Here are two recipes that are easy to make and big hits with all who like sweets. They would be great as gifts or as part of a holiday tray. I apologize for not having an exact count on the number of Reese's Cups neded for the first recipe. I failed to keep count and I was working from opened packages of the candy.

Reese Cup Fudge Recipe

Packages of Reese's Cups
3 Cups chocolate Chips
1 can sweetened condensed milk - not evaporated milk

Remove the paper from each Reese's Cup. Line a 9x13 pan with reese's cups . It took me 4 rows to fill the pan. Mix together the chocolate chips with the sweeten condensed milk and pour over the reese cups. Place the pan in 350 degree oven for only 5 minutes . Remove pan from oven and swirl the chips in the pan with a knife, then add additional cut up reese cups to the top. Let cool and set, then cut and enjoy. Store in air tight container. Can line pan with foil or parchment paper and lift out after set for easier cutting.

Reese's Fudge Using Nestles Quick Recipe

2 sticks butter
1 c. Hershey's Quick
1 lb. powdered sugar
1 c. peanut butter
1 tsp. vanilla

Melt butter, add peanut butter, vanilla and Hershey's Quick. Add powdered sugar gradually and press into buttered dish. Let set up, cut and serve. Store in air tight container. Can line pan with foil or parchment paper and lift out after set for easier cutting.

Thank you for the Leftover Turkey Recipes.,
Going to send to my daughter for they had a 20 lb. turkey for Thanksgiving .

Had a lot left over. Told her wrap it and freeze it, or to make small dinner meals and freeze.

Like the OLD TV dinners we used to do. WELL,,, me anyways, lol.

Pumpkin Dessert Recipe

This is quite simple to make and a lighter dessert than a pumpkin pie

2 small boxes or 1 large size vanilla instant pudding. Can use sugar free or regular
3 cups milk.

Beat and let start to thicken slightly.

Stir in 1 15 oz. can pure pumpkin puree-not pumpkin pie mix

1 teaspoon pumpkin pie spice, more or less according to your taste for spice

Gently fold in a small carton cool whip, regular or fat free

Chill for an hour or so before serving. I garnish with a ginger snap or two along the edge of my dessert dishes.

There is pumpkin instant pudding mix which works well if you can locate it in your grocery. It is a seasonal item and not always available. If using that you need to lessen the pumpkin pie spice.

Hi Nancy,
I'll be making pumpkin pie for Thanksgiving. The amount of filling I make I usually get two pies out of.

Thanksgiving was spent with family this year. My sister-in-law from Arizona came and spent several days with me and the indoor critters. Little One loves my sister-in-law, Betty. Little One followed Betty everywhere she went, the days she was here. When Betty packed up her suitcase Little One was upset. After Betty left Little One sat on the bed and meowed at the top of his lungs. He missed her. Little One has always liked Betty, especially when she is working on a quilt. Little One is fascinated when Betty cuts little pieces of thread or fabric. He still has all of lasts years cuttings hidden under a rug in the hall closet.

Cranberry Turkey Salad Recipe

2 c. cubed, cooked turkey
Salad greens
1 lg. red apple, cored & cut into 1/2 inch pieces
1/4 c. grapes, red seedless cut up
2 tbsp. walnuts, cut up
1 c. jellied cranberry sauce or 1/2 Pkg. cooked cranberries
1/4 c. orange juice concentrate
2 tbsp. mayonnaise
2 kiwi fruit peeled & sliced

In medium bowl, combine turkey, apple cubes, grapes and walnuts. In small bowl mix cranberry sauce, orange juice, and mayonnaise; set aside. Arrange lettuce leaves on four plates, top with 1 cup salad mix, garnish with kiwi slices. Serve with dressing on side.
Serves 4.

Creamy Turkey Mushroom Casserole Recipe

2 slices bacon
3/4 c. chopped onion
1/2 c. chopped celery
1/4 c. chopped green pepper
1 (4 oz.) can mushrooms
1 can condensed cream of celery soup
1 c. dairy sour cream
1/2 c. shredded cheddar or American cheese
3 c. cut up cooked turkey or chicken
1/4 tsp. salt
1/8 tsp. pepper
2 c. Bisquick baking mix
1/2 c. milk
2 eggs

Heat oven to 350 degrees. Grease 2 quart round casserole. Fry bacon in 10" skillet until crisp; remove from skillet and crumble. Cook and stir onion, celery, green pepper and mushrooms in bacon fat until tender; drain if necessary. Stir in soup, sour cream, turkey, salt, pepper and bacon; heat until bubbly. Spread in casserole. Mix remaining ingredients just until moistened; spread over turkey mixture. Bake, uncovered until golden brown, 30 to 35 minutes.
Serves 6 to 8.

Turkey Vegetable Soup Recipe

3 cans (14-1/2 oz each) fat-free Chicken Broth
1/2 tsp Dried Thyme Leaves, Crushed
1/4 tsp Garlic Powder
2 cups Frozen Corn
1 Pkg (about 10 oz) Frozen Cut Green Beans
1 can Chopped Tomatoes
2 Cups Cooked Turkey, Cubed

In saucepan mix broth, thyme, garlic powder, corn, green beans, and tomatoes. Heat to a boil over medium-high heat. Cover and cook over low heat 5 minutes or until vegetables are tender. Add turkey and heat through. Serves 6.

Creamed Turkey Recipe

3 tablespoons butter
3/4 cup sliced mushrooms
3 tablespoons flour
1-1/2 cups milk
1/2 cup hot chicken or turkey stock
1 small 2 ounce jar diced pimiento
4 cups diced cooked turkey or chicken
celery salt

Melt butter over medium-low heat. Sauté mushrooms. Add flour; stir until smooth. Slowly pour on milk and stock, stirring constantly, until thickened and bubbly. Add pimiento, turkey or chicken, salt, and celery salt. Cook until heated through, but not boiling.
Serve over rice, noodles or biscuits
Makes 4 Servings

Turkey Sloppy Joes Recipe

1 sm. onion, chopped
1 garlic clove, chopped
1 (8 oz.) can tomato sauce
2 tbsp. bottled barbeque sauce
1 tsp. Worcestershire sauce
1/4 tsp. salt
1/8 tsp. black pepper
2 c. shredded cooked turkey
4 hamburger buns, split
1/2 c. shredded Cheddar cheese

In large skillet cook onion and garlic in vegetable spray. Add tomato sauce, barbeque sauce, Worcestershire sauce, salt and pepper. Heat to boiling. Reduce heat to low. Cover and simmer 10 minutes. For each serving, place bottom half of each bun on serving plate. Top with equal amount of turkey mixture. Sprinkle with cheese, if desired. Cover with top buns.
Makes 4 servings

Microwave Turkey Tetrazzini Recipe

1 (7 oz.) pkg. spaghetti
1/4 c. butter
4 oz. mushrooms (fresh or canned and drained)
1 sm. onion, chopped
1 1/2 tsp. lemon juice
1/3 c. flour
1 tbsp. salt
1/2 tsp. paprika
1/8 tsp. nutmeg
2 c. turkey or chicken broth
1/2 c. half & half
2 c. leftover, cubed turkey
1/2 c. Parmesan cheese

Cook spaghetti using directions on packet. Drain well and place in greased 8x12x2 inch dish. In 2-quart casserole, place butter, mushrooms, onion and lemon juice. Microwave at high 2 to 3 minutes, stirring after 1 minute. Stir in flour, salt, paprika and nutmeg until smooth; microwave at high 1 minute. Stir well. Gradually stir in broth. Microwave at high 5 to 6 minutes, stirring after 3 minutes until thickened. Mix in half & half and turkey. Pour over spaghetti. Sprinkle with cheese and paprika. Microwave at high 7 to 9 minutes, rotating dish half turn after 4 minutes until hot.
Makes 4 to 6 Servings

Open Faced Turkey Sandwiches Recipe

1 c. milk
1 8oz. pkg. Philadelphia cream cheese
1/2 c. grated Parmesan cheese
1/4 tsp. salt
1/4 tsp. garlic salt
6 slices toasted white bread
6 slices hot cooked turkey

Gradually add milk to soften the cream cheese, mixing until well blended. Heat slowly. Stir in Parmesan cheese and seasonings. Place a slice of turkey on each slice of toast. Cover with the sauce and sprinkle with paprika.
Makes 6 sandwiches.

Turkey Au Gratin Recipe

4 c. cut up leftover turkey or chicken
1/2 lb. shredded American cheese
4 c. milk
1 1/2 c. slivered onions, boiled until ..transparent and drained
6 tbsp. butter
10 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. paprika

Melt the butter slowly in a large pot. Mix the flour, salt, pepper and paprika in a small bowl. Add to the melted butter quickly. Preheat oven to 350. Grease a casserole dish. Add 1 c. of milk at a time, stirring continuously with a whisk, and waiting each time until the sauce thickens. Then continue to add more milk until it is gone. Do not let sauce boil. Also be careful not to let it stick on the bottom of the pan. Turn off heat. Add slivers of cheese and stir until melted. Add the onions and turkey and fold in. Pour into the casserole dish and sprinkle the bread crumbs. Bake for 20 minutes.
Makes 5-6 Servings

Here is a recipe my mother has made for years. I asked her for it so I could share it in this newsletter. Great for holidays and everyday.

Cranberry Pie Cake Recipe

1 (10 inch) unbaked pie crust
2 c. whole, fresh cranberries
1/2 c. sugar
1/2 c. chopped nuts

Combine cranberries, sugar, and nuts; put into crust.
1 c. sugar
2 eggs, beaten
1 c. flour
Cream margarine and sugar together. Add eggs and flour.
Pour batter over cranberries. Bake at 350 degrees for 60 minutes.

Veg All Chicken Pot Pie Recipe
(I use turkey)

4 c. cooked cubed chicken or turkey
1 (29 oz.) can Home Style Vegetable-All mixed
1 (11 oz.) can cream of chicken soup
1 tbsp. celery seed (optional)
Small can biscuits

Combine vegetables with liquid, soup, chicken, seasoning; add frozen peas, if desired. Pour into dish and bake at 350 degrees for 20 minutes. Remove from oven and top with small can biscuits or Bisquick biscuits. Return to oven at 400 degrees for 12-15 minutes.
Makes 4-6 Servings

Candy Cane Cookies Recipe

1 cup margarine
1 cup powdered sugar
1 egg
1/2 teaspoon vanilla
1/2 teaspoon peppermint extract
Dash Salt
2-1/2 cups flour
1/2 teaspoon red food coloring

In large mixer bowl beat margarine till softened. Add sugar and beat till fluffy. Add egg, vanilla, peppermint, and salt. Beat well. Add flour and beat until well mixed. Divide dough in half. Stir food coloring into one half. Cover each half and chill about 30 minutes or till easy to handle. For each cookie, on a lightly floured surface, shape a teaspoonfull of plain dough into a 4-inch rope. Repeat with a teaspoonfull of the red dough. Place ropes side by side and twist together. Pinch ends to seal. Form twisted ropes into a cane. Place canes 2 inches apart on an ungreased cookie sheet. Bake in a 375' oven for 8-10 minutes or till done. Remove and cool.

Chocolate Chip Peanut Butter Fudge Candy Recipe

2 Cups Sugar
2/3 Cup Milk
2 Teaspoons Corn syrup, light
1 Teaspoon Butter
1 Teaspoon Vanilla
1/2 Cup Peanut butter
5-3/4 Ounces Milk chocolate chips

Combine the sugar, milk and corn syrup in a heavy 3-quart saucepan and bring to a boil, stirring constantly, until the mixture boils. Continue boiling without stirring to the soft-ball stage (243 degrees F on the candy thermometer). Remove from the heat. Add the butter without stirring and cool to lukewarm, 110 degrees F. Add the vanilla and peanut butter then beat until the mixture begins to thicken and lose its gloss. (Watch carefully as this fudge has a short beating time.) Quickly add the chocolate pieces and turn into a 8 X 8 X 2-inch pan. While warm, mark into squares. Cool until firm then cut as marked. .
Makes about 3 dozen squares

Homemade Caramel Candy Recipe

1 cup of butter
2 -1/2 cups of brown sugar
1 cup light corn syrup
1 (14oz) can of sweetened condensed milk

Grease an 9x9 pan. in a heavy saucepan, melt butter over medium heat; add brown sugar, corn syrup and milk. Stirring constantly, heat to 242 - 248º F. Remove from heat and stir in vanilla. Pour into prepared pan. When caramel has cooled and set, cut into squares. You can melt chocolate (according to how much you may need) with 1 T. butter and drop caramels in chocolate and place on wax paper to cool.
