I made this recipe last night and must admit it is much better than the recipe I usually use. You can assemble early then pop it in the oven ! Absolutely delicious and I highly recommend it !!

Peppers Onions and Potato Bake Recipe

2 tsp olive oil
2 lbs Italian Sausage , cut into 2 inch pieces
1/4 cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges
2 large red bell peppers, seeded and cut into wedges
3 large onions, cut into wedges ( I also added 2 cloves garlic minced)
1/2 cup white wine
1/2 cup chicken stock
1 tsp Italian seasoning (I also added some garlic powder)
Salt and pepper to taste

Preheat oven to 400 degrees (200 c) . Heat 2 tsp olive oil in large skillet over medium-high heat, cook and stir the sausage until browned. Transfer the sausage to large baking dish. Pour 1/4 cup of olive oil into skillet, and cook the potatoes, stirring occasionally until browned about 10 min. Place potatoes into the baking dish, leaving some oil in the pan. Now cook and stir the green & red peppers, onions and garlic in the hot skillet until softened - about 5-8 min. Add veggies to the baking dish . Now pour the wine and chicken stock over everything and sprinkle with Italian seasoning , salt and pepper & garlic powder if using. Gently stir all together . Bake about 20-25 min until hot and bubbling.

For St. Patrickís Day:

Green Lemon Lime Punch Recipe

2 qts. water
2 cups sugar
2 envelopes unsweetened lemon lime soft drink mix
1 can (46 oz) unsweetened pineapple juice
1 liter ginger ale, chilled
1 qt. lime sherbet

In punch bowl, combine water, sugar & soft drink mix; stir until dissolved. Stir in pineapple juice. Refrigerate until chilled. Just before serving, stir in ginger ale & top w/scoops of sherbet.

Robbie's Hello Dolly Bars Recipes
These are a family favorite and easy to make. The recipe has been around for many, many years. I have heard them called Hello Dolly Cookies, as well as just Hello Dollies.

Hello Dolly Bars Recipe #1

1 stick butter
1 c. graham cracker crumbs
1 c. chocolate chips
1 c. butterscotch chips
1 c. shredded coconut
1 c. chopped nuts
1 can sweetened condensed milk - not evaporated milk

In 9x12 inch cake pan, melt the butter. Let cool slightly and then sprinkle graham crackers over bottom of pan. Sprinkle each of the following over the crumbs, one upon the other; coconut, chocolate chips, butterscotch chips, nuts and milk. Do Not Stir. Bake at 350 degrees for 25 minutes. Cool and cut in to bars.

Note: Can substitute peanut butter chips or white chocolate chips for the butterscotch chips.

Hello Dolly Bars Recipe #2

1 stick butter

Garlicky Salty Cheezy Easy Rolls Recipe

Any rolls you happen to have, including left-over hamburger/hot dog buns, cut in half lengthwise
Garlic powder & garlic salt
Shredded mozzarella, jack, or any other cheese

Trench roll halves if desired. Spread with butter, sprinkle with seasonings & add as much cheese as you like. Broil till as brown as preferred. Thanks to Carol Radich, Daytona Beach.

Arizona Ground Beef Casserole Recipe

1 pound ground beef
1 can cheddar cheese soup
1 can ranch style beans
1 can Spanish rice

Brown the ground beef; drain fat. Preheat oven to 350F. Combine ground beef and all other ingredients. Bake in a 9 1/2 x 11 inch casserole dish for 35 minutes. May be served with toast or tortilla chips.

Salisbury Steaks Recipe

1 can condensed mushroom soup
1/2 cup fine dry bread crumbs
1 egg, slightly beaten
1 1/2 pounds ground beef
1/4 cup onion, chopped
1/3 cup water

Mix thoroughly 1/4 cup soup, beef, bread crumbs, onion and egg. Shape into 6 patties. In skillet, brown patties, pour off fat. Blend in remaining soup and water. Cover; cook over low heat 20 minutes or until done. Stir occasionally.
Makes 6 servings.

Black Eyed Pea Dish Recipe

1 pound ground beef
1 1/4 cup chopped onion
1 cup chopped green pepper
2 (16 ounce) cans black eyed peas, drained
1 (16 ounce) can whole tomatoes, undrained and chopped
1/4 teaspoon salt
1/2 teaspoon pepper
1/3 cup catsup, optional

Cook ground beef, onion and green pepper over medium heat, until beef is browned. Drain grease. Add remaining ingredients and bring to boil. Reduce heat and simmer for 30 minutes, stirring often. Serves 6.

Baked Fish Recipe

4 (4 ounce) haddock filets
1/2 cup fresh lime juice
1 tablespoon onion, dried
1 16 ounce can diced tomatoes, undrained
1 tablespoon parsley, dried

Place fish in shallow dish. Combine lime juice, onion, tomatoes and parsley. Pour mixture on top of fish. Bake uncovered at 400F for 15 to 20 minutes.
4 servings.

Balsamic Pork Chops Recipe

2 boneless center pork loin chops, 1-1/2 inches thick
1 1/2 teaspoons lemon pepper
1/2 teaspoon vegetable oil
2 tablespoons chicken broth
3 tablespoons balsamic vinegar
2 teaspoons butter

Pat chops dry. Coat with lemon pepper. Heat in oil in heavy skillet over medium high heat. Add chops; brown on first side 8 minutes; turn and cook 7 minutes more. Remove chops from pan and keep warm. Add broth and vinegar to skillet; cook, stirring until syrupy about 1 to 2 minutes. Stir in butter, blend well. Spoon sauce over chops. Serve immediately.

Banana Jello Salad Recipe

1 4 ounce size package sugar free Jello, Lemon (any flavor)
3/4 cup boiling water
1/2 cup cold whole milk
ice cubes
1 medium banana, sliced

Combine gelatin and boiling water in a blender. Blend until dissolved, about 30 seconds. Add milk and ice cubes to make 1 1/4 cups. Stir in blender until partially melted. Add banana slices; blend until smooth.

Lime Jello Salad with Pears Recipe

1 small package lime Jello
4 ounces cream cheese
1 (8 ounce) container Cool Whip
1 large can pears, well drained; reserve 1 cup juice

Dissolve Jello in 1 cup boiling pear juice. Place in refrigerator until Jello just begins to set. In blender, mix pears and cream cheese. Blend in Jello. In large mixing bowl, fold together Jello mixture and Cool Whip. Pour into 8 x 8 inch baking pan and chill until set.
Makes 4 Servings

Beef and Potato Casserole Recipe

1 pound ground beef
1 (14-16 ounce) can cream corn
8 potatoes peeled and sliced

Brown the ground beef and then let drain. After you start layering in the casserole dish potato, hamburger and cream corn until all is used up. Bake this at 350F for about 1 hour.
Note: I add salt, pepper and and little chopped onion to this.

Corn Casserole Recipe

1 pound bacon, diced*
2 cups bread crumbs
1/4 cup minced onion
1/2 cup chopped green pepper
2 16 ounce cans cream style corn

In a skillet, fry the bacon until lightly browned. Remove and set aside. Pour 1/8 to 1/4 cup of the bacon drippings over bread crumbs; set aside. Discard all but 2 tablespoons of remaining drippings; saute onion and green pepper until tender. Stir in corn and bacon. Spoon into a 1 quart baking dish (sprayed with Pam.); sprinkle with crumbs. Bake at 350F for 20 to 25 minutes or until bubbly and heated through.

*Note: I only use a few slices of bacon, fry it crisp and pat it between paper towels, then break it up into pieces. I do not use the bacon drippings over the bread crumbs. I spray a little butter flavored Pam on top of the bread crumbs. I am sure this recipe would be great with all the bacon but my family does not need so much fat in their diet. To saute the pepper and onion I use a tiny bit of lite margarine. This is a very tasty way to fix cream corn.

Linda's Pasta Salad Recipe

8 ounces uncooked pasta
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn
1 (15 ounce) can garbanzo beans, drained
1/2 cup chopped fresh cilantro
1/2 bell pepper, chopped
2 cups grated cheese
1/2 cup sliced olives
1-1/2 to 2 cups salsa

Cook pasta according to package directions. Drain, rinse in cold water and drain well. Drain and rinse black beans. Drain corn and garbanzo beans. Combine all ingredients in recipe, except salsa. Add about 1 cup salsa and mix. Refrigerate to blend flavors. Before serving, moisten to taste by stirring in up to 1 cup more salsa. Serve in a bowl lined with tortilla chips. Garnish with a dollop sour cream, salsa and a sprig of cilantro.
Serves 8.
