Sharon's Cheese Crisps Recipe

8 Lg. flour tortillas
Monterey Jack cheese, shredded
Cheddar cheese, shredded

Brush tortillas with butter. Preheat oven to 400 degrees. Combine cheeses, sprinkle cheese over tortillas. Bake until cheese melts, cut in pie wedges.

Linda's Tortilla Casserole Recipe

1 can refried beans
1 lb. ground chuck
1 med. Onion, chopped
1 pkg. McCormick taco seasoning mix
1 jar taco sauce
1 pkg. flour tortillas (12 tortillas)

Brown ground chuck in skillet; add onion. Cook until tender, add refried beans and taco sauce and taco seasoning, mix well. Put meat mixture in flour tortillas, wrap the tortillas around the mixture. Put in oven and let brown lightly, take out and put cheese on top, then put back in oven until cheese melts.

Linda's Mexican Chicken Recipe

4 (3 ounce) chicken breasts, boneless and skinless
1/2 cup plain yogurt
2 tablespoons taco seasoning mix
1 cup fat free cheddar cheese cracker crumbs

Coat chicken breasts with yogurt. Combine cracker crumbs and taco seasoning. Dredge chicken in mixture. Place in baking dish sprayed with nonstick spray. Bake uncovered at 350 degrees for 1 hour.
Makes 4 servings

Bavarian Kraut Casserole Recipe

1/4 c. margarine
1 c. chopped onion
1 1/2 lbs. pork tenderloin, cut in 1 inch cubes
1 (16 oz.) can sauerkraut
1/4 tsp. Nutmeg
1 c. sour cream

Preheat oven to 325 degrees. Melt margarine in skillet over medium heat. Add onion and cook until tender. Remove onions; add pork and brown well. Combine onions, pork, and sauerkraut in 1 1/2 quart casserole. Cover and bake for one hour. When ready to serve, blend in sour cream and nutmeg. Makes 4-6 servings.

Saltine Cracker Salad Recipe

1 stack saltine crackers
1 c. pickles, chopped
1 c. onions, chopped
1 c. green bell pepper, chopped
1 jar pimento, chopped
5 hard boiled eggs, chopped
1 pt. salad dressing or mayonnaise

Crumble crackers and add other ingredients in order adding mayonnaise last. Serve same as potato salad. Very good.

Jan's Corn Fritters Recipe

2 c. fresh corn
1/8 tsp. pepper
1 tsp. melted margarine
2 c. flour
1 tsp. salt
1 egg
1/2 c. milk
2 tsp. baking powder

Mix all ingredients. Heat oil for deep fat frying. Drop mixture by spoon into hot oil. Cook until brown, 2 to 3 minutes. Remove, drain well.

Oma's Chicken Stroganoff Recipe

8 chicken breasts, boned and skinned
1 16 ounce carton sour cream
1 can cream of mushroom soup
2 cups flour
pepper to taste
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
2 cups sharp Cheddar cheese, shredded
oil for frying
cooked rice

Mix sour cream and soup together; set aside. Place flour and all seasonings together in a small paper bag. Toss each piece of chicken in flour mixture. Brown chicken in hot oil. Place browned chicken in a 9 x 13 casserole pan. Top chicken with soup mixture and bake at 350F for 45 minutes. Top with cheese during the last 15 minutes of baking. Serve with rice.
Serves 8.

Mary Ann's Dorito Chicken Recipe

2 cups cooked chicken, cubed
1 8 ounce carton sour cream
1/2 onion chopped
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 cup grated cheddar cheese
1/2 cup grated mozzarella cheese
1 medium size bag of Doritos, crushed

Cover the bottom of a lightly sprayed 2 quart casserole dish with half the crushed Doritos. Mix the rest of the ingredients together except cheese and place on Doritos. Put remaining Doritos on top and cover with cheeses. Bake at 350F for 30 to 40 minutes until bubbly.
