Turkey Salad Recipe

1 (12 ounce) package turkey breast, cooked, sliced
1/2 cup mayonnaise
1 tablespoon soy sauce
1/4 teaspoon ground ginger
1 red bell pepper
1 cup pea pods, partially cooked
1 carrot
1 green onion

Slice turkey breast and red pepper into strips. Slice pea pods lengthwise. Slice carrot diagonally and chop onion. Mix mayonnaise, soy sauce and ginger in large bowl. Add remaining ingredients; chill. Serve on lettuce covered platter.
Serves 4.

Denver Omelete Quiche Recipe

1 tablespoon olive oil
8 ounces ham, diced into chunks
1/2 cup diced green bell pepper
1 tomato, diced
7 eggs
1 1/2 cups Mexican cheese, shredded
1/4 cup cream

Put olive oil in a skillet and brown ham slightly. Add the green pepper and tomato. Saute until tender crisp. Pour into a pie or quiche pan sprayed with nonstick spray. In a large bowl mix eggs with cheese and cream. Beat well with fork. Pour egg mixture over veggies and bake at 350F for about 40 minutes or until brown on top. Let stand for 5 minutes before serving

Beef Stir Fry Recipe

1 pound of thinly sliced beef steak; sirloin, flank or round
3 tablespoons cornstarch, divided
3 tablespoons soy sauce, divided
2 tablespoons sherry
1 tablespoon minced ginger or 1 teaspoon ground ginger
1 clove garlic, crushed
3/4 cup water
2 tablespoons oil, divided
1 medium onion, sliced
4 green onions, chopped

Thinly slice the meat. Place in large bowl. Combine 2 tablespoons of cornstarch and soy sauce with sherry, ginger and garlic. Pour over meat. Let it stand 30 minutes. Blend remaining cornstarch and soy sauce in water and set aside. Heat 1 tablespoon oil in skillet or wok. Add meat and stir fry until browned, remove. Add remaining oil, stir fry onion until crispy tender. Add meat and soy sauce mixture, bring to a boil. Cook until clear and thick. Sprinkle with green onions. Serve with rice.
Makes 4 servings.

Banana Chips Recipe

4 green-tipped bananas
1/4 c. flour
2 c. vegetable oil

Peel bananas and thinly slice about 1/8 inch thick. Dredge slices in flour to coat lightly. In a wok or large heavy saucepan, heat oil to 375 degrees on a deep-frying thermometer. Add banana slices in batches without crowding and fry 3 minutes or until golden brown. Drain chips on paper towels and sprinkle with salt to taste.

Banana Crunch Cake Recipe

5 Tablespoon Margarine
1 Package Coconut pecan frosting mix
1 Cup Rolled oats
1 Cup Dairy sour cream
4 Eggs
2 Large Bananas
1 Package Yellow cake mix

Preheat oven to 350 degrees. Grease and flour 10 inch tube pan. In a saucepan, melt butter; stir in frosting mix and rolled oats until crumbly, set aside. In a large bowl blend cream, eggs and bananas until smooth. Blend in cake mix; beat 2 minutes at medium speed. Pour 1/3 of the batter (2 cups) into prepared pan. Sprinkle with 1/3 of crumb mixture (1 cup). Repeat twice with batter and crumbs. Bake 50 to 60 minutes. Cool upright in pan 15 minutes. Remove from pan and turn cake so crumb mixture is on top.

Chinese Egg Rolls with Cabbage Recipe

Egg roll wraps (1 pkg.)
1 pkg. fresh mushrooms, sliced
5 cloves garlic, minced
1/2 onion, chopped
2 c. slivered cabbage
1/2 c. shrimp, chopped
1 lb. ground pork sausage
Chinese noodles (same as cellephane noodles)
1 egg

Saute garlic, onion and sliced mushrooms in small amount of oil. Set aside. Brown pork sausage. Drain fat. Add cabbage. Cover and simmer until cabbage is cooked thoroughly. Add shrimp. Soak cellophane noodles in hot water to soften. Drain and cut into pieces. Add all together including egg. Mix. Run wet fingers around edges of egg rolls. Fill and roll. Deep fry. Serve with fried rice, chow mein or sweet and sour pork.

Beef and Sausage Spaghetti Sauce Recipe

1-1/4 lb. ground beef
1 lb. Italian sausage
1 lb. onion, chopped
2 cloves garlic, chopped fine (1-1/2 tsp.)
2 (12 oz.) cans crushed tomatoes
2 (6 oz.) cans tomato paste
1 (15 oz.) can tomato sauce
1 c. bouillon
2 1/2 tsp. salt
1/2 tsp. pepper
3 tbsp. sugar
1 tsp. basil
1 1/2 tsp. oregano leaves
2 sm. bay leaves, crushed
3/4 c. grated Parmesan cheese
1/2 lb. fresh sliced mushrooms

Brown ground beef and sausage in skillet until brown, about 7 minutes. Add onions and garlic, cook about 5 minutes until limp. Stir in tomatoes, tomato paste, tomato sauce, bouillon, salt and pepper, sugar, basil, oregano leaves. Simmer uncovered on low heat until sauce thickens about 2 1/2 hours; adjust season to taste. Stir often. Add mushrooms and cheese, continue cooking for about 30 minutes.

Meatless Spaghetti Sauce Recipe

2 c. chopped onions
2 cloves garlic, minced
1/3 c. oil
12 lg. tomatoes, peeled and chopped
4 tsp. leaf basil
2 tsp. salt
2 c. water
2 envelope instant vegetable broth (wor two cubes
2 bay leaves
1 tbsp. oregano
1 lg. can tomato paste

Saute onion and garlic; add remaining ingredients. Simmer 1 hour or so depending on thickness desired. Sauce may be canned or frozen. When serving, add chopped mushrooms.

Freezer Fudge Candy Recipe

12-oz. pkg. chips (whatever flavor is preferred,
peanut butter, semisweet, milk chocolate or white chocolate)
1 (11-oz) can sweetened condensed milk
1 tsp. vanilla extract

Line a 13 x 9-inch pan with aluminum foil. In a saucepan over medium-low heat, melt the chips, sweetened condensed milk, and vanilla until it reaches a smooth consistency. Pour the mixture into the foil-lined pan, and let it cool on the counter. Then move it into the freezer. When hard, cut it into squares, and store in the freezer.

White Chocolate Fudge Recipe

2 c. sugar
3/4 c. sour cream
1/2 c. margarine
12 oz. white chocolate, coarsely chopped or white chocolate chips
1 (7 oz.) jar marshmallow creme
3/4 c. chopped walnuts
3/4 c. chopped dried apricots

Combine sugar, sour cream and margarine in heavy 2 1/2 to 3 quart saucepan; bring to a full rolling boil, stirring constantly. Continue boiling 7 minutes over medium heat or until candy thermometer reaches 234 degrees, stirring constantly to prevent scorching. Remove from heat. Stir in chocolate until melted. Add remaining ingredients. Beat until well blended. Mixture may begin to separate but keep beating.

Whoppers Fudge Candy Recipe

1/2 C. butter
2 1/2 C. sugar (extra-fine granulated preferred)
5 oz. evaporated milk
12 oz. Guittard's or Hershey's Premium White Chips
6-7 oz. marshmallow crème (or 2 cups mini-marshmallows)
2 1/2 C. Whoppers, cut into halves (reserve 36 halves)
1 tsp. vanilla extract

Line a 9-inch square pan with aluminum foil and set aside. Place chocolate chips, vanilla extract and marshmallow cream into a 3-quart saucepan (or Pyrex bowl) and set aside. Heat milk at medium heat until warm then add sugar. Bring to a rolling boil (medium-high), stirring constantly with a wooden spoon. Continue to boil for 8 full minutes or, if using a candy thermometer, continue boiling until the boiling temperature reaches 235ºF but do not exceed 9 minutes rolling boiling total. Remove from heat and add butter. Stir until dissolved (but no more than 30 seconds). Pour hot mixture over chocolates, vanilla extract and marshmallow cream without scraping the sides of the hot saucepan. Mix until the chocolates are melted and mix thoroughly. Mix in Whoppers immediately before pouring into pan and fold over only 3 times. Pour into prepared pan. Cool at room temperature. As fudge cools in pan, place Whopper halves on surface spread evenly. Chill in refrigerator prior to cutting. Remove from pan, remove foil, cut into squares

Pinto Bean Fudge Candy Recipe

2/3 Cup Canned milk (or light cream)
1-1/2 Cups Mini marshmallows
1-1/2 Cups Strained pinto beans
1 Teaspoon Vanilla
1-2/3 Cups Sugar
1/2 Cup Nuts
1-1/2 Cups Chocolate chips

Combine sugar and milk in kettle. Boil 5 minutes, stirring constantly. Add remaining ingredients and stir until marshmallows melt. Pour into buttered pan; cool and cut into squares.

Homemade Chili Recipe

3 (14 ounce) cans light red kidney beans
3 28 ounce cans whole tomatoes
1 pound hamburger meat
1/2 green bell pepper, chopped
1 small onion, chopped
2 tablespoons sugar
2 tablespoons chili powder
salt, pepper and garlic powder to taste

Brown hamburger and drain. In a large pot, put in remaining ingredients including meat. Simmer on low to medium heat for about 1 hour. Can be served over rice or spaghetti.

Hamburger Enchiladas Recipe

1-1/2 pounds hamburger
1 cup tomato soup
3/4 cup chopped green pepper
1 16 ounce can kidney beans, drained and rinsed
3/4 pound cubed Mexican Velveeta cheese
10 tortillas

Brown and drain hamburger. Add soup and peppers. Simmer 5 minutes. Add beans and 1/2 pound cheese. Heat until cheese melts. Fill and roll tortillas. Place in greased 9 x 13 inch pan. Pour remaining sauce over tortillas. Bake at 350F for 20 to 25 minutes. Top with remaining cheese and bake 5 minutes longer. Serve with lettuce, tomato, sour cream etc.
