I make this steak recipe often. I have only used round steak, but other cuts would be good, too. It is easy to make, and the meat is always tender and good. It makes a good company dish, and I haven't found anyone who doesn't like it. The vegetable amounts can vary according to
how many you are serving. The recipe comes from the Shockley Family,
and was in a cookbook put out by the Willard, Mo. Band in 2003. Arlene/Mo.

Steak and Vegetable Casserole Recipe

4-6 servings round steak
Sliced onion
Quartered carrots
Celery, cut in chunks
Quartered potatoes
1 small can tomato sauce
1/2 tbsp. Worcestershire sauce
1 can beef broth

Brown steak, and put in greased casserole dish. Arrange vegetables on top of steak. Mix tomato sauce, beef broth and Worcestershire sauce together, and pour over the meat and vegetables. Cover and bake at 350 degrees for 2 hours.

Green Beans and Tomatoes Recipe

1/4 pound fresh green beans
1/2 cup red onion, pulled apart into rings
1/4 cup Fat Free Italian Reduced Calorie Italian Dressing
2 plum tomatoes, cut into thin wedges
2 tablespoon fresh basil

Place green beans, onions, and dressing in microwaveable bowl and cover. Microwave on HIGH 8-10 minutes or until beans are tender-crisp, stirring after two minutes. Stir in tomatoes and basil.

Nancy, I love the stories about all your cats and kitties, just hope those thugs that were so mean to Little One don't try the same thing on these precious animals, would like to get a hold of those idiots. I cannot see how anyone was enjoy hurting any animal that is not bothering anything or anybody, they should catch them and put them under the jail forever. I appreciate all you do for all of us and your love for the animals. Hope you and the babies have a wonderful day and try to stay cool this week.

Easy Cheesy Crockpot Chicken Recipe

1 1/2 lb chicken breasts
1 can cream of chicken soup
1/2 lb baby carrots
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon lemon pepper
1/2 teaspoon dried oregano
salt (to taste)
1 cup milk
3 cups cooked rice
2 cups shredded cheddar cheese

Place everything except milk, cheese, and rice in the crock pot. Cover and cook on low 8 hours or on high 4 hours. When it's done shred the chicken and stir in milk, cheese, and rice.

Bacon, Ham and Swiss Cheese Sliders Recipe

12 packaged Dinner Rolls (I use King's Hawaiian rolls)
1/2 cup butter
2 Tablespoon minced onion
2 Tbsp firmly packed brown sugar
2 Tablespoon whole grain Dijon Mustard
1 Tablespoon Worcestershire sauce
1 1/2 teaspoon poppy seeds
12 pieces thin sliced deli ham
6 slices bacon, cooked and cut into quarters (I use thick cut bacon; if using regular bacon you might want to do a bit more)
6 slices Swiss cheese; cut into quarters (2 slices per roll)

Preheat oven to 350 degrees F. Prepare a large baking sheet lined with aluminum foil. I like to form a container of sorts with the foil; folding it up so that it surrounds the rolls and contains any of the sauce that might drip.

Split rolls in half; I use a large bread knife and since I use the King's Hawaiian Rolls, I simply slice the entire top as one piece and replace it after topping the bottom halves with all of the other components.

Melt butter in a small saucepan; add the onion and simmer for 2-3 minutes until the onion has softened. Remove from heat and add the brown sugar, mustard, Worcestershire sauce and poppy seeds. Drizzle 1/4 of the butter mixture over the bottom section of rolls. Top bottom halves with ham; 2 pieces of bacon and Swiss cheese and place the tops back on the rolls. If you are using separated rolls, place them very close together on backing sheet surrounded by foil.

Pour reminder of butter mixture over rolls; let sit for 10 minutes to allow the mixture to soak in a bit. Cover the rolls with foil and bake for 20-30 minutes or until the cheese has melted. Uncover and cook for 2-4 additional minutes until tops are slightly brown and crispy. Serve warm.

Zesty Mexican Breakfast Casserole Recipe

16 large eggs
3 cups shredded Mexican cheese blend
4 large Old El Paso Flour Tortillas
1 red bell pepper, seeded and chopped
4.5 ounce can Old El Paso Chopped Green Chiles
1 bunch green onions, chopped
1 teaspoon salt
4 cup shredded hash brown potatoes, thawed
1 packet Old El Paso Low Sodium Taco Seasoning
4 tablespoons butter, melted
1/2 cup crema (optional)

Preheat the oven to 325 degrees F. Spray a large 9 X 13 inch baking dish with non-stick cooking spray and set aside.
Cut the tortillas in to 1/2 inch by 1 inch strips. Whisk the eggs thoroughly in a large bowl. Then mix in the shredded cheese, chopped bell pepper, chiles, 1 cup chopped green onions, salt and tortillas. Pour the mixture into the baking dish.

In a separate bowl, mix the shredded potato with the Old El Paso Taco Seasoning. Then drizzle the butter over the top of the potatoes and toss to coat.

Sprinkle the shredded potatoes over the egg mixture in an even layer. Then place in the oven and bake for 50-60 minutes until the center is puffed up and the hash brown top is crispy. Serve warm, drizzled with crema and sprinkled with green onions.

I must admit I have not tried this recipe as yet but plan on doing so this week. All my friends tell me it is delicious !!

Good Chicken Recipe

4 Tspn olive oil
6 Tblspn sour cream
4 ounces shredded cheddar cheese
2 cups fresh sliced mushrooms
1 (16 ounce) jar salsa
2 cups cooked white rice
8 ounces boneless chicken breast halves , cooked and dice

in a skillet , heat oil over medium heat; sauce mushrooms . Combine mushrooms sour cream, cheese , salsa, rice and chicken. Place in greased casserole dish . Bake at 350 degrees for 25-30 min. Enjoy !

Note: some of my friends added black beans to this recipe . Also extra cheese and black olives . Hope you like it!

I got up early today and filled the shallow water dishes for the two mama cats and the baby kittens. They were excited when they saw the water. I have an area that used to be a dog run prior to my moving into this house. I put several of the shallow water dishes in that area so the birds can have their separate area.

I went out pick up some trash that had blown in the yard. One mama cat and 7 baby kittens ran up to me. One mama cat jumped up on the swing. I sat down with her and all the rest wanted up on the swing too. I got to pet all of them and tell them how cute they were. One of the mama cats was climbing up into a big tree in my backyard. One of the baby kittens tried to climb the tree but couldn't really understand how to do it. Watching the baby kittens try new experiences is so much fun. Each day is a new experience for the little kittens.

I am still not sure which neighbors own the mama cats and the baby kittens. They come over early each day and go back home late in the afternoon. I am assuming that their masters work from 7:30 to 5:00. I am glad that the kitties feel safe enough to come visit each day.

Ditto and Little One spend their days watching the mama cats and the baby kittens. It gives them enterainment during the day when I am gone.

Warm Chinese Chicken Salad Recipe

2 cups romaine lettuce, torn into bite-sized pieces
1/4 pound fresh spinach, washed, stems removed and torn into bite-sized pieces
1 can mandarin oranges, drained
3 tablespoons lite soy sauce
1 tablespoon honey
1/4 teaspoon ground ginger
2 tablespoons oil
1 pound white boneless chicken breasts cut into 1-inch pieces
3 tablespoon scallions
1 clove garlic, minced
1/4 cup cashews

Combine lettuce, spinach and oranges in bowl. Whisk together soy sauce, honey, ginger and 2 tablespoons water. Set aside.

Heat oil in wok or in skillet. Stir fry chicken until done but still tender, about 5 minutes. Add scallions and garlic, cook another minute.

Pour over chicken and sauce over greens and toss gently. Sprinkle with cashews.

Italian Pasta Salad Recipe

1 cup Miracle Whip Light Dressing
1 1/4 teaspoon Italian dressing
1/2 teaspoon garlic salt
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups broccoli flowerets
3 cups rotini, cooked and drained
1 cup carrots, sliced
1 cup cucumber, quatered sliced
1/2 cup bell pepper strips

Mix dressing and seasonings in a large bowl. Add remaining ingredients; mix lightly. Refrigerate.
Serves 16

Southwestern Turkey Cutlets Recipe

1 pound boneless turkey cutlets
3/4 cup all purpose flour
Egg substitute equivalent to 3 eggs
1/2 cup light Italian dressing
1/2 cup green onions, chopped
1/2 cup chicken broth
1 tablespoon light margarine
1 teaspoon lime juice

Dip turkey in flour, then eggs, then again in flour. In a large skillet heat 1/4 cup Italian dressing and cook 1/2 of the turkey cutlets. Heat the other 1/4 cup Italian dressing and cook the rest of the turkey cutlets. Set turkey cutlets aside and

In a skillet, add green onions and cook 1 minute. Stir in remaining ingredients and bring to boil. Heat ingredients through. Serve over turkey.

Strawberry Pie Filling Recipe

1 box sugar-free strawberry Jello
2/3 cup boiling water, 2 cups Ice Cubes
1 8 punce carton of Cool Whip
1 cup sliced strawberries

Dissolve Jello in boiling water. Stir Jello about 3 minutes or until completely dissolved. Add 2 cups ice cubes. Stir well until the ice melts and Jello thickens. Blend Cool Whip into Jello mixture until smooth. Fold in strawberries. Chill until mixture will mound. Spoon mixture into prepared pie crust. Refrigerate about 2 hours before serving.

Baked Chicken Recipe

4 small (4 oz.) chicken breasts
Mrs. Dash seasoning
Heavy aluminum foil large enough to cover around the chicken

Bake at 350 degrees for 45 minutes or until chicken is done.

Waldorf Salad Recipe

3/4 cup raisins
4 cups apples, chopped
1/3 cup pecan pieces
1/2 cup lowfat Maynonaise

Combine ingredients. Refrigerate for several hours.

Marinated Vegetable Salad Recipe

2 cups cauliflower pieces
2 cups broccoli pieces
1 tomato, diced
1 bell pepper, cut in strips
1 (8 ounces) bottle fat-free Italian dressing

Mix together and chill several hours.

Three Cheese Noodle Bake Recipe

4 ounces uncooked noodles (about 2 cups)
1 cup low fat cottage cheese
3/4 cup low-fat sour cream
1/3 cup chopped green onions
3 tablespoons grated Parmesan cheese
1/2 teaspoon Worcestershire sauce
1/8 teaspoon pepper
2 egg whites
1 egg

Heat oven to 350 degrees. Spray square baking dish, 8x 8 x 2 inches, with nonstick cooking spray. Cook noodles as directed on package; drain. Mix noodles and remaining ingredients. Spread in dish. Bake uncovered 30 to 35 minutes or until center is set and edges are golden brown. Let stand 5 minutes.

Caramel Custard Recipe

5 eggs
1/2 c. granulated sugar
1/4 tsp. Salt
1 tsp. vanilla extract
3 1/2 c. milk
Fresh fruit for center (strawberries, pineapple, grapes)
1/2 c. granulated sugar for syrup

Preheat oven to 325 degrees. Sprinkle 1/2 cup sugar evenly into small skillet, stirring often, just until sugar melts to a golden syrup. Be careful not to burn. Immediately pour into 5-cup ring mold and tip to cover sides. Let cool to harden. In a large bowl, mix eggs, sugar, salt, vanilla, then gradually add milk and beat until smooth. Place prepared mold in a shallow baking pan. Remove 1 cup egg mixture to reserve. Place baking pan on middle rack in oven. Add rest of mixture to mold. Pour hot water into pan to about 1 inch depth around mold. Bake 55 to 60 minutes. Do not over bake. Remove mold from hot water to cool completely, then refrigerate to chill at least 1 hour. Unmold by loosening gently with spatula and shake gently to release. Toss fruit together lightly and fill center of custard. Spoon some sauce over each serving. Makes 6 to 8 servings.
