Robbie's Left Over Ham Recipes
If you are already wondering what you will do with the leftover ham from Thanksgiving, consider these recipes. Myron shared the second recipe in a previous newsletter, I omit the salt listed in his recipe, as the ham is already salty enough for us.

Ham Shrimp Rice Dish Recipe

Ingredients
2 c. cooked ham
4 c. cooked rice
2 Tablespoons olive oil
1 onion chopped
1 green pepper, chopped
3 cloves garlic
2 to 3 tomatoes chopped
2 teaspoons basil
1/2 lbs. of shrimp
1 lemon
2 bay leaves

Directions
Sauté onions, garlic and green peppers in olive oil. Stir in tomatoes.
Add shrimp and with bay leaves, basil, juice of 1 lemon, and dash of red pepper. Add rice. Toss.
Reduce heat to low and simmer for 10 minutes.


Ham Loaf Recipe

Ingredients
1 1/2 lb ground pork
3/4 to 1 lb ground ham (any good ham)
1 medium onion, medium dice
1 cup bread crumbs (I use Panko)
1 (4 oz) can tomato sauce OR 1/2 cup ketchup/catsup
1 large egg
1/2 tsp salt
1/2 tsp ground black pepper

Directions
Preheat oven to 350°. Use your hands and combine all ingredients in a large mixing bowl then transfer to a loaf pan or form into a loaf and place in a Pyrex baking dish or a baking pan. Cover with aluminum foil and bake in the preheated oven for 50 minutes. Remove the foil and bake for an additional 20 to 30 minutes or until the top is nicely browned. Remove from the baking dish/pan to a platter and let sit for 15 minutes before slicing and serving. Yield: depends on how thinly you slice it, but about 4 to 6 servings.
Cook's Note: Go easy on the salt as the ham will provide much and if you desire add about 2 teaspoons of ground sage to the ingredients. I also sometimes use 1 pound lean ground beef, 1 pound ground pork and 1 pound ground ham instead of just the ground pork and ground ham as indicated in the recipe. Try it both ways over time to see what you prefer.

Marble Fudge Recipe

Ingredients
1 (12 oz.) pkg. semi-sweet chocolate
1 (12 oz.) pkg. butterscotch
1 c. peanut butter
1 (10 1/2 oz.) pkg. mini marshmallows
1 c. salted nuts

Directions
Combine chocolate, butterscotch and peanut butter in large glass bowl.
Microwave on medium 5 minutes. Stir until melted. Fold in marshmallows and peanuts. Spread in a buttered 13 x 9 inch pan. Refrigerate for several hours or until set. Cut into squares

Thumbprint Cookies Recipe

Ingredients
3/4 cup sugar
1 teaspoon salt
3/4 cup butter
2 egg yolks (save whites)
1 teaspoon vanilla
2 cups flour
2 egg whites, beaten
1-1 1/2 cups finely chopped nuts
1/2 cups red & green jelly

Directions
In large bowl combine first 5 ingredients on medium speed of mixer about 1 minute. Gradually add flour and blend at low speed until well mixed. Roll dough into 1 inch balls. Dip dough balls into egg whites then nuts. Place on greased cookie sheet 2 inches apart. Make a deep impression in center of each cookie with fingertip. Bake at 350 degrees for 10-12 minutes. Immediately remove cookies from sheet. While still warm, fill centers with jelly. Allow jelly to set before storing cookies.
Yield 3-4 dozen

Fudge Cookies Recipe

Ingredients
1 can Eagle Brand milk
2 teaspoons butter
6 ounce chocolate chips
1 cup flour
1 cup nuts
1 teaspoon vanilla

Directions
Melt chocolate chips and butter on low heat. Stir and add Eagle Brand milk, flour, nuts and vanilla. Cool -- spoon by teaspoon on greased pan. Bake at 325 degrees for 10-12 minutes.

Orange Iced Cranberry Cookies Recipe

Ingredients
3/4 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup margarine, softened
1/2 cup sour cream
1 teaspoon vanilla
2 eggs
2 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup chopped cranberries
1/2 cup chopped nuts

Directions
Combine sugars, margarine, sour cream, vanilla, eggs - blend well.

Lightly spoon flour into measuring cup - level off. Add flour, baking soda and baking powder. Stir in chopped cranberries and nuts (do not over mix). Drop by teaspoons (not too close). Bake at 350 degrees on lightly greased cookie sheet for 11-13 minutes until golden brown. 5 dozen.

Icing:
2 c. powdered sugar
2 tbsp. margarine, melted
1 tsp. grated orange peel (if desired)
3 tbsp. orange juice

When cookies are cool put icing on. .

Vanilla Rolled Cookies Recipe

Ingredients
3-1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup shortening
1 1/2 cups sugar
2 eggs, well beaten
1 1/2 teaspoons vanilla

Directions
Sift flour and measure. Add baking powder and sift again. Cream shortening. Add sugar gradually and beat until light. Add well beaten eggs and blend. Add vanilla. Combine dry ingredients with creamed mixture thoroughly and chill. Roll as thin as possible and cut with cookie cutter or form in small balls and flatten with bottom of glass. Sprinkle with sugar, chopped nuts, coconut. Bake in 400 degree oven 6 to 10 minutes.
Makes 6 dozen cookies.

Green Bean and Potato Casserole Recipe

Ingredients
2 (14 oz.) cans green beans, drained
1 can Durkee's French fried onions
1/4 c. water
1 can condensed tomato soup
1 lb. ground meat
Grated Cheddar cheese (approx. 1 c.)
8 servings instant mashed potatoes
Salt & pepper

Directions
Brown ground meat and drain. In large casserole dish, combine ground beef, green beans, tomato soup, water, salt and pepper. Mix up the potatoes according to directions on the container and blend in 3/4 of the can of onion rings. Spread across top of green bean mixture. Bake for 25 minutes at 350 degrees. Top with the rest of the onion rings and grated cheese. Bake until cheese is melted (about 2 minutes).
Makes 4 servings.

Coconut Pudding Cake Recipe

Ingredients
1 box buttered yellow cake mix (Duncan Hines)
1 box toasted coconut instant pudding
4 eggs, one at a time
1/2 c. Wesson oil
1 1/4 c. water

Directions
Cook in oblong pan at 350 degrees.

Coconut Glaze
1-1/2 c. sugar
1/2 c. water
1 tbsp. white syrup
1 lump butter
1 tsp. vanilla
1 pkg. frozen coconut

Cook until it bubbles; add coconut. Cool and pour over cake.

Apple Pudding Cake Recipe

Ingredients
2 c. peeled, diced apples
1 c. sugar
1 egg
1 c. flour
1-1/2 tsp. cinnamon
1 tsp. baking soda
1 c. chopped nuts
3/4 c. raisins
1 tsp. vanilla

Directions
Mix apples and sugar together. Let stand until sugar is thoroughly dissolved. Add eggs and mix well. Sift dry ingredients together. Stir into apple mixture. Add nuts, raisins, and vanilla. Pour into 8x8 pan which is slightly oiled (MW: omit oil). Bake at 375
degrees for 40-45 minutes. (MW: 10-12 minutes on full power) If preferred, use unsweetened can sliced apples instead of fresh apples.

Topping
1/2 c. brown sugar
1 c. water
1/2 c. sugar
2 tbsp. flour
1/4 lb. butter or margarine
1 tsp. vanilla
1/2 c. chopped nuts
1/2 c. raisins

Directions
Mix sugar, water and flour. Cook until slightly thick and clear. Add the rest of the ingredients and stir until butter has melted. Pour over hot baked cake while still in pan.
