Bread Pudding Sauces Recipes

Recently someone requested Bread Pudding Sauces. These are favorites, especially the lemon sauce. Recipes can successfully be doubled, depending on size of pudding recipe or family preferences for amount needed.

Lemon Sauce
2 1/2 tablespoons sugar
2 teaspoons flour
Pinch of salt
1/3 cup cool water
1 tablespoons lemon juice
2 teaspoons oleo or butter
Stir first 4 ingredients until dissolved. Bring to a boil. Simmer 3 minutes. Add lemon and oleo/ butter. Serve warm on bread pudding or gingerbread.

Vanilla Sauce
2 tablespoons oleo
1 Cup water
2 tablespoons flour
3/4 cup sugar
Mix flour ,sugar, water. Bring to a boil, and stir 2 minutes or until thickened. Add oleo and vanilla. Serve warm.

I googled this...was hunting for a brownie crust for the lady who wanted one for cherry pie filling. I believe this might work. I myself have never heard of Pamela's chocolate brownie mix. Perhaps where she lives they have it in the stores.

Brownie Cookies Recipe

1 bag Pamela's Chocolate Brownie Mix
1/2 cup butter or butter substitute-melted
1 egg-large or egg replacer
1 TBSP plus 1 tsp water or coffee

2 cups Brownie Cookie crumbs
1/2 cup pecans-toasted and finely chopped (optional)
1/4 cup melted butter or butter substitute
1/2 tsp vanilla

Preheat oven to 350į.

Make Brownie Cookies by combining ingredients and mix to incorporate. On parchment lined or greased cookie sheet, scoop TBSP sized balls and flatten. Bake 10 to 12 minutes.

Use approximately half the cooled cookies to crush or process into 2 cups crumbs. Add butter and vanilla, mix well. If using a food processor, add nuts and pulse to combine, or chop nuts fine and mix in. Press into well sprayed pie pan and bake for 8 to 10 minutes, until fragrant.

Chill well before filling.

I am into salads these days. Thought Iíd forward a few of them.

Ridged Mostaccioli Seven Layer Party Salad Recipe

1 cup mayo
1 cup sour cream
1/4 cup milk
2 T. Dijon mustard
4 cups mixed salad greens
1/2 lb. cooked ham, cut in thin strips
2 cups diced Cheddar cheese
8 oz. Ridged Mostaccioli, cooked, drained, rinsed w/cold water
1 small red onion, sliced, separated into rings
1 pkg.( 10 oz) frozen peas, thawed

In small bowl, stir first 4 until smooth. Place greens in bottom of large glass bowl. Top, in order given, rest of ingredients. Spread mayonnaise mixture evenly over peas. Cover tightly with plastic wrap, chill 4 hours or overnight. Toss just before serving.
Serves 8-10. Athena in DE

Note! To save time mixing dressing, assemble ingredients in bottom of salad bowl. Cross salad fork & spoon above ingredients, pile on greens on top of utensils. When you toss salad, youíll be mixing dressing, as well and you only one one bowl at clean-up time. (not for above recipe)

For quick salad dressings, add juice of half lemon to cup of yogurt or sour cream. Blend well & add salt & pepper to taste; add crumbled bleu cheese to French dressing; combine thin honey w/bottled lime juice to taste; mix mayo w/ orange juice.

Here are two more sauce recipes. They can be served over pancakes, waffles, pound cake, bread pudding or other desserts.

Blueberry Sauce Recipe

2 c. blueberries
1/2 c. sugar or to taste
1 tbsp. lemon juice
1/2 tsp. salt- I use only a pinch
1/2 tsp. vanilla, not until cooked

Process first 4 ingredients in a blender. Place in a saucepan and bring to a boil. Allow to boil for 1 minute, add vanilla. and stir well. Serve warm. Note: You can reserve some of the berries and add to the cooked sauce, if you want whole berries in the sauce.

Orange Sauce Recipe

3/4 cup freshly squeezed orange juice
1/3 cup white sugar
3 tablespoons butter
1 pinch salt
3/4 cup cold water
2 1/2 tablespoons cornstarch
2 tablespoons finely shredded orange peel
2 fluid ounces triple sec (optional)

Bring orange juice, sugar, butter, and salt to a simmer in a saucepan over medium heat.
Whisk cold water and cornstarch in a small bowl; whisk cornstarch mixture into the simmering sauce until thickened and no longer cloudy.
Remove sauce from heat and stir in orange peel and triple sec. Serve warm.

Good morning Nancy and all Landers,
Newsletter looks great today. Last night my son and I went out for supper (yes I still call our evening meal supper lol) and I had chicken and dumpling soup. Would any of our cooks/bakers in Nancyland know what spices to use in this soup? The flavor was so good and rich. When I make this soup I guess I'm not adding the right spice for great flavor. Any help would be appreciated.

Black Forest Parfaits Recipe

1 pkg. brownie mix, baked according to "cake-type" directions
1 (6 oz.) pkg. instant chocolate pudding mix, prepared
1 (21 oz.) can cherry pie filling
1 (8 oz.) carton whipped topping
6 lg. or 8 med. parfait glasses

Crumble brownies. Layer pudding first, then brownie crumbs, pie filling and whipped topping. Garnish with a few brownie crumbs. Note: I prefer to put the crumbled brownies in first, then the pudding. You can top with a dab of the cherry pie filling, if you desire.

Apricot Custard Recipe

2 c. milk
1/2 c. dried apricots, soaked and drained
1/3 c. honey
3 eggs

Blend all ingredients until smooth. Pour into oiled or buttered custard cups. Place cups in pan of hot water. Bake 45 minutes at 350 degrees. Serve with whipped cream flavored with cinnamon or almond extract.

Zucchini Squash Bake Recipe
Makes 4 servings

2 medium zucchini squash
1 Can't Believe It's Not Butter Spray
2 teaspoons Parmesan cheese
4 teaspoons seasoned bread crumbs

Place zucchini on microwavable dish. Pierce each with a fork. Microwave approximately 5 minutes on high or until tender but not soft. Split in half lengthwise. Spray with butter spray. Sprinkle each half with 1 teaspoon cheese and 1 teaspoon bread crumbs.

Chicken with Lime Recipe
Makes 4 Servings

4 (5 ounce) chicken breasts (boneless and skinless)
Juice of 3 limes
2 tablespoons chopped garlic
2 cups sliced mushrooms
Salt and Pepper to taste

Slice chicken into thin strips. Saute chicken and garlic in lime juice until chicken is tender. Add mushrooms and continue to cook until chicken is lightly browned.
