These succulent chicken breasts are a snap to prepare!

Honey and Wine Basted Chicken Recipe

Ingredients
6 to 8 boneless chicken breast halves, can remove skin
1/2 cup white wine
1/2 cup honey

Directions
Bake chicken breast in shallow baking pan; sprinkle with salt and pepper to taste.

Bake at 375 for about 45 minutes, uncovered. Mix wine and honey together and spoon over chicken. Continue to bake until golden brown, about 30 minutes more, basting frequently.

We really like this hearty Italian-style pot roast, served with spaghetti.

Pot Roast With Spaghetti Recipe

Ingredients
3 lb, beef arm or blade pot roast
2 tbsp. cooking oil
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1/2 cup chopped onion
2 cloves garlic, minced
2 tsp. dried oregano leaves, crushed
1 tsp. dried thyme, crushed
1/2 tsp. dried basil, crushed
1 tsp. salt
7 oz. spaghetti, cooked and drained
Grated Parmesan cheese

Directions
Trim excess fat from roast. Brown meat in hot oil on both sides in hot fat. Combine all remaining ingredients, except spaghetti and cheese; pour sauce over meat. Simmer, covered, for 2-1/4 hours, until meat is almost tender. Uncover and simmer 15 minutes more, or until tender.
Remove meat to hot platter; skim excess fat from sauce. Serve sauce with meat and hot cooked spaghetti and pass the Parmesan cheese, Makes 8 servings.

Does anyone know how to clean large, plush stuffed animals that cannot be washed? I think I read about using cornmeal somewhere, but can't remember how to do it. Thanks!

Would like to have a recipe for sweet muffins. My Mother made them when I was young and they were so good. I was raised in Ga and my Mom pasted away when I was in my early teens.

I am requesting the help of all the good Southern cooks in Nancyland. I am having a committee meeting at my home and would like some good snacks to go with sweet tea. I will be making a dessert recipe and would like finger sandwiches, etc. Any help will be greatly appreciated. Thanks again for a great website.

I wish to correct a error I made in the Stripped Delight Dessert that was posted in the March 7th newsletter, as I see I didn't put the / in between the 1/4 cup sugar, in the crust ingredients, so it shows up as 14 cups sugar! The correct amount is given in the directions to make it, but I did want to clarify that, in case you were wondering.

Quite a while ago there was many recipes in the newsletter using a rice cooker. I recently bought one and would love to try some of them. Can you direct me to a date or a way to search for some. I remember thinking of how creative and yummy they were.

Kilkenny, Ireland Corned Beef Recipe

Ingredients
1 piece corned beef brisket ( about 5 lbs.)
Boiling water
1 T. mixed pickling spices
1/2 cup firmly packed light brown sugar
1/3 cup prepared mustard
Orange wedges
Killybegs Horseradish sauce

Directions
Preheat 325. Wash brisket. Place in large roasting pan on oven rack. Cover meat w/boiling water; add pickling spices, cover pan w/ aluminum foil. Bake 2 hours until or until tender when pierced with a fork. Allow to cool in cooking liquid. Prepare Killybegs Sauce. About 1 hour before serving drain cooked beef & place in roasting pan. Bake 325 for 30 min. Combine brown sugar & mustard in small bowl and spread over corned beef. Bake 30 min. longer until well glazed. Place on platter. Garnish with wedges of orange & sprigs of watercress. Cut into thin slices & serve with sauce.

Killybegs Horse Radish Sauce

Combine 8 oz. sour cream w/2 T. prepared mustard & 2 T. prepared horseradish in a glass bowl. Cover, refrigerate at least 2 hours.

Serve with Irish soda bread.

A baked zucchini fry with crushed almonds replacing bread crumbs makes a very light, tasty dish. Zucchini are prepped first to get rid of extra liquid so they do not become soggy in the oven. Like having fried food without the oil. Not sure what to dip them in since I can't have nuts. Guess I'll try the cheese by itself.

Low Carb Zucchini Fries Recipe

Ingredients:
2 zucchini
1 tablespoon salt
2 eggs

1/2 cup ground almonds
1/2 cup grated Parmesan cheese
1/2 teaspoon dried Italian herb seasoning

Directions:
Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

Cut zucchini into 3-inch lengths, then cut each piece into 9 fries. Place zucchini fries into a colander and sprinkle with salt. Let the zucchini pieces drain for at least 1 hour to remove excess liquid.

Beat eggs in a shallow bowl. Mix almonds, Parmesan cheese, and Italian seasoning in a second shallow bowl. Rinse salt off zucchini and pat dry with paper towels.

Dip each zucchini piece into beaten egg and roll in the almond coating. Place coated fries on prepared baking sheet.

Bake in the preheated oven until the zucchini are tender and the coating is crisp and browned, about 25 minutes, turning them halfway through cooking time.

We love the Jalapeno Jelly served at a Mexican Restaurant. We were told by our waitress that it contains honey, Jalapenos, and red sweet pepper, that's all she knew for sure. Does any one know of a similar recipe. It is more of a liquid like honey that "Certo set" jelly.

Baked Tomatoes Recipe

Ingredients
Scoop out 4 medium tomatoes. Reserve the scooped out tomatoes, turn tomatoes upside down to drain.
6 green onions, chopped
2 Tbsp. chopped green pepper
4 Tbsp. chopped celery

Directions
Sauté the onions, green pepper, and celery until soft but not brown. Chop the tomato pulp. Crush 10 soda crackers Combine the onion mixture with tomato pulp and crackers. add salt and pepper to taste. Stuff the tomatoes with this
mixture. Sprinkle parmesan cheese and paprika on top then drizzle with melted butter. Bake 400 for 20 min.

Cinnamon Apple Pizza Recipe

Ingredients
1 tube (12.4 oz) refrigerated cinnamon roll dough
1 can (21 oz) apple fie filling
1/4 c. packed brown sugar
1 T. butter, melted

Directions
Set cinnamon roll icing aside. Separate dough into individual rolls, roll out each into a 4 inch circle. Arrange on a greased 12 inch pizza pan. overlapping edges. Bake 400 for 8 min. Spoon apple pie filling over rolls to within 1/2 inch of edge. Combine brown sugar and butter, sprinkle over filling. Bake 6 to 8 min. longer or until crust is golden brown. cool. drizzle with icing.

 Pina Colada Up-Side Down Cake Recipe

Ingredients
1/2 c. softened butter
1-1/4 c. sugar
2 eggs, beaten
3/4 c. canned cream or coconut
1/4 c. reserved pineapple juice
2-2/3 c. flour
1/4 tsp. salt
2 1/2 tsp. baking powder

Directions
Cream butter and sugar. Add eggs, then coconut and pineapple juice alternately with sifted flour, salt and baking powder. Pour this over the bottom layer, which is: 20 oz. can crushed pineapple with juice, drained
1/4 c. butter, melted
1/4 c. dark rum
1/4 c. canned cream of coconut

Stir this together and spread evenly on bottom of a 9"x13" pan. Mix the batter and pour over the bottom layer. Bake in 350 degree oven for 1 hour. Run a knife around edges to get cake free.

Peach Up Side Down Cake Recipe

1 pkg. yellow or white cake mix (2 layer)
1 (16 oz.) can peaches, drained and sliced
1/8 c. margarine (1/4 stick)
1/2 c. brown sugar
Whipped cream (optional)

Preheat oven to 350 degrees. Generously grease 9 x 13 inch pan with margarine. Arrange peach slices in pan until evenly covered. Sprinkle with brown sugar. Prepare cake mix according to package directions. Spoon over peaches, covering well. Bake for 55 to 60 minutes. Top should spring up when touched in middle. Remove from oven and serve with whipped cream, if desired or cover and refrigerate and serve cold.

Maple Up-Side Down Cake Recipe

Prepare 1 box white cake mix as directed on package. Pour into 9 x 13 inch pan. Pour the following warm syrup mixture in a zig-zag fashion over the cake: 2 c. warmed maple syrup
1/2 c. whipping cream
1/2 tsp. salt

Bake as usual. (This syrup mix will form its own goodie on bottom of cake pan. Serve warm with commercial sour cream mixed with syrup.)

Cracker Crumb Fried Zucchini Recipe

Ingredients
Zucchini
Flour
1 egg
2 tbsp. milk
Crushed salted cracker crumbs

Directions
Slice zucchini 1/3 inch thick. If larger zucchini are used, peel and remove seeds. Shake zucchini in paper or plastic bag with flour, enough to coat well and lay on waxed paper. Beat egg and milk. Dip floured zucchini rings in egg and roll in crushed salted cracker crumbs. Fry in hot oil, about 1/2 inch in pan. Turn over when nicely browned. Place between paper towels to drain oil. Then serve.

Impossible Quesadilla Pie Recipe

Ingredients
2 cans (4 oz. each) chopped green chilies, drained
4 c. shredded Cheddar cheese
2 c. milk
1 c. Bisquick baking mix
4 eggs

Directions
Heat oven to 425 degrees. Grease pie plate, 10 x 1-1/2 inches. Sprinkle chilies and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake until knife inserted between center and edge comes out clean, 25 to 30 minutes. Cool 10 minutes. Serve with sour cream and guacamole if desired.
6 to 8 servings.
