Heavenly Freezer Cake Recipe

1 angel food cake, cut into 12 (1-inch) slices
1/2 gallon strawberry ice cream, cut into 12 slices
1 (12-ounce) container frozen whipped topping, thawed
1 (8-ounce) can crushed pineapple, drained
1/3 cup chopped walnuts

Arrange cake slices in the bottom of a 9- x 13-inch baking dish. Place ice cream slices evenly over top of cake.
In a medium bowl, mix whipped topping and pineapple; spread over ice cream. Sprinkle with nuts, cover, and freeze at least 2 hours before serving.

No newsletter was posted yesterday (Friday) due to severe weather. About the time I thought it was clearing up there were more thunderstorms with hail.

Little One used to be able to handle severe weather well. Yesterday he was terrified of the weather. I sat on the couch playing a game on my cell phone. Little One was beside me and kept moving closer and closer to me until he was as close as he could get. Ditto pushed up next to me as well. Wish I had a camera at the time. Ditto pushed up next to Little One so Little One could wrap his legs around Ditto. Little One calmed down when he was wedged between Ditto and me.

The recipe actually calls for peanut oil but I'm allergic to nuts so use vegetable oil instead. To make it authentic, simply fry them in the peanut oil.

Chinese Chicken Bites Recipe

1 pound ground chicken
3 scallions, finely chopped (about 1/2 cup)
2 tablespoons all-purpose flour
1 tablespoon soy sauce
1 tablespoon water
1/2 teaspoon sesame oil
1/4 teaspoon ground ginger
1 teaspoon salt
1/2 teaspoon pepper
Vegetable oil for frying

In a medium-sized bowl, combine all the ingredients except the vegetable oil; mix well.

Cover the bottom of a large skillet with about 1/2 inch vegetable oil and heat over medium-high heat.

Drop the chicken mixture by teaspoonfuls into the hot oil. Reduce the heat to medium-low and fry the chicken pieces for 5 to 6 minutes or until golden brown, turning once.

Drain on paper towels and serve immediately.
Makes 30 to 35 pieces.

No Bake Cornflake Cookies Recipe

Measure out 6 cups of cornflakes into a large mixing bowl and set aside. Other flaked cereal works just as well. I have used Special K and Wheaties

In a saucepan mix 1 cup white sugar
1 cup clear corn syrup (Karo)

Bring to a light boil only enough to dissolve the sugar. Do not cook further it will become hardened on the cereal.

Add 1 cup peanut butter and stir till melted.

Pour over the measured cereal and stir to coat. Try to not mash the cereal flakes..

Work quickly as the mixture will harden. Drop onto waxed paper by teaspoon.
Recipe halves nicely.

Italian Dressing Recipe
MaryAnn from MN in the May 1st newsletter wanted an Italian Salad Dressing Recipe.
Could this be the one?

Fantastic Italian Salad Dressing Recipe
Makes 1-1/2 cups (using 2-4 tablespoons per salad)

1 cup neutral salad oil, such as canola (See Recipe Note)
1/4 cup white wine vinegar
2 tablespoons red wine vinegar
1 large garlic clove, pressed
2 tablespoons finely chopped shallots
2 tablespoons finely chopped red bell pepper
2 teaspoons Dijon mustard
1 teaspoon honey
1 teaspoon kosher salt, plus more to taste
1/4 teaspoon dried oregano
1/4 teaspoon dried marjoram

Pinch of red pepper flakes
Freshly ground black pepper, to taste

Combine all of the ingredients in a jar with a tight fitting lid. (I love this shaker.)

Shake vigorously until the mixture is thickened and well-combined.

Alternatively, combine the ingredients in a bowl and whisk until combined.
Taste the dressing using a lettuce leaf and adjust seasonings.
The dressing will keep in the refrigerator for several weeks.

Recipe Notes:
Italian Dressing with Olive Oil: Olive oil can be substituted for the neutral oil in this dressing, olive oil can have a tendency to overwhelm the other flavors.

As with all dressing recipes, feel free to increase, or decrease any ingredient, to make it your recipe, and to your taste.

Making More or Less Dressing:
This dressing makes enough for several dinner salads, over the course of a week or so.
To make more for larger salads or less for a single salad, just scale the ingredients to make the amount you need.

Nancy, I'm sorry that I sent the request/ideal about an old recipe. Tomorrow I'm baking this bread and we think it is a very good Oatmeal Bread didn't get this made the last week. Then I'm baking a great dessert Brownie Pie good, easy to make and a last minute dessert. Then during the week I'll be making this Slow Cooker Orange Chicken and will be using the recipe Easy Pasta Casserole because I have leftover steak to use up.

Chocolate Chip Oatmeal Quick Bread Recipe

2 cups all-purpose flour
1 cup rolled oats
1/2 cup granulated sugar
1/2 cup packed light brown sugar, I don't pack this sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon, I'm allergic to this spice
1/2 teaspoon salt
1/2 cup chopped nuts
1/2 cup semisweet chocolate chips, optional, I don't use this
1 1/2 cup buttermilk
2 large eggs
1/4 cup butter, melted

Preheat oven to 350 degrees. Spray a 9"x5" loaf pan with cooking spray. In a large bowl mix flour, oats, both sugars, baking powder, baking soda, cinnamon and salt. Stir in pecans and chocolate chips. In a separate bowl beat buttermilk, eggs and butter. Stir into dry ingredients just until combined. Batter will be lumpy. Pour batter into prepared pan. Bake for 50 to 55 minutes or until a wooden pick inserted in the center comes out clean.

Brownie Pie Recipe

4 eggs, beat slightly
4 to 5 oz semi sweet chocolate chips melted
1/2 cup Bisquick mix
1/2 cup brown sugar
1/2 cup granulated sugar
1/4 cup butter, softened
3/4 cup nuts, chopped

Heat oven to 350 degrees. Grease pie plate 9x1 1/4". Beat all ingredients except nuts until smooth. Add nuts. Pour in plate. Bake until knife inserted in center comes out clean, 30 to 35 minutes. Serve warm with ice cream

Slow Cooker Orange Chicken Recipe

6 boneless skinless chicken thighs
3 tablespoons flour
1/3 cup orange marmalade
1/3 cup barbecue sauce
2 tablespoons soy sauce
1 tablespoon grated fresh ginger root

Toss chicken with flour in slow cooker. Stir in all remaining ingredients, cover with lid. Cook on low for 6 to 8 hours or on HIGH for 3 to 4 hours. Serve with hot cooked rice and green beans.

Easy Pasta Casserole Recipe

Salt and cook until tender 8 oz of any pasta. Drain and pour into 8"x8" baking dish. Stir in 1 can cream of mushroom soup and 1/2 can water. Add chopped red and green peppers. Add diced cooked ham, chicken or sliced hot dogs. Sprinkle with 1/4 cup grated cheese. Top with buttered bread crumbs. Bake at 350 degrees for 20 minutes, a good way to use leftover meat. I add 1/2 cup chopped onion and diced finely 1 big clove garlic or 2 small clovers garlic.

Nancy, I have a question concerning a recipe from many years ago. In the dairy department of grocery store they had brownie in the roll just like cookies but I have not seen it for a while. In a pie plate you took the brownie roll putting it in the bottom of the pie plate then patting up the side to the rim. Then on top of the brownie mixture in the bottom you put cherry pie filling. I was wondering what I could use today to make this?

Cream Cheese Peanut Butter Pie Recipe

Prepared chocolate, or regular crumb crust
1 pkg. (8 oz.) cream cheese, softened
1/2 cup powdered sugar
1/2 cup peanut butter (I use smooth)
1 container (8 oz.) Cool Whip, thawed
Extra whipped topping (for top)
Chocolate ice cream topping

Beat cream cheese, powdered sugar and peanut butter until smooth. Fold in the 8 oz. Cool Whip.

Pour into prepared crust and chill 2 to 3 hours, or overnight. Before serving, top with additional whipped topping and drizzle with chocolate topping.

NOTE: To make your own crumb crust, you can combine in bowl, 1 cup chocolate or regular graham cracker crumbs, 1/4 cup granulated sugar and 1/4 cup butter until mixed and press into 9" pie pan.
Chill at least one hour.

This yummy Pineapple Cake is made in a snap with a baking mix.

Pineapple Topped Cake Recipe

1 can (20 oz.) can crushed pineapple
2 cups Bisquick baking mix
1 egg
1/4 cup granulated sugar
1/4 cup brown sugar
Nutmeg and cinnamon

Drain pineapple, saving 2/3 cups. Thoroughly mix the reserved syrup,

Bisquick, egg and granulated sugar. Put in greased 8 or 9 inch baking pan, and cover top with crushed pineapple. Sprinkle with brown sugar and a little cinnamon and nutmeg. Bake at 400 for 25 minutes, or until it's done. Is especially wonderful served warm with vanilla ice cream or whipped topping.

This is a real easy main dish that will be very satisfying. Everyone of all ages like this,

and can easily cut the recipe in half to serve less people.

Wyoming Straw Hats Recipe

1 cup chopped onion
2 cup chopped celery
2/3 cup chopped green pepper
2 lbs. lean ground beef
Cooking oil
2-3 tsp. chili powder
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. thyme
2 cans ( 6 oz. each) tomato paste
1/2 cup ketchup
2 cups water
Dash Tabasco sauce
2 tsp. Worcestershire sauce
2 cups shredded Cheddar cheese
Fritos corn chips

Brown beef with onion, green pepper and celery in a little oil; drain. Add remaining ingredients, except cheese and corn chips and cover and simmer for about 30 minutes. Serve immediately over corn chips and top with cheese.

A good Stroganoff is hard to beat, and this is a good one!

Beef Stroganoff Recipe

1/2 cup flour
1 tsp. salt
1/4 tsp. pepper
2 lbs. lean stewing beef
1/3 cup butter
2 cups boiling water
2 beef bouillon cubes
1 medium onion, sliced
1 can (4 oz.) mushroom stems & pieces, drained
Salt and pepper, to taste
Sour cream

Combine flour, 1 tsp. salt and 1/4 tsp. pepper Set Aside. Cut up stewing beef to 2" cubes. Melt butter in large skillet. Coat meat in flour mixture. Add meat to melted butter and cook until browned. Stir together to dissolve the boiling water and bouillon. Add to meat in skillet and add sliced onion. Cover and simmer for 2 hours, or until meat is tender, Add mushrooms and salt and pepper, to taste. Mix well and cook for 5 minutes longer. Just before serving, stir in 1/2 cup to 1 cup dairy sour cream. Serve over boiled noodles.
4 to 6 servings.

Lemon Sauce Recipe

1/2 c. sugar
2 tsp. cornstarch
Dash of salt
2 beaten egg yolks
2 teaspoons butter
2 tablespoons fresh lemon juice

Mix gradually and add 1 cup water. Cook over low heat, stirring constantly until thick and clear. Stir small amount hot mixture into 2 beaten egg yolks, return to hot mixture. Cook and stir 1 minute; remove from heat and add 2 teaspoons butter and 2 tablespoons lemon juice, pour over pudding.

South Carolina Style Ribs Recipe

4 lbs. baby-back pork ribs
1/2 cup honey
1/2 cup prepared mustard
1/2 cup red wine vinegar
2 T. vegetable oil
4 t. Worcestershire sauce
2 t. butter
2 t. coarsely ground pepper
1 t. salt
1 t. hot pepper sauce

Cut ribs into serving-size pieces. Place ribs meat side up in roasting pan. Bake, uncovered, at 325 for 2 hours, drain. Combine remaining ingredients in saucepan. Bring to boil over med. heat. Reduce heat; simmer, uncovered, about 30 min. or until slightly reduced. Remove from heat; cool at room temp. for 1 hr. Brush sauce over ribs. Reduce oven temp. to 300; bake, uncovered, basting occasionally, 1 - 1 1/4 hours longer or until ribs are tender.
6-8 servings.

South Carolina Pulled Pork BBQ Recipe

Pork roast (approx. 5 lbs.)
1 T. salt
1 t. black pepper
1 1/2 cups cider vinegar
2 T. brown sugar
1 T. hot sauce
1 t. crushed red pepper flakes

Put roast in slow cooker & sprinkle salt & pepper over. Pour cider vinegar over. Cover, cook low 12 hours. Remove roast & shred w/ forks. Drain juices from cooker, reserving 2 c. liquid.

Return pork to cooker. To reserved liquid add:
brown sugar, hot sauce, pepper flakes. Stir. Pour over pork & place lid on.

Place on low or warm setting until ready to serve. Can be made ahead, refrigerated and reheated in microwave. For spicier sauce, double hot sauce & pepper flakes.
Approx. 8 sandwiches. Serve w/ cole slaw. Athena in DE

Pig Slaw Recipe

1/4 c. sugar
3 cups white vinegar
2 1/4 cups water
1 head green cabbage leaf, peeled & cored

In large bowl, combine first 3 ingredients. Mix w/wire whisk until sugar dissolved.

Add shredded cabbage & mix well. Cover & refrigerate. To serve: toast hamburger buns, place level scoop of pulled pork on bottom of bun.

Place slaw on top of meat and ladle pork sauce over slaw & meat. Add top part of bun & serve w/onion rings and your favorite beans.
