 hours, or until ready to serve. Cut into 1/2-inch thick slices and serve.

Chicken Fried Rice Recipe

1 c. chicken, diced and cooked
1 tbsp. soy sauce
1 c. long grain rice, uncooked
1/3 c. salad oil
2-1/2 c. chicken broth
2-1/2 c. onion, coarsely chopped
1/4 c. green pepper, finely chopped
1/4 c. celery, thinly sliced
2 eggs, slightly beaten
1 c. lettuce, finely shredded

Combine chicken, soy sauce and 1/2 teaspoon salt and let stand for 15 minutes. Cook rice in hot oil in skillet over medium heat until golden brown, stirring frequently. Reduce heat and add chicken with soy sauce and broth. Simmer, covered, for 20 to 25 minutes or until rice is tender. Remove cover for last few minutes. Stir in onion, green pepper and celery. Cook, uncovered, over medium heat until liquid is absorbed. Push rice mixture to side of skillet and add eggs. Cook until almost set, then blend into rice. Stir in lettuce and serve at once.

Chicken with Rice Recipe

3 to 3 1/2 lbs. chicken, cut into serving pieces
1/4 c. butter or margarine
1 1/2 c. instant rice
1 (10 1/2 oz.) can condensed cream of chicken soup
1 c. water
1 tsp. instant chicken bouillon crystals
or 1 chicken bouillon cube

Preheat skillet (medium heat), uncovered. Add butter or margarine and allow to melt. Place chicken pieces into skillet and brown on both sides. Season with salt and pepper. Remove chicken from skillet. Reduce heat to "simmer" and add rice. Combine soup, water and bouillon. Pour 1/2 mixture over rice. Replace chicken pieces into skillet onto rice. Pour remaining soup mixture over chicken. Cover and simmer, 35 to 40 minutes or until chicken is done. Makes 4 to 6 servings.

Rice Pudding Recipe

1 c. cooked rice
2 c. milk
1/3 c. sugar
1 tsp. salt
2 eggs
1 tsp. vanilla
1/2 c. raisins

Combine rice, milk, sugar and salt. Mix well. Beat eggs slightly. Add eggs and vanilla to rice mixture, then add raisins. Pour into buttered dish and sprinkle with cinnamon. Bake at 350 degrees about 40 minutes. Bake uncovered.

Stove Top Rice Pudding Recipe

1/2 cup long-grain rice
1/2 cup sugar
1 egg
1 can evaporated milk
3/4 cup milk
1 tsp vanilla
salt (opt)
raisins (opt)

Boil rice until tender. Drain off water. Add remaining ingredients and stir until pudding comes to a boil. Remove from heat and let cool.

Wild Rice Mushrooms Dijon Salad Recipe

1 c. uncooked wild rice, rinse
1 c. sliced fresh mushrooms
1 c. fresh pea pods, cut into thirds*
1 med. red or green bell pepper,
coarsely chopped
1/4 c. chopped red onion

3/4 c. mayonnaise or salad dressing
1/4 c. Dijon mustard
2 tbsp. red wine vinegar
1/2 tsp. salt
1/4 tsp. pepper

Cook rice to desired doneness as directed on package; drain. Cover; refrigerate 30 minutes. In large bowl, combine cooked rice and remaining salad ingredients. In small bowl, combine all dressing ingredients; blend well. Spoon dressing over rice mixture; toss gently. Cover; refrigerate until thoroughly chilled. Serve on radicchio or lettuce leaves, if desired. 10 (1/2 cup) servings. ---- TIP: *A 6 ounce package of frozen pea pods, thawed and drained, can be substituted for fresh pea pods.

Serving size 1/2 cup -- Calories 200, protein 3g, carbohydrate 12g, fat 14g, cholesterol 10mg, sodium 380mg, potassium 125mg.

Pineapple Rice Recipe

1 can (20 oz) crushed pineapple
1 cup (or less) sugar
1 stick butter or margarine
3 cups cooked rice (not instant)
brown sugar

Preheat oven to 350°. Mix pineapple, sugar, and butter in saucepan and simmer until well mixed. Butter a 2-quart casserole dish and layer rice and pineapple mixture. Make sure pineapple mixture ends up on top. Sprinkle with brown sugar if desired. Bake for 1 hour. Serves 8-10

Million Dollar Rice Salad Recipe

1 (8 oz.) pkg. cream cheese, softened
4 tbsp. sugar
1 tbsp. mayonnaise
2 oranges
2 c. cooked rice
12 maraschino cherries (halved)
2 c. miniature marshmallows
8 oz. Cool Whip
1 c. chopped pecans

Combine cream cheese, 2 tablespoons sugar and mayonnaise and blend until smooth. Peel oranges separate and cut into bite size pieces. Add rice, cherries, oranges and marshmallows to cream cheese mixture, mixing well. Whip the cream sweetening with remaining 2 tablespoons sugar. Fold Cool Whip and pecans into mixture. Chill well.

Cooking Rice Recipe

As usual I enjoy the news letter more than any other. And appreciate all you do for us.I want to send this along on cooking rice. I use to have always starchy yukky rice. Then one day my daughter in law saw this and said let me share my recipe to cook rice. I have cooked rice this way for years now. and NEVER FAIL ~~~

2 qt microwave bowl
1 cup rice
2-1/2 cups water
Cook in microwave 20 min..NO lid !!!
Let stand in micro after cooking 5 more min.
BINGO great rice every time.

NOTE 2 cups rice 4 cups water

Brown Rice Fruit Salad Recipe

3 c. cooked brown rice
8 oz. pineapple tidbits, drained
1 chopped pear
1/4 c. raisins
1/2 c. chopped walnuts (opt.)

1 c. vanilla yogurt
1 tbsp. lemon juice
2 tbsp. honey
1 tsp. poppy seed

Mix first 6 ingredients together. In separate bowl, prepare dressing. Toss dressing and salad together. Refrigerate and serve cold.

Heavenly Rice Salad Recipe

2 c. cooked rice
1 pkg. strawberry Jello
1/2 c. sugar
1 c. pineapple, drained
1 c. walnut meats
1 c. Cool Whip

Dissolve gelatin and sugar in 1 cup boiling water. Add 1 cup cold water and chill until partially set. Fold in the rice, pineapple and nuts, then fold in the Cool Whip and chill until set.

Hot Taco Recipe Recipe

1 lb. ground beef
1 onion, chopped
1-1/2 c. med. salsa
1 can (8 oz.) tomato sauce
1 chicken bouillon cube
1-1/2 c. Minute Rice

Chopped tomatoes
Sour cream
Shredded Cheddar cheese
Tortilla chips
Sliced pitted ripe olives

Brown beef and onion in skillet.
Add salsa, tomato sauce and bouillon cube. Bring to a full boil; cover, reduce heat and simmer 5 minutes. Meanwhile, prepare rice as directed on package. Serve beef mixture over rice; top with garnishes.
Makes 4 servings.
